What’s Cooking in Gail’s Kitchen? The Joy of Eating: Garlic Butter Mussels! One of the best ways to experience new foods is to be adventurous at your nearby market. By trying a quality product there first, you can decide if you might want to step out and either order it at a restaurant or perhaps, attempt to make it at home from scratch. That’s exactly what I did with this version of mussels. By making subtle changes that appeal to my palate, it turned my kitchen into a gourmet restaurant. Picture this, my husband was drawn indoors by the enticing aromas of garlic and seafood. I literally stood there at the stove in my bare feet feeding him fingertip morsels of aromatic mussels and herb-infused vermicelli. Talk about romantic!!!
GARLIC BUTTER MUSSELS

16-ounce package mussels in garlic sauce, frozen*

4 tablespoons butter

4 tablespoons white wine

1/8 teaspoon garlic powder

4 ounces vermicelli

Sea salt to taste

2 tablespoons olive oil

1 tablespoon capers

1/8 teaspoon basil

1/8 teaspoon marjoram

1/8 teaspoon parsley
Instructions:

Empty contents of mussels pouch into a deep saucepan and cover. Heat on high for 3-4 minutes. Reduce heat and simmer for 2-3 minutes, stirring occasionally. Add butter, white wine, and garlic to increase juice. Meanwhile, cook vermicelli according to package directions. Drain. Return to pan. Add sea salt, olive oil, capers, basil, marjoram, and parsley. Mix well. Transfer vermicelli to individual serving pieces. Split mussels between them. (Serve in the shell.) Drizzle garlic butter wine sauce over all. Serve with crusty bread for dipping in juices.
*The rule of thumb for serving mussels is ALWAYS ensure mussel shells are fully opened before serving.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Luscious Lavender Puff Cookies! Before we begin, let me assure you, baking the cookies for 45 minutes per batch, IS NOT a misprint. Dried lavender buds as well as lavender extract can be found at farmers markets, organic health food stores, or your local co-op. (I went one step further and made my own lavender extract from dried buds, which took longer to ferment.) I also have the convenience of a nearby Amish community as a resource for dried herbs and spices. These cookies are definitely worth the effort. Put on a pot of coffee or tea…. and enjoy!

It’s the answer to my alphabet challenge when I get to this letter. Everyone is already aware coconut has health benefits. Some even classify it as a superfood. What’s Cooking in Gail’s Kitchen? The Daily Special: Oven-Glazed Pears! Presenting a dessert as sweet as honey and as satisfying as a piece of pie. Make one for yourself or enough for a crowd. The recipe measurements below only need one pear, which is two servings. Perfect for dessert for two. The aroma alone will make your house smell amazing!
OVEN-GLAZED PEARS
Ingredients:

1 slightly firm pear; peeled, halved, and cored

2 tablespoons sweet dessert wine

1 tablespoon vanilla extract

1 tablespoon honey

1 tablespoon butter, unsalted

Cinnamon to taste
Instructions:

Preheat oven to 375°. Arrange pear halves in a small baking dish, cut side up. Sprinkle cinnamon, then vanilla over pears. Dot each pear with butter. Drizzle honey over each pear half. Pour in the sweet wine. Roast for 40 minutes. Using oven mitts, carefully remove the dish from the oven. Tilt the dish so the juices pool in one corner. Take a spoon and baste the pears. Turn each pear over and return to the oven to roast 20 minutes longer or until a paring knife inserts easily. Baste occasionally for a caramelized finish. The sauce will thicken slightly. Serve warm with vanilla bean ice cream.
