You may have seen a squeeze bottle, among other sauces, in a condiment caddy placed on each table at a restaurant specializing in sushi. Those who use unagi regularly may choose to call it “Eel Sauce”, but I’ve found that term used for shock-value more than anything else, especially among family members. If you were ordering grilled eel, well sure by all means, call it that. More importantly, let’s talk about taste because unagi sauce is that thick, sweet, salty stuff you could literally slurp with a spoon. I’d recommend adding a mound of steamed rice to your plate so it wouldn’t be so obvious.

UNAGI SAUCE

Ingredients:

5 tablespoons sugar

1/2 cup mirin (or dry white wine)

3 tablespoons sake (or Chinese rice wine)

1/2 cup soy sauce

Instructions:

Place a saucepan over Medium heat. Add sugar, mirin, and sake. Mix well. Add the soy sauce; stir to blend. Bring mixture to a boil, stirring occasionally. It allows the sugar to dissolve equally. Reduce heat to Simmer. Stir occasionally for 10 minutes longer. Bubbles will appear around the surface of the liquid. Remove pan from heat and allow to cool. Once it reaches room temperature, it is ready to serve. Store leftovers in a covered jar in the refrigerator.

Turmeric can usually be found in the spice aisle of your favorite grocery store. Its golden-orange color makes a quick scan for identification pretty easy. The aroma has an earthiness to it, which is a compliment for vegetables and beef. Once you try it, your mind may wander to curry dishes, chili soup, and beyond.

TURMERIC ROAST BEEF

Ingredients:

1 1/2 pound chuck roast

2 cups beef broth

1 teaspoon turmeric

1 tablespoon Salty Wahine Hawaiian Seasoning*

5-6 potatoes, washed with skin on, cut into bite-size chunks

16 ounces baby carrots, whole

10 ounces pearl onions, whole

1/4 teaspoon parsley flakes

Instructions:

Place the chuck roast in the slow cooker. Pour beef broth over meat. Sprinkle with turmeric and Salty Wahine Hawaiian Seasoning. Set slow cooker on Low heat for 4 hours. After that time, add the potato chunks, baby carrots, and pearl onions. Continue on Low setting for 4 more hours. Remove roast and vegetables to a platter. Garnish with parsley flakes. Reserve juices for au jus, gravy base, or soup starter.

Before you sit down to watch your favorite sports team or series on Netflix, throw together a sheet pan of nachos to snack on. It’s the perfect food for grazing because everyone seems to like them. First of all, nachos are finger food. They’re also snackable ( is that a made-up word?) They feel like a treat or a party’s going on. And there’s enough for everyone. Add some sour cream, guacamole, and sliced jalapeños, if you choose. On second thought, better double the recipe if you’re expecting more than two or four. Be forewarned.

SCOOP CHILI CHEESE NACHOS

Ingredients:

9.25 ounce bag Scoops® corn chips*

15-ounce can chili, any brand

15-ounce can black beans, rinsed and drained

8 ounces sharp cheddar cheese, shredded

2-3 tomatoes, diced

2 green onions, snipped

1 teaspoon red pepper flakes

Sriracha sauce, for drizzling

Instructions:

Preheat the oven to 400°. Spray a baking sheet with nonstick oil. Set aside. In a glass mixing bowl, combine chili with black beans. Warm slightly in the microwave. Fill each corn chip with a tablespoon of filling. Place chili chip on the prepared baking sheet, forming a single layer. Repeat until the tray is full. Layer the shredded cheese over all. Place diced tomatoes onto cheese. Finish with green onion snips and red pepper flakes. Bake 15-20 minutes until cheese is melted. Serve with sriracha sauce for extra zing.

Raspberry Pistachio Brie

What’s Cooking in Gail’s Kitchen? Bright Ideas: Raspberry Pistachio Brie! If you need a reason to make an appetizer, read on. It works beautifully as Brie for brunch, a romantic “date night” for two, or a festive dessert while sipping on espresso. Think about it. The cheese itself is so creamy, with a slight robust flavor. The skin can be chewy. Either you like it or you don’t. The raspberry jam has a remarkable sweetness that pairs well with the nuttiness of pistachios. Everyone wins.

RASPBERRY PISTACHIO BRIE

Ingredients:

8-ounce wheel of Brie cheese

1 tablespoon sea salt butter, softened

1/4 cup raspberry jam

1/4 cup pistachios, roughly chopped

Instructions:

Preheat oven to 350°. Unwrap the Brie wheel. Lightly score the top so the skin can absorb the ingredients. Transfer the wheel to an ovenproof dish. Spread the sea salt butter over the top of the cheese. Layer with dollops of raspberry jam. Sprinkle with chopped pistachios. Bake for 12-15 minutes, or until the cheese is melted and gooey. Remove baked Brie from the oven. Serve warm with slices of lightly buttered baguette toast.

Quirky Clean Salad

What’s Cooking in Gail’s Kitchen? Bright Ideas: Quirky Clean Salad! We’ve all heard the word “clean” when referring to food. Once upon a time, it meant wash the vegetables before eating them. Now it seems to have multiple meanings. Some of those phrases include “unprocessed foods, organically grown, no preservatives, low carbs, gluten-free, free-range, or no high fructose corn syrup.” Basically, it translates to what is clean for YOU. My unwritten rule is, if I have a craving for it, I’m eating it. Perhaps that’s why I added the word “Quirky” to the title. You do what is right for you. Are we good?

QUIRKY CLEAN SALAD

Ingredients:

1 head broccoli, florets only and chopped

1 green apple, peeled, cored, and diced

1/4 cup almonds, chopped

1/4 cup green olives, sliced

1/4 cup raisins

5 pitted dates, chopped

2 slices bacon, crispy cooked and crumbled

2 tablespoons lime juice

2 tablespoons olive oil

1 tablespoon Dijon mustard

1/2 tablespoon garlic wine vinegar

1 tablespoon natural honey

1/4 teaspoon Himalayan salt

1/4 teaspoon cracked black pepper

1 teaspoon rosemary, chopped

Instructions:

In a large mixing bowl, combine broccoli florets, diced apples, chopped almonds, sliced green olives, raisins, chopped dates, and crumbled bacon. Gently toss to mix. In another bowl, whisk together lime juice, olive oil, Dijon mustard, garlic wine vinegar, natural honey, Himalayan salt, cracked black pepper, and chopped rosemary. Pour the vinaigrette over the broccoli salad; mix thoroughly. Serve immediately.

PB, Bacon & Jam Burgers

What’s Cooking in Gail’s Kitchen? Bright Ideas: PB, Bacon & Jam Burger! Let the debate begin over peanut butter on a hamburger or an American cheese slice…because you can’t have both. Bacon gets to stay since everyone loves bacon. Amirite?! Peanut butter’s nutty taste actually compliments the beef patty. And it’s salty enough to take the place of cheese. The strawberry jam, with a sprinkling of hot pepper flakes, tickles the taste buds at the back of your throat making it an insanely good experience. I’m kind of a snob now that I’ve tasted brioche buns. Their buttery flavor, and the fact that they keep everything contained, is worth the cost difference. Are we good? Then carry on without regrets.

PB, BACON & JAM BURGER

Ingredients:

1 pound lean ground beef

1/2 teaspoon sea salt

1/8 teaspoon black pepper

4 tablespoons natural peanut butter, creamy variety

1-2 tablespoons sriracha sauce

4 tablespoons strawberry jam

1/8 teaspoon red pepper flakes, optional

8 slices bacon, cooked until crispy

4 lettuce leaves

4 brioche hamburger buns

Instructions:

Combine ground beef, sea salt, and black pepper in a mixing bowl. Mix well. Divide meat into four equal portions. Flatten into hamburger patties. Set aside. Preheat grill to medium-high heat. Meanwhile, combine the natural peanut butter with sriracha sauce. Stir until smooth. Grill burgers for 4 minutes per side or until a meat thermometer reads 160°F. To build-the-burger, layer two strips of bacon on the bottom bun. Place the hot hamburger patty over the bacon. Immediately spread the peanut butter mixture on top. It will begin to soften and melt. Drop a dollop of strawberry jam on top. Sprinkle red pepper flakes into the jam, if desired. Finish with a lettuce and the top of the brioche bun. Serve immediately.
