M&M Blonde Brownies

What’s Cooking in Gail’s Kitchen? Food Plating: M&M Blonde Brownies! I promise I did not make up the name of this dessert. Blonde Brownies have been around as far back as my childhood, and probably longer. I’m of the generation that had some form of dessert after supper, every single day. And it was totally guilt-free. I might also mention, nothing was super-sized back then either. And we played outside until dark. But I digress. Back to the blonde brownies. Basically they are not made with melted chocolate or cocoa powder.  Between the brown sugar and warm butter, the results are a soft, chewy, sweet dessert bar that tastes Yumolicious. Be creative: add chopped walnuts, caramel drizzle, a scoop of ice cream, or white chocolate morsels. Taste the batter and see. You’ll be hooked. 

M&M BLONDE BROWNIES

Ingredients: 

1/3 cup butter

1 cup brown sugar

1 cup flour

1/2 tablespoon baking powder

1/8 teaspoon baking soda

1/2 teaspoon sea salt

1 egg, beaten

1 tablespoon vanilla extract

1/4 cup M&M* candies

Mini chocolate chips, optional

Instructions: 

Preheat the oven to 350°. Spray a 9”x9” pan with nonstick oil. Set aside. Warm butter over medium heat; do not burn. Add brown sugar and stir until sugar is dissolved and mixture is smooth. Set aside to cool slightly. In a mixing bowl, combine flour, baking powder, baking soda, and sea salt. Whisk thoroughly. Slowly add the butter mixture to the flour mixture. Add the beaten egg and vanilla extract. Stir until combined. Spread the batter into the prepared pan. Top with M&M candies. Bake 15-20 minutes, or until light brown and a tester comes out clean. Sprinkle mini chocolate chips on top, if desired.

Broccoli Florets in Cashew Sauce

What’s Cooking in Gail’s Kitchen? Be Our Guest: Broccoli Florets in Cashew Sauce! Are you one of those siblings who used to roll your eyes at the idea of being told to “eat your vegetables”? Isn’t it amazing how we outgrow childhood perceptions and turn them into a food-lover’s paradise? I know, right! Take broccoli, for instance. I remember sitting at the table until every tender green floret had been pushed around my plate, refusing to eat another bite. Nowadays, I practically cheer when the waitress says I can substitute broccoli in place of french fries.

BROCCOLI FLORETS IN CASHEW SAUCE

Ingredients:

1 pound broccoli, cut up and stems removed

1/3 cup unsalted butter

1 tablespoon brown sugar

3 tablespoons Golden Mountain sauce

2 teaspoons garlic vinegar

1/4 teaspoon Mrs. Dash Herb and Garlic Blend

2 cloves garlic, minced

1/3 cup cashews, chopped

Instructions:

Cut the stalk off a head of broccoli with a sharp knife. As you cut through the thickness, the individual florets will fall away into smaller pieces. The crowns will feel tight and springy with the appearance of tight closed buds. Discard stems. Place the florets in a microwave safe covered dish. Add 2 tablespoons water. Microwave on HIGH for 3 minutes. Carefully remove from microwave oven; drain. In a small skillet, melt butter over medium heat. Add brown sugar, Golden Mountain sauce, garlic vinegar, Mrs. Dash spices, and garlic cloves. Bring to a boil; stirring to dissolve sugar. Remove from heat. Mix in the cashews. Ladle cashew sauce over broccoli florets and serve.

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Quaker Oat Breakfast Companions! I must confess, some days a cup of Italian espresso and a crispy wafer roll is enough to get my engine up and running. But on those mornings when I wake up ravenous, I turn to a hearty bowl of Quaker Oats with all the trimmings: pomegranate arils, orange slices, almonds, cinnamon, and brown sugar. I appreciate the fiber, fruit, and nuts for healthy living. Topped with a bit of honey and milk in lieu of brown sugar, and I’m left feeling full for longer periods of time. Plus, it’s a good source of fiber and iron. Switch things up now and then by choosing a bowl of oatmeal for breakfast.

QUAKER OAT BREAKFAST COMPANIONS

Ingredients:

1 cup milk

1 dash sea salt

1 dash cinnamon

1/2 cup whole grain oats

1 mandarin orange, peeled

1 tablespoon almond slices

1 tablespoon pomegranate arils

1 teaspoon brown sugar or natural honey

Instructions:

Combine milk, salt, cinnamon, and oats in a microwave-safe bowl. Microwave on High 2 1/2-3 minutes. Remove and mix well. Top with oranges, almonds, arils, and honey.

Eating My Way Through the Holidays! Yuletide Favs: Yams Topped with Pecan Streusel! One of the advantages of being married is the blending of traditions, especially when it comes to family recipes. “My mama always put marshmallows on our sweet potatoes,” my husband volunteered as I sat planning my holiday menu. I’d heard of it, but had no idea why people raved about it. ‘Til now. OMG! This yam dish is about as close as you can get to eating dessert throughout the meal. Seconds, please.

YAMS TOPPED WITH PECAN STREUSEL

Ingredients:

1 tablespoon unsalted butter

2 1/2 pound can of yams; drained, cut into 1″ cubes

2 tablespoons olive oil

1/4 cup natural honey

1 tablespoon pure maple syrup

1 teaspoon cinnamon

1/2 teaspoon sea salt

1/8 teaspoon white pepper

Streusel Topping:

1 cup brown sugar

1/3 cup flour

1 teaspoon cinnamon

5 tablespoons unsalted butter, melted

1 cup glazed pecans, chopped*

1 3/4 cups miniature marshmallows

Instructions:

Preheat oven to 350°. Grease a 9″ round casserole dish with one tablespoon unsalted butter. Arrange cut yams evenly. Drizzle the yams with olive oil, natural honey, and pure maple syrup. Sprinkle with ground cinnamon, sea salt, and white pepper. In a small bowl combine brown sugar, flour, and cinnamon. Mix well. Add melted butter. Stir until the liquid is absorbed and topping resembles small peas. Spread over the top of the yams. Sprinkle pecans over all. Bake 25 minutes. Remove and carefully arrange miniature marshmallows around the perimeter of the casserole dish. Return to the oven and additional 5 minutes until marshmallows appear toasted. Watch carefully. Serve warm.

What’s Cooking in Gail’s Kitchen? Fresh Fruit Salad! Apples, Peaches, Strawberries, Rainer Cherries. The health benefits are invaluable since most fruits are naturally low in fat, sodium, and calories. Munch on them together for an enticing sweet-tart explosion of delicate flavor. Partner the golden yellow-colored and red-blushed fruit for a distinctive taste experience with a smooth creamy yogurt dip. In a hurry? Grab a piece of fruit on-the-go and eat with an individually wrapped portion of string cheese. 
FRESH FRUIT SALAD
2 cups fresh strawberries

2 cups fresh Rainier Cherries

2 Gala apples

2 Georgia Peaches
In a large salad bowl, combine halved strawberries with tops removed, pitted cherries with stems removed, cored apple slices, and cut-up pieces of peach, pit removed.  
DIP
1 cup Greek Yogurt

2 teaspoons lemon juice

1 tablespoon brown sugar

1/2 teaspoon almond extract
In a small bowl, combine Greek yogurt, lemon juice, brown sugar, and 1/2 teaspoon almond extract. Stir until blended. Serve over fruit in parfait glasses or enjoy as a finger food.

Eating My Way Through the Holidays! Special Edition: Butterscotch Icebox Cookies! Here’s an old-time favorite from the North Pole. Imagine Mrs. Claus, with her crew of kitchen elves up to their elbows in flour as the aroma of bakery items fill the air. Repeat after me: “Never substitute the butter with another oil.” It will completely change the outcome. Think about it for a minute. If you remove the “butter” from butterscotch, what will that leave? Trust me, you don’t want to find out. Go for the gold instead and reap the reward. Catch the spirit and watch your little helpers share the excitement, too. 
BUTTERSCOTCH ICEBOX COOKIES 
Ingredients:

3/4 cup butter

2 cups brown sugar 

2 eggs

1 teaspoon vanilla 

2 teaspoons baking powder

1 teaspoon sea salt

3 1/2 cups flour

1 cup walnuts, chopped
Instructions:

Melt the butter. Stir in brown sugar. Add eggs and vanilla. Mix well. In a medium bowl combine baking powder, sea salt, and flour. Pour the flour mixture into the sugar mixture, stirring to form a solid dough. Fold in walnuts. Shape dough into two long rolls. Wrap each log in wax paper. Refrigerate 8 hours or overnight. To bake, preheat oven to 375°. Slice dough thinly. Bake 10-12 minutes until lightly browned.

Eating My Way Through the Holidays! Special Edition: Crunch Compulsion! If you’ve always wanted to make toffee, but didn’t have the patience for standing at the stove waiting for the candy thermometer to reach its mark, think about an easy alternative. Crunch Compulsion has the rich buttery taste of toffee layered over a firm graham cracker base. With a finishing touch of pecans and walnuts, you can certainly see where the “crunch” comes in. 
CRUNCH COMPULSION 
Ingredients:

1 package graham crackers

1/2 cup pecans, chopped

1/2 cup walnuts, chopped

1 cup butter

1/2 cup brown sugar

1/2 cup white sugar

1/4 teaspoon cream of tartar

1/8 teaspoon cinnamon 
Instructions:

Preheat oven to 350°. 

Line a baking sheet with aluminum foil. Place the graham crackers in a single layer, completely covering the bottom of the baking sheet. Sprinkle pecans and walnuts over crackers. In a saucepan over medium-high heat, combine butter, brown sugar, white sugar, cream of tartar, and cinnamon. Stir constantly until mixture boils. Do not burn. Reduce heat to medium and let mixture boil for 3 minutes without stirring. Carefully pour mixture over graham crackers, allowing liquid to cover all. Bake 10 minutes. Cool completely. Break into pieces.
