Artichoke Garlic Parm Dip

It’s probably not a good idea to starve yourself all day with words like, “Since I’m eating later, I’ll skip breakfast or lunch.” The best intentions fly out the window when you discover how the hostess has perfected stationed food to look irresistible and amazing. It’s no accident the food and beverage areas become the focal point. That’s kinda the idea. My suggestion? Do as the French do. Graze. Anything more than 3 bites of one item can lead to overindulgence. 

ARTICHOKE GARLIC PARM DIP

Ingredients:

1 cup mayonnaise 

1 cup parmesan cheese, grated

1/4 teaspoon garlic powder

14-ounce can marinated artichoke hearts, drained and chopped

Parsley, for garnish 

Garlic bagel chips

Rosemary olive oil crackers

Instructions:

Preheat oven to 350°. Spray a baking dish with nonstick oil. Set aside. Combine mayonnaise, parmesan cheese, and garlic powder in a bowl. Fold in the chopped artichoke hearts. Mix well. Spread into the prepared baking dish. Bake 20 minutes, or until bubbly and golden brown. Serve warm with garlic bagel chips and rosemary olive oil crackers. 

Jalapeño Crisps and Curls

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Jalapeño Crisps and Curls! I’m a pepper freak. I like habaneros, serrano, poblanos, jalapeños, chipotle, cayenne, banana peppers, and more. I’m not saying I want to burn the roof of my mouth, but I do appreciate the capsaicin-released adrenaline rush from time to time. I might even sneeze if I get a little too ambitious. The tangy flavor of chile peppers seem to be a natural substitute for using table salt, which I make an effort to limit in the daily diet. In case you’re wondering, if a hot pepper becomes too hot for you, reach for cheese instead of water. Cheese and dairy products actually neutralize the intensity and cool things down a bit. Then let the tug-of-war continue, because you know you want more. 

JALAPEÑO CRISPS AND CURLS 

Ingredients:

8 ounces sharp cheddar cheese, finely shredded 

1/4 cup parmesan cheese, grated

1 smidgen garlic powder 

1/4 teaspoon tajin seasoning 

1/4 teaspoon red pepper flakes 

1 jalapeño pepper, seeded and chopped 

Instructions:

In a bowl, combine parmesan cheese, garlic powder, tajin seasoning, and red pepper flakes. Toss to mix; set aside. Trim a piece of parchment paper to fit a microwave-safe plate. Scoop 1-2 tablespoons of sharp cheddar cheese onto the parchment paper, forming a pile. Sprinkle parmesan cheese mixture on top. Arrange jalapeño pieces on each pile. Microwave for 1 minute on High power. If needed, microwave an additional 30 seconds longer until the cheese is crisp and golden. Remove plate from microwave and allow cheese crisp to cool to the touch. Carefully transfer cheese crisps to a wire rack. For curls, quickly wrap a cheese crisp around the handle of a wooden spoon until molded. Reuse parchment paper. Repeat process until all the cheese ingredients are used. Store at room temperature. 

Dried Beef Pretzel Dip

Eating My Way Through the Holidays! Special Edition: Dried Beef Pretzel Dip! Try a new creamy variation of the traditional chipped beef cheeseball. In lieu of the cream cheese, substitute Greek yogurt instead. Make it super lo-cal by serving it with fresh veggies and whole-grain crackers. The blend of parsley and dill give it an irresistible twist only lighter! 

DRIED BEEF PRETZEL DIP

Ingredients:

16 ounces of Greek yogurt 

16 ounces of light mayonnaise 

1 teaspoon seasoned salt

2 teaspoons dill weed

2 teaspoons parsley flakes 

1/2 teaspoon onion powder 

2 2.5-ounce packages lean smoked chopped beef, cut-up

Instructions:

In a medium size mixing bowl, combine yogurt and mayonnaise. Blend until smooth. Add seasoned salt, dill weed, parsley flakes, and onion powder. Stir until combined. Fold in cut-up smoked beef pieces. Refrigerate one hour before serving. Easy peasy. 

Figgy Honey-Baked Cheese

It’s easy to create your own version of elegance when you use quality ingredients that begin with cheese. To awaken the taste buds, sprinkle in a few red pepper flakes which compliment the natural sweetness of honey. The crunch of walnuts satisfies those earthy snack-seekers.  Bake it all together for the most captivating sweet holiday aroma. Deck the Halls with boughs of Holly. Fa-la-la-la-la…la-la-la-lah!

FIGGY HONEY-BAKED CHEESE

Ingredients: 

8-ounce wheel Normandy Camembert cheese, double crème 

2 tablespoons butter, melted

2 tablespoons natural honey

2 tablespoons fig jam

1/8 teaspoon red pepper flakes

2 tablespoon walnuts, chopped

Instructions:

Preheat oven to 350°. Place cheese wheel in an oven-proof dish. Score the cheese in a criss-cross pattern. Pour melted butter over cheese.  Drizzle natural honey over cheese. Spread fig jam over cheese.  Sprinkle with red pepper flakes.  Top with chopped walnuts.  Bake 20-25 minutes until cheese is soft and bubbly.  Serve warm with sliced apples, assorted crackers, and baguette slices.  

Strawberry Basil Spread

What’s Cooking in Gail’s Kitchen? Fabulous Fixings: Strawberry Basil Spread! Is it a dessert….or an appetizer?!?!  Strawberries are such a versatile fruit. They may often be added to a garden salad featured on restaurant menus or as a topping on waffles, pancakes, and ice cream. Everyone seems to find favor in their sweet and tangy flavor. After all, strawberries are candy-like, naturally juicy, and sometimes creamy…..especially when slathered onto a cracker topped with Neufchâtel cheese. You seriously cannot go wrong with this tantalizing recipe. Plus, it looks good enough to eat. Wouldn’t you agree?

STRAWBERRY BASIL SPREAD

Ingredients:

1 1/2 cups frozen strawberries 

2 tablespoons sugar

1 tablespoon balsamic vinegar

8-ounce block Neufchâtel cheese

1/4 cup fresh basil, thinly sliced

Fresh strawberries, for garnish

Instructions:

Place the frozen strawberries, sugar, and balsamic vinegar in a mixing bowl. Allow the strawberries to thaw for 30 minutes. Mash the ingredients together using a fork. Leave small chunks for texture. Place the block of Neufchâtel cheese on a serving platter. Slowly spoon the strawberry sauce over the block of cheese. Chop fresh strawberries; arrange over top and around sides where the sauce has spilled over. Sprinkle with thinly sliced basil leaves. Serve with sea salt pita crackers. 

Kielbasa Bacon Bombs

After all, shortcuts can make a terribly long day end much better with time-saving features. Whether you’re looking for a tasty appetizer to share with others or relax with maximum flavor while putting forth little effort, here’s an idea when nothing else sounds good. Meat-lovers thrive on simplicity. Get inspired and try something different. You’ll thank me. My husband did. 

KIELBASA BACON BOMBS

Ingredients:

16 ounces candied bacon, precooked***

16 ounces kielbasa sausage, cut into chunks 

2 tablespoons whole grain mustard

Instructions: 

Preheat oven to 350°. Warm candied bacon for 30 seconds in the microwave. Cut bacon to wrap around a chunk of kielbasa sausage. Secure with a wooden pick. Place on a nonstick baking sheet. Repeat until all sausage chunks are used. Bake for 10-15 minutes to heat through. The bacon with turn crisp. Remove from oven. Arrange on a platter and serve with whole grain mustard for dipping.

Gorgonzola Blue Chip Appetizer

What’s Cooking in Gail’s Kitchen? Fabulous Fixings: Gorgonzola Blue Chip Appetizer! If I told you there was a slightly healthier alternative to regular potato chips and tortilla corn chips, would you believe me? Naturally blueish-purple potatoes seriously come in chip form in the snack aisle at the grocery store. At first bite, you may notice a slightly nutty taste. It’s different, but good. By adding a layer of melted cheeses, suddenly this snack has become a gourmet appetizer. Personally, I like the added kick of sriracha and green onions. If you’re not sure of the rest of the family, put these finishes on the side to add later. It could mean more for you. 

GORGONZOLA BLUE CHIP APPETIZER

Ingredients:

5-ounce bag blue vegetable chips

4-ounces Gorgonzola cheese crumbles

1/2 cup mozzarella cheese, shredded 

1-2 green onions, sliced thin

Sriracha sauce, to taste

Instructions:

Layer blue vegetable chips in a single layer on a microwave-safe serving platter. Arrange crumbled Gorgonzola cheese over chips. Evenly cover with shredded mozzarella cheese. Microwave platter on level four for two minutes. Repeat, if necessary, to melt the cheeses. Top with green onion strips. Drizzle with sriracha sauce. Serve immediately. 

Olive Cheese Spread

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Olive Cheese Spread! Olives aren’t just for martinis, you know. In fact, their slightly sea salt flavor seduces the tongue with the spicy sweetness of a pimento hidden inside. The buttery cream cheese embraces everything like a barefoot hug that sways to the music. Sounds a little bit like a party, doesn’t it? Permission granted. 

OLIVE CHEESE SPREAD

Ingredients:

8-ounces cream cheese, softened 

2 tablespoons butter, room temperature

1/2 cup finely chopped pimento-stuffed Spanish olives

1/2 cup pecans, chopped 

1 tablespoon fresh chives, chopped 

Instructions:

Combine softened cream cheese and butter. Mix well until smooth. Fold in finely chopped olives. On a sheet of waxed paper, form cream cheese mixture into a log. Twist ends to secure. Chill 30 minutes in the refrigerator. Roll cream cheese log in chopped pecans. Garnish with olive slices and fresh chives. Serve. 

Raspberry Pistachio Brie

What’s Cooking in Gail’s Kitchen? Bright Ideas: Raspberry Pistachio Brie! If you need a reason to make an appetizer, read on. It works beautifully as Brie for brunch, a romantic “date night” for two, or a festive dessert while sipping on espresso. Think about it. The cheese itself is so creamy, with a slight robust flavor. The skin can be chewy. Either you like it or you don’t. The raspberry jam has a remarkable sweetness that pairs well with the nuttiness of pistachios. Everyone wins.

RASPBERRY PISTACHIO BRIE

Ingredients:

8-ounce wheel of Brie cheese

1 tablespoon sea salt butter, softened

1/4 cup raspberry jam

1/4 cup pistachios, roughly chopped

Instructions:

Preheat oven to 350°. Unwrap the Brie wheel. Lightly score the top so the skin can absorb the ingredients. Transfer the wheel to an ovenproof dish. Spread the sea salt butter over the top of the cheese. Layer with dollops of raspberry jam. Sprinkle with chopped pistachios. Bake for 12-15 minutes, or until the cheese is melted and gooey. Remove baked Brie from the oven. Serve warm with slices of lightly buttered baguette toast.
