In your mind, you’re already forming mental images of gastronomic creations where you spin around the kitchen like Julia Child waving a wooden spoon in the air. That is until you get home. The fruit is ripening faster than you can say, “go bananas”. Now two weeks in, you’ve already exhausted several different ways of consuming that box of winter pears. Allow me to offer a quick ‘n easy side dish. It goes especially well with pork loin or spiral ham. I promise you, your family will be singing your praises from now on.

FRIED CINNAMON SUGAR PEARS

Ingredients:

6 Oregon pears, peeled, cored, and sliced

2-3 tablespoons butter

1/4 cup sugar

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1/2 cup apple cider

1 tablespoon cornstarch

Fresh lemon thyme, for garnish

Instructions:

In an iron skillet over low heat, warm butter. Combine sugar, brown sugar, and ground cinnamon in a bowl. Mix well; set aside. In another bowl, whisk together apple cider and cornstarch. Set aside. Add sliced pears to melted butter. Coat well; increase heat to medium setting. Stir gently for about 3 minutes. Sprinkle sugar mixture over pears. Stir. Cook 8-10 minutes, stirring occasionally, until pears are fork tender. Pour apple cider liquid over pears, stirring constantly for 2 minutes longer. Remove iron skillet from heat. Allow fried pears to cool slightly and thicken. Ladle into small bowls. Serve warm.

For those who were lucky enough to be gifted with one of the spectacular supermarket fruit baskets and are now wondering how to eat everything before it spoils, think outside the box. Citrus fruits can be refrigerated, as long as you don’t forget about them out-of-sight in the crisper drawer. And we all know what happens to bananas in the fridge. Ugh. Not a pretty sight. But today we’re going to talk about everyone’s favorite fruit, the mouth-watering juicy apple. In reality, slab pies are the grown-up version of a pop tart, only better. The apple filling is honest-to-goodness fruit instead of a smearing of sugary jam. And the crust is more than a pastry shell of dry dough. Its layers of flaky goodness and buttery deliciousness are magically separated by pockets of air.

APPLE CINNAMON SLAB PIE

Ingredients:

2 9-inch pie crusts, refrigerated dough

8 apples, peeled, cored, and sliced

1 tablespoon lemon juice

1 cup sugar

1 tablespoon flour

1 1/2 teaspoons cinnamon

1/4 teaspoon sea salt

1/8 teaspoon nutmeg

1 cup powdered sugar

1 tablespoon butter, melted

1 teaspoon vanilla extract

1 tablespoon warm milk, if needed

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Set aside. Place sliced apples in a large bowl. Sprinkle with lemon juice. Gently toss. In another bowl, combine sugar, flour, cinnamon, sea salt, and nutmeg. Mix well. Pour over sliced apples. Toss to coat. Roll one prepared pie crust to fit the baking sheet. Trim the dough to only fit the bottom of the pan. If necessary, use the extra dough to fill in the corners. Spread apple filling over bottom crust. Roll out second pie crust. Place over the apple filling. Pierce top of dough with a fork in several places. Sprinkle with cinnamon, if desired. Bake 35-40 minutes. To make the glaze, combine powdered sugar, melted butter, and vanilla extract. Stir until smooth. For a slightly thinner consistency, add the warm milk. Remove Apple Cinnamon Slab Pie from oven when the crust is golden brown and the juices are bubbly. Cool slab pie on a wire rack for 10 minutes before pouring glaze over top. Spread to edges. When pie is cool, slice to serve.

For those original gamers from the 1980’s, today’s snapshot may detect a slight resemblance to a popular video game character known as Pac-Man. I assure you, that was not my intention. My kids played that harmless game all the time, staring at a screen that literally ate its way to a high score. Then again, I seem to remember them requesting pizza delivery more often as a result of it. At least nowadays I can choose a healthier alternative with multigrain baked crackers that have wheat, corn, and oats. Plus it won’t cost me a roll of quarters.

UPGRADED LUNCH BREAK

Ingredients:

6 multigrain baked crackers

3 slices cherrywood smoked ham, deli-style

1 golden delicious apple, sliced in wedges

Fresh chives, for garnish

Instructions:

Arrange multigrain crackers on a platter. Cut each slice of ham in half. Form into an accordion shape to create “wells”. Secure one end with two strands of fresh chives. Tie securely. Place the ham onto a multigrain cracker, fanning out the hills and valleys. Insert apple wedges where possible, allowing them to stand upright. Repeat with remaining ingredients.

Pickled Red Onions

This relatively new condiment seems to be grabbing center stage with pizza, burgers, and tacos. True, the raw red onion can come across a lot more potent than its yellow cousin. Some even consider it bitter. I find it very appealing when sliced razor thin. Now you have another alternative. When pickled, their tangy sweetness becomes so unique it may appear as though a secret ingredient suddenly turned the dish into a gourmet delight. Before long pickled red onions may find themselves as popular as ketchup and mustard.

PICKLED RED ONIONS

Ingredients:

1 red onion

1 cup apple cider vinegar

1/2 cup garlic wine vinegar

1/4 cup sugar

1 teaspoon kosher salt

1/8 teaspoon allspice

1/8 teaspoon red pepper flakes

Instructions:

Slice the top and bottom off the onion. Slice onion in half from top to bottom. Remove outer skin; discard. Slice red onion into half moons, about 1/8” thick. In a medium sauce pan, whisk together apple cider vinegar, garlic wine vinegar, sugar, and kosher salt. Place over medium-high heat. Bring mixture to a boil. Whisk until sugar and salt dissolve. Remove pan from heat and whisk in allspice and red pepper flakes. Add sliced onions to the pan; gently stir to combine. Allow mixture to cool completely at room temperature, stirring occasionally. Pour into a glass container. Cover tightly with a lid. Refrigerate overnight. Store in refrigerator for up to one month.

Growing up in an apple orchard, on a road called Orchard Lane, I never grew tired of picking the dark red and yellow-striped fruit off a low tree limb on my way home from school. I’d twist the stem, quietly reciting the alphabet until the stem snapped off. Whatever letter I was on told me the name of my next boyfriend. My heart would flip into a flutter as I whispered his name under my breath before sinking my teeth into its tasty core. Juice would run down my chin before I could swipe it away as I continued crunching. Did those wise and wonderful apples ever grant me a wish? I’ll never tell.

APPLESAUCE MORNING MUFFINS

Ingredients:

1/2 cup butter, softened

1/2 cup sugar

2 eggs

3/4 cup applesauce

1 3/4 cup flour

1 tablespoon baking powder

1/2 teaspoon sea salt

For topping:

1/4 cup sugar

1/4 teaspoon cinnamon

1/4 cup butter, melted

Instructions:

Preheat oven to 350°. Lightly spray a muffin pan with nonstick oil. Set aside. Cream butter and sugar until light and fluffy. Add eggs, beating well after each addition. Stir in applesauce. Combine flour, baking powder, and sea salt. Add to batter; stir just until moistened. Spoon batter into muffin tins, filling 2/3 full. Bake 12-15 minutes. Remove from oven and allow to cool for 5 minutes before removing muffins from pan. Combine sugar and cinnamon in a shallow dish. Dip muffin tips into melted butter. Roll in cinnamon sugar. Serve warm.

It does contain alcohol, so drink responsibly. Big-batch cocktails, or party punch, are nice to have on hand for last minute gatherings or friends who drop by unannounced. I keep a pitcher in the refrigerator for just that reason. If you do the same, choose a container that has an airtight lid. There’s nothing worse than sipping on an icy cold cocktail that smells like garlic or grilled leftovers. With the subtle fruity notes of apple, orange, cherry, and apricot, Xalapa Party Punch will get everyone talking. Carry On.

XALAPA PARTY PUNCH

Ingredients:

1 cup hot black tea

1/2 cup Tupelo honey

1 orange rind, grated

2 cups dark rum

2 cups apple brandy

2 cups dry red wine

Orange rind, grated

Crushed Ice

Instructions:

In a saucepan over low heat, combine hot black tea, Tupelo honey, and grated orange rind. Heat for 5 minutes. Stir occasionally. Remove from heat; set aside to cool. Add dark rum, apple brandy, and dry red wine. Refrigerate until ready to serve. Pour into glasses filled with crushed ice. Garnish with fresh basil or mint.

What’s Cooking in Gail’s Kitchen? Bright Ideas: Quirky Clean Salad! We’ve all heard the word “clean” when referring to food. Once upon a time, it meant wash the vegetables before eating them. Now it seems to have multiple meanings. Some of those phrases include “unprocessed foods, organically grown, no preservatives, low carbs, gluten-free, free-range, or no high fructose corn syrup.” Basically, it translates to what is clean for YOU. My unwritten rule is, if I have a craving for it, I’m eating it. Perhaps that’s why I added the word “Quirky” to the title. You do what is right for you. Are we good?

QUIRKY CLEAN SALAD

Ingredients:

1 head broccoli, florets only and chopped

1 green apple, peeled, cored, and diced

1/4 cup almonds, chopped

1/4 cup green olives, sliced

1/4 cup raisins

5 pitted dates, chopped

2 slices bacon, crispy cooked and crumbled

2 tablespoons lime juice

2 tablespoons olive oil

1 tablespoon Dijon mustard

1/2 tablespoon garlic wine vinegar

1 tablespoon natural honey

1/4 teaspoon Himalayan salt

1/4 teaspoon cracked black pepper

1 teaspoon rosemary, chopped

Instructions:

In a large mixing bowl, combine broccoli florets, diced apples, chopped almonds, sliced green olives, raisins, chopped dates, and crumbled bacon. Gently toss to mix. In another bowl, whisk together lime juice, olive oil, Dijon mustard, garlic wine vinegar, natural honey, Himalayan salt, cracked black pepper, and chopped rosemary. What’s Cooking in Gail’s Kitchen? Bright Ideas: Irish Apple Cake! I can practically hear your first question: How is this cake different from a traditional one? Well, as you mix the ingredients, you may notice the batter is pretty thick and dense. It’s not pourable like a cake mix, that’s for sure. I guess you could compare it somewhat to a sponge cake…..with apples. Plus topping. Streusel is what makes it extra-special, if you know what I mean. When it’s all said and done, you can definitely justify eating it as an early breakfast, a midday brunch, an afternoon pick-me-up, or a late night dessert. If you were at my house, you’d see my husband keeps a spoon propped inside the cake dome. Because, sometimes…you know, you just can’t resist one bite.

IRISH APPLE CAKE

Ingredients for Streusel Topping:

3/4 cup flour

1/4 cup rolled oats

1/2 cup sugar

1/8 teaspoon sea salt

6 tablespoons butter, cold

Instructions for Streusel Topping:

In a medium bowl, combine flour, rolled oats, sugar, and sea salt. Mix well. Add the cold butter, using a fork. Blend the butter into the flour mixture until it resembles coarse breadcrumbs. Set bowl aside in the refrigerator.

Ingredients for Irish Apple Cake

1/2 cup butter, room temperature

1/2 cup sugar

2 teaspoons vanilla extract

2 eggs

1 1/4 cup flour

1 teaspoon baking powder

1 teaspoon cinnamon

1/8 teaspoon sea salt

3 tablespoons milk

3 Granny Smith apples, peeled, cored, and sliced thin

Instructions for Irish Apple Cake:

Preheat oven to 350°. Butter and line a 9” round baking dish. Set aside. In a large bowl, cream together butter and sugar until light and fluffy. Add vanilla extract. Beat eggs, one at a time, and add to creamed mixture. In a separate bowl, whisk together flour, baking powder, cinnamon, and sea salt. Fold the dry ingredients into the wet ingredients. Gradually add milk while mixing as the batter forms. Transfer batter to the prepared baking dish. Arrange a single layer of sliced apples over batter. Cover the apples with the streusel topping. No matter the hypnotic effect, apple dumpling dreams can reflect the way we look at our lives. Do we deny sweets or do we nourish our bodies? “An apple a day keeps the doctor away”. It’s all about perspective, moderation, and control. Thank goodness we have freedom of choice. When it comes to apple dumplings, especially now, dreams really do come true.

APPLE DUMPLING DREAMS

Ingredients:

4 Granny Smith apples, peeled and cored

1 package refrigerated pie crusts

4 star anise pieces

Ingredients for Syrup:

3/4 cup sugar

1 cup water

1/8 teaspoon cinnamon

1/8 teaspoon nutmeg

2 tablespoons butter

Ingredients for Apple Filling:

1/4 cup brown sugar

1/2 teaspoon cinnamon

1/8 teaspoon nutmeg

1 tablespoon butter, room temperature

Instructions:

Preheat oven to 375°. Lightly grease a 9” square baking dish; set aside. To make the syrup, combine sugar, water, cinnamon, and nutmeg in a saucepan. Bring to boil over medium-high heat, stirring constantly. Reduce heat and simmer for 10 minutes, stirring occasionally. Remove from heat and stir in 2 tablespoons butter. Set aside. In a mixing bowl, combine ingredients for apple filling. Mix brown sugar, cinnamon, nutmeg, and butter until consistency is crumbled. Cut each pie crust in half. Form each half into a ball and place on a lightly floured surface. Roll into 8-inch circles. To assemble, place an apple in the center of a dough circle. Fill the empty core with crumb filling. Fold the dough over the apple, pinching at the top to seal. Transfer apple dumplings to the baking dish. Drizzle with syrup. Place a star anise on each apple. Bake for 40-45 minutes until crust is golden brown. Tent with foil, if necessary, to prevent over browning. Serve warm.
