What’s Cooking in Gail’s Kitchen? Apricot-Orange Crumble Bars! Who doesn’t love this saucy little fruit? Apricots add an exotic touch of class to everything from appetizers to dessert. Try a dollop of jam on a round of baked Camembert cheese sometime. It is decadent! My recipe today serves as a breakfast food, an afternoon snack, or a delicate dessert option.  
APRICOT-ORANGE CRUMBLE BARS
Ingredients:

2 cups flour

1 teaspoon salt

1/2 teaspoon baking soda

3/4 cup butter

1 cup sugar
Directions:

Cream together sugar and butter. Mix flour, salt, and baking soda together. Add dry ingredients together. Spread 3/4 of batter into a 9×13 greased dish. Sprinkle with 1 teaspoon of ground cinnamon. Spread 12 ounce dollops of Bonne Maman Apricot Preserves* on top. Slice dried apricot pieces over jam mixture. Fill in with a tablespoon or two of Bonne Maman Orange Marmalade*. Crumble remaining batter on top. Sprinkle with 1/4 cup brown sugar. Bake 350* for 30-35 minutes. Cool slightly and cut into 24 squares. 
* Bonne Maman is a product of France.

Eating My Way Through the Holidays! Special Edition: White Chocolate Cranberry Spice Bars! Like snowdrops over a country field, the white chocolate bits add a sweet creaminess to the crumb bars offsetting the tart tangy taste of cranberry sauce. You may notice a warm sweet-heat every once in awhile. It’s the candied baby ginger infused throughout. I use all-natural crystallized ginger slices and chop them up for added zing. For the merriest of holidays, make a batch of these bite-sized guilty pleasures. Perfect for a cookie exchange. 
WHITE CHOCOLATE CRANBERRY SPICE BARS
Ingredients:

2 cups flour

1teaspoon salt

1/2 teaspoon baking soda

3/4 cup butter

1 cup sugar

1 1/2 cups chunky cranberry sauce

1/4 cup crystallized ginger

1 cup white chocolate chips

1 cup powdered sugar

2 tablespoons milk
Directions:

Preheat oven to 350°. Cream together sugar and butter. Mix flour, salt, and baking soda together. Add dry ingredients together. Spread 3/4 of batter into a 9″x13″ greased dish. Gently press down with a spoon to level. Divide cranberry sauce over top. Sprinkle white chocolate chips over cranberry mixture. Fill in with chopped crystallized ginger. Crumble remaining batter on top. Bake for 30-35 minutes. Cool slightly and cut into squares or triangles. To make glaze, mix powdered sugar with milk, stirring until smooth. Drizzle over bars.

Eating My Way Through the Holidays! Special Edition: Golden Oyster Stew! I knew it was something special when my father requested this savory stew once a year. Although he was the only one who indulged in its aromatic creaminess, I managed to sneak one spoonful each time. I guess you could say eventually I acquired a taste for this seafood delicacy. Now I’m sharing it with you. Carry on the tradition. 
GOLDEN OYSTER STEW
Ingredients:

1 medium potato, peeled and diced

1 tablespoon onion, chopped 

4 tablespoons butter

1/2 teaspoon sea salt

1/8 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes 

8 ounces of fancy whole oysters, with oyster liquor 

1 cup light cream

1/2 cup of cheddar cheese, finely shredded 

Oyster crackers 
Instructions:

In a 2-quart pan over medium high heat, combine potatoes, onion, butter, sea salt, black pepper, and red pepper flakes. Add just enough water to cover. Cook until tender, about 20 minutes. Reduce heat to simmer and add oysters with liquor, cream, and cheese. Stir occasionally for cheese to melt. Gently bubble until the edges of the oysters begin to curl. Do not boil over. Serve the golden oyster stew immediately with oyster crackers.

For a true southern dish, you may turn to succulent oysters, crispy topping, and a creamy luscious sauce for a rich holiday dish that traditions are made of. More than likely, the family secret may be passed down through the generations. Some include parmesan cheese, others an oyster liquor. Perhaps the crumb layers consist of crushed butter crackers, but then again they may be seasoned breadcrumbs. No matter how you serve it up, the excitement builds for scalloped oyster dressing. Or casserole. Whatever you choose to call it. 
SCALLOPED OYSTERS
Ingredients:

1 pint Oysters, whole

2 cups cracker crumbs

1/2 cup unsalted butter, melted

1/2 teaspoon sea salt 

1/8 teaspoon white pepper

3/4 cup heavy cream

1/4 cup oyster liquor 

1/4 teaspoon Worcestershire sauce
Instructions:

Preheat oven to 350°. Spray an oven-proof dish with nonstick oil. Drain oysters, saving liquor. Combine cracker crumbs, melted butter, sea salt, and white pepper. Mix well. Spread one-third of the crumbs in the bottom of the dish. Layer with half the oysters, forming a single layer. Repeat with cracker crumbs and oysters. Top with the remaining cracker crumbs. Combine cream, oyster liquor, and Worcestershire sauce. Mix well. Pour over oyster layers. Bake uncovered for 40 minutes. Serve warm.

Eating My Way Through the Holidays! Special Edition: Cross-Cross Party Loaf! Every buffet table should offer this yummy garlic cheese bread as a grande centerpiece. It commands attention by its savory aroma, golden crust, and strings of ooey-gooey cheese. Oh. My. Gosh. Choose any artisan bread: sesame, sourdough, rye, baguette, or round. No matter how many times you make it, you’ll be the hit of every gathering. Bread-lovers unite!
CRISS-CROSS PARTY LOAF
Ingredients:

1 loaf artisan bread

6 ounces Havarti cheese, sliced

1/2 cup olive oil

1/4 teaspoon garlic powder 

1/2 teaspoon sea salt

1/8 teaspoon oregano 

1/8 teaspoon marjoram 

1/8 teaspoon basil

1-2 tablespoons butter, melted

1/2 teaspoon dill weed
Instructions:

Preheat oven to 350°. Line a baking sheet with foil. Place the artisan bread on the baking sheet. Cut the bread diagonally in a crisscross design, stopping near the base without cutting through. Combine olive oil, garlic powder, sea salt, oregano, marjoram, and basil. Mix well. Cut each slice of Harvarti cheese into strips. Separate each segment and brush with olive oil mixture. Place a strip of cheese in each crack. Repeat until the bread is saturated. Wrap bread in foil. Bake for 15 minutes until cheese is melted. Unwrap foil. Drizzle with melted butter; sprinkle with dill weed. Bake 5 minutes longer. Serve warm. Guests may pull apart crusty segments as needed.

Eating My Way Through the Holidays! Special Edition: Butterscotch Icebox Cookies! Here’s an old-time favorite from the North Pole. Imagine Mrs. Claus, with her crew of kitchen elves up to their elbows in flour as the aroma of bakery items fill the air. Repeat after me: “Never substitute the butter with another oil.” It will completely change the outcome. Think about it for a minute. If you remove the “butter” from butterscotch, what will that leave? Trust me, you don’t want to find out. Go for the gold instead and reap the reward. Catch the spirit and watch your little helpers share the excitement, too. 
BUTTERSCOTCH ICEBOX COOKIES 
Ingredients:

3/4 cup butter

2 cups brown sugar 

2 eggs

1 teaspoon vanilla 

2 teaspoons baking powder

1 teaspoon sea salt

3 1/2 cups flour

1 cup walnuts, chopped
Instructions:

Melt the butter. Stir in brown sugar. Add eggs and vanilla. Mix well. In a medium bowl combine baking powder, sea salt, and flour. Pour the flour mixture into the sugar mixture, stirring to form a solid dough. Fold in walnuts. Shape dough into two long rolls. Wrap each log in wax paper. Refrigerate 8 hours or overnight. To bake, preheat oven to 375°. Slice dough thinly. Bake 10-12 minutes until lightly browned.

Eating My Way Through the Holidays! Special Edition: Crunch Compulsion! If you’ve always wanted to make toffee, but didn’t have the patience for standing at the stove waiting for the candy thermometer to reach its mark, think about an easy alternative. Crunch Compulsion has the rich buttery taste of toffee layered over a firm graham cracker base. With a finishing touch of pecans and walnuts, you can certainly see where the “crunch” comes in. 
CRUNCH COMPULSION 
Ingredients:

1 package graham crackers

1/2 cup pecans, chopped

1/2 cup walnuts, chopped

1 cup butter

1/2 cup brown sugar

1/2 cup white sugar

1/4 teaspoon cream of tartar

1/8 teaspoon cinnamon 
Instructions:

Preheat oven to 350°. 

Line a baking sheet with aluminum foil. Place the graham crackers in a single layer, completely covering the bottom of the baking sheet. Sprinkle pecans and walnuts over crackers. In a saucepan over medium-high heat, combine butter, brown sugar, white sugar, cream of tartar, and cinnamon. Stir constantly until mixture boils. Do not burn. Reduce heat to medium and let mixture boil for 3 minutes without stirring. Carefully pour mixture over graham crackers, allowing liquid to cover all. Bake 10 minutes. Cool completely. Break into pieces.

What’s Cooking in Gail’s Kitchen? Food for Sharing: Yams Topped with Pecan Streusel! One of the advantages of being married is the blending of traditions, especially when it comes to family recipes. “My mama always put marshmallows on our sweet potatoes,” my husband volunteered as I sat planning my holiday menu. I’d heard of it, but had no idea why people raved about it. ‘Til now. OMG! This yam dish is about as close as you can get to eating dessert throughout the meal. Seconds, please. 
YAMS TOPPED WITH PECAN STREUSEL 
Ingredients:

1 tablespoon unsalted butter

2 1/2 pound can of yams; drained, cut into 1″ cubes

2 tablespoons olive oil

1/4 cup natural honey

1 tablespoon pure maple syrup 

1 teaspoon cinnamon 

1/2 teaspoon sea salt

1/8 teaspoon white pepper 
Streusel Topping:

1 cup brown sugar

1/3 cup flour

1 teaspoon cinnamon 

5 tablespoons unsalted butter, melted

1 cup glazed pecans, chopped*

1 3/4 cups miniature marshmallows 
Instructions:

Preheat oven to 350°. Grease a 9″ round casserole dish with one tablespoon unsalted butter. Arrange cut yams evenly. Drizzle the yams with olive oil, natural honey, and pure maple syrup. Sprinkle with ground cinnamon, sea salt, and white pepper. In a small bowl combine brown sugar, flour, and cinnamon. Mix well. Add melted butter. Stir until the liquid is absorbed and topping resembles small peas. Spread over the top of the yams. Sprinkle pecans over all. Bake 25 minutes. Remove and carefully arrange miniature marshmallows around the perimeter of the casserole dish. Return to the oven and additional 5 minutes until marshmallows appear toasted. Watch carefully. Serve warm.

What’s Cooking in Gail’s Kitchen? Food for Sharing: Whole Roasted Chicken! Go nontraditional this Thanksgiving. Scale things back a bit for an intimate dinner for two. By choosing a free-range whole chicken for roasting, you still afford classic results in each juicy bite. Prepare this succulent bird in half the time. Then go crazy with your favorite sides. 
WHOLE ROASTED CHICKEN
Ingredients:

3-pound chicken, whole 

3 fresh rosemary sprigs

3 tablespoon butter, sliced

1 tablespoon Herbs de Provence 

1 teaspoon onion powder

1 teaspoon celery seed

1 teaspoon sea salt

1/8 teaspoon cracked black pepper 

5 tablespoons butter, melted
Instructions:

Preheat oven to 350°. Place chicken in a shallow roasting pan. Season cavity with sliced butter. Insert rosemary sprigs. Generously sprinkle outside of bird with Herbs de Provence, onion powder, celery seed, sea salt, and black pepper. Brush skin with melted butter. Bake uncovered 1 1/2 hours. Skin will be golden and internal temperature should read 180°. Juices should run clear. Remove from heat. Baste with drippings. Cover. Let rest 20 minutes to allow juices to absorb before serving.
