What’s Cooking in Gail’s Kitchen? Food Plating: Yellow Roasted Pears! Need a show stopping dessert that will thrill your guests? Pears definitely check all the boxes. Dessert pears are naturally sweet, delicious warm, have an impressive beauty quality, manage portion-control, are super simple to make, and pear-fectly delightful. If you, like me, appreciate a cordial glass of wine with dessert, think a fizzy Moscato, spicy Gewürztraminer, or classic Pinot Gris. I did notice a couple of readers shaking their heads about the bleu cheese crumbles, mumbling “No Way!” Take heart because Gorgonzola, Gouda, or Ricotta can be milder choices as an excellent pairing instead. And while I’m at it, walnuts or almonds can be substituted for the sugared pecans. You see? It’s all good. Everyone can justify this versatile dessert. 

YELLOW ROASTED PEARS 

Ingredients: 

4 Bartlett pears, ripe but firm

2 tablespoons butter, unsalted 

1/2 teaspoon cinnamon

1/4 cup bleu cheese, crumbled

1/4 cup sugared pecans 

2 tablespoons natural honey

1 tablespoon lemon juice

Fresh thyme, for garnish

Instructions: 

Preheat oven to 375°. Line a baking sheet with parchment paper. Set aside. Slice the pears lengthwise, leaving the stem in place where possible. Using a melon ball utensil, remove the core to create a small cavity. Brush the pears with melted butter; sprinkle with cinnamon. Place the pears, cut side up, on the prepared baking sheet. Roast in the preheated oven for 20 minutes, or until lightly golden. Carefully remove the pears from the oven. Fill each cavity with crumbled bleu cheese and chopped sugared pecans. Drizzle with honey. Sprinkle with lemon juice for brightness. Broil the pears on High setting for 2 minutes, or just until the bleu cheese begins to melt slightly. Watch carefully. Transfer the pears to a serving platter. Garnish with fresh thyme. 

Wayward Wedge Salad

What’s Cooking in Gail’s Kitchen? The Daily Special: Wayward Wedge Salad!  I get so excited when I come across bleu cheese at the Farmers Market!  Recently, I was fortunate enough to lay my hands on a nice creamy chunk of Amish Bleu Cheese. And rather than nibble the entire portion away, I thought I better do something healthy with it. Does anyone else struggle with an internal tug-of-war?

WAYWARD WEDGE SALAD

Ingredients:

1 head iceberg lettuce

6 slices bacon, precooked

2 eggs, hard cooked and chopped

Blue cheese crumbles

Blue cheese dressing

2 Campari tomatoes on the vine, quartered

Instructions:

Chill 4 salad plates in refrigerator. Cook bacon until crisp; let cool and crumble. Set aside. Quarter and core lettuce. Place one wedge on each chilled plate. Top with dressing, bacon, tomatoes, and chopped egg. Garnish with cheese crumbles. Serve immediately.

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Arugula Cherry Salad! Handpicked cherries, at the peak of ripeness, set the stage for an appealing salad that is sure to be delightful. Don’t have an orchard nearby? No worries. Check the local Farmer’s Market, fruit stand, or supermarket for the season’s bounty. Timing is everything. You’ll want to have enough ripe cherries on hand to pair later with wine and perhaps a little chocolate. Spoiler Alert: I’ve set aside a portion of juicy red cherries to feature in a decadent dessert. Stay tuned.  
ARUGULA CHERRY SALAD
Ingredients:

6 ounces baby arugula 

16 ripe cherries, stems removed and pitted

1/4 cup almonds, sliced

1 tablespoon tarragon, leaves only

1 tablespoon sherry cooking wine 

1 teaspoon balsamic vinegar

3 tablespoons olive oil 

Sea salt to taste

Cracked black pepper to taste

4 ounces Bleu cheese, crumbled
Instructions:

After the pits are removed, cut the cherries in half. Combine arugula, cherries, almonds, and tarragon in a large bowl. Toss gently. In a small bowl, whisk together sherry cooking wine, balsamic vinegar, olive oil, sea salt, and cracked black pepper. Drizzle over salad and gently toss. Divide into serving bowls. Finish with Bleu cheese crumbles over top. Serve immediately.

What’s Cooking in Gail’s Kitchen? Be Our Guest: Peaches Hot Off the Grill! Need a salad tonight? Take the easy way out and throw a couple peaches on the grill. You can even leave the skin on, like I did. In a few minutes, you’ll be savoring their remarkable flavor on a bed of mixed greens. As the family claps their hands in delight, simply take a bow and chirp, “You’re welcome!”
PEACHES HOT OFF THE GRILL
Ingredients:

2 large fresh peaches, halved and pitted

1-2 tablespoons lemon olive oil

1/3 cup Bleu cheese, crumbled 

2 tablespoons pecan bits

Mixed Greens

Lemon Olive Oil to taste

Pomegranate Balsamic Vinegar to taste
Instructions:

Preheat gas grill on medium-high heat. Brush cut side of each peach half with lemon olive oil. Place cut side down on grill. Cook for 5 minutes. Flesh will be slightly charred. Turn peaches over and cook 2 minutes longer. Meanwhile divide salad greens between individual plates. Transfer one peach half to each bed of greens. Sprinkle with crumbled Bleu cheese and pecan bits. Drizzle with additional lemon olive oil and pomegranate balsamic vinegar to taste.
