QUICK CHERRY NUT BREAD

Ingredients:

1 cup butter, room temperature

2 cups sugar

4 eggs

1 teaspoon vanilla extract

3 cups flour

1 teaspoon baking powder

1/2 cup milk

1/2 cup almonds, chopped

1 cup chopped maraschino cherries

Instructions:

Preheat oven to 325°. Grease and flour two loaf pans. Set aside. Cream together butter and sugar. Add eggs and vanilla extract. Mix flour and baking powder. RUM RAISIN COOKIES

Ingredients:

2 cups raisins

1 cup dark rum

3 1/2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon sea salt

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1 cup butter, softened

1 3/4 cup sugar

2 eggs, slightly beaten

1 teaspoon vanilla extract

1 teaspoon almond extract

1/2 cup almonds, chopped

Instructions:

Preheat oven to 350°. In a medium saucepan, combine raisins and rum. Bring to a boil; boil for 3 minutes. Reduce heat and simmer uncovered for 15-20 minutes until the liquid is absorbed and the alcohol has evaporated. Set aside; do not drain. In a medium bowl, combine flour, baking powder, baking soda, sea salt, cinnamon, and nutmeg. Set aside. Cream butter. Gradually add sugar, mixing until creamy. Add the slightly beaten eggs, vanilla extract, and almond extract. Gradually add the flour mixture, stopping occasionally to scrape the sides of the bowl. Mix thoroughly before folding in the raisins and chopped almonds. Drop with a tablespoon 2″ apart on greased cookie sheets. Bake 12-13 minutes. Cool on wired rack.

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Raspberry Nut Granola Bars! The jury is still out on whether this fruit crumble can be eaten for breakfast, dessert, or late-night snack. I can attest to the deliciousness of it with my morning cuppa joe. The espresso bitterness balances out the sweetness with perfection. And overnight guests definitely gave it a stamp of approval with a scoop of ice cream on top, making it almost cobbler-like in the dessert category. Giving it a quick zap in the microwave warmed it up as well. My third category, the late-night snack, must also be true. When I arose the next morning, I noticed there was one less serving under the cake dome than when I turned in the night before. Huh. Must’ve been the family dog. After all, we know they watch TV.

RASPBERRY NUT GRANOLA BARS

Ingredients for Bars:

2 cups flour

1 cup sugar

1/2 teaspoon sea salt

3/4 cup butter, unsalted

1 cup raspberry preserves

3/4 cup fresh raspberries

2 teaspoons lemon juice

3 tablespoons brown sugar

1/3 cup cinnamon almond granola

Instructions:

Preheat oven to 350°. Spray a 9”x13” glass baking dish with nonstick oil. Set aside. Using a mixer, combine flour, sugar, and sea salt for about 10 seconds. Slowly add butter, one tablespoon at a time, on low speed until all the butter has been used. In a couple minutes the dough will pull away from the side of the bowl. Reserve a quarter of the mixture; set aside. Transfer the remaining 3/4 dough mixture to the prepared pan, pressing it create a single layer of crust. For the raspberry filling, combine the raspberry preserves, fresh raspberries, and lemon juice. Lightly mash the larger pieces of fruit, yet allowing a chunky appearance. Pour the raspberry filling over the crust, spreading the filling into an even layer. Crumble the remaining dough mixture over the filling. Cover the top with brown sugar. Finish with a layer of cinnamon almond granola. Bake 20-30 minutes, or until the filling is bubbly. The topping will be golden brown. Allow the bars to cool slightly before cutting into squares.

I was beginning to wonder if I fell asleep for a few years, like Rip Van Winkle, and awoke to discover that gigantic plants have overrun the earth. Ordinarily I’d serve chicken salad on a cantaloupe wedge, but guess who has competition now. May the better fruit win.

STRAWBERRIES STUFFED WITH CHICKEN SALAD

Ingredients:

2 romaine lettuce leaves, washed

2 extra-large strawberries, washed

1/2 cup cooked chicken, shredded

2 tablespoons celery, finely chopped

1 tablespoon almonds, chopped

2 tablespoons mayonnaise

Mint leaves, for garnish

Instructions:

Place romaine lettuce leaves on two salad plates. Set aside. Carefully slice strawberries, creating a pinwheel, without cutting through the bottom. Transfer each strawberry to the prepared salad plate. In a bowl, combine shredded chicken, chopped celery, almond pieces, and mayonnaise. Mix well. Fill each strawberry pinwheel with chicken salad. Garnish with mint leaves. Serve chilled.

It also makes the kitchen smell wonderful, like a woodsmoke fire on a pleasant afternoon in autumn. Herbs and spices enhance the flavor. Olive oil makes them sizzle, while giving veggies visibly charred edges. After a few minutes, fresh produce becomes fork-tender and ready-to-serve. But wait, this is only supposed to be a side dish.

BRAZEN BROCCOLI BITES

Ingredients:

3/4 pound broccoli crowns

2 tablespoons olive oil

2 garlic cloves, minced

1/8 teaspoon red pepper flakes

1/4 teaspoon kosher salt

2 tablespoons sliced almonds

1 teaspoon lemon juice

2 tablespoons parmesan cheese, shaved

Lemon slices, for garnish

Instructions:

Preheat oven to 425°. Wash the broccoli; dry thoroughly. Cut the broccoli florets from the stalks, slicing some lengthwise. In a bowl, whisk together olive oil, minced garlic cloves, red pepper flakes, and kosher salt. Add broccoli; toss to coat. Transfer to a rimmed baking sheet. Clean Eating: Zesty Citrus Salad! “If you build it, they will come.” That familiar quote may spark a flicker of remembrance from a popular movie years ago, Field of Dreams. Kevin Costner was the actor who had an idea and went with it. Cooking is like that, in my opinion. For example, build a better salad. It’s pretty simple, actually. Choose garden greens for the foundation, layer on fruits or vegetables for flavor, toss in some crunchy nuts, and slather on the sauce to dress it up. Of course, you can include cheese, meat, and eggs to bulk it up into a meal if you’d like. May as well go ahead and make your own salad dressings. There’s no comparison; being naturally better than bottled, they serve nicely as dips if you have any leftover. No promises on that note, because they’re that good.

ZESTY CITRUS SALAD

Ingredients:

2 cups lettuce, gently torn

1/4 cup celery leaves

1 naval orange, segments cut into thirds

6 strawberries, quartered

2 tablespoons red onion, sliced

2 tablespoons almonds, sliced

Ingredients for Dressing:

1/4 cup garlic wine vinegar

1/3 cup olive oil

2 tablespoons Tupelo honey

1 tablespoon Dijon mustard

1 teaspoon toasted sesame seeds

Dash sriracha

Instructions:

Place torn lettuce into salad bowls. Divide celery leaves between them. Arrange the orange segments, quartered strawberries, and red onion slices. Scatter almonds over all. Set aside to chill in the refrigerator. To combine dressing, whisk together garlic wine vinegar, olive oil, Tupelo honey, Dijon mustard, toasted sesame seeds, and dash of sriracha sauce. Mix well. Drizzle over salad before serving.

But I don’t wanna try something new, you say. What if I don’t like it? That’s what I thought until I discovered another way to keep fish part of a healthy diet. Butter. And almonds. The wonderful natural flavor of butter is milky and creamy. Pair that with the crunch and depth of flavor in toasted almonds for a heavenly combination.

NUTTY FISH FILLETS

Ingredients:

1/2 cup almonds, sliced

2 tilapia fillets

1/4 teaspoon sea salt

1/8 teaspoon black pepper

3 tablespoons butter

2 teaspoons olive oil

Juice of 1 lemon

1/4 teaspoon crushed parsley

Celery leaves, for garnish

Instructions:

Warm an iron skillet over medium heat. Add almonds. Stir continuously until they are tinged with color. Do not burn. Transfer to a platter to cool. Season both sides of tilapia fillets with sea salt and black pepper. Using the same iron skillet, warm the butter and olive oil over medium heat. When it begins to bubble, add tilapia fillets. Brown fish, until opaque, for 4 minutes per side. Transfer fish to a serving platter. Turn heat setting to low. Reserving the drippings, add lemon juice to iron skillet. Stir to blend. Pour sauce over fish fillets. Sprinkle with crushed parsley and scatter toasted almonds over all. Serve with celery leaves.

So, apparently mini bundt cakes have been the rage for some time now with quaint little bakeries and countless molds popping up everywhere. My friend, Nancy, was kind enough to gift me with a cute little ceramic mold. I began looking at recipes and couldn’t believe all the variations out there. Choosing the first one came easily with almonds, lemon, and poppyseed ingredients, especially with a lemony sweet-tart glaze. But wait, you utter. You’ve heard me say my husband simply does not like lemon baked goods. I know, but there’s a method to my madness. You see, lemon poppyseed is one of those combinations that can be eaten as dessert or breakfast. Need I say more? Every little bundt helps.

LEMON POPPYSEED MINI BUNDT CAKE

Ingredients:

1 1/4 cups flour

1/4 teaspoon baking soda

1 1/2 teaspoons baking powder

1/8 teaspoon sea salt

3 tablespoons butter, room temperature

1 tablespoon vegetable oil

1/2 cup sugar

1 egg

1/2 cup buttermilk

1 teaspoon almond extract

1/2 teaspoon lemon extract

1 tablespoon poppyseeds

1/4 cup almonds, sliced

Sliced almonds, for garnish

Ingredients for Lemon Glaze:

3/4 cup powdered sugar

1 1/2 tablespoon lemon juice

2 tablespoons lemon zest

Instructions:

Preheat oven to 425°. Spray a mini bundt pan and 6-mold muffin tin with nonstick oil. Set aside. In a large bowl, combine flour, baking soda, baking powder, and sea salt. Mix well; set aside. Using a mixer on Low speed, cream together the softened butter, vegetable oil, sugar, egg, buttermilk, almond extract, and lemon extract. Mix for about one minute. Slowly add flour mixture, poppyseeds, and sliced almonds just until combined. Divide the batter between the mini bundt pan and muffin tin, filling batter to the top. If desired, sprinkle additional sliced almonds over top before baking. Bake for 5 minutes. Reduce heat to 375° and bake 15 minutes longer. The tops will be golden brown. Cake is ready when a toothpick inserted comes out clean. Cool 5 minutes, then invert onto a wire rack and allow cakes to cool another 10 minutes. Drizzle lemon glaze over cakes, if desired.

The best part about this classic cake recipe is the filling can be whatever flavor you wish it to be. I used all-natural Red-Cherry Swiss Preserves for a fruit flavor resulting in a gourmet experience. It created an international glimpse of Switzerland without setting foot on an airplane.

JELLY ROLL CAKE

Ingredients:

3 eggs, room temperature

1 cup sugar

1/3 cup water

1 teaspoon almond extract

3/4 cup flour

1 teaspoon baking powder

1/4 teaspoon salt

1/3 cup almonds, sliced

2/3 cup jelly or jam, any flavor

Powdered sugar

Instructions:

Preheat oven to 375°. Grease and line a 10″x15″ jelly roll pan. Beat eggs until thick and lemon-colored, about 5 minutes. Gradually add sugar, water, and almond extract. Mix thoroughly. Add flour, baking powder, and salt until well blended and no lumps remain. Pour into pan and sprinkle with almonds. Bake 12-15 minutes. Loosen cake from pan and invert onto a tea towel generously sprinkled with powdered sugar. While cake is hot, roll up. Refrigerate one hour. Unroll cake and top with jelly or jam, spreading to edges. Roll up cake again, sprinkle with powdered sugar, cover in plastic wrap and refrigerate two more hours before serving.
