What’s Cooking in Gail’s Kitchen? Something to Savor: Ham Salad Spread! Tired of ho-hum tuna salad or egg salad sandwiches? Think all-natural applewood smoked ham with no artificial ingredients. When you begin with quality, the results are astounding. Add sweet pickle relish, chopped celery, and fresh horseradish. The biggest challenge is deciding if you wish to smear it on rye bread, add a dollop over wheat crackers, or simply scoop it onto a Bibb lettuce leaf. Skip the Deli-made and crank out a batch at home. It’s easier than you think. In no time at all, you’ll have a party favorite or lunchtime energy boost. 
HAM SALAD SPREAD
Ingredients:

2 cups applewood smoked ham chunks

4 stalks celery, chopped

2 eggs, hard-boiled and chopped

3 green onions, snipped

3 tablespoons sweet pickle relish 

1 teaspoon creamy horseradish 

1/2 cup mayonnaise 
Instructions:

Place ham chunks in a food processor. Pulse in batches until finely chopped. Transfer to a mixing bowl. Place celery in the food processor and Pulse until chopped. Add to bowl. Repeat with hard-boiled eggs. Add to bowl. Stir to mix. Add green onion snips, sweet pickle relish, horseradish, and mayonnaise. Mix well. Refrigerate until ready to serve.

What’s Cooking in Gail’s Kitchen? Hearty Ham and Bean Soup. I’m such a morning person which is why I can throw together a meal, as soon as I grab my first cup of coffee, and let it slow cook all day long. The aroma wafting throughout the kitchen is enough to make your mouth water in anticipation. This hearty bean soup can be simmered stove-top or in the crock pot. You choose. 
HEARTY HAM AND BEAN SOUP
Ingredients:

8 cups water

1 pound bag of dried Mixed Beans

1 can (8oz.) tomato sauce

2 1/4 pounds smoked ham chunks

1 large onion, chopped

1 tablespoon instant beef bouillon 

1 teaspoon salt

1/2 teaspoon pepper 

1 garlic clove, crushed

2 potatoes, cubed

2 medium carrots, cut up

2 stalks celery, cut up

3 whole bay leaves
Instructions:

Heat water and dried mixed beans to boiling in Dutch oven; boil 2 minutes. Remove from heat; cover and let stand 1 hour. 

Add tomato sauce, smoked ham chunks, onion, instant bouillon, salt, pepper, and garlic to beans. Heat to boiling; reduce heat. Cover and simmer until beans are tender, about two hours. Do not boil or beans will burst. Skim fat if necessary. 

Stir potatoes, carrots, and celery into soup. Heat to boiling; reduce heat. Add whole bay leaves. Cover and simmer until vegetables are tender, about one hour. Stir in 1 cup of water for thinner consistency. Makes 8 servings.

What’s Cooking in Gail’s Kitchen? Food for Sharing: Leeks and Wild Mushroom Stuffing! With the holiday season on the horizon, here’s a tasty side dish that is sure to please. If you have the time, I suggest substituting homemade breadcrumbs (which is about one loaf of day-old bread) for the stuffing mix. I split the difference and added homemade croutons on top of the casserole. 
LEEKS AND WILD MUSHROOM STUFFING 
Ingredients:

2 tablespoons olive oil

5 ounces shiitake wild 

mushrooms, sliced

1 tablespoon olive oil

2 large leeks, sliced

2 celery stalks, chopped

1 1/2 cups chicken broth

1/4 cup butter

1 teaspoon parsley flakes

6 ounce box chicken stuffing 
Instructions:

Preheat oven to 350°. Butter a covered casserole dish. In a large skillet over medium-high heat, warm 2 tablespoons olive oil. Add the wild mushrooms and sauté until browned, approximately 5 minutes. Transfer to a bowl; set aside. Using the same pan, add one tablespoon olive oil. Sauté leeks and celery until translucent, approximately 7-8 minutes. Set aside. In a medium saucepan, heat chicken broth, butter, and parsley flakes. Bring to a boil. Stir in contents of stuffing mix. Remove from heat; cover and let stand for 5 minutes. Fluff with fork. Fold in wild mushrooms, leeks, and celery. Stir until well combined. Transfer stuffing mixture to the prepared casserole dish. Bake covered for 20 minutes; remove lid and bake 20 minutes longer. Serve warm.

What’s Cooking in Gail’s Kitchen? Be Our Guest: Roasted Corn Salad! Nothing tastes better than fresh corn. Shuck it off the cob to make a spectacular side dish that goes well with quesadillas, tacos, and grilled meats. This make-ahead roasted corn salad is another picnic basket favorite that travels well and satisfies a crowd. Simply modify the portions to match the event. It’s fresh, it’s spicy, and it’ll keep ’em coming back for more. 
ROASTED CORN SALAD
Ingredients:

3 ounces cider vinegar

1/2 teaspoon water

1/4 cup olive oil

1/2 cup sugar

1/2 teaspoon sea salt

1/4 teaspoon white pepper

3 ears bicolor corn, shucked off cob

2 tablespoons vegetable oil

1/2 cup black beans, drained

1/8 teaspoon garlic powder

1/8 teaspoon cumin powder

1/4 teaspoon Cajun seasoning 

1 jalapeño pepper, chopped

1 ripe tomato, chopped

1 green pepper, chopped

2 celery stalks, chopped

1/2 red onion, chopped

1 tablespoon fresh cilantro, chopped
Instructions:

Combine the cider vinegar, water, olive oil, sugar, sea salt, and white pepper in a saucepan; bring to a boil, stirring occasionally. Set aside to cool at room temperature. In an iron skillet over medium-high heat, add vegetable oil. Drop the corn kernels into the skillet; stir to coat. Every few minutes, turn corn with a spatula. As the kernels begin to char, continue turning until corn is tender, about 6-7 minutes. It may be necessary to reduce heat. Place black beans in a large covered bowl. Transfer roasted corn to same bowl. Sprinkle with garlic powder, cumin powder, and Cajun seasoning. Add chopped jalapeño pepper, tomato, green pepper, celery, red onion, and cooled marinade. Mix thoroughly. Refrigerate overnight. Before serving, garnish with fresh cilantro.

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Kidney Bean Salad! I find this chilled high protein dish a complement to any menu. It is especially delightful for Summer road trip outings, lake-side picnics, and cookouts on the deck. Store it in a glass jar for easy serving or make up individual potluck portions. For an exciting, easy, and often overlooked alternative that is vegan and gluten-free, add these ingredients to your grocery list and take a trip on the wild side. 
KIDNEY BEAN SALAD
Ingredients:
1/3 cup mayonnaise 

1 tablespoon olive oil

2 teaspoons red wine vinegar 

1 smidgen sugar

Salt and pepper, to taste

1/3 cup onion, chopped

1/3 cup celery, chopped

1 can red kidney beans, drained

2 tablespoons sweet pickle relish
Instructions:
Mix mayonnaise, olive oil, red wine vinegar, sugar, salt, and pepper. Blend in onions. Add celery, beans, and relish. Chill two hours before serving.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Creamy Chicken Noodle Soup! The crockpot is essential, in my opinion. Never mind the fact that a slow-cooker turns the entire house into a well-seasoned bistro. It’s the hands-free unattended cooking with astounding results that makes it a winner in my book. Throw everything together, let it simmer, and enjoy the meal to come. Leftovers are delicious and clean-up is a snap!
CREAMY CHICKEN NOODLE SOUP
Ingredients: 

4-6 chicken fillet tenders

2 tablespoons olive oil

1/8 teaspoon lemon pepper 

1/8 teaspoon thyme

1/8 teaspoon rosemary 

1/8 teaspoon garlic powder

1/8 teaspoon celery seed

60-ounces chicken broth

23-ounce can of cream of chicken soup

3 stalks celery, cut-up

1/2 pound mini carrots, whole

1/2 pound mushrooms, sliced

1/4 cup onion, chopped

3 bay leaves

2 cups home style noodles

1/2 cup butter
Instructions: 

Sauté chicken tenders in a large skillet with olive oil, lemon pepper, thyme, rosemary, garlic powder, and celery seed. Remove from heat. Pour the cream of chicken soup into the crockpot. Slowly add the chicken broth, stirring until the two are well. blended. Transfer the sautéed chicken tenders from the skillet. Add celery, carrots, mushrooms, and onions. Stir gently. Add bay leaves. Heat on high setting for four hours. Remove lid and shred the chicken for a chunky consistency. Return to soup. Add noodles and butter. Reduce heat to low and simmer two hours longer. Remove bay leaves before serving.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Chunky Clam Chowder! As the days grow shorter, take the damp chill off with a bowl of warm, creamy clam chowder. This made-from-scratch one-pot meal can be served now or later. The longer it sits, the more savory it becomes. Turn a simple classic into a filling favorite. 
CHUNKY CLAM CHOWDER 
Ingredients:

2 red potatoes, peeled and diced

2 tablespoons butter

1/2 teaspoon sea salt 

1/8 teaspoon cracked black pepper 

1/8 teaspoon red pepper flakes

2 tablespoons onion, diced

1 1/2 cups water

1 stalk celery, chopped

10-ounce can fancy whole baby clams in juice

1 cup heavy cream

1/2 cup instant potatoes 

1 teaspoon dill (optional)

Green onion snips
Instructions:

In a 2-quart pan over medium-high heat, combine water, potatoes, butter, salt, pepper, red pepper flakes, onion, and celery. Cook 20 minutes until tender. Add clams in juice and heavy cream. Bring to low boil, stirring occasionally, about 2 minutes. Slowly add instant potatoes and mix well. Reduce heat to low. Stir to thicken. Add dill to blend. Ladle into cups or bowls. Garnish with green onion snips.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Giddyup Gazpacho! Yee-haw! Get set to gather the bounty of your garden because this dish has quite a variety of appetizing vegetables! You’ll experience an explosion of flavor in every mouthful. Gazpacho is one of those mysterious soups that is meant to be eaten COLD. Sound bizarre? I know, right! Trust me, the fusion of wholesome produce is unsurpassed. And the temperature is perfectly refreshing this time of year. 
GIDDYUP GAZPACHO 
Ingredients:

4 large ripe tomatoes, chopped 

1 small sweet onion, finely chopped

2 stalks of celery, diced

1 small green pepper, diced

1/2 cup baby carrots, finely chopped

2 cloves garlic, minced

1 medium cucumber, peeled, seeded, and diced

1/4 cup olive oil

2 tablespoons garlic vinegar 

1 teaspoon sea salt

1/8 teaspoon cracked black pepper

1 teaspoon sriracha hot chili sauce (optional)

2 cups 100% vegetable juice, low sodium
Instructions:

In a large mixing bowl add all the ingredients from the top of the list to the bottom. Stir well. The vegetable juice is added last so you can determine the consistency of the soup. Cover the bowl and refrigerate for at least one hour before serving.

What’s Cooking in Gail’s Kitchen? The Daily Special: Egg Salad Extravaganza, A Crêpe Idea! The debate continues………. Mayonnaise and Celery or Miracle Whip and Pickle Relish? What is your preference in Egg Salad? It probably all depends on how your mother made it during your childhood. Fortunately both can be made in a snap!
EGG SALAD EXTRAVAGANZA 
Ingredients:

3 eggs, hard cooked

3 tablespoons mayonnaise or Miracle Whip

1/8 teaspoon sea salt

1/8 teaspoon cracked pepper

1 tablespoon celery, chopped (optional)

1 tablespoon pickle relish (optional)
Instructions:

Combine mayonnaise or Miracle Whip, salt, and pepper in a bowl. Peel and chop eggs, breaking into small pieces. Gently stir into mayonnaise mixture. Add celery or pickle relish. Fill two Crêpes with egg salad. Tuck in several lettuce leaves. Sprinkle with Chia seeds.
