It’s true that every living thing needs food in order to thrive. Perhaps that is my justification for being a foodie. I actually “like” planning, cooking, and serving food in wonderful ways. I believe if something looks appealing on the plate, well it kinda has to taste good, doesn’t it? After all, we devour food first with our eyes. That’s how our body signals the brain that we’re going to experience something delicious, thus making it enjoyable. Anyone can be a gourmet chef…like me. lol. Country Casual Cravings

Going through a kitchen remodel has to be one of the most challenging home improvements ever. Symmetry and balance are important. Changing the layout was not an option since it remains functional as an open-ended galley kitchen including a central corridor. In fact, it all began being a simple goal to modernize the kitchen cabinets from 1970s dark wood to the bright airiness of antique white. As often happens, one thing leads to another. Before long we were updating stainless steel appliances, replacing countertops, leaving the double sink behind in lieu of a large single basin, choosing black matte cabinet pulls with copper accents, and more. One constant remained: the authentic dark hardwood flooring. To this day, it endures as the solid foundation from the time it was installed. Now that the kitchen remodel is complete, is it a state-of-the-art gourmet kitchen, you wonder. Not at all. But it has been designed around my needs, which makes it perfect. A “food whisperer” is someone who understands the motives and desires of foodies, as well as those who live vicariously through others who think about food ALL the time. We have a bond, you and I. For example, on a recent trip to Las Vegas, rather than spend time in the casino, I was more interested in seeking out the personalities of celebrity chef restaurants on The Strip. When I got a photo op with Head Chef Michelle Tribble of Hell’s Kitchen, the experience was as phenomenal as the Beef Wellington I had for dinner. You get me, I know. Equal Measures

A sprinkle of this and a dash of that is what makes cooking at home an adventure. Turn a basic recipe into a legendary dish by giving it a healthy twist of flavor or spice. Did you know a squeeze of lemon is a great substitute for salt? It’s also a good thickening agent for fruit butters, jams, and sauces. Lemon juice is my “go-to” marinade from time to time when slow-cooking meats. It also enhances olive oil for a light salad dressing drizzled over fresh vegetables. I think you get the idea. Everyone has childhood memories that conjure up nostalgia. For me, fast food takeout and restaurant dining was less common back then, reserved mostly for special occasions. Stay-at-home moms took great pride in budget-friendly menus stretching groceries to the max. Waste not, want not. My home economics teacher encouraged me to serve colorful food on the plate. One of the expressions I used to hear from adults was, “Eat everything, so you can be a member of the Clean Plate Club.” Sound familiar? Mealtime became an emotional all-star event tapping into our sense of accomplishment. Alphabet Soup

What’s Cooking in Gail’s Kitchen? The Color of Food: Alphabet Soup! Remember when you were a kid and your mom placed a steaming bowl of alphabet soup in front of you? The first thing I did was grab the spoon and search for the letters in my name. My mother, in her wisdom, would say, “Begin by eating the letters you know don’t count.” Not only was it a lesson in letter recognition, but I ultimately ended up finishing my soup before it got cold. Smart lady. How do you eat Alphabet Soup?

ALPHABET SOUP

Ingredients:

8 cups chicken broth

1 pound boneless chicken tenders

1 cup yellow onion, chopped

1 cup mixed vegetables, frozen

3/4 cup celery, chopped

1 1/2 teaspoon seasoned salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/4 cup dried parsley

3 bay leaves

1/4 cup butter

1 cup alphabet pasta

Instructions:

In a slow cooker, combine chicken broth, boneless chicken tenders, yellow onion, mixed vegetables, celery, seasoned salt, black pepper, dried thyme, dried parsley, and bay leaves. Cook on high for 4 hours. Remove chicken and shred. Return it back to the slow cooker. Add alphabet pasta and butter. Gently stir to combine. Cook 30 minutes longer. Remove bay leaves before serving.

Ever wonder why restaurants feature photos on the menu? It’s pretty simple, actually. People respond to the color of food. Our sense of sight connects to our sense of taste in a way that creates an expectation causing a positive physical response. It’s no secret our taste buds are ruled by the appearance of food before one morsel ever reaches our mouth. Think about it. Cravings conjure up memories of satisfaction. Mealtime then becomes an emotional all-star event tapping into our senses.
