The fact that it is flourless is a plus for those who avoid desserts for that particular reason. The dark chocolate and butter combination is divinely rich, which is why a little bit goes a long way. I find a nice cuppa joe or herbal tea creates a balance that works. As always, share a little bliss with those around you. They’ll thank you for it.

INCREDIBLY DELISH CHOCOLATE BLISS

Ingredients:

4 ounces bittersweet chocolate, chopped

6 tablespoons butter, cubed

2 eggs

1/4 cup sugar

1 teaspoon espresso powder

1/4 teaspoon almond extract

6 teaspoons chocolate hazelnut spread

Crushed pistachios for garnish

Instructions:

Preheat oven to 375°. Use paper muffin cups or buttered ramekins. Set aside. Combine bittersweet chocolate and butter in a microwave-proof bowl. Melt in microwave on high setting at 30-second intervals until melted and smooth. Stir occasionally. In a mixer bowl, combine eggs, sugar, espresso powder, and almond extract. Beat on medium-high speed for 5 minutes or until mixture is lightened. Reduce speed to low setting. Add melted chocolate/butter mixture until combined. Spoon into muffin cups or buttered ramekins. Add one half teaspoon of hazelnut spread in the center of each muffin cup batter. Bake 10 minutes until edges are set, but center is still soft. Do not over bake. Garnish with crushed pistachios. Cool 5 minutes before serving.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Quick Bread Lemon Poppyseed! When life gives you lemons, eat them! There’s nothing more refreshing than the citrusy taste of lemon, in my opinion. It’s light, refreshing, and reminds me of sunshine. I believe you can achieve surprising results when you use good ingredients in a recipe, even if it involves convenient shortcuts. After all, rave reviews are proof enough!

QUICK BREAD LEMON POPPYSEED

Ingredients:

4 eggs

1/2 cup oil

1 box of lemon cake mix

1 cup hot water

1 tablespoon lemon citrus peel, granulated

2 tablespoons poppy seed

Instructions:

Preheat oven to 350°. Combine all ingredients and beat for 10 minutes. Pour into greased and floured loaf pans.* Bake for one hour or until done. Bread is done when a pick comes out clean and loaf springs back from pan.

*Makes 2 regular-size loaves or 6 mini-loaves and 1 regular loaf. The mini loaves need bake for only 25-30 minutes. Watch carefully.

It’s simple. And it makes everyone smile. Bake in a square cake pan or muffin tin. I like the option of using ramekins for pillowy results. Simply invert them upside down before drizzling with juicy sliced strawberries that practically melt in your mouth. How’s that for an all-American favorite dessert? I find it Strawberrylicious!

STRAWBERRY SHORTCAKE

Ingredients:

1/2 cup butter, room temperature

1 cup sugar

1/2 cup buttermilk

2 eggs

1 teaspoon vanilla extract

1 1/2 cups flour

1/2 teaspoon sea salt

2 teaspoons baking powder

1 pint strawberries, sliced

Whipped cream

Fresh mint leaves for garnish

Instructions:

Preheat oven to 350°. Lightly grease 6 ramekins. Set aside. Cream butter and sugar until mixture is light and fluffy. Add buttermilk, eggs, and vanilla extract. Stir well. Sift together flour, sea salt, and baking powder. Gradually add dry ingredients to wet ingredients. Mix to combine until batter is smooth and no lumps remain. Pour into prepared ramekins. Transfer to oven on a baking sheet. Bake 25-30 minutes until cake springs back and cake tester comes out clean. Invert ramekins on a wire rack to cool for 10 minutes. Wash, hull, and slice strawberries. Arrange berries on each shortcake. Serve with a dollop of whipped cream and mint leaf garnish.

Notice the luscious cream cheese icing drizzling down the sides like a cascading satin gown. Petite flowers, crushed pistachios, and lemon segments produce a sensational finish. Sounds like a royal pairing of Love and Happiness, doesn’t it?

ELDERFLOWER LEMON CAKE

Ingredients:

4 eggs, room temperature

3/4 cup sugar

2/3 cup olive oil

1/3 cup butter, melted

1 teaspoon citrus peel, granulated

1 teaspoon vanilla extract

4 tablespoons elderflower liqueur

1 1/2 cups flour

1 tablespoon baking powder

1 small box lemon pudding mix, instant

3/4 teaspoon sea salt

4 ounces cream cheese, room temperature

4 tablespoons natural golden honey

1 tablespoon elderflower liqueur

1 tablespoon pistachios, crushed

Fresh lemon slices, cut into segments

Fresh flowers

Instructions:

Preheat oven to 325°. Grease and flour a bundt pan. Set aside. In a stand mixer, combine eggs and sugar. Beat on High for 3 minutes. Turn to Low setting; drizzle in olive oil and melted butter. Continue beating one minute longer. Fold in citrus peel, vanilla extract, and elderflower liqueur. In another bowl, combine flour, baking powder, lemon pudding mix, and sea salt. Gradually add the dry ingredients to the wet batter, scraping down the sides as needed. Pour cake batter into the prepared bundt pan. Bake 55-60 minutes until cake is golden brown and a tester comes out clean. Remove pan from oven and cool on a wire rack for 15 minutes. Invert onto a cake plate to unmold. To make icing, combine cream cheese, natural honey, and elderflower liqueur. Beat until light and fluffy. Drizzle over cooled cake. Sprinkle with crushed pistachios. Garnish with lemon segments and tiny fresh flowers.

CARAMEL-BACON SPICE CAKE

Ingredients for Cake:

1 1/4 cups flour

3/4 cup brown sugar

2 teaspoons baking powder

2 tablespoons cornstarch

1/4 teaspoon sea salt

1/2 teaspoon ginger

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon all spice

1/4 teaspoon ground cloves

1/2 cup milk

1 egg

1 teaspoon vanilla

1/3 cup butter

Instructions:

Preheat oven to 350°. Mix all dry ingredients in a bowl. Set aside. In a medium bowl beat eggs, milk, and vanilla until blended. Set aside. Using a mixer, cream butter until light and fluffy. On low speed, slowly alternate the egg mixture and the dry mixture until well blended. Pour batter into a greased 9″x13″ pan. Bake for 30 minutes or until a pick comes out clean.

Bacon-Caramel Frosting:

1 cup brown sugar

1/4 cup milk

1/2 cup butter

1 teaspoon vanilla

3 cups powdered sugar

2 ounces bacon bits

In a medium saucepan, mix brown sugar, milk, and butter. Bring to a boil, stirring constantly for 3 minutes. Remove from heat and add vanilla. Let cool for 15 minutes. Transfer to a medium bowl. Add powdered sugar and beat until creamy. It should be thick enough to spread on the cake. Top with crisp, crumbled bacon.

The elderflowers from the St. Germain region of France are harvested into a delectable liqueur every Spring. Their delicate flavor is a blend of lemon, peach, and pear with a slight floral nature. When added to the ripe taste of raspberries with lemon zest, this fruity muffin becomes delightfully pleasing to the palate.

ELDERFLOWER RASPBERRY MUFFINS

Ingredients:

2 cups flour

1 1/2 teaspoons baking powder

1 teaspoon baking soda

1/4 teaspoon sea salt

1 cup Greek yogurt

1/4 cup milk

1/3 cup butter, melted

1 egg

1/2 teaspoon lemon extract

1/2 teaspoon vanilla extract

1 lemon for zest strips

1/2 cup sugar

1 1/2 cups fresh raspberries

Instructions:

Preheat oven to 400°. Spray the muffin tin with a nonstick oil. Combine flour, baking powder, baking soda, and salt in a large mixing bowl. Set aside. Using a food processor, combine lemon zest strips and sugar. Pulse to finely chop the zest into the sugar. Add yogurt, milk, butter, egg, and extracts. Pulse until blended. 1 3/4 cups powdered sugar

1/4 cup elderflower liqueur*

2 teaspoons unsalted butter

Directions:

Combine sugar and elderflower liqueur in microwave-safe bowl. Add butter and microwave for 45 seconds. Whisk until smooth, eliminating lumps. Let sit for a minute or two before pouring over warm muffins.

*Elderflower liqueur may be substituted by using lemon juice instead.

GLUTEN-FREE CHOCOLATE CAKE

Ingredients:

1 1/2 cups semi-sweet chocolate chips

15-ounce can organic garbanzo beans, rinsed and drained

4 eggs

3/4 cup sugar

1/2 teaspoon baking powder

1 tablespoon almond extract

1 tablespoon powdered sugar, for dusting

1/4 cup almond slices (optional)

Whipped cream

Fresh strawberries, garnish

Instructions:

Preheat oven to 350°. Grease a 9″ round cake pan. Melt the chocolate chips in a microwave-safe bowl for 2 minutes on high. Stir after 1 minute. Repeat until chocolate is melted and smooth. In a food processor, combine garbanzo beans and eggs. Blend until smooth, about 4 minutes. Add sugar and baking powder. Pulse to mix. Pour in melted chocolate and almond extract. Blend until smooth, scraping sides as needed. Transfer batter to the cake pan. Bake 40 minutes or until a cake tester comes out clean. Cool on a wire rack for 10 minutes. Invert onto a serving plate. Dust with powdered sugar. Sprinkle with almond slices. Garnish with whipped cream and strawberries.

By substituting some of the liquid with a sweet wine, such as peach, blackberry, or elderflower, you create an unique taste that intensifies the flavor. I chose a peach passion for this particular recipe. With subtle hints of orange extract, it transformed the rich moist bundt cake into a delectable version of a fuzzy navel. The photo reflects a powdered sugar dusting, but you may certainly opt for a glaze finish instead.

WINE LOVERS VINEYARD CAKE

Ingredients for Cake:

1/4 cup pecans, chopped

2 3/4 cup flour

1 3/4 cups sugar

2 teaspoons baking powder

3/4 teaspoon sea salt

1 small box vanilla pudding, instant

3/4 cup white wine

3/4 cup vegetable oil

1 teaspoon orange extract

1/4 cup water

4 eggs

1/4 cup brown sugar

2 teaspoons cinnamon

Instructions:

Preheat oven to 325°. Grease and flour a bundt pan. Arrange pecans in the bottom of the pan. Using a mixer on low speed, blend the flour, sugar, baking powder, sea salt, vanilla pudding mix, white wine, vegetable oil, orange extract, water, eggs, brown sugar, and cinnamon. Scrape sides, as needed. Pour batter into bundt pan. Bake for 60-70 minutes, until a pick comes out clean and cake is golden brown. Remove from oven and cool on a wire rack for 15 minutes. To unmold, place a cake plate on top of the bundt pan. Holding tightly, invert.

Ingredients for Glaze:

1/4 cup butter, melted

1 1/2 cups powdered sugar

1/2 teaspoon orange extract

1-2 tablespoons white wine, slightly warmed

Instructions:

To make glaze, cream together the butter and powdered sugar until smooth. Add vanilla extract and white wine. Drizzle over warm cake.
