Baked Brie

What’s Cooking in Gail’s Kitchen? Simple Sensations: Baked Brie!  I typically serve this as an appetizer, with French preserves and almonds on top, but it also makes a wonderful dessert with a light fruity wine. 

BAKED BRIE

Ingredients:

14 ounce wheel of Brie*

1/4 cup apricot preserves 

2 tablespoons almonds, sliced

2 tablespoons butter, melted

1 teaspoon red pepper flakes, optional

* Camembert is a milder substitute. 

Directions:

Preheat oven to 325°. Remove Brie wheel from package and slice off the top surface of the rind. Place the wheel in a small oven-proof dish. Lightly score the cheese. Spread the apricot preserves over the exposed cheese surface. Sprinkle with almonds. Pour the butter over all. Garnish with red pepper flakes on top. Bake the Brie uncovered for 15-20 minutes until the cheese is soft and heated through. Serve in the same dish to keep it warm. 

Sliced fruit, deli crackers, and crusty baguettes make a nice compliment to the rich, creamy flavor. 

Au Gratin Potatoes

What’s Cooking in Gail’s Kitchen? Simple Sensations: Au Gratin Potatoes! How’s this for comfort food?  Butter, cream, and cheese……with potatoes thrown in. Can you say creamy and luscious three times very fast???

AU GRATIN POTATOES 

Ingredients:

6 medium potatoes 

1 clove garlic 

1 sweet onion, sliced thin

1/2 tablespoon olive oil

6 tablespoons butter

1 cup half & half cream

2 1/2 cups shredded Swiss cheese* 

Sea salt and pepper to taste. 

* Gruyere or Provolone or all three may be combined. 

Instructions:

Preheat oven to 400°. Lightly rub garlic all over a 9×13 baking dish. Butter dish then set aside unused portion of butter. Peel and slice potatoes. Hold in a bowl of cold water until ready to use. Heat olive oil in skillet over medium heat. Sauté onion until cooked. Divide drained potatoes, cooked onion, and shredded cheese into three layers in baking dish, reserving last third of cheese until the final 5 minutes of baking. Sprinkle with salt and pepper. Heat remaining butter with cream until the butter is melted and the cream is hot. Pour evenly over the top of the casserole. Bake for 45-50 minutes until the top is browned, the cream has been absorbed, and the potatoes are soft. 

Virginia Smoked Ham Sandwich

What’s Cooking in Gail’s Kitchen? Virginia Smoked Ham Sandwich!  The wonderful thing about baking a Virginia smoked ham is the assortment of menu options you glean from a three-pound ham purchase. And with picnic season upon us, this is a quick and easy meal to enjoy at the park. 

VIRGINIA SMOKED HAM SANDWICH 

Ingredients:

1/2 pound shaved precooked smoked Virginia ham pieces

4 slices sesame seed artisan bakery-fresh bread

2 tablespoons butter

2 slices Baby Swiss cheese

Mayonnaise or Mustard, optional to taste

Dill Pickle wedge for garnish

Instructions: 

Butter top sides of bread all the way to the edge. Put two slices into a heated skillet over medium-low heat. Assemble ham and Swiss cheese; top with remaining bread slices. Cook until golden brown on each side, turning once. Serve with the slightly tart taste of a dill pickle.  Add a tossed salad and sea salt Kettle chips for the perfect meal!

Kona Coffee Molten Cake

What’s Cooking in Gail’s Kitchen? Kona Coffee Molten Cake! Gerald and I spend some time on the tropical island of Kauai. While there we sip on freshly brewed coffee uniquely grown in the Hawaiian Islands. The taste is so richly smooth and delicious, I had to blend its flavor with dark chocolate. Each recipe is one serving, unless you share a bite. “Friends are the spice God adds to the cake of life!”

KONA COFFEE MOLTEN CAKE

Ingredients:

1/4 cup all-purpose flour

2 tablespoons Dutch chocolate powder 

1/4 teaspoon baking powder 

2 tablespoons granulated sugar

1/8 teaspoon sea salt

1/4 cup plus 1 tablespoon milk

2 tablespoons vegetable oil

1 tablespoon Kona brewed coffee*

1 tablespoon creamy peanut butter**

Instructions:

Mix dry ingredients together in medium bowl. Add milk, oil, and coffee to the dry ingredients. Stir until smooth. 

Pour batter into a tall microwave-safe mug. Make sure there is room at the top for the cake to rise. Drop the tablespoon of peanut butter in the center of the batter. Do not blend in. Bake in microwave on high for 1 minute. If it is not done, cook in additional 10-second intervals until done. Remove from microwave. BE CAREFUL. Enjoy the warm molten cake topped with a dollop of whipped cream. 

*Any strong brewed coffee may be used. If you omit the coffee, substitute 1/4 teaspoon vanilla extract. 

**The creamy peanut butter may be omitted or substituted with a hazelnut spread or marshmallow creme. 

Apricot-Orange Crumble Bars

What’s Cooking in Gail’s Kitchen?  Apricot-Orange Crumble Bars!  Who doesn’t love this saucy little fruit?  Apricots add an exotic touch of class to everything from appetizers to dessert. Try a dollop of jam on a round of baked Camembert cheese sometime.  It is decadent!  My recipe today serves as a breakfast food, an afternoon snack, or a delicate dessert option.  

APRICOT-ORANGE CRUMBLE BARS

Ingredients:

3/4 cup butter

1 cup sugar

2 cups flour

1teaspoon salt

1/2 teaspoon baking soda

1 teaspoon ground cinnamon 

12-ounce jar of apricot jam

1/3 cup dried apricots, sliced

2 tablespoons orange marmalade 

Directions:

Cream together sugar and butter. Mix flour, salt, and baking soda together. Add dry ingredients together. Spread 3/4 of batter into a 9×13 greased dish.  Sprinkle with 1 teaspoon of ground cinnamon.  Spread 12 ounce dollops of Bonne Maman Apricot Preserves* on top.  Slice dried apricot pieces over jam mixture.  Fill in with a tablespoon or two of Bonne Maman Orange Marmalade*.  Crumble remaining batter on top.  Sprinkle with 1/4 cup brown sugar.  Bake 350* for 30-35 minutes.  Cool slightly and cut into 24 squares. 

* Bonne Maman is a product of France. 

Yukon Oven Potatoes

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Yukon Oven Potatoes! My husband is intrigued by the “40 Year Guy” on TikTok who posts life hacks that are so simple, they’re often stupid. He can be seen all over social media coming up with innovative ways to do ordinary things…….like making crispy baked potatoes in the oven. And I don’t mean on the “Air Fryer” setting. When my husband forwarded a recipe, I just knew I had to show him that I can do it, too. The verdict, you wonder? Taste and See. 

YUKON OVEN POTATOES 

Ingredients:

3 Yukon potatoes, skin on; cut in half lengthwise 

1/4 cup butter 

Sea salt, to taste

Bacon crumbles, for garnish 

Chives, for garnish 

Instructions:

Preheat oven to 350°. Using a baking sheet, divide the butter into small pats, allowing 2 pats per potato half. Arrange each potato, cut side down, over two pats of butter. The skin side is facing up. Spray the skin with nonstick oil and sprinkle sea salt on top. Repeat with remaining potatoes. Bake 40-45 minutes, or until cooked through. If necessary, broil on High for 2 minutes for a golden skin color. Allow to rest 5 minutes before transferring to a platter. Garnish with fresh chives and bacon crumbles. 

Unforgettable Pan Sauce

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Unforgettable Pan Sauce! You know the stuff that sticks to the bottom of the pan whenever you sear meats? Never (repeat after me), NEVER scrape it out and throw it away. This stuff, in culinary terms, is called “fond”. It’s loaded with luscious flavor. When adding butter, herbs, and liquid, the bottom of the pan gets deglazed so all those bits and pieces give the sauce a taste so wonderful you may be tempted to slurp it through a straw. Elevate your next meal. 

UNFORGETTABLE PAN SAUCE

Ingredients:

1 tablespoon butter, room temperature 

1 garlic clove, minced

1/8 teaspoon marjoram 

1/8 teaspoon paprika

1/4 teaspoon sea salt

1/8 teaspoon white pepper

1 rosemary sprig

1-2 teaspoons flour

1/4 cup wine

1/2 cup vegetable stock

Instructions:

After removing the seared meat from the frying pan, do not discard the browned bits that remain at the bottom of the pan. Turn the heat setting to low. Add the butter, minced garlic, marjoram, paprika, sea salt, white pepper, and rosemary sprig. Cook the herbs and spices in the pan for 30 seconds to a minute. Gently add the flour to the pan, stirring occasionally, for 1-2 minutes. Deglaze the pan by adding the white wine. Allow the alcohol to evaporate, for about 15 seconds. Gradually add the vegetable stock to the pan. Simmer the sauce until it reduces and thickens slightly. Once you have the flavor and texture you like, remove the rosemary sprig; discard. Serve the sauce drizzled over meat or vegetables. 

Sheet Pan Pork Taquitos

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Sheet Pan Pork Taquitos! To season or not to season. Everyone has a basic slow cooker recipe for preparing roast pork. I like to keep mine fairly simple so, when finished, I have several options for the recipes I have in mind later on. If you’re thinking these taquitos sound too bland for your palate, simply add spices like chili powder, garlic, cumin, onion, and kosher salt during the cooking process. (Some of my friends use a prepackaged taco seasoning mix, for convenience.) You’re the chef, so you’re in charge. Make sense? Then carry on. 

SHEET PAN PORK TAQUITOS

Ingredients: 

12 corn tortillas 

3 cups pulled pork, precooked 

1 cup Mexican blend cheeses,  finely shredded

3-4 tablespoons butter, melted

Ranch dressing, for drizzling

Instructions:

Preheat oven to 400°. Spray a sheet pan with nonstick oil. Set aside. In a bowl, combine pulled pork and Mexican blend cheeses. Mix well. Warm corn tortilla shells in the microwave until malleable. Place one tortilla down on a flat surface. Fill it with pork and cheese mixture just below the center of the tortilla. Roll up the tortilla tightly and transfer it, seam side down, to the sheet pan. Repeat with remaining ingredients. Using a silicone brush, lightly oil the tops of the tortillas with melted butter. Bake 15-20 minutes, or until tortillas are crispy. Drizzle with ranch dressing. Serve with shredded lettuce, red onion, salsa, cilantro, and lime. 

Poppyseed Ham Sliders

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Poppyseed Ham Sliders! For a buttery good appetizer or game day snack, these quick and easy sliders get the party going. Be prepared to watch them disappear. If you’re short on time, make them a day ahead and store, covered, in the refrigerator. You will need to adjust the baking time to 20 minutes (covered) and then 8 minutes (uncovered). Either way, your family will thank you for being such a crowd pleaser. Simply smile and respond, “This old recipe? I’ve had it forever.”

POPPYSEED HAM SLIDERS

Ingredients:

12-count Hawaiian sweet dinner rolls

1/3 cup mayonnaise 

6 slices Swiss cheese, cut into quarters

24 slices deli honey ham

1 tablespoon poppyseeds

1 1/2 tablespoons Dijon mustard

1/2 cup butter, melted

1 tablespoon onion powder

1/2 teaspoon Worcestershire sauce

Instructions:

Preheat oven to 350°. Cut the rolls in half; spread mayonnaise onto one side of the rolls. Place a slice of Swiss cheese between two slices of ham. Replace the top of the rolls. Transfer sandwich to a baking dish. Repeat. In a medium bowl, whisk together poppyseeds, Dijon mustard, melted butter, onion powder, and Worcestershire sauce. Pour butter mixture over the rolls, just covering the tops. Cover with foil; let sit for 10 minutes. Bake for 10 minutes, or until cheese is melted. Remove foil; bake 2 minutes longer until the tops are slightly browned and crisp. Serve warm.
