When you’re not exactly hungry, but could use a snack between meals or to satisfy a late night craving for “something”….crostini fits the bill, so to speak. Crostini adds the crunch of potato chips and the flavor of croutons, only better. Fresh mozzarella melts incredibly well because it contains less moisture. You can thank fresh mozzarella for those ah-mazing cheese pulls that become gooey strands of seductiveness. Uh-huh, I see you nodding your head in total agreement. Better grab a napkin.

NOSH CROSTINI AND ORANGES

Ingredients:

1 large tomato, diced

1/2 teaspoon kosher salt

1/4 teaspoon oregano

1/2 loaf baguette bread, sliced

1-2 tablespoons olive oil

1/8 teaspoon garlic powder

6 slices fresh mozzarella cheese

1 navel orange, peeled with each segment cut in half

Fresh basil leaves, for garnish

Instructions:

Preheat oven to 350°. Arrange diced tomatoes in a single layer on the cutting board. Sprinkle with kosher salt and oregano. Allow to rest for 10 minutes. Meanwhile, place baguette slices on a baking sheet. Brush each slice with olive oil. Sprinkle garlic powder on top. Place one slice of fresh mozzarella on each piece of baguette. Spoon diced tomatoes over cheese. Bake for 10 minutes, or until cheese is bubbly. Remove from oven. Garnish crostini with fresh basil. Serve with navel orange segments.

It’s simple, delicious, takes minutes to prepare, and makes life easy for the host or hostess. Whether you’re making pizza from scratch or ordering it for delivery, this is a great appetizer to keep things festive. Just remember to make enough to share. You won’t regret it.

MEATBALL LOLLIPOPS

Ingredients:

10 precooked frozen Italian meatballs, thawed

15 ounces of prepared marina sauce

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

1/8 teaspoon garlic powder

1 cup mozzarella cheese, shredded

10 party picks

Instructions:

Cook meatballs in a microwave-safe dish, with lid, according to package directions. Drain. Add prepared marina sauce. Cook on 40% power in microwave-safe covered dish for 10 minutes. Pierce each meatball with a party pick and transfer to a platter, or 5 per serving. Spoon marinara sauce over meatballs. Sprinkle with oregano, basil, marjoram, and garlic powder. Divide the shredded mozzarella cheese between portions. Serve immediately.

Lemon Butter Chilean Sea Bass

What’s Cooking in Gail’s Kitchen? Bright Ideas: Lemon Butter Chilean Sea Bass! Anyone, besides me, a fan of butter on seafood? Lobster. Crab Legs. Chilean Sea Bass. Shrimp. Scallops. You name it…if the seafood is slightly sweet, mild in flavor, moist and tender, or flaky yet firm, I practically kick everything else to the curb in favor of rich and decadent seafood. Now that I live in Florida, I can stretch my palate a bit with fresh seafood harvested or caught off the coastline. Not only does it support local fishermen, it also puts me in touch with seafood retail markets that thrive on this economy. And, yes, I’m spoiled. Some of the vendors even come directly to my community on a weekly basis. I see more fish in my future.

LEMON BUTTER CHILEAN SEA BASS

Ingredients:

2 8-ounce Chilean Sea Bass fillets

1/4 cup salted butter

1/8 teaspoon garlic powder

1/8 teaspoon parsley flakes

Juice of fresh 1/2 lemon

Instructions:

Preheat gas grill to 400°. Form a piece of aluminum foil into a baking sheet to accommodate the fillets. Be sure to raise the sides to contain the buttery juices. Spray foil with nonstick oil. Set aside. In a microwave-safe dish, warm the salted butter. Add garlic powder, parsley flakes, and lemon juice. Gently whisk. Wash Chilean sea bass fillets; pat dry with a paper towel. Before placing the fillets on the foil, brush both sides with melted lemon butter. Save the extra butter mixture for serving. Grill the Chilean Sea Bass for 5-6 minutes with the lid closed to maintain the internal temperature. Turn the grilled sea bass and repeat cooking time 5-6 minutes longer for even grilling. Brush with remaining butter mixture. Serve immediately.

Kielbasa Hot Dogs

If you like to try something a little different than ordinary hot dogs, choose a beef sausage link that focuses more on natural flavorings like garlic, woodsmoke, cloves, or pimento. Personally, I lean more toward nitrate-free labeling, which means the preservatives are natural rather than chemically added. Every little bit helps, because sometimes eating a grilled hot dog just makes the world a happier place.

KIELBASA HOT DOGS

Ingredients:

13-ounce package of 4 kielbasa smoked sausage links, fully cooked

4 brioche split-top brioche hot dog buns

1/2 sweet onion, coarsely chopped

1/3 cup sweet pickle relish

1/4 cup yellow mustard

Instructions:

Preheat gas grill to 400°. Arrange smoked sausage links directly on the grill grates. Close lid. The total cooking time should be approximately 12 minutes. After 3 minutes, using tongs rotate each sausage link a quarter turn. Close lid. After 3 more minutes, rotate another quarter turn. Repeat until all sides have been slightly charred. It helps to keep the sausage links from touching as they cook; this allows the heat to sear the skins evenly. When finished transfer to a platter and serve with chopped onion, sweet pickle relish, and yellow mustard.

Jamaican Seasoned Fish

Every country has a way of combining fresh herbs and natural spices to season up rice, beans, eggs, vegetables, fish, and meats. Then they go one step further and manufacture it so everyone can experience the authentic flavor. My friend, Leighton, is from Jamaica. He’s a pretty cool bartender in a downtown hotspot. When he gets a little homesick, he either hops on a plane to his native island or does a bit of traditional cooking until he can visit his extended family in person. I was fortunate enough to receive some of his Caribbean secrets. Ya Mon.

JAMAICAN SEASONED FISH

Ingredients:

2 tilapia fillets

1 1/2 teaspoons Jamaican gourmet seasoning

1/8 teaspoon black pepper

1 tablespoon olive oil

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Set aside. Rinse tilapia fillets and pat dry. Sprinkle each piece with half the Jamaican gourmet seasoning and black pepper. Flip and repeat. Warm olive oil in a skillet over medium-high heat. Sear each fish fillet 2-3 minutes per side, or until golden brown. Transfer fillets to the prepared baking sheet. Bake 5-6 minutes per side. Serve immediately.

Irish Apple Cake

What’s Cooking in Gail’s Kitchen? Bright Ideas: Irish Apple Cake! I can practically hear your first question: How is this cake different from a traditional one? Well, as you mix the ingredients, you may notice the batter is pretty thick and dense. It’s not pourable like a cake mix, that’s for sure. I guess you could compare it somewhat to a sponge cake…..with apples. Plus topping. Streusel is what makes it extra-special, if you know what I mean. When it’s all said and done, you can definitely justify eating it as an early breakfast, a midday brunch, an afternoon pick-me-up, or a late night dessert. If you were at my house, you’d see my husband keeps a spoon propped inside the cake dome. Because, sometimes…you know, you just can’t resist one bite.

IRISH APPLE CAKE

Ingredients for Streusel Topping:

3/4 cup flour

1/4 cup rolled oats

1/2 cup sugar

1/8 teaspoon sea salt

6 tablespoons butter, cold

Instructions for Streusel Topping:

In a medium bowl, combine flour, rolled oats, sugar, and sea salt. Mix well. Add the cold butter, using a fork. Blend the butter into the flour mixture until it resembles coarse breadcrumbs. Set bowl aside in the refrigerator.

Ingredients for Irish Apple Cake

1/2 cup butter, room temperature

1/2 cup sugar

2 teaspoons vanilla extract

2 eggs

1 1/4 cup flour

1 teaspoon baking powder

1 teaspoon cinnamon

1/8 teaspoon sea salt

3 tablespoons milk

3 Granny Smith apples, peeled, cored, and sliced thin

Instructions for Irish Apple Cake:

Preheat oven to 350°. Butter and line a 9” round baking dish. Set aside. In a large bowl, cream together butter and sugar until light and fluffy. Add vanilla extract. Beat eggs, one at a time, and add to creamed mixture. In a separate bowl, whisk together flour, baking powder, cinnamon, and sea salt. Fold the dry ingredients into the wet ingredients. Gradually add milk while mixing as the batter forms. Transfer batter to the prepared baking dish. Arrange a single layer of sliced apples over batter. Cover the apples with the streusel topping. Bake 60-65 minutes, or until a cake tester comes out clean. Cool 10 minutes before slicing. Serve warm or at room temperature.

Check out fish markets, food trucks, roadside stands, diners, and grocery store delis. Hawaiian Mac Salad pairs beautifully with fresh fish and a scoop of white rice. Now you can make it yourself without the cost of a plane ticket to the Hawaiian Islands.

HAWAIIAN MAC SALAD

Ingredients:

8 ounces macaroni pasta

1 cup mayonnaise

1/4 cup milk

1 tablespoon apple cider vinegar

1 teaspoon sugar

1 teaspoon sea salt

1/2 teaspoon black pepper

1 stalk celery, diced

1 large carrot, grated

1/4 cup sweet onion, diced

Green onion snips, for garnish

Instructions:

Boil the macaroni in lightly salted water. Cook al dente; one minute less than package directions. Drain the macaroni and rinse with cold water. Set aside. For the sauce, in a large bowl combine the mayonnaise, milk, apple cider vinegar, sugar, sea salt, and black pepper. Mix well. Add the cooked macaroni, diced celery, grated carrots, and diced onions. Gently stir to combine. Cover and refrigerate for at least 4 hours. Toss before serving. Garnish with green onion snips.
