What’s Cooking in Gail’s Kitchen? The Food Whisperer: Havarti Habanero Handful! You’re probably thinking, “Not another grilled cheese sandwich!” Anyone who knows me understands I can’t leave well enough alone. So…when I came across this “heated” rich, semi-soft version of havarti cheese, I knew I had to have it. Habaneros, as you may recall, are like dynamite in your mouth. The cheese itself is creamy and mild which makes it a perfect match for the testy habanero pepper, or orange lantern as some people call them. When layered with cherrywood smoked ham and grilled artisan bread, the end result is nothing short of Fire and Ice. Are you up for the challenge?

HAVARTI HABANERO HANDFUL

Ingredients:

4 thick slices of artisan bread

3 tablespoons butter

8 ounces cherrywood smoked ham, deli sliced

4 ounces havarti habanero cheese, sliced

Instructions:

Preheat an iron skillet over medium low heat. Butter one side of each slice of bread. Place two slices in skillet, buttered side down. Divide cherrywood smoked ham between them. Replace tops, buttered side up. Heat sandwiches until bread is lightly browned, then carefully flip over. Layer havarti habanero cheese over toasted tops of sandwiches. Reduce heat to low setting. Place a glass lid over the pan so the cheese will melt as the bottoms turn golden brown, approximately 2-3 minutes. Serve immediately.

Apple Butter Bars

What’s Cooking in Gail’s Kitchen? The Food Whisperer: Apple Butter Bars! What if I told you there was no “butter” in apple butter? Would you wrinkle your brow and say, “Whaaat?” It’s true. Apple butter is made by slow-cooking apples a long time until the sugar content caramelizes, giving it a deep brown color. I skipped the homemade process by choosing to purchase an organic brand made by one of my favorite country restaurants. You can, too, by visiting local farmers who are more than willing to share their bounty this time of year. It’s Applelicious!

APPLE BUTTER BARS

Ingredients:

3/4 cup butter

1 cup sugar

2 cups flour

1 teaspoon sea salt

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1 1/2 cups natural apple butter

1 gala apple, peeled and chopped

1/3 cup peanuts, chopped

1/4 cup brown sugar

Instructions:

Preheat oven to 350°. Grease a 9”x13” pan. Set aside. Cream together butter and sugar. Mix flour, sea salt, and baking soda together. Add dry ingredients to butter mixture. Spread 3/4 of batter in the prepared pan. Sprinkle with ground cinnamon. Spread apple butter on top. Layer chopped apple pieces over all. Fill in with chopped peanuts. Crumble remaining batter on top. Sprinkle with brown sugar. Bake 30-35 minutes. Cool slightly and cut into 24 squares.

Zwieback Crust Peach Pie

What’s Cooking in Gail’s Kitchen? Equal Measures: Zwieback Crust Peach Pie! Icebox dessert pies conjure up sweet memories of dog-day afternoons, sun-burned shoulders, and aluminum tumblers of cherry Kool-Aid that left a bright red mustache stain. Following a stifling afternoon of playing in the yard that made sweaty bangs plaster to my sticky forehead, my brothers and I would run inside, slamming the screen door for what probably seemed like the umpteenth time to Mother who rang the dinner bell. “Wash your hands before you sit down,” she coaxed. “Dessert is something special, if you clean your plate.” Those words alone were enough to turn youthful minds into obedient offspring. Dessert defined those adolescent years. Everyone enjoyed them, guilt-free. Ah, the good old days.

ZWIEBACK CRUST PEACH PIE

Ingredients:

1 1/2 cups zwieback cracker crumbs

1/3 cup sugar

1/3 cup butter, melted

1 cup sugar

2 tablespoons cornstarch

1 cup water

3 ounce-package orange gelatin

3 cups ripe peaches, peeled and sliced; stone removed

Instructions:

Preheat oven to 350°. Combine zwieback crumbs, 1/3 cup sugar, and melted butter. Stir well. Reserve one tablespoon for crumb garnish. Press remaining crumbs firmly over the bottom and up the sides of a 9”-inch pie plate. Bake 10 minutes. Cool. In a saucepan over medium heat, combine 1 cup sugar, cornstarch, and water until smooth. Cook until thick and bubbly, 5-7 minutes. Remove from heat. Stir in flavored gelatin until dissolved. Cool. Arrange sliced peaches in crust. Pour filling over peaches. Sprinkle reserve crumbs on top. Chill for 2 hours, or until set. Serve cold.

Veggie Burger

What’s Cooking in Gail’s Kitchen? Equal Measures: Veggie Burger! For a quarter-pounder without all the fat, substitute red meat for black beans instead. Sound crazy? Actually, I conducted a little taste test on my husband recently. By using mashed black beans, onion, green pepper, egg, and bread crumbs, it seemed more like a meatloaf than a burger. It kinda did. The texture was the same and they fried up real nice in the iron skillet. By the time we added lettuce, tomato, onion, and pickle, we practically did a double-take on the finished product. Go all out and slide it between a brioche bun. The veggie burger definitely crossed the finish line at the dinner table. Now that’s delicious.

VEGGIE BURGER

Ingredients:

16-ounce can organic black beans, drained and rinsed well

1/2 green pepper

1/2 yellow onion

2 cloves garlic, minced

1 egg

1 tablespoon chili powder

1 tablespoon cumin

3 drops sriracha sauce

1/2 cup Italian bread crumbs

Butter for frying

Brioche hamburger buns

Condiments, per taste

Instructions:

Using a food processor set on Pulse, mash black beans until thick and chunky. Transfer to a bowl. Next, combine green pepper, yellow onion, and minced garlic in the food processor. Chop into small pieces. Stir into the black beans. Add egg, chili powder, cumin, and sriracha sauce. Mix well. Add bread crumbs. Mix together with gloved hands until consistency is dense enough to form into patties. Melt butter in an iron skillet over medium heat. Place patties into skillet and cook about 7-8 minutes until a crispy outer edge is present. Flip and cook 7-8 minutes longer. Serve with condiments of choice on a brioche bun.

Quality Lemon Butter

What’s Cooking in Gail’s Kitchen? Equal Measures: Quality Lemon Butter! Is it a thick custard to be eaten plain? Is it creamy butter for freshly baked bread? Or is it frosting for a scone? You decide. I smothered a blueberry muffin with this citrusy spread. But then again, I also topped my morning yogurt with it. Talk about versatility. You can improvise with this luscious lemon butter in just about anything. Well, except broiled lobster or corn on the cob. That might be disappointing simply because this particular lemon butter has a sweetness to it that makes it more like a dessert than a condiment. Think lemon curd and you’ll be on the right track. Now let’s get started.

QUALITY LEMON BUTTER

Ingredients:

3 eggs

1 egg yolk

1 cup sugar

2 lemons, grated peeling and juice

1/2 cup butter, melted

Instructions:

In the top of a double boiler over simmering water, combine eggs, egg yolk, and sugar. Stirring constantly, cook until mixture is thick and coats the back of a spoon. Do not allow mixture to boil as it will curdle. When mixture is thick, remove from heat. Add grated lemon peel, lemon juice, and melted butter. Stir well. Pour warm lemon butter into jars. Cover tightly and store in refrigerator.

Incredibly Delish Chocolate Bliss

What’s Cooking in Gail’s Kitchen? Equal Measures: Incredibly Delish Chocolate Bliss! Is it a cake? Is it a confection? Who cares? It’s smooth, creamy dreamy chocolate and it is incredible. The fact that it is flourless is a plus for those who avoid desserts for that particular reason. The dark chocolate and butter combination is divinely rich, which is why a little bit goes a long way. I find a nice cuppa joe or herbal tea creates a balance that works. As always, share a little bliss with those around you. They’ll thank you for it.

INCREDIBLY DELISH CHOCOLATE BLISS

Ingredients:

4 ounces bittersweet chocolate, chopped

6 tablespoons butter, cubed

2 eggs

1/4 cup sugar

1 teaspoon espresso powder

1/4 teaspoon almond extract

6 teaspoons chocolate hazelnut spread

Crushed pistachios for garnish

Instructions:

Preheat oven to 375°. Use paper muffin cups or buttered ramekins. Set aside. Combine bittersweet chocolate and butter in a microwave-proof bowl. Melt in microwave on high setting at 30-second intervals until melted and smooth. Stir occasionally. In a mixer bowl, combine eggs, sugar, espresso powder, and almond extract. Beat on medium-high speed for 5 minutes or until mixture is lightened. Reduce speed to low setting. Add melted chocolate/butter mixture until combined. Spoon into muffin cups or buttered ramekins. Add one half teaspoon of hazelnut spread in the center of each muffin cup batter. Bake 10 minutes until edges are set, but center is still soft. Do not over bake. Garnish with crushed pistachios. Cool 5 minutes before serving.

Honeycomb Cheese Wheel

What’s Cooking in Gail’s Kitchen? Equal Measures: Honeycomb Cheese Wheel! Remember when you were a kid and for fun you puckered up with those candy red wax lips? Me and my girlfriends would put them on, batt our eyes, sashay our hips, and laugh hysterically. Most often we’d find ourselves chewing on the sugary insides before spitting them out into tiny red blobs on our way home from school. I’m sure that made quite an impression on the neighborhood boys. Well today’s honeycomb is a distant cousin, twice-removed, to those artificial candy lips. Even better, raw honeycomb is completely safe to eat and naturally sweet. A little goes a long way simply because it is seeping with honey. Dress it up with a wheel of Camembert or Brie cheese, seasoned with a clove of garlic and a couple of sprigs from the herb garden. Spread it across baguette slices for an open-air treat.

HONEYCOMB CHEESE WHEEL

Ingredients:

1 wheel Camembert cheese

1 garlic clove, sliced

1 sprig rosemary

2 sprigs thyme

1 tablespoon butter, melted

Small section honeycomb

Instruction:

Preheat oven to 350°. Remove cheese from plastic wrap. Return cheese to its wooden box. Place box on a baking sheet. Take a knife and score a criss-cross pattern halfway through the cheese. Tuck garlic clove slices in the cuts. Sprinkle rosemary and thyme herbs over top. Drizzle butter over all. Bake, uncovered, 20 minutes until cheese is soft, bubbling, and fragrant. Serve immediately by spreading the golden cheese over toasted baguette slices. Then spoon the oozing honeycomb pieces over all. Garnish with fresh herbs.

Broiled Bay Scallops

What’s Cooking in Gail’s Kitchen? Equal Measures: Broiled Bay Scallops! Tender and sweet, bay scallops are a miniature version of the large-size sea scallops. When sautéed in garlic butter and dill, with a light squeeze of lemon juice, the end result is a splendid appetizer. Be festive and serve them on a half shell.

BROILED BAY SCALLOPS

Ingredients:

1 tablespoon olive oil

1 tablespoon butter

1 clove garlic, minced

1 pound bay scallops

1/8 teaspoon red pepper flakes

1/8 teaspoon dill weed

1/4 teaspoon sea salt

1 teaspoon lemon juice

1 cup mayonnaise

1 cup parmesan cheese, grated

1/8 teaspoon garlic powder

Instructions:

Preheat oven to 350°. Warm olive oil and butter in a skillet over medium heat. Add garlic clove; sauté until fragrant, 2-3 minutes. Increase heat to medium-high, add scallops. Sprinkle with red pepper flakes, dill weed, and sea salt. Sauté until lightly browned. Squeeze lemon juice over all. Remove from heat. Combine mayonnaise, grated parmesan cheese, and garlic powder. Gently fold in bay scallops. Transfer mixture to a greased casserole dish or clam shells. Bake 20 minutes. Broil 3-4 minutes on High until tops are golden. Watch carefully. Remove from oven. Serve with bagel chips.

Yum Yum Sauce

What’s Cooking in Gail’s Kitchen? The Clean Plate Club: Yum Yum Sauce! Although I got a little creative with the recipe, I’m seriously not making up the name, Yum Yum Sauce. Many of you already know it as the popular condiment found in Japanese hibachi restaurants. With a little tweaking, you now have permission to bathe dinner in it. By pairing it with tilapia fish and adding creamy spinach and sun-dried tomatoes, it literally had me licking my fork after every bite. I suppose you could add a side dish of rice or noodles, but honestly, I never got that far.

YUM YUM SAUCE

Ingredients:

3/4 cup mayonnaise

1 tablespoon butter, melted

1 teaspoon tomato paste

1 teaspoon agave nectar

1 teaspoon seasoned salt

1 tablespoon rice vinegar

2-3 tablespoons sun-dried tomatoes in olive oil, diced

1 teaspoon corn starch

1 cup heavy cream

10-ounce package frozen creamed spinach

3 tilapia fillets

2 tablespoons Italian-style bread crumbs

2 tablespoons vegetable oil

1 tablespoon butter

Instructions:

Combine mayonnaise, melted butter, tomato paste, agave nectar, seasoned salt, and rice vinegar in a bowl. Whisk thoroughly to blend. Fold in sun-dried tomatoes. Whisk together corn starch and heavy cream. Add to sauce. Mix well. Set aside. Microwave creamed spinach according to package directions. Set aside. To prepare tilapia fillets, dust both sides with Italian-style bread crumbs. Warm 2 tablespoons vegetable oil and 1 tablespoon butter in an iron skillet over medium heat. Fry seasoned fillets until golden brown on both sides, about 2-3 minutes per side. Transfer to a paper towel-lined platter. In a saucepan over medium heat, bring Yum Yum Sauce to a boil. Reduce to a simmer; cook 5 minutes until thickened and heated through, stirring occasionally. Add creamed spinach. Stir well. To serve, spoon enhanced Yum Yum Sauce onto a plate. Top with tilapia fillets.
