And in the world of food, nothing looks more like a boat than zucchini, especially when it’s sliced horizontally and scooped out. Amirite? Actually, I like this recipe because I always seem to have a bag of frozen Italian meatballs on hand in my freezer. Most days I make my own homemade marinara sauce because I like to stock my pantry with a variety of Italian Roma tomatoes that are imported from Italy. Obviously you can do the same. Recipes are designed to modify in ways that bring accolades to you for the extra effort. If time is of the essence, follow the instructions below. I promise you won’t be disappointed.

ZUCCHINI MEATBALL BATEAUX

Ingredients:

2 medium zucchini, sliced in half lengthwise

16 precooked frozen Italian meatballs, thawed

15-ounce jar prepared marinara sauce

1/2 cup mozzarella cheese, shredded

1/2 cup parmesan cheese, shredded

8 ounces fresh burrata cheese

1 tablespoon olive oil

1/4 teaspoon Italian herb blend

Fresh basil, for garnish

Instructions:

Preheat oven to 400°. Arrange sliced zucchini halves on a baking sheet that has been sprayed with nonstick oil. Scoop out the center of each zucchini, using a spoon, to remove seeds and create a well to hold the fillings. Spread a little marinara in each zucchini. Place 4 Italian meatballs in each. Divide the remaining marinara between them. Top with mozzarella and parmesan cheeses. Bake 20 minutes, or until cheese is melted and bubbly. Transfer zucchini boats to a platter. Place fresh basil leaves on each end. Divide the burrata into four sections and arrange dollops as desired. Drizzle each dollop with olive oil and sprinkle with Italian herbs. Serve immediately.

Yellow Squash Panko

The skin is tender, glossy smooth, and edible which makes it a no-fuss dinner companion. Although its flavor is mild, when cooked it actually becomes buttery sweet with a slightly nutty nuance. Try to buy yellow squash that is 6”-8” in size. You’ll know because the larger it is, the more likely the skin will appear bumpy and less tender. You’ll also notice a lot of seeds, once you cut into it. By then you’ll need to rethink dinner and purée it for soup. Hindsight is 20/20 after all.

YELLOW SQUASH PANKO

Ingredients:

2 yellow squash

1-2 tablespoons olive oil, for sauté

Ingredients for Herbed Oil:

1 tablespoon lemon juice

1 tablespoon olive oil

1/8 teaspoon garlic powder

1 teaspoon dried parsley

1/4 teaspoon sea salt

1/8 teaspoon cracked black pepper

Ingredients for Crumb Topping:

1/4 cup panko bread crumbs

1/4 cup parmesan cheese, grated

1 teaspoon dried parsley

1/4 teaspoon sea salt

1/8 teaspoon red pepper flakes

Instructions:

Wash and pat dry yellow squash. Slice into 1/4” rounds; set aside. To make the herbed oil, whisk together lemon juice, olive oil, garlic powder, dried parsley, sea salt, and cracked black pepper. Set aside. To make the crumb topping, toss panko bread crumbs, grated parmesan cheese, dried parsley, sea salt, and red pepper flakes into a bowl. Mix well; set aside. To prepare yellow squash, warm olive oil in a large skillet over medium heat. Add the yellow squash and sauté for 8 minutes. Turn occasionally to cook both sides. Squash should be soft, but not mushy. Remove from heat. Drizzle herbed oil over yellow squash. Transfer to a platter. Top with panko crumb topping mixture. Garnish with fresh basil leaves, if desired. Serve immediately.

Naan Italian Meatball Wraps

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Naan Italian Meatball Wraps! Don’t you just love naan? It is a nice alternative to a sub bun or slice of bread when desiring a sandwich. For those who haven’t tried it yet, naan is a soft flatbread which typically has any airy-like texture. I find it more appealing than pita bread, which tends to be a little drier. Because this recipe included a marinara sauce, naan helps to soak up the flavors and keep the sauce from dripping out, most likely due to the small pockets of air. Looks like it’s time for you to give it the taste test and tell me what YOU think.

NAAN ITALIAN MEATBALL WRAPS

Ingredients:

16 Italian meatballs, frozen pre-made variety; thawed

16 ounces pizza sauce

8 ounces mozzarella cheese, shredded

4 mini naan portions

Baker’s twine

Instructions:

Place Italian meatballs in a microwave-safe covered dish. Heat on High for 3-4 minutes. Drain excess liquid, if any. Add pizza sauce and heat in microwave on 50% for 3 minutes. Remove and set aside. Layer one mini naan on a microwave-safe plate. Sprinkle with a few drops of water; cover with parchment paper. Repeat others to form a stack. Warm naan in the microwave on 40% power for 30 seconds. Repeat, if needed. This will soften the naan in order to make it pliable. Working quickly, arrange 4 meatballs and sauce in each mini naan. Sprinkle with shredded mozzarella cheese. Secure the stuffed wrap with bakers twine. Transfer meatball wrap to a plate. Repeat until all four are complete. Microwave again on 20% power for 30 seconds or until cheese is melted. Serve warm.

Kidney Bean Chili Pizza

If you like the spiciness of chili and can’t resist a slice of gooey cheese pizza, prepare yourself for an endorphin rush like no other. Happiness is contagious and I guarantee you, chili pizza will put you in a good mood. Now let me be clear, the pizza itself is not “make you sweat hot”, which is why I listed the hot pepper rings and sriracha as garnishes to taste. To each his own. I probably overdo the spiciness compared to my husband. Just remember, if it’s too spicy, drink milk. It soothes the body much better than soda, beer, or water.

KIDNEY BEAN CHILI PIZZA

Ingredients:

1 pound lean ground beef

1 envelope original chili seasoning mix

14.5-ounce can diced tomatoes, with juice

15-ounce kidney beans, with juice

12-inch prepared pizza crust

1/4 cup red onions, sliced

2 cups mozzarella cheese, shredded

Hot pepper rings, for garnish

Sliced green olives, for garnish

Sriracha Sauce, to taste

Instructions:

Preheat oven to 400°. In a large skillet over medium-high heat, brown ground beef. Drain fat. Stir in chili seasoning mix, diced tomatoes, and kidney beans. Bring to a boil. Reduce heat to low; simmer 10 minutes, stirring occasionally. Place pizza crust on a baking sheet. Spoon chili evenly onto crust. Layer with sliced red onions. Cover all with shredded mozzarella cheese. Bake 15-20 minutes or until cheese is melted and crust is crispy. Top with hot pepper rings and green olives. Drizzle with sriracha sauce. Serve immediately.

Greek Oven Potatoes

The end result is tenderness and flavorful, an extraordinary combination. It sounds like a lot of liquid, but trust me, the potatoes literally soak up the moisture. They can handle it. The spice mix does a great job of penetrating the potatoes while teasing the senses with a whiff of aromatic pleasantness. For a side dish that is anything but hum-drum, give this one a whirl. No regrets.

GREEK OVEN POTATOES

Ingredients:

1/2 teaspoon seasoned salt

1/2 teaspoon black pepper

1/2 teaspoon smoky paprika

1/2 teaspoon dried rosemary

4 red potatoes, peeled and cut into wedges

4 garlic cloves, chopped

2 tablespoons olive oil

1/2 lemon, juiced

2/3 cup vegetable broth

1/3 cup parmesan cheese, grated

Fresh basil, for garnish

Instructions:

Preheat oven to 400°. Spray a small baking dish with nonstick oil. Set aside. In a small bowl, combine seasoned salt, black pepper, smoky paprika, and dried rosemary. Set aside. Arrange red potato wedges in the prepared baking dish. Sprinkle with spice mix. Toss briefly to cover all. In a bowl, whisk together garlic cloves, olive oil, lemon juice, and vegetable broth. Pour over potatoes. Cover with foil and bake for 40 minutes. Carefully take the baking dish from the oven, remove the foil, and sprinkle the potatoes with parmesan cheese. Return dish to oven and bake, uncovered, for 15 minutes longer. Potatoes will be cooked through and golden brown in color. Garnish with fresh basil. Serve immediately.

All I have to do is go to my freezer to decide what ingredients to use. In there is often naan flatbread, precooked grilled chicken strips, and previously oven-baked bacon. In lieu of marinara sauce, creamy ranch dressing makes a tasty sauce. People know cheese is always my friend, along with fresh veggies, herbs, and spices. Throw it all together and boom; 20 minutes later it’s ready to eat. I think I deserve a star for that.

WHITE CHICKEN FLATBREAD

Ingredients:

1 Naan flatbread

1 tablespoon olive oil

1 tablespoon cornmeal

1/2 cup prepared ranch dressing

4 ounces fresh mozzarella, sliced

1 cup precooked, grilled chicken chunks

1/4 cup precooked bacon, crumbled

2 tablespoons sweet onions, chopped

1/8 teaspoon red pepper flakes

1/2 teaspoon Italian seasoning

4 ounces mozzarella cheese, shredded

Instructions:

Preheat oven to 400°. Brush the bottom side of the naan flatbread with olive oil; dust with cornmeal. Transfer to a pizza stone. Bake 5 minutes. Remove from oven and assemble the ingredients. Spread the ranch dressing onto the top crust. Layer, in order, the fresh mozzarella slices, grilled chicken chunks, bacon crumbles, and sweet onions. Sprinkle with red pepper flakes and Italian seasoning. Top with shredded mozzarella cheese. Bake 10-15 minutes, or until cheese is melted and golden. Serve immediately.

Before you sit down to watch your favorite sports team or series on Netflix, throw together a sheet pan of nachos to snack on. It’s the perfect food for grazing because everyone seems to like them. First of all, nachos are finger food. They’re also snackable ( is that a made-up word?) They feel like a treat or a party’s going on. And there’s enough for everyone. Add some sour cream, guacamole, and sliced jalapeños, if you choose. On second thought, better double the recipe if you’re expecting more than two or four. Be forewarned.

SCOOP CHILI CHEESE NACHOS

Ingredients:

9.25 ounce bag Scoops® corn chips*

15-ounce can chili, any brand

15-ounce can black beans, rinsed and drained

8 ounces sharp cheddar cheese, shredded

2-3 tomatoes, diced

2 green onions, snipped

1 teaspoon red pepper flakes

Sriracha sauce, for drizzling

Instructions:

Preheat the oven to 400°. Spray a baking sheet with nonstick oil. Set aside. In a glass mixing bowl, combine chili with black beans. Warm slightly in the microwave. Fill each corn chip with a tablespoon of filling. Place chili chip on the prepared baking sheet, forming a single layer. Repeat until the tray is full. Layer the shredded cheese over all. Place diced tomatoes onto cheese. Finish with green onion snips and red pepper flakes. Bake 15-20 minutes until cheese is melted. Serve with sriracha sauce for extra zing.

It works beautifully as Brie for brunch, a romantic “date night” for two, or a festive dessert while sipping on espresso. Think about it. The cheese itself is so creamy, with a slight robust flavor. The skin can be chewy. Either you like it or you don’t. The raspberry jam has a remarkable sweetness that pairs well with the nuttiness of pistachios. Everyone wins.

RASPBERRY PISTACHIO BRIE

Ingredients:

8-ounce wheel of Brie cheese

1 tablespoon sea salt butter, softened

1/4 cup raspberry jam

1/4 cup pistachios, roughly chopped

Instructions:

Preheat oven to 350°. Unwrap the Brie wheel. Lightly score the top so the skin can absorb the ingredients. Transfer the wheel to an ovenproof dish. Spread the sea salt butter over the top of the cheese. Layer with dollops of raspberry jam. Sprinkle with chopped pistachios. Bake for 12-15 minutes, or until the cheese is melted and gooey. Remove baked Brie from the oven. Serve warm with slices of lightly buttered baguette toast.

What’s Cooking in Gail’s Kitchen? Bright Ideas: Olives, Herbs, and Cheese Crumbles! I’m one of those people who are drawn to deli olive bars and gourmet cheese counters. And since they are usually located near the bakery department, picking up a freshly-baked baguette or artisan loaf is second nature as well. Because…sometimes you need an idea for a quick appetizer; thus, there is no shame in using the goodies you already have on hand. That’s when I pat myself on the back for thinking ahead.

OLIVES, HERBS, and CHEESE CRUMBLES

Ingredients:

8-ounces deli olive combination, with herbs

6-ounces crumbled feta cheese, with Mediterranean herbs

1/4 cup olive oil

Instructions:

This works best in small batches. In a mini chopper, add a small portion of the deli olive combination. Pulse to get a course chop. Transfer olives to a medium-size bowl. Repeat until all the olives are roughly chopped. Fold in the crumbled feta cheese. Drizzle olive oil over top. Gently stir to blend well. Cover olive mixture and refrigerate until ready to serve. When ready, allow olive oil to come to room temperature before serving. Spoon olive mixture onto toasted artisan bread slices.
