Before you turn the page, let me clarify…you can choose to omit the rum in this recipe and substitute with water and opt for rum extract instead. Either way, if you’re a raisin-lover, this version puts the “plump” in raisin to make them moist and chewy. In the time it takes to preheat the oven and assemble the remaining ingredients, the raisins are ready to use. Trust me, everyone will thank you!

RUM RAISIN COOKIES

Ingredients:

2 cups raisins

1 cup dark rum

3 1/2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon sea salt

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1 cup butter, softened

1 3/4 cup sugar

2 eggs, slightly beaten

1 teaspoon vanilla extract

1 teaspoon almond extract

1/2 cup almonds, chopped

Instructions:

Preheat oven to 350°. In a medium saucepan, combine raisins and rum. Bring to a boil; boil for 3 minutes. Reduce heat and simmer uncovered for 15-20 minutes until the liquid is absorbed and the alcohol has evaporated. Set aside; do not drain. In a medium bowl, combine flour, baking powder, baking soda, sea salt, cinnamon, and nutmeg. Set aside. Cream butter. Gradually add sugar, mixing until creamy. Add the slightly beaten eggs, vanilla extract, and almond extract. Gradually add the flour mixture, stopping occasionally to scrape the sides of the bowl. Mix thoroughly before folding in the raisins and chopped almonds. Drop with a tablespoon 2″ apart on greased cookie sheets. Bake 12-13 minutes. Cool on wired rack.

Quattro Formaggio Ravioli

What’s Cooking in Gail’s Kitchen? Eat More: Quattro Formaggio Ravioli! Four different cheeses in one dish make me think I died and went to Heaven. Or at the very least, I did something right. Let me share with you a little secret. It doesn’t matter that you use store-bought ravioli because it’s the cheese sauce you practically slurp with a spoon!

QUATTRO FORMAGGIO RAVIOLI

Ingredients:

2 tablespoons Bleu cheese, crumbled

1/4 cup Parmesan cheese, shredded

1/4 cup Mozzarella cheese, shredded

1/4 cup butter

1 cup light cream

4 ounces Neufchâtel cream cheese

1 teaspoon herbs de Provence

Fresh Basil

1 cup marinara sauce

Stuffed Ravioli, any variety

Instructions:

Combine Bleu, Parmesan, and Mozzarella cheeses in a bowl. Set aside. In a medium saucepan, over low heat, melt butter. Do not scorch. Add light cream and bring to boil. Slowly add Neufchâtel cream cheese in chunks, stirring until melted. Reduce heat to medium-low. Gradually add remaining cheeses, stirring constantly until smooth. While stirring return to boil for one minute. Add herbs de Provence. Reduce to simmer. Warm marinara sauce in another pan or microwave-safe dish. Cook ravioli as directed on package. Drain ravioli and divide into portions. Spoon cheese sauce and marinara sauce over cooked ravioli. Sprinkle with extra cheese. Garnish with fresh basil. Serve with garlic bread drizzled with olive oil.

Philly Cheesesteak Bolillo

What’s Cooking in Gail’s Kitchen? Eat More: Philly Cheesesteak Bolillo! While at the local bakery, I couldn’t help but choose these nicely shaped oval bolillo rolls. Their lack of crunchy outer crust, like the baguette, made them more appealing for the cheese-laden spicy shredded beef I planned as a main course. Don’t you just love it when you get extra servings from another day’s roast sirloin? The opportunities are endless. This time around the onions, green peppers, red peppers, and mozzarella cheese all team together for that infamous cheesesteak sandwich to die for. Add a slice of tomato and a couple sweet gherkin pickles to punch up the taste buds. Any takers?

PHILLY CHEESESTEAK BOLILLO

Ingredients:

1 pound roast sirloin, cooked and shredded

1/2 green pepper, chopped

1/2 yellow onion, chopped

1/2 red pepper, chopped

1/4 cup Worcestershire sauce

1/4 cup soy sauce

2 teaspoons lemon juice

2 teaspoons vinegar

1-2 tablespoons honey

1 tablespoon whole grain mustard

1 teaspoon fennel

1/2 teaspoon seasoned salt

1/8 teaspoon black pepper

1/2 teaspoon red pepper flakes

2 bolillo sub rolls, halved

2 tablespoons butter

1/8 teaspoon garlic powder

1 cup mozzarella cheese, shredded

Instructions:

In a large skillet over medium heat, add shredded sirloin beef, green pepper, onion, and red pepper. Combine Worcestershire sauce, soy sauce, lemon juice, vinegar, honey, and whole grain mustard. Stir well. Pour over meat and vegetables. Add seasoned salt, black pepper, and red pepper flakes. Heat to boiling, then reduce heat to low; simmer until almost all liquid is absorbed and meat is tender, approximately 20 minutes. Preheat oven to Broil. Cut bolillo subs in half lengthwise and scoop out the centers to make a well. Butter the faces generously. Sprinkle with garlic powder. Broil on high until the tops are golden, 2-3 minutes. Spoon meat mixture onto each half. Divide cheese over all. Return to broiler to melt the cheese. Watch carefully. Remove from oven and match the sandwich sides together to form a sandwich.

Oatmeal Chocolate Chip Skillet Cookie

The oven is on for less than half an hour with results that leave your home smelling like a bakery. Sometimes you just don’t have time to make several batches of cookies. By baking all the dough in an iron skillet, the end result will still yield enough for a crowd. Cut the giant cookie into pie-size portions with a scoop of ice cream on top or divide it into squares for finger-food munching.

OATMEAL CHOCOLATE CHIP SKILLET COOKIE

Ingredients:

1 cup brown sugar

1/2 cup butter, softened

1 egg, room temperature

1 teaspoon vanilla

1 cup flour

1/8 teaspoon salt

1/4 teaspoon baking soda

1/4 teaspoon cinnamon

1 cup oatmeal

3/4 cup semi-sweet chocolate chips

1/4 cup peanut butter chips

Topping:

1/4 cup chocolate and peanut butter chips, mixed

1/8 teaspoon sea salt crystals

Instructions:

Preheat oven to 375°. Grease a 10″ iron skillet. In a mixing bowl, beat butter and brown sugar until fluffy. Add egg and vanilla. Continue beating until creamy. In another bowl combine flour, salt, baking soda, and cinnamon. Whisk until blended. Slowly add dry mixture to wet ingredients until flour is incorporated. Add oatmeal to dough. Blend well. Fold in chocolate and peanut butter chips. Spread cookie dough into the greased skillet. Top with mixed blend of chocolate and peanut butter chips. Sprinkle with sea salt crystals. Bake for 25 minutes or until golden brown on top. Serve warm with a scoop of vanilla bean ice cream.

Nugget Sesame Chicken

You get a shortcut for creating a Hump Day meal that satisfies even the pickiest eater. I mean, who doesn’t love chicken nuggets? The next time you drive-thru your neighborhood fast-food chain, order an extra portion of chicken nuggets to place in the freezer. Since they’re already precooked, when you’re ready to have them for dinner, let them thaw in the refrigerator. Then crisp them up in a 350° oven for 5-10 minutes before adding them to this incredible homemade sauce. It’s as simple as ABC. Life just got easier.

NUGGET SESAME CHICKEN

Ingredients:

20 pieces of chicken nuggets

1/4 cup low-sodium chicken broth

2 tablespoons hoisin sauce

1/4 cup apricot jam

1 tablespoon soy sauce

2 tablespoons rice vinegar

1 teaspoon Chinese chili paste

2 teaspoons sesame oil

1/4 cup honey

2 teaspoons corn starch

1/2 cup water

10 dried whole chilies

2 tablespoons vegetable oil

2 cloves garlic, chopped

1 teaspoon toasted sesame seeds

3 green onions, snipped

Instructions:

In a medium saucepan over low heat, combine chicken broth, hoisin sauce, apricot jam, soy sauce, rice vinegar, chili paste, sesame oil, and honey. Bring to a boil, stirring occasionally. Dissolve cornstarch into water. Stir until smooth. Gradually pour into saucepan, mixing well boil for 2 minutes until the sauce thickens. Add whole chilies and chicken nuggets. Toss to combine. Reduce heat to simmer to keep sauce warm with a thick glossy glaze. In a small skillet, sauté garlic cloves until fragrant, no longer than 1 minute. Add garlic and toasted sesame seeds to sauce. Garnish with green onion snips. Serve with rice. *

One scoop of a chip and you may find yourself filling up before the meal is served. No worries. Sit back, relax, add a classic lime margarita on-the-rocks, and turn it into “Happy Hour”.

‘MAZING MANGO SALSA

Ingredients:

2 honey mangoes, peeled and diced

1/2 Vidalia onion, chopped

1 Roma tomato, diced

1 tablespoon pimento, chopped

3 jalapeño peppers, seeded and chopped

1/4 cup cilantro, finely chopped

3 tablespoons lime juice

1 tablespoon brown sugar

1/4 teaspoon sea salt

Instructions:

Combine all ingredients in a medium bowl. Toss gently to mix. Refrigerate one hour. Serve with warm salted tortilla chips.

Leeks and Ham Gnocchi

What’s Cooking in Gail’s Kitchen? Eat More: Leeks and Ham Gnocchi! Leeks are nothing more than giant green onions. They add a mild onion-like taste to any dish and seem to be more flavorful when cooked. By combining them with gnocchi and ham, the leeks turn these little dumplings into a gourmet Mac ‘n Cheese alternative that is pleasing to the palate. The biggest challenge lies in preparing leeks for eating. After all, like an onion or shallot, they have a small bulb and a long stalk of green tightly-wrapped leaves. First I trimmed the tops and cut off the roots. Then I found that when filling the sink with water and submerging them, what little dirt that collected near the leaves fell to the bottom. Once rinsed, they were easy to slice and fun to separate the rings. Use what you need and freeze the rest for soups, casseroles, or other dishes later on. Isn’t it fun to try new things?

LEEKS AND HAM GNOCCHI

Ingredients:

1 leek, sliced into rings

1 cup chopped ham

1 16-ounce package gnocchi

8 ounces Havarti cheese, shredded

1 1/4 cups light cream

3 tablespoons flour

1/8 teaspoon garlic powder

1/8 teaspoon red pepper flakes (optional)

1/8 teaspoon black pepper

2 slices Hawaiian bread, torn

2 tablespoons butter, melted

Fresh chives, for garnish

Instructions:

Preheat oven to. 350°. Grease lightly 3 individual casserole dishes. In a medium bowl, combine ham, gnocchi, and Havarti cheese. Divide evenly between casseroles. Whisk together light cream, flour, garlic powder, red pepper flakes, and black pepper until smooth and flour is dissolved. Pour over gnocchi, dividing equally. In a bowl, place bread and leeks. Pour melted butter over all to coat. Gently toss. Sprinkle over gnocchi casseroles. Bake 35 minutes until golden and bubbly. Let stand 5 minutes. Garnish with fresh chives. Serve warm.

Kosher Salt Dill Pickles

What’s Cooking in Gail’s Kitchen? Eat More: Kosher Salt Dill Pickles! When I visited the Farmers Market this week, I was impressed by the cute little cucumbers in abundant supply. The fact that my dill was showcasing its yellow flowery blossoms in proud display earlier that morning nudged me to take advantage of both. Canning a jar of classic dill pickles was about to become the focus of the day. So….when choosing a variety of cucumber to pickle remember three things: 1.) Choose small cukes about the size of your thumb. 2.) Make sure they have a thicker skin in order to maintain a crunchy snap. 3.) And remember to ask for the ones that were just freshly picked. Time is of the essence. The crucial time to pickle is as soon as practical after picking. This recipe will make one jar, which is exactly what I wanted.

KOSHER SALT DILL PICKLES

Ingredients:

1 pound pickling cucumbers; cut off tips of both ends and slice in half

2 fresh dill sprigs, with heads

1 cup filtered water

1 cup distilled white vinegar

4 tablespoons sugar

2 tablespoons Kosher salt

2 garlic cloves

1 teaspoon black peppercorns

1/8 teaspoon red pepper flakes

Instructions:

In a medium saucepan, combine water, vinegar, sugar, Kosher salt, garlic, peppercorns, and red pepper flakes. Heat to boiling. Stir to dissolve sugar and salt. Remove the pan from the heat and let it sit for 10 minutes. Meanwhile in a clean quart jar, place one dill sprig and one garlic clove in bottom of jar. Arrange cucumber halves against the side of the jar working your way to the center. Do not crush. Add one more dill sprig. Pour cooled juice into the jar. Be sure to include the spices. Stop liquid within 1/4″ of top. Seal and store in refrigerator for 12 hours before opening. Keep refrigerated.

By using your favorite herbs and spices, the air is filled with an aromatic essence that draws everyone to the kitchen. Keep in mind, Patience is key. Follow this step-by-step recipe for a be-all and end-all gourmet fluffy rice pilaf that can be eaten as a main meal or partnered with a meat portion. I served it with Nugget Sesame Chicken, which you’ll be seeing a little later on. Stay tuned.

JASMINE RICE PILAF

Ingredients:

2 tablespoons olive oil

1 small onion, chopped

2 cloves garlic, finely chopped

1/2 teaspoon seasoned salt

1/8 teaspoon black pepper

1/2 teaspoon cumin powder

1 cup long-grain jasmine rice

1 1/4 cup low-sodium chicken broth

1/4 cup white wine

1-2 tablespoons butter

4 ounces prosciutto, cubed

1/2 cup sweet baby peas

1 egg, beaten

1-2 tablespoons soy sauce

Fresh chives, snipped

Instructions:

In a medium saucepan over medium-high heat, combine olive oil, onion, garlic cloves, seasoned salt, and pepper. Cook until onion is translucent, stirring often, approximately 45 seconds. Sprinkle in cumin powder. Add jasmine rice; stir to coat. Cook 3 minutes until grains turn toasty. This prevents clumping later on. Add low-sodium chicken broth and wine. Bring to boil then reduce to simmer. Cover and cook until the liquid is absorbed, approximately 15 minutes. Remove from heat and fluff with fork. Take a cotton tea towel and cover the pan. Place the lid over the towel to absorb the steam; let rice rest for 10 minutes. Meanwhile, in a small skillet, heat butter on low. Add cubed prosciutto, peas, and beaten egg. Stir while cooking until egg is scrambled. Add soy sauce to taste. Before serving the rice, fold in the prosciutto mixture. To complete the pilaf, garnish with fresh chive snips.
