Cottage Ham

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Cottage Ham! I’ve made this dense cottage ham three different ways: slow-cooker, stove-top, and oven-bake. The best results came when I used the Le Creuset cast iron enameled Dutch oven.* It seemed to distribute the heat more evenly. The ham was fork-tender, moist, and juicy. Because the pan locks in the moisture, you can keep it warm in the oven until dinner time by reducing the oven temperature after the first three hours. Any leftover cooking water can be used as a soup base the following day.

COTTAGE HAM

Ingredients:

2 pound smoked shoulder butt

8-10 black peppercorns

1 tablespoon brown sugar

4 bay leaves

Instructions:

Preheat oven to 350°. Rinse cottage ham to remove excess salt. Place cottage ham in a 3.5-quart Dutch oven. Add enough water to fill 2 inches above ham. Add black peppercorns, brown sugar, and bay leaves. Cover with lid. Bake cottage ham two hours. Check water level to keep the pan from going dry. If it does, add a little more water. The absorption allows the ham to be fork-tender, not chewy. Bake one hour longer, if necessary. The ham is done when the internal temperature is 160°. Serve with potatoes and vegetables of choice.

Quartered Chicken with Oranges

If you are fortunate enough to be the recipient of a Fruit-of-the-Month Club, you will not only have premium fresh fruit delivered to your door, but tucked inside the box is a recipe card with serving suggestions. Thanks go out to the families of Brandi and Jennifer! Today’s special features the Cara Cara Orange, which is a sweet seedless variety with interesting undertones of cherry and blackberry. The delightful taste is less acidic than ordinary oranges. And the pinkish-red flesh reminded me of its distant cousin, the blood orange. My compliments to Harry & David.*

QUARTERED CHICKEN WITH ORANGES

Ingredients:

2 sections of quartered chicken, leg and thigh portion

1 teaspoon kosher salt

1/8 teaspoon cracked black pepper

2 Cara Cara oranges, quartered

1/2 onion, chopped in chunks

2 cloves garlic, chopped

2 tablespoons olive oil

1 tablespoon rosemary leaves

1 teaspoon Herbes de Provence

2 sprigs fresh thyme

Instructions:

Preheat oven to 350°. Salt and pepper the chicken on both sides. Place chicken in an iron skillet. Surround it with oranges, onion, and garlic. Rub the chicken well with olive oil. Sprinkle with rosemary leaves and Herbes de Provence. Tuck two sprigs of thyme in between chicken. Bake one hour until golden and internal temperature is 165°.

Unstuffed Green Pepper Bake

What’s Cooking in Gail’s Kitchen? The Next Step: Unstuffed Green Pepper Bake! If you love the taste of stuffed green peppers, but really hate the extra steps of preparation, look no further. This “unstuffed” version can be served in individual casserole dishes or a family-style pan, thus eliminating the need for hollowed-out green peppers. Still yummy, still Spanish-flavor, still way back generational goodness like your grandma used to make. Be good to yourself when the week gets crazy busy. Make a batch of “unstuffed” green peppers and sit back with a glass of wine while the oven does all the work. You’re worth it.

UNSTUFFED GREEN PEPPER BAKE

Ingredients:

2 green peppers, coarsely chopped

24-ounce jar traditional pasta sauce

1/4 teaspoon garlic powder

1/8 teaspoon oregano

1/8 teaspoon basil

2 cups rotisserie chicken or turkey, shredded

1 cup cooked brown rice

1 1/2 cups Italian cheese blend, shredded

2 tablespoons panko bread crumbs

1 tablespoon olive oil

Instructions:

Preheat oven to 350°. Cook chopped green peppers in the microwave-safe dish for 2 minutes on High setting. Set aside. In a large bowl, combine pasta sauce, garlic powder, oregano, and basil. Mix well. Fold in shredded meat, brown rice, and 1/2 cup shredded cheese. Add green peppers. Transfer filling into prepared casserole dish(es). Top with remaining cheese. In a small bowl coat panko crumbs with olive oil. Mix well. Spoon crumbs over cheese. Baked 25 minutes or until heated through.

Yellow Bloomin’ Onion

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Yellow Bloomin’ Onion! Nothing is more fitting for Spring than an appealing appetizer that resembles a flower, in my opinion. Now you can make a healthy version at home by baking the breaded onion instead of deep-frying it. The last few minutes under the broiler give it a crispy finish that adds extra crunch to the delicious petals. And the dipping sauce….oh my gosh, you have to try it!

YELLOW BLOOMIN’ ONION

Ingredients:

1 large yellow onion

2 tablespoons flour

1/4 cup Italian bread crumbs

1/4 cup Panko crumbs

1/4 cup Parmesan cheese, grated

1 tablespoon Cajun spices

2 eggs, beaten

1 tablespoon milk

1-2 tablespoons butter, melted

Seasoning salt to taste

Instructions:

Preheat oven to 400°. In one bowl, combine the flour, bread crumbs, Panko crumbs, Parmesan cheese, and Cajun spice. Mix well. Set aside. In another bowl, combine beaten eggs and milk. Whisk together. Set aside. Cut the top side of the onion. Turn over and carefully cut the root side just enough to peel the outer skin of the onion. Leave the root intact as this will be the base and hold the onion together. Discard onion skins. In order to give the appearance of an open flower, 16 sections are made. With the root side up, place the knife 1/8″ away from the core and slice straight down. It is best to begin with quarters and then make 3 slices in each quadrant all the way around. Carefully turn the onion over and spread the “petals” apart. Dip the onion in the milk bath and wash it completely using a pastry brush. Carefully transfer the onion to the bowl filled with breading. Beginning at the bottom, cover each petal with dry coating. Again using the pastry brush, continue coating the petals until the egg wash is gone. You may alternate the egg mixture and dry coating to cover the petals. Transfer the onion to an oven-safe pie plate or dish. Cover with foil and bake for 15 minutes. Using hot pads, take the pan from the oven and remove the foil. Using a pastry brush, coat the onion with melted butter. Return to the oven. Bake 10 minutes longer, or until crispy. I set the broiler on High and broiled it for 4-5 minutes to make it extra-crunchy. Watch carefully so it does not burn. Remove from oven. Sprinkle with seasoned salt. Place on a serving platter. Serve with dipping sauce.

DIPPING SAUCE

Ingredients:

1/4 cup mayonnaise

1/4 cup Greek yogurt

3 teaspoons ketchup

2 teaspoons Lea and Perrins

2 tablespoons horseradish

1/2 teaspoon paprika

1/8 teaspoon cayenne

Instructions:

Combine mayonnaise, yogurt, ketchup, Lea and Perrins, horseradish, paprika, and cayenne. Mix well and refrigerate for one hour. Pour into a small cup and place in the center of the onion.

Ziti Baked Spinach

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Ziti Baked Spinach! Four simple ingredients are baked together to create a timeless Italian favorite: ziti pasta, tomato sauce, spinach, and cheese. The rest is simply embellishment for the palate. The short tubular shape of ziti grabs onto chunky sauces, making it a distant cousin to penne, which may be easier to find in the grocery aisle. However, I visited a specialty store where I chose an authentic organic brand of ziti pasta made in Italy. Buona Saluté!

ZITI BAKED SPINACH

Ingredients:

8 ounces ziti

1 10-ounce package frozen spinach, thawed

1/4 cup Italian bread crumbs

1 egg, beaten

2 tablespoons olive oil

3/4 cup mozzarella cheese, finely shredded

16 Italian style meatballs, halved

8 ounces mushrooms, sliced and sautéed

24 ounce jar of basil spaghetti sauce

1/8 teaspoon oregano

1/8 teaspoon marjoram

1/8 teaspoon garlic powder

Instructions:

Preheat oven to 350°. Lightly grease an 8″x8″ casserole dish. Cook pasta according to package directions, al dente. Drain in a colander. Sauté mushrooms in a tablespoon of olive oil. Cook spinach according to package directions. Drain and transfer to a medium bowl. Combine spinach, bread crumbs, egg, olive oil, 1/4 cup cheese, and ziti. In a large skillet, mix spaghetti sauce, mushrooms, Italian sausage, oregano, marjoram, and garlic powder. Simmer for 10 minutes until heated through. Layer a third of the meat sauce on the bottom of the casserole dish. Fill the next layer with the spinach ziti mixture. Top with remaining spaghetti sauce. Sprinkle 1/2 cup mozzarella cheese over all. Bake for 30 minutes. Let rest for 10 minutes and serve.

One Fish, Two Fish

What’s Cooking in Gail’s Kitchen? The Joy of Eating: One Fish, Two Fish! The health benefits of eating tilapia are enough to make you feel like a poet. By choosing a fish that is high in protein and low in calories, why not get creative with a baked and crispy crust? This one has a kick of spice balanced with natural cornmeal and grated cheese. Give it a whirl and pass your comments on to me. I’d love to hear from you.

ONE FISH, TWO FISH

Ingredients:

2 tilapia fillets, boneless and skinless

1 tablespoon olive oil

1/4 cup seasoned bread crumbs

1/4 cup panko bread crumbs

1/4 cup flour

1/4 cup cornmeal

1/4 cup Parmesan cheese, grated

1/4 teaspoon sea salt

1/8 teaspoon cracked black pepper

1/2 cup Jazzy Jerk Sauce*

Instructions:

Preheat oven to 425°. While the oven is preheating, cover the bottom of an iron skillet with the olive oil. Place skillet in oven while you prepare the breading for the tilapia. Mix together all dry ingredients and spread on a sheet of waxed paper. Pour the Jazzy Jerk Sauce* into a shallow bowl. Dip one fish fillet at a time into the sauce, coating both sides. Once wet, dredge in bread crumb mixture to fully cover both sides. Set aside and repeat for the second fish fillet. Using oven mitts, carefully remove iron skillet from oven. Place fish fillets in pan and return to oven. Bake 8 minutes, gently turn over and bake 4 minutes longer. Do not over cook. Serve with a side of cole slaw.

Eating My Way Through the Holidays! Yuletide Favs: Thyme for Brie! Serving baked cheese is always a good idea, in my book. It’s like granting permission to have an appetizer as a meal plus, you get to eat with your fingers. By adding fresh herbs and natural honey, suddenly cheese becomes an elegant appetizer that even has men succumbing to its allure and gooey texture. Grab a bottle of wine or sparkling beverage, ease onto the back porch, and watch the sun sink into the shadowy horizon.

THYME FOR BRIE

Ingredients:

1 wheel of Brie

2 tablespoons Savannah Bee raw acacia honey*, or natural honey

4-5 sprigs of fresh thyme

Sea salt crackers

Crispy Parmesan cheese rounds

Instructions:

Preheat oven to 350°. Spray a nonstick ovenproof dish with nonstick oil. Slice the rind off the top of the wheel of Brie. Place the wheel in the dish with skin side down. Drizzle acacia honey over the top of the Brie. Place fresh thyme over honey. Bake for 10-12 minutes until cheese is gooey and completely melted. Serve immediately with any assortment of crackers.

Eating My Way Through the Holidays! Yuletide Favs: Havarti Mashed Potatoes! The best kept secret for staying organized during the flurry of activity of family gatherings is “make-ahead” recipes that have the oven doing most of the work. By creating this side dish the day before, you eliminate everyone hovering in the kitchen while you whip it up at the last minute. And leftovers are a breeze because they automatically become Divine Duchess Potatoes.* Do yourself a favor, enjoy that glass of wine with your guests while the mashed potatoes bake in the oven.

HAVARTI MASHED POTATOES

Ingredients:

10 potatoes, peeled and cut up

4 tablespoons butter, softened

1/2 cup milk

1/2 cup yogurt

1/2 teaspoon rosemary

1/2 teaspoon sea salt

1/8 teaspoon cracked black pepper

1 cup Havarti cheese, shredded

1/2 cup extra sharp cheddar cheese, finely shredded

1 tablespoon parsley

Instructions:

Preheat oven to 350°. Grease a 1 1/2 quart casserole dish. Place potatoes in a 4 quart pan. Cover with water. Salt if desired. Heat to boiling; reduce heat to medium-low and cook potatoes until tender, about 15 minutes. Drain well. Add butter and mash. Slowly add milk beating slowly to eliminate lumps. Add yogurt, rosemary, salt, and pepper. Beat vigorously until potatoes are fluffy. Fold in Havarti cheese. Transfer to casserole dish and top with cheddar cheese. Bake uncovered 30-35 minutes. Garnish with parsley.
