ZZ “Zucchini” Topped Potatoes

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: ZZ “Zucchini” Topped Potatoes! This recipe is going to be rock music to your ears. (If you pre-bake several potatoes on the weekend, it’ll eliminate one step during the week.) Create a fast meal by loading baked potatoes with yummy ingredients. Then top them off with sautéed zucchini, sweet onions, and hickory-smoked bacon. Can you feel the beat? Put this toe-tapping favorite in your recipe box…….and Rock On!

ZZ “ZUCCHINI” TOPPED POTATOES

Ingredients:

4 large potatoes, baked

Sea Salt

1 cup Greek yogurt

1/4 cup milk

2 green onions, snipped

1/4 cup butter

1 cup cheddar cheese, finely shredded

1 medium zucchini, chopped

1/2 sweet onion, chopped

2 tablespoons olive oil

4 slices bacon, fried crisp and crumbled

Instructions:

Preheat oven to 350°. Wash potatoes, pat dry. Pierce each one on top. Spray with nonstick oil and sprinkle sea salt on skins. Bake for one hour. When done, let cool for ten minutes. Meanwhile, cook bacon. Drain on paper towels and crumble. Sauté onions and zucchini in olive oil. Slice potatoes in half lengthwise.  Remove the flesh into a bowl leaving enough skin to form a shell. Place skins in a shallow baking dish. To the flesh, add yogurt, milk, green onions, butter, and 1/3 cup cheddar cheese. Blend until creamy. Spoon the filling into the potato skins. Top with remaining cheese, sautéed zucchini, onions, and crumbled bacon. Bake 15 minutes longer or until cheese is melted and bubbly. 

Yam Sticks

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Yam Sticks! Here is a nice alternative when craving French fries. Substitute the Idaho potatoes for yams and bake them instead of frying. You’ll feel better about making a healthy choice while mixing up the menu a bit. Give your taste buds a real surprise as you go from hum-drum to WOW!

YAM STICKS

Ingredients:

6 medium sweet potatoes, peeled and cut into sticks

1/4 cup extra virgin olive oil

1/2 teaspoon seasoned salt

1/4 teaspoon white pepper

1/4 teaspoon crushed red pepper flakes

1/8 teaspoon garlic powder

Instructions:

Preheat oven to 425°. In a large bowl, combine all ingredients. Mix well until yam sticks are evenly coated. Marinate in the refrigerator for one hour. Meanwhile, place a baking sheet in the oven so it is already hot before adding the yams. Being careful when removing it from the oven, lightly spray the baking sheet with non-stick oil. Spread yam sticks into single layer. They crisp up better when they’re not touching. Bake about 40 minutes or until tender and slightly browned. Turn halfway through baking, using kitchen tongs. Serve immediately. 

Viva Poblano

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Viva Poblano! How can such small pepper plants produce so many poblanos?  When it rains, it pours!  It seems as though we have peppers coming out of our ears: jalapeño peppers, Marconi sweet peppers, poblano peppers, bell peppers, and finally habanero peppers. I have roasted, baked, dried, and pickled peppers in all sorts of delicious ways. Today’s dish is a Mexican specialty that showcases the smoky taste of poblanos. It’s a meal in itself. To tone down the heat, always add cheese. Permission granted. 

VIVA POBLANO 

Ingredients:

4 large poblano chiles, roasted, halved, seeded, skins removed

1/4 cup onion, diced

1 teaspoon olive oil

1 pound ground beef

1/8 teaspoon garlic powder

1 teaspoon cumin powder

1 teaspoon sea salt

1/8 teaspoon cracked black pepper

1/2 cup Monterey Jack cheese, shredded

1/2 cup cheddar cheese, shredded

Instructions:

Preheat oven to 350°. Heat olive oil in a skillet over medium heat. Sauté onions. Add ground beef, garlic powder, cumin, salt, and pepper. Cook until meat is completely brown and crumbly. Remove from heat. Spray four individual casserole dishes with nonstick oil. Place one poblano pepper in the bottom of each dish, laying the split pepper open to fill the dish. Cover the pepper with Monterey Jack cheese. Add a layer of seasoned ground beef mixture. Finally top with cheddar cheese. Spray aluminum foil with nonstick oil. Cover each casserole dish. Bake for 30 minutes. Remove foil and bake 10 minutes longer. Serve with chips and salsa. 

Deep Dish Chicken Salad

Not only does it show off food attractively, it offers single-serving portion control. It’s the perfect touch to any meal and bakes in less time. Make your life simpler with any of the oven-to-table choices available. I did. 

DEEP DISH CHICKEN SALAD

Ingredients:

3 cups chicken, cooked

1 cup extra sharp cheese, finely shredded

1 tablespoon green onion

1/2 cup mayonnaise 

4 stalks celery, chopped

1 tablespoon lemon juice

1/4 teaspoon celery seeds

1/8 teaspoon red pepper flakes

Sea salt to taste

Dash of pepper

1 cup potato chips, crushed

Instructions:

Preheat oven to 350°. Combine chicken, celery, mayonnaise, salt, pepper, lemon juice, celery seed, red pepper flakes, and half the cheese. Mix lightly. Spoon casseroles into single serving pans. Bake for 20 minutes. Top with remaining cheese and potato chips. Bake another 5 minutes or until cheese is melted. Garnish with green onion snips. 

Jack Daniel’s Baked Beans

What’s Cooking in Gail’s Kitchen? A Cut Above: Jack Daniel’s Baked Beans! The following is a quick tutorial on alcohol in food, should you be interested. Alcohol can benefit the taste of food by releasing flavor molecules throughout the dish. If meat is included, tenderizing will occur. However, contrary to popular opinion, alcohol does not completely evaporate. It does lessen if the contents are stirred throughout the baking process. Always inform dinner guests if a dish contains residual alcohol. Medications can react differently. Also, those who avoid alcohol due to pregnancy or recovery should be aware. A non-alcoholic substitute option for this recipe would be apple juice, apple cider, or vanilla extract. 

JACK DANIEL’S BAKED BEANS

Ingredients: 

28-ounce can pork and beans

6 pieces bacon, baked and crumbled

1/4 cup onion, chopped

1 tablespoon honey

1 tablespoon ketchup

1/3 cup brown sugar

2 tablespoons Jack Daniel’s whiskey

1/8 teaspoon garlic powder

1/8 teaspoon black pepper 

Instructions: 

Preheat oven to 350°. In a large bowl, combine pork and beans, crumbled bacon, chopped onion, honey, ketchup, brown sugar, Jack Daniel’s whiskey, garlic powder, and black pepper. Stir until completely combined. Transfer to an ovenproof casserole dish. Bake one hour, uncovered. Serve. 

Baked Brie

What’s Cooking in Gail’s Kitchen? Simple Sensations: Baked Brie!  I typically serve this as an appetizer, with French preserves and almonds on top, but it also makes a wonderful dessert with a light fruity wine. 

BAKED BRIE

Ingredients:

14 ounce wheel of Brie*

1/4 cup apricot preserves 

2 tablespoons almonds, sliced

2 tablespoons butter, melted

1 teaspoon red pepper flakes, optional

* Camembert is a milder substitute. 

Directions:

Preheat oven to 325°. Remove Brie wheel from package and slice off the top surface of the rind. Place the wheel in a small oven-proof dish. Lightly score the cheese. Spread the apricot preserves over the exposed cheese surface. Sprinkle with almonds. Pour the butter over all. Garnish with red pepper flakes on top. Bake the Brie uncovered for 15-20 minutes until the cheese is soft and heated through. Serve in the same dish to keep it warm. 

Sliced fruit, deli crackers, and crusty baguettes make a nice compliment to the rich, creamy flavor. 

Ranch Pretzel Twists

What’s Cooking in Gail’s Kitchen? Ranch Pretzel Twists! You’re thinking snack-city. I know, right? Except this version of baked pretzels is made with one of the healthiest foods around: Chia Seeds! They’re a good source of vitamins and minerals in a balanced diet. With every bite you’ll practically be doing the “Happy Dance”.

RANCH PRETZEL TWISTS

Ingredients:

15-ounce bag of pretzel twists 

1 cup pure vegetable oil

1/8 teaspoon garlic powder

1/4 teaspoon cayenne pepper 

1/4 teaspoon seasoned salt

1/4 teaspoon Worcestershire sauce 

1 packet Ranch seasoning mix

1 tablespoon chia seeds

Directions:

Preheat the oven to 275°. Empty pretzel twists into a gallon storage zipper bag. Mix thoroughly all the remaining ingredients except chia seeds. Pour over pretzels and close the bag. Toss the bag to evenly coat all pieces until the oil is absorbed. Empty contents onto a baking sheet coated with non-stick spray. Try to form a single layer. Lastly, sprinkle the chia seeds over the pretzels. Bake 10 minutes. Then turn pretzels over and bake an additional 5 minutes. Remove from oven and let cool before storing in sealed container. 

Goat Cheese Baked in an Herb Crust

What’s Cooking in Gail’s Kitchen? Goat Cheese Baked in an Herb Crust! This elegant appetizer is the perfect compliment for an intimate gathering. The soft creamy cheese spreads nicely on bagel chips and water biscuits. I serve it together with shrimp cocktail and Sauvignon Blanc simply because of its aromatic uniqueness. 

GOAT CHEESE BAKED in an HERB CRUST

Ingredients:

8 ounce Goat Cheese Log

1 tablespoon Olive Oil

Herbs:

1 tablespoon oregano 

1 tablespoon basil

1 tablespoon marjoram 

1/8 teaspoon garlic powder

1/4 teaspoon minced onion

1/8 teaspoon sea salt

1/8 teaspoon red pepper flakes

Directions:

Preheat the oven to 350°. Combine herbs and sprinkle on a piece of waxed paper. Gently roll the cheese log in the herb mixture to coat it completely. Place goat cheese in a covered baker and drizzle with olive oil. Bake covered until softened, about 15-20 minutes. For a crusty top, brown for a few minutes more under the broiler.

Figgy Honey-Baked Cheese

FIGGY HONEY-BAKED CHEESE

Ingredients: 

8-ounce wheel Normandy Camembert cheese, double crème 

2 tablespoons butter, melted

2 tablespoons natural honey

2 tablespoons fig jam

1/8 teaspoon red pepper flakes

2 tablespoon walnuts, chopped

Instructions:

Preheat oven to 350°. Place cheese wheel in an oven-proof dish. Score the cheese in a criss-cross pattern. Pour melted butter over cheese.  Drizzle natural honey over cheese. Spread fig jam over cheese.  Sprinkle with red pepper flakes.  Top with chopped walnuts.  Bake 20-25 minutes until cheese is soft and bubbly.  Serve warm with sliced apples, assorted crackers, and baguette slices.
