Tomato Herb Cheese Naan

What’s Cooking in Gail’s Kitchen? Cheerful Choices: Tomato Herb Cheese Naan! The other day I sent my husband to the grocery store with a short list of produce items. Sounds simple, right? Within 15 minutes, I had several frantic texts asking me to clarify the type of tomatoes I needed him to buy. Perhaps you can understand his quandary. Years ago, a shopper had their choice of garden tomatoes or cherry tomatoes. Nowadays, you practically need an Old Farmer’s Almanac to clarify all the different varieties like Cherry, Grape, Green, Roma, Beefsteak, Campari, Cocktail, San Marzano, and Vine-Ripened tomatoes. Sheesh! All I really wanted were fresh tomatoes.

TOMATO HERB CHEESE NAAN

Ingredients:

1 prepared naan, store bought

1 tablespoon olive oil

1 tablespoon cornmeal

6-8 cocktail tomatoes, sliced

1 teaspoon kosher salt

8 ounces fresh mozzarella, sliced

1/4 teaspoon garlic powder

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

Fresh oregano leaves, for garnish

Instructions:

Preheat oven 400°. Spray a baking sheet with nonstick oil. Set aside. Brush the bottom of the naan. Sprinkle with cornmeal. Transfer naan to the baking sheet, bottom side down. Bake 5 minutes. Remove pan and set aside. Meanwhile, to prepare tomatoes, arrange sliced cocktail tomatoes on a cutting board; sprinkle with kosher sea salt. Allow to rest for 5 minutes. Arrange sliced fresh mozzarella over naan. Layer with cocktail tomatoes. Sprinkle with garlic powder, oregano, basil, and marjoram. Bake 15 minutes longer, or until cheese is melted and golden. Cool slightly, cut into portions. Garnish with fresh oregano leaves. Serve warm.

Zesto Pesto Breakfast Burrito

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: Zesto Pesto Breakfast Burrito! I see you shaking your head thinking, “A burrito for breakfast? Tell me more.” By combining your favorite Mexican ingredients with scrambled eggs, this popular menu item magically transforms breakfast into a fiesta for the taste buds. The thicker flour tortilla shell makes a hardy pocket for scrumptious fillings without turning it into a soggy mess. Go ahead and add another dollop of salsa. Once the cheese melts, everything blends into an eye-opener for any day.

Serve immediately.

Heirloom Tomato Cheese Tart

What’s Cooking in Gail’s Kitchen? Splurge-Worthy Goodness: Heirloom Tomato Cheese Tart! The secret is in the cheese. I’m a fanatic when it comes to gourmet cheeses. I like the idea of something different and can often imagine the skilled cheesemakers concocting special blends with creamy textures, dried herbs, buttery hints, and natural aging. This cheese in particular has the qualities of cheddar and gruyère giving it a complex buttery nut flavor. Is it any wonder the earthy garden tomatoes pair so well with it. Some might say it’s on its way to becoming a time-honored tradition.

Vine-Ripened Tomato Flatbread

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Vine-Ripened Tomato Flatbread! I miss my vegetable garden. Although it wasn’t huge, it provided me with tomatoes in all shapes and sizes. I used to snack on cherry tomatoes as I picked a handful for the evening dinner salad. Sometimes the juices would squirt out of my mouth, which made me thankful no one was around to be the target of such fluid madness. The Roma tomatoes were perfect when puréed into a delectable sauce for pasta or pizza. And the beefsteak varieties provided enough texture to hold everything together in a salty BLT smothered in mayonnaise. Talk about a sensory explosion. Ah, yes, tomatoes make me very happy.

Another Egg Salad Recipe

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Another Egg Salad Recipe! Just what you need…….another way to make egg salad at home. What’s the mystery, you ask, rolling your eyes and shaking your head from side to side. Well sometimes those extra calories in mayonnaise can blow up a diet, if you know what I mean. Besides, I’m a huge fan of olive oil and fresh basil to make a dish flavorful. Sweet vidalia onions are a nice compromise to its distant cousin, the purplish-red onions, so you choose which way to go. Fair warning, though, this scaled down version of egg salad won’t stick together like glue. You’re better off eating it with a fork, spooning it onto a bed of baby spinach leaves, or scooping it off the plate onto a multigrain cracker.

ANOTHER EGG SALAD RECIPE

Ingredients:

4 hard boiled eggs, cooked and chopped

1/2 cup sweet onion, chopped

2 tablespoons olive oil

1 teaspoon Himalayan sea salt

2 stems fresh basil leaves, snipped

Instructions:

In a serving bowl, combine chopped hard boiled eggs and sweet onion pieces. Drizzle olive oil over all. Sprinkle Himalayan sea salt to taste. Add fresh basil snips. Gently toss and serve.

Thyme Tomato Toss

What’s Cooking in Gail’s Kitchen? Elevated Edibles: Thyme Tomato Toss! Hop aboard the yellow tomato bus for a ride that will take you down a two-lane country road. These golden nuggets, about the size of a cherry, are often less acidic and milder than their popular red cousins. I find them a touch sweeter as well. Their colors can range from pale yellow to sunny gold to bright orange, which makes for a stunning combo in marinated tomatoes or tasty fresh salsa. Just so you know, the skins are pretty tender, if that’s ever been an issue for you. With all that being said, now sit back, and enjoy the ride.

THYME TOMATO TOSS

Xanadu Pasta Salad

What’s Cooking in Gail’s Kitchen? Table Food: Xanadu Pasta Salad! At first glance, this may appear as a five-minute throw-together meal. Think again. In actuality, the magic begins once half the ingredients are combined and tucked away in the refrigerator for a couple days to marinate. At this point, the pasta actually transforms into a gourmet dish you are likely to have tasted at a family-owned sandwich shoppe or small town deli. One forkful may leave you wondering if this is all a dream. Is that music I hear in the background? Xanadu. Quickly, store those thoughts in your memory bank. I have no doubt you’ll return there for more.

Risotto Tomato Basil

What’s Cooking in Gail’s Kitchen? Table Food: Risotto Tomato Basil! When the rice cooker is on the fritz, and you’re still craving risotto, try the next best thing. There’s no shame in using a boxed version as a foundation for a meal in-a-bowl. After all, these tried and true products are on the shelf for a reason. Most have perfected the art of imitation to the point where one might ask which is better. True, the homemade version does involve a certain finesse for stirring at a crucial time, exerting more energy than otherwise, but who’s the wiser? In the end, let your stomach be the judge.

RISOTTO TOMATO BASIL
