What’s Cooking in Gail’s Kitchen? Home Cooking: Asian Noodle Salad! Not only does this dish make a stunning presentation of color, it also boasts a crunchy taste of the Orient. The sesame and ginger dressing is so yummy, you’ll find yourself making excuses to eat this salad every week. 

ASIAN NOODLE SALAD

Ingredients:

1 package ramen noodle soup mix, any flavor

1/4 cup butter

1/2 cup almonds, sliced

1 pound of shredded broccoli and carrot slaw mix

3/4 cup roasted Cardini’s Gourmet Asian Sesame Dressing*

2 green onions, sliced

Instructions:

Melt butter in a medium skillet over low heat. Remove noodles from soup mix. Discard seasoning mix. Break up uncooked noodles. Add to the skillet, along with the almonds. Stir to combine and brown until slightly toasted and brown. Do not burn. Remove from heat. In a large bowl add broccoli/carrot slaw and the noodle/almond mixture. Pour salad dressing over all and toss until combined. Garnish with green onion snips. Serve immediately. Leftovers may be refrigerated but the noodles will lose their crunch.

Nori Sesame Popcorn

What’s Cooking in Gail’s Kitchen? Delicious Holiday Foods: Nori Sesame Popcorn! If you’ve never tasted dried edible seaweed, you’re really missing out. It wasn’t until recently that I gave it a whirl and I have to tell you, I kinda like it. Besides, it’s a great source of vitamins and minerals. Asian cultures have known this all along, so it’s like preaching to the choir when I rave about the natural health benefits. When nori is added to a batch of popcorn, seasoned with roasted sesame seeds and Oriental rice crackers, it transforms a typical snack into a sensational wholesome one. Prepare to grab a handful and nibble away.

NORI SESAME POPCORN

Ingredients:

1 packet microwave popcorn, any variety

8-ounces rice cracker blend, bite-size pieces

2 tablespoons sesame oil

2 teaspoons roasted sesame seeds

1/2 teaspoon seasoned salt

.21 ounces dried seaweed sheets, cut into small strips

Instructions:

Preheat oven to 350°. Prepare the microwave popcorn according to package directions. Transfer to a large bowl. Discard any unpopped kernels. Add the rice cracker pieces. Toss with sesame oil, sesame seeds, seasoned salt, and nori strips. Transfer to a baking sheet. Bake for 8-10 minutes, turning occasionally to prevent burning. Cool five minutes before serving. Store in an airtight container.

Wonton Nachos

What’s Cooking in Gail’s Kitchen? Equal Measures: Wonton Nachos! Sounds strange, doesn’t it? That’s what I thought the first time I glanced around the restaurant where couples sat munching away on the mountain of gooey cheese and triangular chips. Fusion foods combine different cultures. There are no rules and this proves it. Take Asian wonton wrappers and blend them with Mexican seasonings and salsa for a perfect pairing. Because wonton wrappers are paper thin dough, they bake up in a matter of minutes. Don’t forget the sprinkling of sea salt. By the time the margaritas are mixed, everything is ready to be assembled onto a platter of spicy Wonton Nachos that encourage conversation. Now put down your cell phones and eat!

WONTON NACHOS

Ingredients:

12-ounce package of wonton wrappers

Nonstick oil

Sea salt

8-ounce package Mexican-style cheese, shredded

Toppings of choice

Salsa for dipping

Instructions:

Preheat oven to 375°. Spray a baking sheet with nonstick oil. Sprinkle with sea salt. Set aside. Cut each wonton wrapper in half diagonally, or quarters if you desire smaller chips. Place in a single layer on the prepared baking sheet. Coat the tops with nonstick oil. Sprinkle with sea salt. Bake 10 minutes, or until crispy. Turn for even browning. Remove from oven and cool slightly. Repeat until all chips have been made. To make nachos, arrange chips in an ovenproof dish. Add Mexican cheese and toppings of choice. Bake 10 minutes or until cheese is melted. Serve with salsa.

What’s Cooking in Gail’s Kitchen? The Clean Plate Club: Jalapeño Cheesy Cups! Fusion foods are the rage right now. Restaurant and Food Truck menus are the trendsetters that carry over into our home kitchens. Fusion foods blend a couple cultures into a balanced dish with copacetic results. Take this one, for instance. Asian wonton meets Mexican spice. You get the gooey cheese with spicy meat perfectly portable in a crispy cup. Pick one up and walk around. These handheld appetizers don’t last long. Forgot a napkin? No worries. Lick your fingers and meander back to the buffet line to snag another.

JALAPEÑO CHEESY CUPS

Ingredients:

24 wonton wrappers

8 ounces cream cheese, softened

1 1/2 cups Monterey Jack cheese, shredded

2 tablespoons pickled jalapeños, chopped

2 tablespoons bacon bits

2 tablespoons cooked chorizo, crumbled

2 green onions, chopped

1/2 cup cheddar cheese, shredded

Jalapeño slices, garnish

Cilantro, garnish

Instructions:

Preheat oven to 400°. Grease a 12-cup muffin tin. Place 2 wonton wrappers in each cup. Bake 4 minutes. Remove muffin tin from oven. Set aside. In a large bowl, combine cream cheese, Monterey Jack cheese, chopped jalapeños, bacon bits, crumbled chorizo, and green onions. Mix well. Divide cheese mixture into cups. Top with cheddar cheese. Finish with jalapeño slices. Bake 10 minutes until cheese is bubbly. Wontons should appear golden brown and slightly crispy. Garnish with fresh cilantro. Serve warm.

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Jumping Chicken Noodle Bowl! I love it when I can go to the kitchen and use ingredients I already have on hand. The “make ahead” Vietnamese Dipping Sauce* (nuoc cham) is a multi-purpose staple that livens up Asian cuisine nicely. By making supper a noodle bowl with prepackaged veggies and spicy chicken, the blend of flavors quickly satisfy hunger pangs while providing comfort at the same time.

JUMPING CHICKEN NOODLE BOWL

Ingredients:

8 ounces boneless chicken breasts, cut into 1-inch strips

1 tablespoon olive oil

1/4 cup soybean sauce

1 teaspoon red pepper flakes

1 bunch broccoli florets, cooked and drained

1 cup blend of shredded cabbage and carrots

1 green onion, chopped

1/3 cup cashew pieces

1 cup Vietnamese Dipping Sauce*

Instructions:

Heat a skillet over medium temperature. Add olive oil and chicken strips, single layer. Cook 3 minutes per side until golden brown and cooked through. Reduce heat to low. Add soybean sauce and red pepper flakes. Cook 10 minutes longer until meat is tender and liquid is absorbed. Arrange chicken strips, rice noodles, broccoli florets, and cabbage-carrot blend in a shallow bowl. Top with chopped green onions and cashew pieces. Cover with Vietnamese Dipping Sauce*, to taste. Serve immediately.

What’s Cooking in Gail’s Kitchen? Talking Points: Gluten-Free Egg Shoyu! Have you ever wondered how to make those awesome tasting hard-boiled eggs you find nested in a bowl of ramen noodles? The whites are tender; the yolks a gorgeous shade of golden yellow. That slightly salty taste, combined with a hint of sweetness, is the result of marinating the peeled eggs in a soy sauce mixture. I’m not going to lie, that’s the step you need to do in advance. The marination process can take anywhere from 8 hours to 24, depending on the depth of saturation you desire. Its purpose is to allow the natural salt to season the egg yolk. In the end you achieve a perfect ring of tawny brown to outline the incredible edible egg.

GLUTEN-FREE EGG SHOYU

Ingredients:

6 hard-boiled eggs

6 tablespoons warm water

1 tablespoon sugar

2 tablespoons sherry vinegar

3/4 cup gluten-free soy sauce

Everything But Bagel Seasoning, for garnish

Instructions:

Remove the shells of the hard-boiled eggs. Discard. Place the uncut eggs in a deep bowl. In another bowl, whisk together the warm water and sugar until dissolved. Add sherry vinegar and soy sauce. Stir to combine. Pour the soy sauce mixture over the eggs. You want them covered and submerged. Sometimes it is necessary to place a plate over the eggs so they do not float. Marinate the eggs for 8 hours or overnight. Remove the eggs from the sweet and salty marinade. Transfer them to a sealed container for up to three days. When ready to eat, cut the eggs in half lengthwise. Sprinkle, or dab, with Everything But Bagel seasoning. Serve with rice or noodles.

Red Chili Garlic Chicken

What’s Cooking in Gail’s Kitchen? The Next Step: Red Chili Garlic Chicken! If you are a fan of stir-fry, this sauce is often a staple inspired by the fusion flavors of the Far East. Take a quick peek at the ingredient list to see what I mean: ginger and garlic popular in China, chili peppers from Thailand, Vietnamese soy sauce, and sweet rice vinegar used in Japan. It’s all in there. Personally I’m a fan of the sweet heat mixed with the cashew crunch. Skip the take-out for tonight and try this version for yourself.

RED CHILI GARLIC CHICKEN

Ingredients:

1/2 cup dried red chiles

1-2 tablespoons olive oil

1 pound chicken tenders, boneless and skinless

1/4 teaspoon sea salt

1/8 teaspoon black pepper

1/4 teaspoon garlic powder

3/4 cup brown sugar

1/4 cup rice vinegar

2 tablespoons red wine

1 tablespoon soy sauce

1 tablespoon corn starch

1 teaspoon ginger powder

1 teaspoon paprika

1/8 teaspoon garlic powder

1/2 cup cashews

1 tablespoon toasted sesame seeds

3 green onions, snipped

Instructions:

In a microwave-safe bowl, heat 1 cup water for 2 minutes. Add clili peppers; cover. Set aside for 30 minutes, then drain water. Meanwhile, warm olive oil in medium skillet. Turn heat to high setting and add chicken tenders. Season with sea salt, black pepper, and 1/4 teaspoon garlic powder. After 3-4 minutes, when chicken turns brown, flip over. Reduce the heat to medium setting and cover. Cook chicken until firm, about 5 minutes longer. The chicken will release itself from the surface when it is ready. Set pan aside. For the sauce, in a medium skillet combine brown sugar, rice vinegar, red wine, soy sauce, corn starch, ginger powder, paprika, and garlic powder. Bring to a gentle boil on medium-high heat. Stir often. Mixture should not foam. Sauce will thicken after 7-8 minutes. Remove from heat. Pour sauce over chicken tenders. Add drained chiles, cashews, sesame seeds, and green onion snips. Heat through, stirring occasionally, to blend flavors. Serve with choice of cooked rice.
