What’s Cooking in Gail’s Kitchen? Neiman-Marcus Cake! Repeat after me, “Butter is my friend. Butter is my new best friend.” One bite of these sweet cream butter bars and you’ll swear they came from a French bakery. Look no further than the Neufchâtel cheese filling for confirmation. I always serve this cake with fresh fruit for the ultimate pâtisserie experience. 
NEIMAN MARCUS CAKE
Ingredients:

1 lb. box of yellow cake mix

3 eggs

1/2 cup butter, melted

1 lb. powdered sugar

8 oz. bar of Neufchâtel cheese

1 teaspoon almond extract

3/4 cup sliced almonds
Directions:

Preheat oven to 325°. Stir cake mix, melted butter, and one egg. Press into the bottom of a greased and floured 9 x 13 glass dish. Mix powdered sugar, 2 eggs, almond extract, and softened Neufchâtel cheese until smooth. Pour over top of cake mix. Sprinkle sliced almonds on top. Bake 50-60 minutes. Cool. Cut into squares and serve with fresh strawberries.

What’s Cooking in Gail’s Kitchen? Kona Coffee Molten Cake! Gerald and I spend some time on the tropical island of Kauai. While there we sip on freshly brewed coffee uniquely grown in the Hawaiian Islands. The taste is so richly smooth and delicious, I had to blend its flavor with dark chocolate. Each recipe is one serving, unless you share a bite. “Friends are the spice God adds to the cake of life!”
KONA COFFEE MOLTEN CAKE
Ingredients:

1/4 cup all-purpose flour

2 tablespoons Dutch chocolate powder 

1/4 teaspoon baking powder 

2 tablespoons granulated sugar

1/8 teaspoon sea salt

1/4 cup plus 1 tablespoon milk

2 tablespoons vegetable oil

1 tablespoon Kona brewed coffee*

1 tablespoon creamy peanut butter**
Instructions:

Mix dry ingredients together in medium bowl. Add milk, oil, and coffee to the dry ingredients. Stir until smooth. 

Pour batter into a tall microwave-safe mug. Make sure there is room at the top for the cake to rise. Drop the tablespoon of peanut butter in the center of the batter. Do not blend in. Bake in microwave on high for 1 minute. If it is not done, cook in additional 10-second intervals until done. Remove from microwave. BE CAREFUL. Enjoy the warm molten cake topped with a dollop of whipped cream. 
*Any strong brewed coffee may be used. If you omit the coffee, substitute 1/4 teaspoon vanilla extract. 

**The creamy peanut butter may be omitted or substituted with a hazelnut spread or marshmallow creme.

Eating My Way Through the Holidays! Special Edition: Pumpkin Roll! Announcing a festive cake that looks as though you stopped by the bakery. Anyone can feel like a professional pastry chef with this holiday specialty. In a few simple steps, the rich pumpkin flavor is enhanced by the velvety cream filling. Afterwards all you have to do is sit back and bask in the accolades. 
PUMPKIN ROLL 
Ingredients for Pumpkin Roll:

3 eggs

2/3 cup pumpkin purée 

1 cup sugar

1 teaspoon baking soda 

1/2 teaspoon cinnamon 

3/4 cup flour 

1/3 cup chopped pecans 
Ingredients for Filling:

8 ounces Neufchâtel cheese

3/4 teaspoon vanilla 

2 tablespoons butter, softened 

1 cup powdered sugar
Instructions:

Preheat oven to 375°. Grease and line a 10″x15″ jelly roll pan with waxed paper. For pumpkin roll combine eggs, pumpkin purée, sugar, baking soda, cinnamon, and flour. Mix until well blended. Pour into jelly roll pan and spread evenly to edges. Sprinkle with chopped pecans. Bake 12-15 minutes. Watch carefully. Remove from oven. Sprinkle powdered sugar on a tea towel, turn cake onto towel, and remove the waxed paper. Starting at one end, roll the cake up, and refrigerate for one hour. Meanwhile, combine Neufchâtel cheese, vanilla, butter, and powdered sugar. Mix together until smooth and velvety. After one hour, unroll cake and spread the filling all the way to the edges. Reroll cake and refrigerate two hours longer. Dust with powdered sugar. Slice and serve.

What’s Cooking in Gail’s Kitchen? Timeless Classics: Wine Lovers Vineyard Cake! Every once in awhile a special occasion rolls around where you need a dessert that’s outside the box. By substituting some of the liquid with a sweet wine, such as peach, blackberry, or elderflower, you create an unique taste that intensifies the flavor. I chose a peach passion for this particular recipe. With subtle hints of orange extract, it transformed the rich moist bundt cake into a delectable version of a fuzzy navel. The photo reflects a powdered sugar dusting, but you may certainly opt for a glaze finish instead. 
WINE LOVERS VINEYARD CAKE
Ingredients for Cake:

1/4 cup pecans, chopped

2 3/4 cup flour

1 3/4 cups sugar 

2 teaspoons baking powder 

3/4 teaspoon sea salt

1 small box vanilla pudding, instant

3/4 cup white wine

3/4 cup vegetable oil

1 teaspoon orange extract 

1/4 cup water

4 eggs

1/4 cup brown sugar 

2 teaspoons cinnamon 
Instructions:

Preheat oven to 325°. Grease and flour a bundt pan. Arrange pecans in the bottom of the pan. Using a mixer on low speed, blend the flour, sugar, baking powder, sea salt, vanilla pudding mix, white wine, vegetable oil, orange extract, water, eggs, brown sugar, and cinnamon. Scrape sides, as needed. Pour batter into bundt pan. Bake for 60-70 minutes, until a pick comes out clean and cake is golden brown. Remove from oven and cool on a wire rack for 15 minutes. To unmold, place a cake plate on top of the bundt pan. Holding tightly, invert.

1/4 cup butter, melted

1 1/2 cups powdered sugar

1/2 teaspoon orange extract 

1-2 tablespoons white wine, slightly warmed

To make glaze, cream together the butter and powdered sugar until smooth. Add vanilla extract and white wine. Drizzle over warm cake.

What’s Cooking in Gail’s Kitchen? Eat More: Dump Cake with Cherries! Allow me to explain what is a less appealing title for a cake recipe. Dump Cake, seriously? Before you head off in another direction, let me assure you this is literally the easiest cake recipe you’ll find today. It comes from one of those cookbooks put together by a group of church ladies in the early 1980s. And it is fantastic! After all, just “dump” the ingredients in a 9″x13″ pan and bake. Top it off with a scoop of vanilla bean ice cream or a dollop of sweetened whipped cream. Can I hear a “Hallelujah”? 🌟
DUMP CAKE WITH CHERRIES
Ingredients:

1 21-ounce can cherry pie filling

1 15-ounce can crushed pineapple

1 18-ounce box of yellow cake mix

1/8 teaspoon cinnamon 

1 smidgen nutmeg

1/3 cup brown sugar

1/2 cup butter

1/2 cup almonds, sliced
Instructions:

Preheat oven to 375°. Dump cherry pie filling into the bottom of a 9″x13″ glass baking dish. Spread into a single layer. Dump crushed pineapple, with juice, on top of cherries. Spread to cover. Sprinkle dry cake mix evenly over fruit layers. Top with cinnamon, nutmeg, and brown sugar. Dot with slices of butter. Cover with sliced almonds. Bake for one hour, or until golden brown and bubbly. Serve warm.

What’s Cooking in Gail’s Kitchen? Eat More: Angel Food Cake Kabobs! Feeling Patriotic? This colorful dessert is perfect for an Independence Day picnic or gathering. Strawberries for Red, angel food cake for White, and blueberries for…..well, you know…Blue! Get the kids involved by letting them assemble the delectable desserts in advance. Better throw in extra ingredients for nibbling. Transport the kabobs in pint-size canning jars. Drizzle with chocolate before serving or make up individual portions of hot fudge sauce in small jars for dunking. It’s all fun and celebration for a light, refreshing dessert-on-stick. Then sit back and enjoy the fireworks! 
ANGEL FOOD CAKE KABOBS
Ingredients:

Angel Food Cake

12-15 bamboo skewers 

1 quart strawberries 

1 pint blueberries 

I jar chocolate fudge sauce
Instructions:

Cut the angel food cake into large square, bite-sized pieces. Wash strawberries; pat dry. Repeat with blueberries. To assemble kabobs skewer one strawberry, one piece of cake, then two blueberries. Repeat to fill each skewer. Refrigerate until ready to serve.

What’s Cooking in Gail’s Kitchen? All the Buzz: Gluten-Free Chocolate Cake! You know you love chocolate. Who doesn’t? If you find yourself avoiding baked goods due to its wheat content, worry no more. This cake is completely flourless. The results are rich, chocolaty, and extremely satisfying for any sweet tooth craving. Dust it with powdered sugar and garnish each slice with fresh strawberries for a gourmet finish. Hurray for Chocolate!
GLUTEN-FREE CHOCOLATE CAKE
Ingredients:

1 1/2 cups semi-sweet chocolate chips

15-ounce can organic garbanzo beans, rinsed and drained

4 eggs

3/4 cup sugar

1/2 teaspoon baking powder 

1 tablespoon almond extract

1 tablespoon powdered sugar, for dusting

1/4 cup almond slices (optional)

Whipped cream

Fresh strawberries, garnish
Instructions:

Preheat oven to 350°. Grease a 9″ round cake pan. Melt the chocolate chips in a microwave-safe bowl for 2 minutes on high. Stir after 1 minute. Repeat until chocolate is melted and smooth. In a food processor, combine garbanzo beans and eggs. Blend until smooth, about 4 minutes. Add sugar and baking powder. Pulse to mix. Pour in melted chocolate and almond extract. Blend until smooth, scraping sides as needed. Transfer batter to the cake pan. Bake 40 minutes or until a cake tester comes out clean. Cool on a wire rack for 10 minutes. Invert onto a serving plate. Dust with powdered sugar. Sprinkle with almond slices. Garnish with whipped cream and strawberries.

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Zingy Lemon Blueberry Scones! Question: What do you get when you cross a cake and a quick bread? Answer: An English Scone, of course! Now here’s an excuse to eat something lightly sweetened in the middle of the day. Scones are popular with brunch or afternoon tea in some countries. They are made in a single-serving size and come in several variations. By adding fresh fruit and a sprinkling of sanding sugar, the results are astounding. Drizzle a lemony glaze on top to transform this beauty into a dessert as well.
ZINGY LEMON BLUEBERRY SCONES
Ingredients:

3 cups flour

1/3 cup plus 1 tablespoon sugar

1 tablespoon baking powder

1 teaspoon sea salt

1 teaspoon granulated lemon citrus peel

1 1/2 cups butter

1 1/2 cups blueberries

1/2 cup chopped almonds

3/4 cup milk

White sanding sugar, for sprinkling
Lemon Glaze Icing Ingredients:

2 cups powdered sugar

2 teaspoons butter, softened

1 tablespoon granulated lemon citrus peel

1/4 cup lemon juice
Instructions:

Preheat oven to 375°. Line a large with sheet with a Silpat nonstick baking mat. Mix the flour, sugar, baking powder, sea salt, and lemon citrus peel in a large bowl. Add butter and blend until crumbly. Fold in the blueberries and almonds. Stir in the milk. On a lightly floured surface, transfer dough. Form into two 6-inch disks. Cut each disk into 6 wedges. Gently transfer wedges to the prepared sheet; brush with milk; sprinkle lightly with the sanding sugar. Bake for 25-30 minutes, rotating pan halfway through. Cool on the pan. Drizzle with lemon glaze. Serve warm.
Lemon Glaze:

Whisk together powdered sugar, butter, lemon citrus peel, and lemon juice until smooth. Drizzle over warm scones.
