Tzatziki Egg Salad

What’s Cooking in Gail’s Kitchen? A Cut Above: Tzatziki Egg Salad! When I had a garden, while raising my children, I used to eat homegrown cherry tomatoes by the handful. The few times the tomatoes actually made it to the kitchen, I would always count out 10 cherry tomatoes for MY salad and then smother them with cucumber salad dressing. It was heaven-in-a-bowl for me. And then, all of a sudden, the bottled cucumber dressing disappeared off the store shelves, never to be seen again. What happened, I wondered. I was devastated, to say the least. Years later, the buzz was all about tzatziki sauce. I already knew I loved Greek gyros smothered in the stuff, so I went back to the deli and bought some. Guest what I do with it now. You know. 

TZATZIKI EGG SALAD

Ingredients: 

6 eggs

5 tablespoons Greek yogurt

1/4 medium cucumber, peeled and grated

1 teaspoon garlic powder

1 1/2 teaspoon olive oil

1/2 cup celery, finely chopped

1 teaspoon sea salt

1/8 teaspoon black pepper

1 teaspoon dill weed

Instructions:

Place the 6 eggs in a medium pot filled with water. Bring to a boil; reduce heat and simmer for 15 minutes. Drain. Place the eggs in an ice bath for 10 minutes to cool. Peel and dice the eggs. Set aside. To make the tzatziki sauce, combine Greek yogurt, grated cucumber, garlic powder, olive oil, finely chopped celery, sea salt, black pepper, and dill weed. Mix well. Set aside. For the egg salad, begin by adding small portions of tzatziki sauce to the chopped eggs until you achieve the desired consistency. Chill tzatziki egg salad for 30 minutes. When ready to serve, make an “x” in the top of an artisan roll. Fill the center with egg salad. Serve with micro greens and fresh dill sprig. 

New England Soup Pasta

What’s Cooking in Gail’s Kitchen? A Cut Above: New England Soup Pasta! I just want to put this out there…..I’m a very forgiving person. That being said, IF you are in a crunch for time, and IF you have a favorite brand of New England Clam Chowder, I promise to look the other way for you to use a store-bought version of soup in lieu of making it from scratch. No judgment. Then proceed with the shell pasta portion for a fabulous meal that may cause you to scratch your head and mumble, “Why have I never thought of this amazing meal before?” See? Forgiven. 

NEW ENGLAND SOUP PASTA

Ingredients: 

1 tablespoon butter

1/2 cup onion, diced

1/2 teaspoon kosher salt

1 tablespoon flour

6.5 ounce minced clams, canned

8 ounce bottled clam juice

8 ounce package, shell pasta, small size 

1 Yukon Gold potato, peeled and diced

1 rib celery, diced

1/8 teaspoon cayenne pepper

1/2 cup light cream

1 tablespoon olive oil

2 tablespoons Parmesan cheese, grated

Crumbled bacon, for garnish

Fresh tarragon, for garnish

Instructions: 

Warm butter in a skillet over medium heat. Add diced onion and kosher salt. Cook and stir until onions soften and turn translucent, about 5 minutes. Sprinkle in the flour; cook and stir until it turns into a roux. Drain clams, reserving the juice. Set aside the clams. Pour reserve clam juice and bottled clam juice into the skillet. Whisk to scrape bits from the bottom of the skillet. Raise heat to medium-high, then reduce to a simmer. While the clam sauce is thickening, cook the pasta. Bring a large pot of water to a boil. Add shell pasta. Cook, stirring occasionally, until pasta Al dente, approximately 7-8 minutes. Meanwhile, add diced potatoes, diced celery, and cayenne pepper to the simmering clam sauce. Simmer for 5 minutes. Reduce heat to medium-low and add the reserved clams, light cream, and I tablespoon olive oil. Simmer gently, stirring occasionally, for 10 minutes or until the vegetables are tender. Fold in grated Parmesan cheese. Drain pasta; ladle into individual serving bowls. Top with clam sauce-soup. Garnish with crumbled bacon and fresh tarragon. Serve warm. 

Rolled Fillets of Chicken

What’s Cooking in Gail’s Kitchen? Home Cooking: Rolled Fillets of Chicken! There seems to be a hundred ways of serving chicken, but I like this one best because it makes a savory meal that is also filling. Split one serving with your partner and add another vegetable side dish for a healthy alternative. I omitted salt in lieu of herbs. 

ROLLED FILLETS OF CHICKEN

Ingredients:

1 pkg. Stove Top Chicken Stuffing

2 stalks celery, diced

2 cups chicken broth

1/4 teaspoon rosemary

1/4 teaspoon sage

1/4 teaspoon thyme 

1/4 teaspoon parsley

4 chicken breasts

1 cup baby carrots

1 cup chopped celery

Instructions:

Preheat oven to 400°. In a medium pan, bring one cup chicken broth and seasonings to a boil. Add stuffing mix and diced celery. Mix, cover, and set aside for 5 minutes. Flatten chicken breasts with a rolling pin. Fill with stuffing and roll up. Place seam side down in covered casserole dish. Sprinkle herbs on top. Surround chicken with celery and carrots. Add one cup of chicken broth to the bottom of the dish to keep it from going dry. Cover tightly. Bake for 30 minutes or until chicken is cooked through. Remove lid and butter tops of chicken. Then sprinkle with parsley. Bake 5 minutes longer uncovered. 

*The pan drippings can be made into gravy or simply spoon the juice over the chicken for a moist finish. 

Mushroom Caps

What’s Cooking in Gail’s Kitchen? Home Cooking: Mushroom Caps! It you like mushrooms, you’ll be happy to know this is a meal in itself. If you wish to be the star of the next gathering, fix a platter and it becomes a very impressive appetizer to share!

MUSHROOM CAPS 

Ingredients:

1 pound of fresh white mushroom caps, stems removed

1 box of Low-Sodium Stove Top Stuffing 

4 tablespoons butter

1 pinch parsley

1 pinch rosemary 

1 pinch thyme

1 pinch sage

1 stalk celery, chopped finely

1 10-ounce can chicken breast in water, drained

Instructions:

Preheat oven to 350°. Prepare stuffing mix according to directions on box but add extra herbs when preparing. Once the dressing is finished, gently add the celery and cut-up chicken breast pieces. Mix well. Spoon the filling into the mushroom cavities and arrange in a shallow baking dish, cavity side up. Bake 25 minutes or until the mushrooms are tender and the filling is heated through. The mushrooms should appear golden on top. Serve warm. 

Vegan White Bean Soup

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Vegan White Bean Soup! Here’s a quick and easy meal that will warm up the kitchen with distinctive aromas tantalizing your senses. Thank goodness it only takes a few minutes to pull everything together so you won’t have to hear the inevitable question, “When will dinner be ready? I’m hungry.” Since it’s prepared on the stovetop, you can prepare it year round. The chunky vegetables make it hearty and filling for even your fussiest critic. The crunchiness of the savory croutons is slightly salty and definitely delicious. The verdict….…a bowlful of Yum! 

VEGAN WHITE BEAN SOUP

Ingredients:

1 tablespoon olive oil 

1/2 yellow onion, diced

2 stalks celery, diced

2 carrots, diced

3/4 teaspoon kosher salt

2 garlic cloves, minced

1/4 teaspoon red pepper flakes

2 cups vegetable broth

1 Yukon potato, finely diced

15-ounce can cannellini beans, drained

Cracked black pepper, to taste 

Toasted croutons, for garnish

Instructions:

Warm the olive oil in a 4 quart pan over medium-high heat. Once hot, add the diced yellow onion, diced celery, diced carrots, and kosher salt. Cook until the vegetables are softened and just beginning to turn brown, about 7 minutes. Add the minced garlic and red pepper flakes. Cook 1-2 minutes longer until fragrant. Pour in a splash of vegetable broth to deglaze the pan, as needed. Stir the browned bits on the bottom of the pan. Add the remaining broth, diced potatoes, and cannellini beans. Stir well. Bring the soup to a boil. Then reduce heat to low, cover the pan, and simmer the soup for 15 minutes, or until potatoes are tender. When the soup is done, ladle into bowls. Add cracked black pepper, to taste. Serve with toasted croutons. 

Leftover Turkey Tower

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Leftover Turkey Tower! Upscale your Thanksgiving meal leftovers with this stylish presentation that makes everyone go “Ahhhh”. It’s easily doable by using a ring mold. Who knew? Restaurants have kept this tip to themselves for the longest time. But no more. You can make it at home to impress out-of-town guests as well as privileged family members and friends. I find it’s best to have a set of four ring molds the same size on hand. 

LEFTOVER TURKEY TOWER

Ingredients:

1/2 cup leftover stuffing, precooked

1/3 cup roasted turkey, chopped

1 celery rib, chopped

2 tablespoons mayonnaise 

1/8 teaspoon celery seed

1/8 teaspoon sea salt

1/8 teaspoon white pepper 

1 tablespoon cranberry sauce

Sprig of fresh thyme, for garnish

Instructions:

Warm the leftover stuffing in the microwave for about 30 seconds. Place the ring mold on a salad plate. Gently pack the warmed stuffing into the bottom of the mold, keeping the layer as level as possible. Set aside. In a bowl, combine the roasted turkey, chopped celery, mayonnaise, celery seed, sea salt, and white pepper. Mix thoroughly. There should be enough mayonnaise to keep the turkey salad together. Spoon the turkey mixture into the ring mold, pressing lightly to form a layer on top of the dressing. Gently lift the ring mold, without force, pulling straight up to reveal the tower of food. Place a dollop of cranberry sauce on top. Garnish with fresh thyme. Serve immediately. 

Jalapeño Honey Hummus

What’s Cooking in Gail’s Kitchen? Fabulous Fixings: Jalapeño Honey Hummus! I like hummus. You like hummus. We all like hummus….don’t we, generally speaking? Some say it can be a little bland; others say bone dry. I say add smooth creamy natural honey for a hot kick and spicy finish that will make it unforgettable. Before you know it, you’ll be scooping that silky texture onto all kinds of foods. Hmmm….(thinking out loud)…better make more. 

JALAPEÑO HONEY HUMMUS 

Ingredients:

2 jalapeño peppers, roasted and seeds removed 

15.5 ounce can chickpeas, drained and rinsed

2 tablespoons raw honey

1/3 cup olive oil 

Sea salt and pepper, to taste

3 tablespoons water, for consistency 

Herbs de Province, for garnish

Instructions:

Broil jalapeños until blackened and blistered on the outside, approximately 6-7 minutes. Seal the jalapeños in a plastic bag until room temperature; remove skin. In a food processor, combine jalapeños, chickpeas, and honey until puréed. Scrape down sides, as needed. As the processor is running, slowly pour in olive oil. Continue to blend until hummus is smooth. Season with sea salt and pepper using water to thin until hummus is desired consistency. Garnish with a pinch of Herbs de Provence. Serve with bbq pork, radish slices, celery spears, and pita bread.

Wild Chilean Shrimp Stuffing

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Wild Chilean Shrimp Stuffing! You’re probably wondering what is so special about Wild Chilean Shrimp. First of all, it is a cold water shrimp, rich in nutrients, caught wild along a small band of Chile. These shrimp contain no additives, making them a simple sustainable seafood option. The quality tastes better knowing each shrimp is hand peeled. The difference, you wonder? Here again the sweet briny flavor of the sea comes out in every bite. As the shrimp is cooked, it retains its flavor, color, and texture. With any product, tasting is believing. Perhaps the next time you spot these ocean treasures, you’ll pick up a bag. Discover how shrimp-ly wonderful they are. 

WILD CHILEAN SHRIMP STUFFING

Ingredients:

6 tablespoons butter, cubed

1 onion, finely chopped

1/4 cup celery, chopped

1/4 cup green pepper, chopped

12 ounces Wild Chilean Shrimp, fully cooked, peeled, deveined, and tail off

1/4 cup beef broth

1 teaspoon pimentos, drained and diced

1 teaspoon Worcestershire sauce

1/2 teaspoon dill weed

1/2 teaspoon chives, minced

1/8 teaspoon sea salt

1/8 teaspoon cayenne pepper 

1 1/2 cups soft bread crumbs

Instructions:

Preheat oven to 350°. Grease a one-quart casserole dish with nonstick oil. Set aside. In a large skillet over medium-high heat, warm butter. Add finely chopped onions, chopped celery, and chopped green pepper. Sauté until tender. Add wild Chilean shrimp; heat through. Add beef broth, diced pimentos, Worcestershire sauce, dill weed, minced chives, sea salt, and cayenne pepper. Stir occasionally to heat through. Remove from heat. Fold in soft bread crumbs. Transfer stuffing to the prepared casserole dish. Bake uncovered 20 minutes. Serve warm. 

Buttery Stuffed Haddock

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Buttery Stuffed Haddock! If you’re looking for a break from red meat, look no further than fish. I used to think I only had only two choices when it came time for a homemade fish dinner: either bake it or fry it. Now that I have easier access to fresh fish, I’ve expanded my thought process beyond the ordinary. While I’m having fun with the outdoor kitchen, sometimes I want a little more than that as well. I’m here to say that stuffing is no longer just for turkey. Fish offers options like mixing in shrimp, crab, vegetables, herbs, or rice. How crazy is that? Stick around; I’ll show you how it’s done. 

BUTTERY STUFFED HADDOCK

Ingredients for Haddock:

2 – 6 ounce haddock fillets

5 tablespoons butter, melted

2 tablespoons lemon juice

1 teaspoon parsley, minced

1/2 teaspoon paprika 

Ingredients for Stuffing:

6 tablespoons butter, cubed

1 onion, finely chopped 

1/4 cup celery, finely chopped 

1/4 cup green pepper, finely chopped 

1 pound precooked shrimp, peeled, deveined, and chopped 

1/4 cup beef broth

1 teaspoon diced pimentos 

1 teaspoon Worcestershire sauce

1/2 teaspoon dill weed

1/2 teaspoon chives, minced

1/8 teaspoon sea salt

1/8 teaspoon cayenne pepper 

1 1/2 cups soft bread crumbs

Instructions: 

Preheat oven to 375°. Spray a baking dish with nonstick oil. Set aside. In a large skillet, warm butter over medium heat. Add chopped onion, chopped celery, and chopped green pepper. Sauté until tender. Add shrimp; stir 1-2 minutes. Add beef broth, diced pimentos, Worcestershire sauce, dill weed, minced chives, sea salt, and cayenne pepper. Heat through. Remove from heat and gently fold in bread crumbs. Divide the stuffing between the haddock fillets. Roll up; transfer stuffed fillets to the prepared baking dish, placing seam side down. Drizzle with melted butter and lemon juice. Sprinkle with parsley and paprika. Bake, uncovered, 20-25 minutes or until fish flakes easily with a fork. Serve immediately.
