You’re always on holiday here glamorously soaking up the rays and sipping on tropical Mai Tais, garnished with mellow paper umbrellas, at the edge of turquoise seas. Is this real, you wonder? Pinch me if I’m dreaming. But don’t wake me. Please. Instead “Hang Loose” with aloha spirit. Absorb the open-air lounge that is true Hawaii. Order a side of Crispy Popcorn Shrimp garnished with seaweed furikake, for starters. The Paniola Burger topped with chipotle pineapple and applewood bacon drizzled with barbecue sauce can come later. After all, you have all the time in the world. Let the seasoned bartenders introduce you to their crafted cocktails. They have a story to tell.

After all, what’s not to love about a dessert composed of cream cheese and butter? Add to it the combination of light-as-air cake with unbelievable fillings and mind-boggling toppings! The fact that The Cheesecake Factory offers an extensive menu of healthy options just gives us one more reason to make room for dessert. If I eat salad, then I can reward myself with dessert, right? Of course you can. And if the portions are too large, no worries. That’s what doggie bags are for.

Dining Outside the Home: Kalapaki Joe’s Sports Bar in Lihue, Kauai!  Known as the “Westernmost Sports Bar in the U.S.”, it is a favorite gathering place for fun and entertainment. And the extensive menu is pretty tasty, too. I chose Ahi tuna seasoned with a toasted sesame furikake, then grilled to perfection and laid on a bed of shredded cabbage and white rice. Feel the kick? That’s wasabi cream, you’re newest addiction. Don’t hate me. These volcanic spices are what makes this plate an island favorite. Come early, relax, chat a bit, and take advantage of Happy Hour specials before the crowd sets in and the games begin. Well done, Kalapaki Joe’s.

What’s Cooking in Gail’s Kitchen? Be Our Guest: Mini Caprese Skewers! Can you tell I’m trying to squeeze as many foods in my picnic basket as possible before Summer ends? For a quick veggie burst of flavor, these off-the-vine cherry tomatoes are a match made in heaven when paired with fresh basil. It doesn’t hurt that the marinated mozzarella balls are skewered together for lovely presentation. It’s all about the finger food. 
MINI CAPRESE SKEWERS
Ingredients:

12 mozzarella balls

1-2 tablespoons olive oil

1/8 teaspoon Italian spice blend

24 fresh basil leaves

12 cherry tomatoes, halved

12 black olives, sliced 

Olive oil for drizzling
Instructions:

In a shallow bowl, place mozzarella balls. Drizzle with olive oil; sprinkle with Italian spices. Toss cheese to cover well. Beginning with a cherry tomato half, thread tomato on a toothpick or skewer. Then place one basil leaf, followed by a marinated mozzarella ball. Finish with the remaining cherry tomato and another basil leaf. Repeat with remaining cherry tomatoes, basil leaves, and mozzarella balls. Thread black olives on separate skewers. Drizzle olive oil mixture over finished caprese skewers. Transport in jars or covered containers.
