A Celebration of 200 Posts!

Thank you to WordPress and my legion of Followers for this avenue of encouraging words. The applause is rewarding. Mile markers are therapeutic as well as uplifting along the way. I have currently crossed the threshold of 200 posts, which is no small feat. πŸ“ As many of you are aware, the discipline and commitment dedicated to the blogosphere can sometimes seem like a full-time job. But receiving a “Like”, “Comment”, “Award Nomination”, or “Challenge Invitation” make it all worthwhile. Building each other up in words of genuine praise show concern and amity. Eating My Way Through the Alphabet; Letter R

What’s Cooking in Gail’s Kitchen? Home Cooking: Rolled Fillets of Chicken! There seems to be a hundred ways of serving chicken, but I like this one best because it makes a savory meal that is also filling. Split one serving with your partner and add another vegetable side dish for a healthy alternative. I omitted salt in lieu of herbs. 
ROLLED FILLETS OF CHICKEN
Ingredients:

1 pkg. Stove Top Chicken Stuffing

2 stalks celery, diced

2 cups chicken broth

1/4 teaspoon rosemary

1/4 teaspoon sage

1/4 teaspoon thyme 

1/4 teaspoon parsley

4 chicken breasts

1 cup baby carrots

1 cup chopped celery
Instructions:

Preheat oven to 400Β°. In a medium pan, bring one cup chicken broth and seasonings to a boil. Add stuffing mix and diced celery. Mix, cover, and set aside for 5 minutes. Flatten chicken breasts with a rolling pin. Fill with stuffing and roll up. Place seam side down in covered casserole dish. Sprinkle herbs on top. Surround chicken with celery and carrots. Add one cup of chicken broth to the bottom of the dish to keep it from going dry. Cover tightly. Bake for 30 minutes or until chicken is cooked through. Remove lid and butter tops of chicken. Then sprinkle with parsley. Bake 5 minutes longer uncovered. 
*The pan drippings can be made into gravy or simply spoon the juice over the chicken for a moist finish.

Eating My Way Through the Alphabet; Letter Q

What’s Cooking in Gail’s Kitchen? Home Cooking: Queso Casa Dip! Here’s an all-around favorite for any Summer gathering. The cheese delivers a smooth creamy taste followed by a “bite” of chile! Some say it’ll curl the tines of a fork. Just kidding! But seriously, it’s so popular you’ll have your friends asking for the recipe! 
QUESO CASA DIP
Ingredients:

4 cups cheddar cheese, extra-sharp finely shredded 

1 1/2 cups Monterey Jack cheese, shredded 

1 tablespoon cornstarch 

2 tablespoons butter

1/7 teaspoon garlic powder

1/2 cup milk

1/4 cup Greek yogurt

1 ghost chile pepper, cut-up and seeds discarded*

2 Roma tomatoes, cut-up

2 green onions, cut-up

I 16-ounce can green-chile and lime refried beans

Greek Yogurt and jalapeΓ±os for garnish

*Ghost peppers are extremely hot, so you may substitute jalapeΓ±o peppers instead. 
Instructions:

Empty cheese into a large bowl, sprinkle with corn starch, and toss to coat. Melt butter into a large saucepan and add garlic, cheeses, and milk. Set on low heat and cook slowly, stirring mixture to keep from scorching. As it melts, fold in the 1/4 cup of Greek yogurt. Continue for 10-15 minutes until mixture is smooth and velvety. Add fresh tomatoes, green onions, and the ghost pepper. Stir gently to blend. Keep warm. Meanwhile, place refried beans in a microwave-safe dish and heat through. To serve, layer refried beans on a platter, pour Queso dip over top. Dollop with Greek yogurt. Serve with tortilla chips, cafΓ© style.
