What’s Cooking in Gail’s Kitchen? Be Our Guest: Okra is Optional! Mention the word “okra” and you may see people wrinkle their noses. It’s really not that bad, in my opinion. The flavor is mild and the texture is silky. Okra is often eaten fried in a delicious cornmeal batter or combined with vegetables in hearty homemade soups. Today’s version is pickled with its spicy second cousin, the jalapeño.
OKRA IS OPTIONAL
Ingredients:
1 pound fresh okra
2 jalapeño peppers, sliced thin
2 garlic cloves, halved
2 cups apple cider vinegar
3/4 cup water
2 tablespoons kosher salt
1 1/2 teaspoon yellow mustard seeds
Instructions:
Wash okra thoroughly and remove tips. Divide between 3 pint jars. Repeat with jalapeños and garlic. Combine vinegar, water, kosher salt, and mustard seeds in a 2-quart pan. Bring to a boil, stirring occasionally. Remove from heat. Ladle hot vinegar over okra mixture in jars. Wipe rims. Cover jars with kids. Cool at room temperature. Refrigerate for no longer than two months.
I recently went out gor Indian food and I tried a dish that had okra as one of the main ingredients. It was yummy! I’ve been a fan ever since

I ate of lot of okra while living in the South. Lately, not so much. Loved it in soups/stews. ☺

Definitely on my list. Fall is when okra is nice and crunchy so it’s not too far away. 🙂

Oh the Okra. Took me many years to eat this veg again after being forced to eat it slimy in hot soup. I like it crisp. Pickling is a wonderful idea!

I just LOVE okra! My family, not at all. I always have to make it for lunch when they both aren’t around, just like with fried chicken livers. I like the idea of pickling it with jalapenos, yumm!

I have had okra in lot of Indian ways and this is new to me. 👍🏼. You have clicked it so well, looks so real – as if I wish to pick a piece and taste it.
