Eating My Way Through the Holidays! Yuletide Favs: Quazy Carrot Cake! “What’s up, Doc?” is something we’ve all heard Bugs Bunny say more than once. You may find yourself asking the same question when you take a bite of this tasty version of Carrot Cake. It’s loaded with fresh carrots, pineapple tidbits, and chopped pecans. The crowning moment comes when you smack your lips together over the wonderful cream cheese icing. I have seen expressions of jubilation over this award-winning dessert. Treat yourself to something special this weekend.

QUAZY CARROT CAKE

Ingredients:

2 cups flour

2 cups sugar

1 teaspoon baking soda

2 teaspoons baking powder

2 teaspoons cinnamon

1 1/4 cups vegetable oil

4 eggs

3 cups carrots, grated

1 cup crushed pineapple, drained

1 cup pecans, chopped

Ingredients for Icing:

1/2 cup butter, softened

8 ounces Neufchâtel cheese, softened

3 1/2 cups powdered sugar

1 teaspoon vanilla

Instructions:

Preheat oven to 350°. Spray a 9″x13″ pan with nonstick oil. Combine flour, sugar, baking soda, baking powder, and cinnamon. Mix well. Add oil, eggs, carrots, pineapple, and nuts. Beat for 2 minutes on medium speed. Transfer to baking dish. Bake for 45 minutes or until done. Meanwhile, cream together the butter and Neufchâtel cheese. Add powdered sugar and vanilla. Beat until smooth and creamy. When cake is cool, top with cream cheese icing. Garnish with a pecan half.

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Coconut Flour Brownies! Every once in awhile I need a gluten-free recipe for sharing. The bonus is a healthy alternative to sugary sweets with high caloric count. Coconut flour is high in fiber and lower in carbs, yet free from wheat and grains. I like its hint of coconut with a mild, slightly toasty flavor. Don’t be discouraged by the cost. A little goes a long way. 
COCONUT FLOUR BROWNIES 
Ingredients:

1/2 cup butter, unsalted, melted

2 tablespoons vegetable oil

1/4 cup cocoa powder, unsweetened 

3 large eggs

1/2 cup natural honey

2 tablespoons agave nectar 

1 teaspoon pure vanilla extract

1/2 teaspoon baking soda

1/2 cup minus 1 tablespoon coconut flour

1/2 teaspoon kosher salt

1/3 cup mini chocolate chips

1/3 cup toasted coconut 

1/3 cup candied pecans, chopped

1 Toblerone chocolate bar, chopped
Instructions:

Preheat oven to 300°. Line an 10″ glass baking pan with parchment paper. Spray lightly with nonstick oil. In a large bowl, combine butter, vegetable oil, cocoa powder, and eggs. Mix well. Add honey, agave nectar, and vanilla extract. Mix until combined. Add baking soda, coconut flour, and kosher salt. Mix until batter is thoroughly combined. Fold in mini chocolate chips. Spread evenly into prepare baking pan. Top with toasted coconut, candied pecans, and chopped Toblerone pieces. Bake 30-40 minutes or until a toothpick comes out clean. Cool on wire rack. Once room temperature, remove from pan and cut into serving portions. Keep in airtight container.

What’s Cooking in Gail’s Kitchen? Simple Sensations: Snickerdoodle Blondies! Mention the word “cinnamon” and automatically people have visions of pastry shops and bakeries emitting delectable aromas that seduce the mind and tempt the body with Happy Day dance moves. And who doesn’t like to say “Snickerdoodle”? Bake-and-Go with this all-time favorite recipe.  
SNICKERDOODLE BLONDIES 
Batter Ingredients:

2 2/3 cup flour

2 teaspoons baking powder 

1 teaspoon sea salt

2 cups brown sugar, packed

1 cup butter, melted

2 eggs 

1 teaspoon vanilla extract
Topping Ingredients:

2 tablespoons sugar

2 teaspoons cinnamon
Preheat oven to 350°. Grease a 9″x13″ pan. Mix butter, brown sugar, eggs, and vanilla. Add the baking powder, salt, and flour. Pour into pan. 

In a small bowl mix together the cinnamon and sugar. Sprinkle over top of dough. Bake for 25-30 minutes. Remove from oven. Try to wait until the Snickerdoodle Blondies cool down before sinking your teeth into that first bite. Enjoy!

What’s Cooking in Gail’s Kitchen? Simple Sensations: Rainbow Cookies! Wouldn’t it be nice to tap your ruby slippers together and have a super-easy delicious dessert? You can. Even Dorothy and her friends would find these yummy morsels “no-place-like-home” irresistible. What a great kid-friendly recipe when school’s out for summer!
RAINBOW COOKIES 
Ingredients:

1 box yellow cake mix

2 eggs

1/2 cup vegetable oil

12-ounce bag of mini M&M candies

15.6-ounce can Buttercream icing
Instructions:

Preheat oven to 350°. In a large bowl, mix together the cake mix, eggs, and oil until moistened. Reserve 1/2 cup M&M candies for decorating. Then gently fold in remaining mini morsels. Form little balls with the dough and place 2-inches apart on ungreased cookie sheet. Bake 5-8 minutes until edges are lightly golden. Remove from cookie sheet and cool slightly on wire racks. Spread frosting over warm cookies and immediately sprinkle each cookie with remaining mini M&M candies.

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Whoopie Pies! Dip into your past for a childhood favorite that has been around since your parents and grandparents were kids. Some say it’s a cookie, others refer to it as a cake, but the name that seemed to stick more than any other is “Whoopie Pie”. No worries, one bite and it simply won’t matter. You’re hooked. Picture this: Sweet, creamy marshmallow fluff sandwiched between two chewy dark chocolate mounds. I know, right?!
WHOOPIE PIES
Ingredients:

8 tablespoons butter, softened 

2 tablespoons vegetable oil

1 tablespoon molasses 

1 cup sugar

1 egg

1 teaspoon vanilla extract 

1 cup flour

1/2 teaspoon baking soda

1/8 teaspoon sea salt

6 tablespoons unsweetened cocoa powder 

7-ounce jar marshmallow creme 
Instructions:

Preheat oven to 350°. In a large bowl, cream together butter, vegetable oil, molasses, and sugar until smooth. Beat in egg. Add vanilla extract. Combine flour, baking soda, sea salt, and cocoa powder. Gradually add to creamed mixture. Stir until blended. Drop by spoonfuls onto ungreased cookie sheets. (I baked 6 cookies per sheet to allow room for them to form a perfect circle.) Bake 8-10 minutes. Watch carefully. Cool for 2 minutes before transferring to a wire rack to cool completely. To fill, spread a generous dollop on the bottom half of the cookies. Top with remaining cookies. Wrap and chill 2 hours before serving.

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Financier Almond Cake! Not everyone lives around the corner from the best pastry shops in Paris. So we manage by baking at home. My son, Johnny, and his wife, Katie, treated me to their gluten-free version of a popular French sweet. Know what you get when you combine ground natural almonds, luscious brown butter, and airy egg whites? Clue: It’s a French pastry chef’s dream! By choosing a small cupcake mold or ramekin, this springy honey-sweet dessert becomes a star attraction at the end of a meal. Drizzle it with a lightly sweetened St~Germaine glaze, top it with a fresh raspberry crown, and you’re bound to feel a tiny bit Parisienne. Ooh-la-la!
FINANCIER ALMOND CAKE
Ingredients for Cake:

6 tablespoons unsalted butter

1/2 cup sliced almonds 

1/4 cup coconut flour

3/4 cup powdered sugar

2 egg whites

1 tablespoon natural honey

1/2 teaspoon almond extract
Instructions:

Preheat oven to 350°. Butter 2 ramekins or coat a 6-count muffin tin with butter or nonstick oil. Set aside. Melt the butter over medium heat. Do not burn. Simmer until brown bits begin to form. Lower heat and simmer, stirring frequently to scrape the brown bits at the bottom of the pan. Continue cooking until butter turns dark brown, not burnt, for about 6 minutes. Set aside to cool for 10 minutes. Meanwhile pulse the sliced almonds and coconut flour in a food processor until nuts are finely ground. Transfer flour mixture to a medium bowl. Whisk in the powdered sugar. Fold in the egg whites, mixing until smooth. Gently stir in the honey. Finally, fold in the cooled brown butter. Stir until batter is smooth. Spoon into the greased ramekins or muffin pan. Spread batter evenly. Bake 25-30 minutes until the edges are golden brown and a cake tester inserted in the center comes out clean. Cool on a wire rack. If using a muffin pan, invert after 5 minutes to remove mini-cakes from pan. 
Ingredients for Glaze:

1 cup powdered sugar

3 tablespoons St~Germaine liqueur 

Fresh raspberries for Garnish

1 teaspoon ground almonds for Garnish
Instructions:

Sift powdered sugar into a small bowl. Whisk in St~Germaine liqueur until a smooth consistency is reached. Gently spoon the glaze over the top of the cakes. Garnish with fresh raspberries and a sprinkling of ground almonds.

What’s Cooking in Gail’s Kitchen? Something to Savor: X-Treme Fudge Bouchons! These chocolate fudge brownies are the perfect bite-size dessert at the end of a meal. Because they are baked in a popover pan, their shape resembles a cork, or French bouchon. The dense chocolatey cake is filled with rich dark chocolate morsels and dusted with powdered sugar making it an appealing dessert, no matter the occasion. Picnic season is upon us. Treat yourself to a taste of France. 
X-TREME FUDGE BOUCHONS
Ingredients:

3/4 cup flour

1 cup cocoa powder, unsweetened 

1 teaspoon kosher salt

3 large eggs

1 1/2 cups sugar plus 3 tablespoons

1/2 teaspoon vanilla extract 

12 ounces butter, unsalted and melted

6 ounces semisweet mini chocolate morsels

Powdered sugar for dusting
Instructions:

Preheat oven to 350°. Butter and flour popover pan. Set aside. Sift together flour, unsweetened cocoa powder, and kosher salt. Set aside. Using a stand mixer, combine eggs and sugar on medium speed for 5 minutes. It will appear thick and very pale in color. Add the vanilla extract. Reduce to low speed alternating 1/3 of dry ingredients, then 1/3 of warm butter until all is blended. Add semisweet chocolate morsels. Place popover pan on a baking sheet and fill each mold two-thirds full. Place in the oven. Bake for 25-28 minutes until tops look shiny and a cake tester comes out clean. Transfer to a cooling rack for 3 minutes. Invert mold and allow bouchons to cool upside down. Lift off popover pan. When cool, dust with powdered sugar.

What’s Cooking in Gail’s Kitchen? Upside-Down Pineapple Bundt Cake! This light and easy alternative for dessert will satisfy your sweet tooth without packing on the pounds. The secret is the tropical taste of pineapple. 
UPSIDE-DOWN PINEAPPLE BUNDT CAKE
Ingredients:

1 box Angel Food Cake Mix

1 20-ounce can of Crushed Pineapple with Juice

1/2 cup brown sugar
Instructions:

Set oven rack to lowest setting. Preheat oven to 350°. Spray Bundt pan with non-stick cooking oil. Sprinkle brown sugar on the bottom of the pan. Mix the Angel Food Cake Mix with the Crushed Pineapple, including juice, by hand for one minute or until well blended. Pour into Bundt pan and place in oven on a foil-lined cookie sheet. Bake for 35-45 minutes until toothpick comes out clean and the cake is set. Allow to cool for 15-20 minutes before inverting onto a serving plate.
Option: Garnish with a sprig of tarragon and top with maraschino cherries, stems removed. 
Serving Suggestion

Mixed Berry Sauce:
1 pound of fresh blueberries 

1 pound of fresh mulberries 

1 tablespoon water

1 tablespoon lemon juice

1/2 cup granulated sugar
In a medium sauce pan add berries, water, lemon juice, and sugar. Cook on medium heat, while stirring until the berries reduce down. Change the heat to low setting and press the berries against the side of the pan to make them burst. Continue cooking for 30 minutes until mixture thickens. Remove from heat and cool for 10 minutes. Add 2 drops of lemon extract while stirring with a spoon. Pour into jar and store in refrigerator. 

Hint: This is delicious on toast or pancakes or ice cream.
