X-traordinary Pomegranate Rice Cake

No matter the time zone you live in, your internal clock lets you know when hunger pangs are tugging at your tummy. Before you grab a sugar-glazed donut or soft chewy cookie, step back a minute to visualize all the possibilities a rice cake provides. As a base, rice cakes come in all varieties: multigrain, white rice, brown rice, apple cinnamon, caramel, honey nut, organic, salt-free and so on. Spreadable are just as surprising: whipped cream cheese, almond butter, hummus, cottage cheese, peanut butter, hazelnut spread, mashed avocado, frosting, or marshmallow creme. You get the idea. Lastly, the toppings can be anything from fresh fruit, smoked salmon, hard-boiled eggs, bell peppers, assorted nuts, coconut flakes, mini cucumbers, grilled veggies, radishes, and spices. The crowning feature is the garnish of course: fresh mint, chopped herbs, chia sprinkles, sesame seeds, bacon crumbles, crushed espresso beans, or capers.  If your mind isn’t spinning with ideas, you must not be hungry. No worries. Munchtime cravings have a way of stopping back to remind you. 

X-TRAORDINARY POMEGRANATE RICE CAKE 

Ingredients: 

1 puff rice cake, any variety 

1-2 tablespoons whipped cream cheese

1 heaping tablespoon pomegranate seeds

Fresh mint leaves, for garnish

Instructions: 

Spread whipped cream cheese onto the puffed rice cake; swirl. Top with pomegranate seeds. Add mint leaf snips, if desired. Serve immediately and enjoy. 

Wagyu Smash Burger

What’s Cooking in Gail’s Kitchen? Food Plating: Wagyu Smash Burger! Has anyone besides me noticed the growing popularity of smash burgers? It seems every sports bar menu raves about the monstrous sandwich with unbelievable crispy craggy edges followed by umami crunch. In my day, it used to be called a burnt hamburger because Dad got distracted watching the game. Not so any more. With an interior juiciness that runs down your chin, you can’t help but be satisfied. Most times, once it is assembled, this is a two-handed burger addiction you can’t put down. Burger World take notice, you just got a new member of the smash burger club. 

WAGYU SMASH BURGER

Ingredients: 

2 pounds of Wagyu beef, ground

4 slices provolone cheese

1/2 teaspoon sea salt

1/8 teaspoon black pepper 

1/4 teaspoon seasoned salt

4 brioche buns, sesame seed tops

4 teaspoons butter, room temperature 

Instructions: 

Place an iron griddle on the grill grates. Close the lid and preheat the gas grill to 450°. Form the Wagyu beef into 4 balls. Using a wide heavy spatula, press down firmly on each ball to make an even pattie as thin as possible. Sprinkle both sides with sea salt, black pepper, and seasoned salt. Transfer the patties to the iron skillet. Cook for 2-3 minutes, or until the edges are brown and crispy forming a crust on the bottom. Flip and add a slice of provolone cheese. Cook for 2 minutes longer to melt the cheese. At this time butter the cut sides of each brioche bun. While the cheese is melting on the smash burgers, place the buttered buns on the grill to toast. To serve, stack the cheesy smash burgers on the toasted buns. Add desired toppings including lettuce, tomato, mayonnaise, and condiments. 

Vidalia Grilled Onions

What’s Cooking in Gail’s Kitchen? Food Plating: Vidalia Grilled Onions! Even if you don’t appreciate the taste of raw onions, by grilling them they turn into a totally different animal, so to speak. In raw form, onions can have a bite that is as raw, sharp, and bitter as a gator’s mouth. Grilling them releases the natural sugars to magically transform these bulbs into a sweeter, savory, delicious side dish that goes well with other grilled foods. Once you’ve tasted grilled onions at home, think variety for your next cookout. Combine potatoes, green peppers, and vidalia onions together in the foil packet and expect another flavorful explosion. 

VIDALIA GRILLED ONIONS 

Ingredients: 

4 Vidalia onions, skins discarded,  slice onions thick

1/4 cup olive oil

1/4 cup garlic red wine vinegar

1/2 teaspoon oregano, dried 

Instructions: 

Place the sliced Vidalia onion in a bowl. Whisk together the olive oil, garlic red wine vinegar, and dried oregano. Pour the mixture over the onions; toss to coat well. Marinate the onion mixture for half an hour. Preheat the grill to medium-high. Line a grill pan with foil, overlapping the sides enough to make a tent. Place the marinated onions on the foil and form a seal. Grill the foil packet for 15-20 minutes. Remove pan from grill and set aside. Carefully open the tent and transfer the onions to a serving platter. Serve immediately.

What’s Cooking in Gail’s Kitchen? Food Plating: Unbeatable Italian Favorite! Let’s step away from pizza and pasta a minute to talk about another Italian favorite. Behold, the Caprese Salad. It’s a classic dish from the island of Capri, originating in the 1920s. The presentation is simple yet elegant, so choose your platter wisely. The serving piece should showcase the colorful beauty of the food symbolizing the Italian flag: green, white, and red. Appreciate the heritage, culture, art, and food of Italy. They hold a sense of gratification that is timeless. 

UNBEATABLE ITALIAN FAVORITE 

Ingredients: 

16 ounces ripe Campari tomatoes, sliced

8 ounces fresh mozzarella cheese, sliced into rounds

1 bunch fresh basil leaves

3-4 tablespoons balsamic glaze

1/2 teaspoon Italian herbs, dried

Instructions: 

Choose a decorative platter or individual serving pieces. To prepare the base of the salad, arrange sliced Campari tomatoes along with fresh mozzarella slices. Tuck whole fresh basil leaves in between the layers for flavor as well as presentation. Drizzle the tangy balsamic glaze generously over the top of the tomatoes and mozzarella cheese. Sprinkle with dried Italian herbs. Serve immediately. 

Taro Tuna Crudo

What’s Cooking in Gail’s Kitchen? Food Plating: Taro Tuna Crudo! Pay attention to the kind of tuna you need for this recipe. It needs to be a high-quality (sashimi) raw fish. Also you should use a good quality olive oil. Remember what I said the other day about quality ingredients? There’s nothing worse than catching a stale fish odor right before that first bite. It can put a damper on the whole “raw fish” experience. I think you know what I’m talking about. Crudo is an Italian dish containing raw fish. The difference comes when it is paired with a simple dressing of olive oil and citrus juice. It requires no marination whatsoever. Just mix and serve. Perfetto! 

TARO TUNA CRUDO

Ingredients: 

2 tablespoons lemon juice

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon white pepper

8-ounces ahi tuna steaks, sashimi-grade

1-2 green onions, thinly sliced

1 teaspoon toasted sesame seeds

Instructions:

In a bowl, whisk together lemon juice, olive oil, sea salt, and white pepper. Set aside. Cut the raw ahi tuna into bite-size cubes. Add to the dressing; gently toss. Top with sliced green onions and toasted sesame seeds. Serve with taro chips. 

Sriracha Mayo Dipping Sauce

What’s Cooking in Gail’s Kitchen? Food Plating: Sriracha Mayo Dipping Sauce! Please don’t accuse me of serving under-seasoned food. Years ago I saw people dipping their French Fries in a bowl of mayonnaise and thought it very strange. And then I was informed the Europeans do it all the time. They say the full earthy flavor of the potatoes are enhanced by the rich, tangy taste of mayonnaise rather than the stronger sweet taste of ketchup. Fast forward to now, and I can justify a mayonnaise-based chili sauce, known as sriracha mayo, as a popular condiment. It’s thicker consistency latches onto a chip and won’t drop off on its way to your mouth. Adding the kick of spice is pure pleasure. Wouldn’t you agree?

SRIRACHA MAYO DIPPING SAUCE

Ingredients: 

1/4 cup mayonnaise 

1 tablespoon sriracha chili sauce

2 teaspoons lemon juice

1 teaspoon soy sauce

1/4 teaspoon kosher salt

1/8 teaspoon red pepper flakes

Instructions: 

In a bowl, combine mayonnaise, sriracha chili sauce, lemon juice, soy sauce, kosher salt, and red pepper flakes. Stir until smooth. Serve as a dipping sauce with Garden Salsa Sun Chips*.

Robust Tomato Sauce

What’s Cooking in Gail’s Kitchen? Food Plating: Robust Tomato Sauce! Tomatoes are my superfood. Slow-cooked tomatoes are my staple. Honestly, I can justify making tomato sauce all day long to anyone who would listen. What it “simmers” down to is a savory, garlicky, fragrance that fills the house with anticipation of what comes next. Call me a cheater, which I won’t deny, because I am a snob about beginning with San Marzano plum tomatoes grown in Italy. My eighth grade home economics teacher taught me to keep things simple. She said, “High quality ingredients can make an ordinary dish taste extraordinary. Always read the label!” To this day, I check the ingredient list because too often the additives can be artificial. And nobody wants that. 

ROBUST TOMATO SAUCE

Ingredients: 

2 tablespoons olive oil

1 onion, chopped

1 carrot, peeled and diced

1 garlic cloves, minced

28-ounce can whole peeled Italian tomatoes

3 ounces tomato paste

2 tablespoons fresh basil, chopped

1/4 teaspoon dried oregano

1/4 teaspoon red pepper flakes

1 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 tablespoon sugar

Instructions:

In a large pan over medium heat, warm the olive oil. Add chopped onion and diced carrot. Sauté for 8 minutes, or until vegetables are softened. Add minced garlic; cook 2 minutes longer. Remove from heat. Purée tomatoes with sauce in blender. Add to the onion-carrot mixture in the pan. Stir in tomato paste, fresh basil, dried oregano, red pepper flakes, kosher salt, black pepper, and sugar. Reduce heat to medium-low setting and allow mixture to simmer for 25 minutes. Footnote: Robust Tomato Sauce can be simmered on low heat for up to 2 hours, stirring occasionally. 

Quesadilla Chicken Lavash

What’s Cooking in Gail’s Kitchen? Food Plating: Quesadilla Chicken Lavash! By now you’ve no doubt heard that lavash Turkish flatbread is a healthier alternative to flour tortillas. Not only is it lower in calories, it is higher in fiber, especially if you choose the flax, oat bran, whole wheat variety. Choose your protein, in this case chicken, to help keep you full throughout the day. Add sautéed veggies, radishes green peppers, or mixed greens to ramp up the fiber even more. Flavor is your friend. Now you’re talking about healthy eating. Well done!

QUESADILLA CHICKEN LAVASH 

Ingredients: 

1 sheet of lavash flatbread

1 tablespoon olive oil 

1/2 cup precooked chicken, shredded

1/2 teaspoon fajita seasoning

1/8 teaspoon red pepper flakes

1/2 cup Mexican cheese blend, finely shredded

Ranch dressing, for drizzle 

Cherry tomatoes and lime wedges, for garnish

Instructions: 

Preheat oven to 400°. Place a silicone mat on a heavy baking sheet. Brush one side of the lavash bread with olive oil. Place the oiled side down on the silicone mat. Set aside. To prepare the cooked chicken, add it to a bowl. Sprinkle fajita seasoning over all. Add red pepper flakes. Gently toss the chicken mixture. To assemble the quesadilla, sprinkle half the shredded cheese over one half of the lavash bread. Arrange the chicken mixture over the cheese layer. Sprinkle remaining cheese over the chicken layer. Fold the empty half of the lavash over the filled half. Press down lightly. Bake the quesadilla for 5 minutes; flip and bake 5 minutes longer, or until the cheese is melted and the lavash is crispy. Remove the chicken quesadilla from the baking sheet. Slice it into wedges. Drizzle with ranch dressing. Serve immediately with cherry tomatoes and lime wedges, for garnish. 

Pine Berry Appetizer

What’s Cooking in Gail’s Kitchen? Food Plating: Pine Berry Appetizer! If you are a strawberry lover, think outside the box with a tropical twist this unique berry carries. The texture remains sweet and juicy, yet highlights subtle notes of pineapple, pear, and apricot. The creamy white flesh is an indication the berry is ripe enough to eat. I only mention that because on first glance you may suspect I am trying to encourage you to eat underripe strawberries. I think not. The “seeds”, so to speak, should appear red in color. For those who wonder, pine berries are the natural result of cross-pollination. This often does make them a little more expensive than regular strawberries. For special occasions, they are perfect! 

PINE BERRY APPETIZER

Ingredients: 

8 ounces Florida pine berries, washed, patted dry, and cut in half

4 ounces goat cheese, room temperature

2 ounces cream cheese, softened

1/2 teaspoon Tupelo honey

1 pinch sea salt (optional)

Fresh thyme, for garnish

Rosemary Sesame Flatbread Crackers, for serving

Instructions: 

In a mixing bowl, combine goat cheese, cream cheese, and Tupelo honey. Blend until thoroughly mixed and the consistency of whipped cream. Taste before adding a pinch of sea salt. Refrigerate for 30 minutes. To assemble the pine berry appetizer, slather a dollop of whipped cheese onto a rosemary sesame flatbread cracker. Garnish with a sprig of fresh thyme. Serve immediately.
