What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Rollin’ in Lobstah! Ever wonder why lobster is so popular? I find the mildly sweet, delicate flavor irresistible. If you’re preparing it at home in a state that is landlocked, a lot of resources are at your fingertips. Did you know you can order it from Maine and have it delivered in 24 hours? That’s golden. There are numerous websites that offer delicious lobster choices to conveniently keep on hand in the freezer. I buy lobster meat and lobster tails only. Forget the labor-intensive task of twisting the head, legs, and claws apart from the tail. Then again, I’ve been called “high maintenance”. To each his own.

ROLLIN’ IN LOBSTAH

Ingredients:

4 cups cooked lobster meat, cut into chunks

1/4 cup mayonnaise

1 1/2 tablespoons lemon juice

1/8 teaspoon sea salt

1/8 teaspoon white pepper

4 split-top brioche hot dog buns

4 tablespoons butter, melted and divided

1 tablespoon chives, thinly sliced for garnish

Fresh lemon wedges, for garnish

Instructions:

In a bowl, combine lobster meat, mayonnaise, lemon juice, sea salt, and black pepper. Gently toss to coat. Spread butter on the outer sides of each bun. Place the buns on a griddle over medium heat. Cook 2-3 minutes per side until golden brown. Divide the lobster mixture among the buns. Garnish with fresh chives and lemon wedges. Serve immediately with remaining butter.

  1. One of my absolute favorite dishes. When we go to Maine, it’s the first thing we schedule for lunch! I like that you kept this simple, as a lobster roll should be, not a lot of herbs and other things to get in the way of the beautiful flavor.
    As a hard-core New Englander, one of my greatest joys is donning a bib and cracking that lobster open on a great big platter, devouring every morsel dunked in lemon, and leaving nothing but the cleaned out carcass in my wake. Joy.

Once I read a report that made me want to go back in time to the 1700s and become an incompetent bank robber in New England, It seems that a law was passed in the Massachusetts Bay Colony that prisoners in the jail could only be fed lobster NOT MORE than three times per week!!! How I would have loved to have suffered in Boston’s jail cell! 😁

    When we were in Maine last … we devoured a few of these a few times during our vacation there. Mmmm!
    Now supposedly there is a Food Truck here in Arizona… that serves these a few times a year. I need to find that truck.
    But in the meantime… I need to find me some Lobstah!

  4. Our favorite place while on vacation in Montauk is a little place known simply as “Lunch”; it’s official name is The Lobster Roll and it was featured on the TV series “The Affair”. Their lobster rolls are outrageous – I’m drooling right now – with huge chunks of delicate lobster meat, finely diced celery for a little crunch and s&p without a whole lot of mayo, letting the lobster shine front and center. You can get the legendary lobster roll, a bun-less platter with fries or the ginormous lobster bowl with salad. They don’t fool around at Lunch! And I’m with you – meat or tails only; I don’t have the patience for the rest of it! 🦞 😋
