What’s Cooking in Gail’s Kitchen? The Chow Down: Avocado Breakfast Toast! Nothing looks more appealing in the morning than an open face breakfast sandwich, in my opinion. Avocado and salmon step things up a notch when paired with a nice yolk-drenched piece of artisan toast. I love French butter, but if you choose to omit slathering the toast with it, I’ll understand. My husband and I don’t mind a little taste sensuality in the morning. You choose. 
AVOCADO BREAKFAST TOAST
Ingredients:

2 slices artisan bread, toasted

1-2 tablespoons sea salt butter

1 avocado; halved, pitted, peeled, and chopped

1 tablespoon lemon juice

1/8 teaspoon garlic powder

2 eggs, cooked over easy or poached 

1/2 cup grilled salmon, flaked

1 teaspoon capers

Pinch Herbes de Provence 

Fresh thyme for garnish
Instructions:

Take the chopped avocado and mash it until chunky. Fold in the lemon juice and garlic powder. Set aside. Toast bread as desired. Spread with sea salt butter and keep warm. Cook the eggs over easy so the yolks are still runny. Place one piece of buttered toast on a plate. Spoon a thick layer of avocado over toast. Next divide flaked salmon between the two servings. Sprinkle with capers. Place one egg on top. Garnish with Herbes de Provence and fresh tarragon.

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Ginger-Orange Salmon Lettuce Cups! Is it an Appetizer or an Entrée? Both. Ginger paired with orange creates amazing flavor, not to mention health benefits galore. Adding grilled salmon for omega-3s is a bonus. But enough about that and back to the lettuce cup popularity. Anytime you cut down on calories, carbs, and gluten it adds up to guilt-free options. Mix things up with seasonal fruits, garden veggies, grilled seafood, and roasted meat for creative favorites. Anything goes!
GINGER-ORANGE SALMON LETTUCE CUPS
Ingredients:

1 cup grilled orange-ginger grilled salmon, flaked 

4 ounces Neufchâtel cheese

1 tablespoon horseradish 

1 tablespoon fresh dill, chopped

1 teaspoon capers

1 green onion, chopped

1/3 cup mandarin oranges

Bibb lettuce leaves

Fresh chives, for garnish 

Ground Pistachio nuts, for garnish 
Instructions:

Grill ginger-orange salmon according to package directions. Flake salmon; set aside to cool. In a small bowl, combine Neufchâtel cheese and horseradish until smooth. Gently fold in chopped dill, capers, and green onion. Spread onto Bibb lettuce leaves. Equally divide salmon over cream cheese mixture. Add mandarin orange slices. Garnish with fresh chives and pistachios. Refrigerate until ready to serve.

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Eggs Deviled with Salmon! Have you noticed? Variations of deviled eggs are all the rage on the appetizer menus. Known once as a classic staple for every summer gathering, the deviled egg has been reinvented in countless ways. Creativity knows no bounds. Whether you choose spicy jalapeño*, creamy tuna salad, or low-cal Greek yogurt, the spin-off creations are definitely show-stoppers. Don’t believe me? Try these Smoked Salmon beauties at your next party or pitch-in picnic.  
EGGS DEVILED WITH SALMON 
Ingredients:

6 hard boiled eggs, cooked and peeled

1/4 cup cream cheese

2 tablespoons mayonnaise 

1 teaspoon Dijon mustard

1 teaspoon white vinegar 

1 tablespoon red onion, diced

1/8 teaspoon dill weed

1/8 teaspoon sea salt

1/8 teaspoon white pepper 

4 ounces Applewood Smoked Salmon

1 teaspoon capers, for garnish 

Fresh dill sprigs, for garnish

Paprika, if desired
Instructions:

Halve the eggs lengthwise. Carefully remove yolks and place in a medium bowl. Gently place white portions on a platter. Arrange dill sprigs. These will help to keep the eggs from rocking. Set aside. Cut the salmon slices into 12 thin strips. Roll each strip to make a tight rosebud. Transfer to a plate. Cover with plastic wrap and refrigerate until ready to use. Chop the remaining salmon into small pieces. Mash the egg yolks with a fork until crumbly. Add cream cheese, mayonnaise, Dijon mustard, white vinegar, red onion, dill weed, sea salt, white pepper, and remaining salmon. Stir until combined. Spoon mixture into hollowed out egg white shells. Place a salmon “rosebud” on top. Garnish with one caper in the center of each salmon piece. Sprinkle with paprika, if desired. Refrigerate for one hour before serving. Store leftovers in a covered container.

What’s Cooking in Gail’s Kitchen? Food for Sharing: Zucchini Spirals over Meatballs! I am intrigued by the Spiralizer. Perhaps because it can take an ordinary vegetable and turn it into a gourmet attraction. And food that looks appealing is that much closer to an instant craving, in my opinion. By taking a shortcut with store bought meatballs and marinara sauce, this meal can be on the table in less than 30 minutes. Boom!
ZUCCHINI SPIRALS OVER MEATBALLS 
Ingredients:

1-2 zucchini, spiralized 

1-2 tablespoons olive oil

1/8 teaspoon red pepper flakes 

1 tablespoon capers

1 pound home style meatballs, precooked

1 jar spaghetti sauce, any flavor
Instructions: 

Spiralize zucchini into a bowl. They will appear like pasta noodles. Discard spiral stems. In a medium skillet, heat olive oil. Reduce heat and toss zucchini spirals to coat. Sprinkle with red pepper flakes. Fold in capers. Heat no longer than 2-3 minutes. They should be slightly crunchy. In a large microwave-safe dish, combine meatballs and spaghetti sauce. Heat thoroughly. To serve, top meatballs and sauce with zucchini spirals.

What’s Cooking in Gail’s Kitchen? Be Our Guest: Liptauer Cheese Spread! I love appetizers. Mostly because they give you permission to graze through a meal. Some say by eating smaller meals more frequently, it can lead to a longer, healthier life. So, around dinner time you could find me uncorking a bottle of nice red wine and nibbling on fruit, cheese, and crudités. This mellow cheese spread offers a blend of anchovy-stuffed green olives, sweet onions, salty capers, and spicy French Dijon mustard. Permission granted, my friends. 
LIPTAUER CHEESE SPREAD
Ingredients:

8-ounce block of Neufchâtel cheese

1/2 cup unsalted butter

2 tablespoons Vidalia onion, finely chopped

12 anchovy-stuffed green olives, finely chopped

1 teaspoon French Dijon mustard

1 teaspoon imported capers, chopped

1 teaspoon caraway seed

1 teaspoon paprika 
Instructions:

Combine softened Neufchâtel cheese and butter. Mix until smooth. Add Vidalia onion, anchovy-stuffed green olives, French Dijon mustard, imported capers, caraway seed, and paprika. Mix well. Form into a ball. Chill for one hour. Garnish with parsley. Serve with toasted baguette slices and vegetable crudités.

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Lox and Bagels! Whenever I serve this for an impassioned brunch, I make an extra effort to use top-quality ingredients. For starters, I choose an over-sized gourmet sesame seed bagel freshly baked that morning at the local Bagel Shoppe. The lox is traditionally smoked Wild Alaskan Sockeye Salmon, sliced thin. It smells divine when I break the seal. The creamy Neufchâtel cheese can either be plain or infused with fresh dill. Herbs make everything better, in my opinion. Red onion slices add a slightly sweet taste while the imported nonpareil capers liven up the open face creation with a salty punch that shatters like a fireball in your mouth. Well done!
LOX AND BAGELS
Ingredients:

2 sesame bagels, split and toasted

4 ounces Neufchâtel cheese

1 tablespoon Greek yogurt

1/4 red onion, sliced

4 ounces applewood smoked salmon

2 tablespoons imported capers, nonpareil

Fresh dill sprigs
Instructions:

Mix the Neufchâtel cheese and Greek yogurt until smooth, light, and creamy. Slather onto a toasted bagel. Top with red onion slice, smoked salmon pieces, and imported capers. Garnish with fresh dill sprig.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Holy Capers-Salmon Avocado Toast! Whenever I have leftover grilled salmon, this is my favorite indulgence. The first time I made it, my husband and I literally stood at the kitchen counter nibbling on it until it was completely gone. Each morsel had us licking out fingers and begging for more. The combination of lemon thyme and salty capers balance the slightly smoky texture of the salmon. It’s followed by a crunch of sesame seed artisan toast with a creamy avocado finish. If you take the time to sit down and enjoy this delightful open-face sandwich, think about pairing it with a light and fruity rosé wine. It’ll tickle your palate and have you giggling all afternoon or evening long. 
HOLY CAPERS-SALMON AVOCADO TOAST
Ingredients:

6 ounces of grilled salmon fillet, flaked 

Sprigs of fresh lemon thyme

2 teaspoons imported capers, non-pareil 

2 slices of sesame artisan bread, toasted

1 small avocado, mashed

1 small tomatillo, diced

Pinch of garlic powder 

1 teaspoon lemon juice
Instructions:

Make sure the grilled salmon fillet is flaked. Set aside. Combine the mashed avocado, diced tomatillos, garlic powder, and lemon juice in a bowl. Blend well. To assemble the open-face sandwich, place the toasted artisan sesame slice on a luncheon plate. Next spoon avocado mixture over top. Layer flaked salmon over all. Sprinkle with capers and garnish with lemon thyme.
