Robust Tomato Sauce

What’s Cooking in Gail’s Kitchen? Food Plating: Robust Tomato Sauce! Tomatoes are my superfood. Slow-cooked tomatoes are my staple. Honestly, I can justify making tomato sauce all day long to anyone who would listen. What it “simmers” down to is a savory, garlicky, fragrance that fills the house with anticipation of what comes next. Call me a cheater, which I won’t deny, because I am a snob about beginning with San Marzano plum tomatoes grown in Italy. My eighth grade home economics teacher taught me to keep things simple. She said, “High quality ingredients can make an ordinary dish taste extraordinary. Always read the label!” To this day, I check the ingredient list because too often the additives can be artificial. And nobody wants that. 

ROBUST TOMATO SAUCE

Ingredients: 

2 tablespoons olive oil

1 onion, chopped

1 carrot, peeled and diced

1 garlic cloves, minced

28-ounce can whole peeled Italian tomatoes

3 ounces tomato paste

2 tablespoons fresh basil, chopped

1/4 teaspoon dried oregano

1/4 teaspoon red pepper flakes

1 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 tablespoon sugar

Instructions:

In a large pan over medium heat, warm the olive oil. Add chopped onion and diced carrot. Sauté for 8 minutes, or until vegetables are softened. Add minced garlic; cook 2 minutes longer. Remove from heat. Purée tomatoes with sauce in blender. Add to the onion-carrot mixture in the pan. Stir in tomato paste, fresh basil, dried oregano, red pepper flakes, kosher salt, black pepper, and sugar. Reduce heat to medium-low setting and allow mixture to simmer for 25 minutes. Footnote: Robust Tomato Sauce can be simmered on low heat for up to 2 hours, stirring occasionally. 

Autumn Spice Banana Bread

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Autumn Spice Banana Bread! Whenever people want to give me a gift of a scented candle, I always choose bakery aromas over floral ones. Buttery Caramel Corn, Pumpkin Pecan Waffles, Vanilla Frosted Cupcake, to name a few. I confess, I could have a love affair with cinnamon, maple, ginger, or cardamom. My knees grow weak just thinking about it. Perhaps that is one reason Autumn spices make me crazy while throwing caution to the wind and willpower out the door. I scrape the bowl leaving just enough batter to taste in a teaspoon. It’s how you know the results will be amazing; at least that’s my story and I’m sticking to it.

AUTUMN SPICE BANANA BREAD

Ingredients:

3 bananas, peeled and mashed

1/2 cup mayonnaise

1 egg

1 1/2 cups flour

3/4 cup sugar

1 teaspoon baking soda

3/4 teaspoon cinnamon

3/4 teaspoon ginger

1/2 teaspoon nutmeg

1/2 teaspoon sea salt

1/4 cup coconut, flaked

1/2 cup carrots, peeled and shredded

Instructions:

Preheat oven to 350°. Line a loaf pan with parchment paper. Set aside. In a bowl, combine mashed bananas, mayonnaise, and egg. Mix well. In another bowl, whisk together flour, sugar, baking soda, cinnamon, ginger, nutmeg, and sea salt. Stir in the banana mixture, just until moistened. Fold in flaked coconut and shredded carrots. Pour into prepared loaf pan. Bake 55-60 minutes, or until a cake tester comes out clean. Rest for 10 minutes. Remove banana bread from pan and allow to cool completely on a wire rack.

Ingredients for Frosting:

2 ounces cream cheese, softened

2 tablespoons butter, unsalted, softened

1 1/2 cups powdered sugar

1/8 teaspoon sea salt

2-3 tablespoons light cream

Roasted pumpkin seeds and crushed pecans, for garnish

Instructions for Frosting:

In a medium bowl, combine cream cheese and unsalted butter until smooth. Add powdered sugar and sea salt. Whisk in 2-3 tablespoons light cream. Frosting will be thick, but spreadable. Spread the frosting over the completely cooled banana bread. Sprinkle generously with roasted pumpkin seeds and crushed pecans.

Quazy Carrot Cake

Eating My Way Through the Holidays! Sweet Celebrations: Quazy Carrot Cake! “What’s up, Doc?” is something we’ve all heard Bugs Bunny say more than once. You may find yourself asking the same question when you take a bite of this tasty version of Carrot Cake. It’s loaded with fresh carrots, pineapple tidbits, and chopped pecans. The crowning moment comes when you smack your lips together over the wonderful cream cheese icing. I have seen expressions of jubilation over this award-winning dessert. Treat yourself to something special this weekend.

QUAZY CARROT CAKE

Ingredients:

2 cups flour

2 cups sugar

1 teaspoon baking soda

2 teaspoons baking powder

2 teaspoons cinnamon

1 1/4 cups vegetable oil

4 eggs

3 cups carrots, grated

1 cup crushed pineapple, drained

1 cup pecans, chopped

Ingredients for Icing:

1/2 cup butter, softened

8 ounces Neufchâtel cheese, softened

3 1/2 cups powdered sugar

1 teaspoon vanilla

Instructions:

Preheat oven to 350°. Spray a 9″x13″ pan with nonstick oil. Combine flour, sugar, baking soda, baking powder, and cinnamon. Mix well. Add oil, eggs, carrots, pineapple, and nuts. Beat for 2 minutes on medium speed. Transfer to baking dish. Bake for 45 minutes or until done. Meanwhile, cream together the butter and Neufchâtel cheese. Add powdered sugar and vanilla. Beat until smooth and creamy. When cake is cool, top with cream cheese icing. Garnish with a pecan half.

What’s Cooking in Gail’s Kitchen? Bright Ideas: Hawaiian Mac Salad! Some things get a reputation for being “island food”. This is one of them. It was created out of economic necessity, just as SPAM® became a household staple. Both survived due to their lack of being perishable in a tropical climate as well as being tasty and affordable. The flavor of this Mac salad is so unique, it continues to remain a constant plate lunch for workers, surfers, schools, and just about anyone. Check out fish markets, food trucks, roadside stands, diners, and grocery store delis. Hawaiian Mac Salad pairs beautifully with fresh fish and a scoop of white rice. HAWAIIAN MAC SALAD

Ingredients:

8 ounces macaroni pasta

1 cup mayonnaise

1/4 cup milk

1 tablespoon apple cider vinegar

1 teaspoon sugar

1 teaspoon sea salt

1/2 teaspoon black pepper

1 stalk celery, diced

1 large carrot, grated

1/4 cup sweet onion, diced

Green onion snips, for garnish

Instructions:

Boil the macaroni in lightly salted water. Cook al dente; one minute less than package directions. Drain the macaroni and rinse with cold water. Set aside. For the sauce, in a large bowl combine the mayonnaise, milk, apple cider vinegar, sugar, sea salt, and black pepper. Mix well. Add the cooked macaroni, diced celery, grated carrots, and diced onions. Gently stir to combine. Cover and refrigerate for at least 4 hours. Toss before serving. Garnish with green onion snips.

Queso Blanco Shrimp Street Tacos

What’s Cooking in Gail’s Kitchen? Cheerful Choices: Queso Blanco Shrimp Street Tacos! Not everyone has the luxury of accessibility to freshly-made corn tortillas. Because corn tortillas contain less fat than flour tortillas, they are more prone to breakage. One way to prevent this from happening is to dip them in warmed vegetable oil. The extra moisture enhances the taste. Another way is to take two corn tortillas to create a double-layered shell. That way if the inside tears or cracks when folded in half, the outer shell will keep all the ingredients from falling into your lap. Make sense?

QUESO BLANCO SHRIMP STREET TACOS

Ingredients:

8 corn street tacos

1-2 tablespoons vegetable oil

1/2 pound medium shrimp, precooked, peeled, deveined, and tail removed

2 tablespoons bacon olive oil

1/2 teaspoon raspberry chipotle seasoning

1 ripe avocado, peeled, stone removed, and sliced into wedges

1 cup broccoli slaw

2 large leaves romaine lettuce, gently torn

1/2 cup prepared queso blanco with jalapeños

Fresh lime, for garnish

Cilantro, for garnish

Instructions:

Preheat oven to 300°. Set aside a baking sheet. Warm vegetable oil over medium-high heat in an iron skillet. One at a time, dip a corn tortilla into the oil for about 15 seconds; flip and repeat. Drain and transfer to a paper towel-lined plate. Repeat with remaining tortilla shells. Stack them two to a pile on the baking sheet. Sprinkle with sea salt (optional). Keep warm in the oven. Using the remaining vegetable oil, add bacon olive oil to the skillet. Gently place the shrimp in the warmed oil. Sprinkle with raspberry chipotle seasoning. After one minute, flip. Shrimp should be slightly charred. Cook one minute longer. Remove from heat. In a bowl, combine the broccoli slaw with the gently torn romaine leaves. Toss. Remove tortillas from the oven. On the four stacks of warmed tortilla shells, place avocado wedges. Divide the broccoli slaw blend between the tacos. Top with sautéed shrimp. Warm the jalapeño queso blanco for 20 seconds in the microwave on high setting. Stir. Repeat, if necessary. Drizzle over street tacos. Squeeze fresh lime juice over all. Garnish with fresh cilantro.

Ka-Pow! Thai Curry Tacos

This is a perfect example of where the Mexican culture teams with a kick of Thai for a contrast that sends the taste buds spinning. Curry is the star attraction and the best kept secret to a spice sensation beyond your wildest dreams. When the ingredients overlap, they bring their own unique experience that transports you halfway around the world in a chemical reaction. Are you ready to travel?

KA-POW! THAI CURRY TACOS

Ingredients:

12 corn tortillas, street-size

2 tablespoons canola oil

3 tablespoons Thai red curry paste

1 tablespoon garlic, minced

1/2 cup yellow onion, finely chopped

2 cups cooked turkey meat, shredded

1/4 teaspoon sea salt

1/8 teaspoon black pepper

1/4 cup coconut milk

2 tablespoons fresh lime juice

8.5 ounce jar sun-dried tomatoes in olive oil, drained and finely chopped

10-ounce bag broccoli slaw

1 cup sweet corn, off the cob

Lime wedge, for garnish

Instructions:

Preheat oven to 400°. Spray each corn tortilla on both sides with nonstick oil. Place on a baking sheet. Bake 8 to 12 minutes or until golden brown. Set aside. Warm canola oil in a large skillet over low heat. Add the Thai red curry paste, minced garlic, and chopped onion. Cook about 3 minutes, stirring occasionally until the garlic and onions are softened. Add the shredded turkey. Season with sea salt and black pepper. Cook over medium heat for 3 minutes. Stir in the coconut milk, lime juice, and sun dried tomatoes; simmer until the sauce is thickened, about 15 minutes. To assemble tacos, layer the broccoli slaw onto the crispy corn tacos. Divide the turkey mixture among the tortillas. Top with sweet corn. Garnish with lime wedges. Serve immediately.

Combine everything in a food processor, press a button, and GO! Do it now. You can thank me later.

RESTAURANT-STYLE SALSA

Ingredients:

14.5 ounce can diced tomatoes, drained

10 ounce can diced tomatoes and green chilies

1/4 cup onion

1 carrot, peeled

1/2 cup fresh cilantro

1 jalapeño, stem removed

1 1/2 tablespoons lime juice

1 teaspoon kosher salt

1/2 teaspoon garlic powder

1/4 teaspoon cumin powder

Instructions:

Combine diced tomatoes, tomatoes and green chilies, onion, carrot, cilantro, and jalapeño in a food processor. Pulse until mixture is smooth, but still slightly thick. Add lime juice, kosher salt, garlic powder, and cumin powder. Pulse until completely mixed and consistency looks desirable. Pour into a sealed container. Refrigerate one hour to enhance flavors. Serve with warm tortilla chips.

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Lo Mein Made Simple! Do you ever go to the refrigerator and wonder what to make for dinner? I do. Recently my leftovers consisted of a couple of pork tenderloin fillets, grilled over the weekend, plus some veggies in the produce bin. Not quite enough. Unless you throw them all together in an amazing sauce. I didn’t exactly have Lo Mein egg noodles, but I did have some dried pasta on hand. Who doesn’t? The results were mouth-watering!
LO MEIN MADE SIMPLE 
Ingredients:

8 ounces angel hair pasta

1 tablespoon olive oil

2 cups fresh mushrooms, sliced

1/4 teaspoon garlic powder

8 baby carrots, julienned 

1/2 cup fresh snow peas

1 cup baby spinach

1 tablespoon pimento, sliced

2 pork fillets, grilled and cut up

Toasted sesame seeds for garnish

Green onion snips for garnish 
Ingredients for sauce:

2 tablespoons soy sauce

2 teaspoons agave nectar

1 teaspoon sesame oil

1/2 teaspoon ground ginger

1/2 teaspoon sriracha hot sauce 

1/8 teaspoon crushed red pepper flakes (optional)
Instructions:

In a 2-quart pan of boiling water, cook pasta according to package directions. Drain well. In a small bowl, whisk together soy sauce, agave nectar, sesame oil, ground ginger, sriracha, and red pepper flakes. Set aside. In a large skillet over medium-high heat, add olive oil, sliced mushrooms, garlic powder, and carrot strips. Cook 3-4 minutes until tender, stirring frequently. Add snow peas, baby spinach, and pimento slices. Stir until spinach has wilted. Add pork fillet chunks. Heat through. Add cooked pasta and soy sauce mixture. Gently toss to combine. Garnish with toasted sesame seeds and green onion snips. Serve immediately.
