Not only does it show off food attractively, it offers single-serving portion control. It’s the perfect touch to any meal and bakes in less time. Make your life simpler with any of the oven-to-table choices available. I did. 

DEEP DISH CHICKEN SALAD

Ingredients:

3 cups chicken, cooked

1 cup extra sharp cheese, finely shredded

1 tablespoon green onion

1/2 cup mayonnaise 

4 stalks celery, chopped

1 tablespoon lemon juice

1/4 teaspoon celery seeds

1/8 teaspoon red pepper flakes

Sea salt to taste

Dash of pepper

1 cup potato chips, crushed

Instructions:

Preheat oven to 350°. Combine chicken, celery, mayonnaise, salt, pepper, lemon juice, celery seed, red pepper flakes, and half the cheese. Mix lightly. Spoon casseroles into single serving pans. Bake for 20 minutes. Top with remaining cheese and potato chips. Bake another 5 minutes or until cheese is melted. Garnish with green onion snips. 

Yukon Cheesy Potatoes

What’s Cooking in Gail’s Kitchen? A Cut Above: Yukon Cheesy Potatoes! Before you stand in judgment over me, let me first say that a cheese-flavored product with outstanding melting capabilities is the reason I keep this item around. And I happen to know that popular restaurants also use it in combination with shredded cheddar cheese for amazing results. When I was growing up, it became associated with comfort food, like macaroni and cheese. It also melts wonderfully in homemade soups, dips, and queso. 

YUKON CHEESY POTATOES

Ingredients: 

24 ounce bag of Yukon Gold baby potatoes, skin on

1 pound package pasteurized prepared cheese product 

1 cup milk

1 cup cheddar cheese, shredded

1 green pepper, chopped

1 small onion, chopped

1 small jar pimentos 

Instructions: 

Place potatoes in a 4-quart pan with enough water to cover them. Bring to a boil over medium-high heat. Cook for 20 minutes; drain. Allow to cool slightly. Cut potatoes in half. In a microwave-safe bowl, combine cheese product, milk, and cheddar cheese. Microwave on 50% for five minutes. Stir and repeat until a smooth creamy consistency is obtained. Add chopped green pepper, chopped onion, and chopped pimentos. Mix until combined. In a 9”x13” baking dish sprayed with nonstick oil, arrange the cooked potatoes. Pour the cheese mixture over the potatoes. Gently stir to coat all the potatoes. Bake in a 350° oven for one hour. Serve warm. 

Egg Noodle Chicken Casserole

What’s Cooking in Gail’s Kitchen? Table Food: Egg Noodle Chicken Casserole! Do you ever become territorial with your food, perhaps hiding it in secret places no one ever looks? I do. In fact I keep a very unique bag of Iowa potato chips in the freezer to nibble on whenever I get the urge. Yes, you can freeze potato chips, but that’s another story. Comfort food also means having your very own individual crock in order to savor every bite, like today’s version of chicken casserole. It especially means the buttery cracker topping is all yours, to save until the very end or to mix into every bite. The choice is yours.

EGG NOODLE CHICKEN CASSEROLE

Ingredients:

1 cup egg noodles

1 tablespoon butter

1/4 onion, diced

1 stalk celery, diced

1 cup frozen grilled chicken chunks, fully cooked and thawed

1/4 cup mayonnaise

1/2 cup cheddar cheese, shredded

1/2 tablespoon parsley, finely chopped

For the topping:

1/2 cup Ritz* crackers, crushed

1 tablespoon butter, melted

1/4 cup cheddar cheese, shredded

1/2 tablespoon parsley, finely chopped

Instructions:

Preheat oven to 400°. Grease two individual casserole dishes with nonstick oil. Set aside. Cook egg noodles according to package directions. Drain, rinse, and set aside. In a skillet over medium-high heat, warm butter. Add diced onion and celery. Cook until soft, about 5 minutes. In a large bowl, combine egg noodles, onions, celery, chicken chunks, mayonnaise, cheddar cheese, and chopped parsley. Mix well. Divide between the two prepared casserole dishes. In a small bowl, stir together cracker crumbs, melted butter, and cheddar cheese. Sprinkle mixture evenly over the casseroles. Bake 20 minutes until golden brown. Let rest 5 minutes. Garnish with fresh parsley. Serve immediately.

Huevos Rancheros Casserole

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Huevos Rancheros Casserole! Looking for a little variety for a weekend breakfast? Take a trip down a rural road for an old classic that was served as “ranchers eggs” on the farms in Mexico. By turning it into a robust casserole, you can give it an American twist. It still has eggs, cheese, salsa, and tortillas in there. I chose street-size corn tortillas just because they were smaller and easier to work with. Obviously any type will do. Feel free to add beans and chorizo if you’re looking for hearty portions. Do ahead and refrigerate overnight so it’s ready to bake first thing in the morning.

HUEVOS RANCHEROS CASSEROLE

Ingredients:

10 street-size corn tortillas

1 cup chunky salsa

1 cup black beans, drain liquid

1 1/2 cups Colby-Monterey Jack cheese, shredded

1/2 pound chorizo sausage, coarsely chopped and cooked; drained

3 poblano peppers, stems and seeds removed, cut into strips

6 eggs

1/2 cup milk

1/2 teaspoon oregano

1/8 teaspoon red pepper flakes

1/8 teaspoon cumin

Sour cream, for garnish

Green onion snips, for garnish

Instructions:

Spray on 8-inch square casserole dish with nonstick oil. Line the sides and bottom with 8 street-size corn tortillas, slightly overlapping. Spread a layer of salsa over the bottom. Next, layer with black beans. Sprinkle on 1/2 cup of shredded cheese. Top with cooked chorizo, poblano peppers, and another 1/2 cup of shredded cheese. Cut the last 2 tortillas into strips and layer over cheese. In a bowl, combine eggs, milk, oregano, red pepper flakes, and cumin powder. Whisk together. Pour egg mixture over all. Sprinkle with remaining shredded cheese. Press lightly into egg mixture. Cover dish. Refrigerate 8 hours or overnight. To bake, preheat oven to 350°. Bake covered casserole 30 minutes. Remove lid and bake 15-20 minutes longer or until center is set. Let stand 5 minutes before serving. Garnish with sour cream and chopped green onions.

What’s Cooking in Gail’s Kitchen? Start Smart: Xtra Healthy Turkey Spaghetti! It’s true you can limit your weekly intake of meat by choosing vegetarian recipes and meatless meals. On the other hand, by making a simple substitution of turkey over beef, you’re getting a leaner, less fatty meat without sacrificing taste. But the debate continues. Some report that nowadays leaner beef choices still make beef the winner when it comes to fat, sodium, and cholesterol. To be honest, I already had baked turkey on hand, so I took advantage of it and went for something a little different. Variety, in my kitchen, is the spice of Life.

XTRA HEALTHY TURKEY SPAGHETTI

Ingredients:

1 pound of shredded turkey, precooked

1 tablespoon olive oil

1 poblano pepper, chopped

1 green pepper, cut into strips

1/3 cup onion, chopped

15-ounces prepared marinara sauce or spaghetti sauce

6 ounces angel hair pasta

2 cups mozzarella cheese, shredded

Grated parmesan cheese, for garnish

Instructions:

Preheat oven to 350°. Spray four individual casserole pans with nonstick oil. Set aside. In a skillet over medium heat, warm olive oil. Add poblano pepper, green pepper, and chopped onions. Sauté until tender. Stir in the shredded turkey and marinara sauce. Turn heat off and set aside. Prepare angel hair spaghetti according to package directions. Drain thoroughly. Add cooked pasta to sauce. Stir to mix. Transfer turkey spaghetti to individual casseroles. Divide mozzarella cheese between them. Bake 20-25 minutes until cheese is golden and melted. Garnish with parmesan cheese before serving.

Mealtime Crab Cocottes

What’s Cooking in Gail’s Kitchen? Fab Foodstuff: Mealtime Crab Cocottes! Seafood can be my obsession and I’m not afraid to be a glutton of it, especially if I’m visiting a locale that is a coastal destination. In my defense, how can anyone resist signs and billboards openly declaring “Best Seafood in Town!”? But eventually one returns home to a land-locked State where seafood is as scarce as hen’s teeth. So when the cravings continue, I head over to the local supermarket in search of a packaged substitute. Maybe it’s the succulent crabmeat or perhaps it’s the French butter, but I have to admit this recipe isn’t half bad.

MEALTIME CRAB COCOTTES

Ingredients:

1 cup mayonnaise

3/4 cup parmesan cheese, grated

1 1/4 teaspoon seafood seasoning

1/2 teaspoon garlic powder

1/4 teaspoon sea salt

1/8 teaspoon black pepper

8 ounces jumbo lump crabmeat

8 ounces imitation crabmeat, flaked

1 tablespoon pimento, diced

1/2 cup Panko bread crumbs

1 teaspoon ground paprika

1-2 tablespoons French butter, melted

Instructions:

Preheat oven to 350°. Coat bottoms and edges of two ramekins with nonstick oil. Set aside. In a large bowl, combine mayonnaise, parmesan cheese, seafood seasoning, garlic powder, sea salt, and black pepper. Mix well. Gently fold in lump crabmeat, imitation flaked crabmeat, and diced pimento. Divide crabmeat mixture evenly between ramekins. Top with Panko breadcrumbs. Sprinkle paprika over all. Drizzle melted butter on top. Bake uncovered for 25 minutes, or until lightly browned and bubbly. Serve with artisan bread and side salad.

Potato Chip Potluck

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Potato Chip Potluck! This one-dish wonder is so yummy, it can be packed in a picnic basket and taken along on your next adventure. With the double crunch of water chestnuts and potato chips, it almost seems like a party dip. Wrap it in foil and you’re good-to-go. Kids love the salty chips and adults appreciate the herbed chicken chunks.

POTATO CHIP POTLUCK

Ingredients:

3 cups chicken, cooked and cubed

1/2 cup mayonnaise

3 green onions, snipped

8-ounce can water chestnuts, drained and chopped

1 tablespoon lemon juice

1/4 teaspoon celery seeds

2 tablespoons chopped tarragon leaves

Sea salt to taste

Dash of pepper

1 cup extra sharp cheese, sliced or shredded

1-2 tomatoes, sliced

1 cup potato chips, crushed

Instructions:

Preheat oven to 350°. Combine chicken, mayonnaise, onions, water chestnuts, lemon juice, celery seed, tarragon leaves, salt, pepper, and half the cheese. Mix lightly. Spoon into a casserole dish. Layer with sliced tomatoes. Bake for 20 minutes. Top with remaining cheese and potato chips. Bake another 5 minutes or until cheese is melted.
