What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Mashed Potato Fritters! Time to stretch the budget a little bit. Whether you have leftover mashed potatoes from another meal or purchase your favorite prepared brand at the grocery store, this recipe offers a flavorful experience that is unforgettable. Is it the gooey combination of cheeses? The crisp potato cake with the fluffy center? Or perhaps it’s the zing of spice that piques the taste buds. For me it’s all about nostalgia. My mother made them for supper when I was a child.
MASHED POTATO FRITTERS

1/4 cup cheddar cheese, grated

In a mixing bowl, combine mashed potatoes, yellow onion, cheddar cheese, parmesan cheese, beaten egg, flour, cornmeal, garlic powder, and cracked black pepper. Mixture should be stiff. By heaping spoonful, form a small disc with your hands, about 1/2”-inch thick. Set aside. Repeat with remaining mixture. In an iron skillet, warm vegetable oil over medium-high heat. Meanwhile, line a baking sheet with paper towels. Place potato cakes in the skillet without touching sides. Cook 2-3 minutes until deep brown. Flip and cook 2-3 minutes longer. What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Lemon Garlic Hummus! If you go crazy over hummus and veggies, here’s a variation that adds flavorful notes of citrus. The use of pink-colored Himalayan salt equals an added bonus of less sodium than table salt plus trace elements of healthy minerals like iron, which translates to protein that maintains good body chemistry. But that’s the boring news. The best part, in my opinion, is the guilt-free buttery taste of hummus. Discover how one creamy spoonful practically melts in your mouth. Then scoop away with crisp and zesty radish slices. It’s finger food on steroids.

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: KFC Copycat Coleslaw! Instead of running into town to the local chicken drive-through for the national brand of coleslaw we’re all familiar with, you can make this popular side dish at home. It goes well on pork sliders, stuffed into fish tacos, or layered over sloppy joes. Knowing you made it fresh may ease your mind when it comes to being susceptible to all the germs running rampant right now. What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Jam Pockets! Here’s a versatile quick recipe that makes a wonderful dessert, breakfast pastry, or afternoon snack. Prepared pie crusts or pizza dough from the dairy case in the supermarket can be used. Plus, any flavor of fruit jam will complement the smooth creamy filing inside. Although I didn’t add them here, I think sliced almonds would make a nice addition as well. The buttery crust serves as a nice “pocket” for the burst of fruity sweetness inside. Try as I might, it’s a challenge to stop at just one. Perhaps I won’t.
JAM POCKETS
Ingredients:
1 refrigerated pie crust, softened as directed on package
4 ounces Neufchâtel cheese, softened
1/8 teaspoon almond extract
1/3 cup powdered sugar
1/4 cup four-fruit jam
1 egg, beaten
1/4 cup sugar
Instructions:
Preheat oven to 400°. Line a baking sheet with parchment paper. Set aside. On a lightly floured surface, roll out refrigerated pie crust to 1/4-inch. Cut into twelve 3-inch rounds. Set aside. In a bowl, combine Neufchâtel cheese, almond extract, and powdered sugar. Stir until smooth. Drop a teaspoon of cheese mixture into the center of each round. Top with a dollop of fruit jam. Brush the inside edges with beaten egg; fold in half. Crimp edges with a fork to seal. Brush top and bottom with more egg wash; dust both sides with sugar. Pierce the top of each pocket. Transfer to prepared baking sheet. Repeat steps for remaining jam pockets. Bake 12-15 minutes, or until golden brown. Remove from baking sheet. Cool slightly. Serve the reserve creamed cheese mixture as a dipping sauce.
What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Instant Egg Brekkie! Don’t you love it when you discover a healthy breakfast that can be prepared in a few minutes? Whenever I traveled with my husband, I seemed to be challenged with minimal ways to prepare meals. The one common denominator was a microwave and hot plate. Let me start off by saying, eggs can be tricky in a microwave. Two secrets I want to share: always pierce the egg yolk (or it will explode) and cook eggs on a low power setting in short segments. If you can master those two things, a dozen eggs will go far in the mini-fridge.
INSTANT EGG BREKKIE
Ingredients For One Serving:
3-5 fresh baby spinach leaves, for charring
1 nip seasoned salt
6-7 fresh baby spinach leaves
1/2 teaspoon water
1 slice cherrywood deli ham, gently torn
1 teaspoon feta cheese, crumbled
1 large egg
1 pinch Herbes de Provence seasoning
Garnish with charred spinach leaves and radish slices
Baguette slices
Instructions:
Preheat stovetop grill pan on highest setting for one minute. Spray baby spinach leaves with nonstick oil. Sprinkle with seasoned salt. Place the prepared spinach leaves directly on the grill pan. As they begin to char, using a tongs, flip them over. Watch carefully. When leaves appear slightly wilted and charred, transfer to a paper towel-lined plate. Set aside for garnish. Meanwhile, spray a ramekin with nonstick oil. Pack a layer of baby spinach leaves in the bottom of the dish, pressing down to create an even level. Drizzle with water. Gently tear the cherrywood deli ham over the spinach layer. Add the crumbled feta cheese. Crack an egg over the top. Pierce the egg yolk with a sharp knife or toothpick. Sprinkle with Herbes de Provence seasoning. Cover loosely with a paper towel. Microwave for one minute on 30% power. Gently swirl runny egg white. Microwave for one minute longer on 30% power. The yolk will be slightly runny. Transfer ramekin to a plate. Arrange the charred spinach leaves on top. Garnish with radish slices. Serve with baguette slices. Repeat for number of portions needed.

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Hoosier Hot Dish! When I moved to Indiana over 30 years ago, it didn’t take me long to hear the term “Hoosier”. I knew it was a nickname for the State’s residents. But, honestly, I wondered how it originated. I had no idea it came into popularity over 200 years ago. The story that was told to me went something like this. Along the Ohio River, in the hills of southern Indiana, settlers lived and worked around the riverfront. As boatmen passed by on barges taking corn to New Orleans, the countrymen would call out, “Who’s Yere?” to assure they were friend, not foe. It happened so often, in time those workers became known as people of the “Hooshier” State. My experience in hearing about this one-pot meal for the first time was just as funny. A coworker said she was making Hoosier Hot Dish for supper. When I asked her for the recipe, she laughed and told me there wasn’t one. She said you just throw everything in a pot on the stove and eat it when it’s done. I narrowed it down a little bit more for you. Go figure.
HOOSIER HOT DISH
Ingredients:
1/2 yellow onion, thinly sliced
1 tablespoon olive oil
1/4 teaspoon seasoned salt
1/8 teaspoon garlic and herb seasoning
15-ounce can cut green beans, with liquid
1 pound potatoes, quartered, skin on
1 pound smoked sausage, cut into 1/2” chunks
Instructions:
Warm olive oil on medium-low setting in the bottom of a stock pot. Add sliced onions, seasoned salt, garlic and herbed seasoning. Sauté 20 minutes until onions are a light brown. Add green beans with liquid, quartered potatoes, and smoked sausage chunks. Cover and Cook 30-40 minutes over medium heat or until potatoes are fork tender. Hot Dish will thicken. Add 1/2 cup water, if necessary, to keep things from boiling dry or scorching. Serve with cornbread.
