What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Jam Pockets! Here’s a versatile quick recipe that makes a wonderful dessert, breakfast pastry, or afternoon snack. Prepared pie crusts or pizza dough from the dairy case in the supermarket can be used. Plus, any flavor of fruit jam will complement the smooth creamy filing inside. Although I didn’t add them here, I think sliced almonds would make a nice addition as well. The buttery crust serves as a nice “pocket” for the burst of fruity sweetness inside. Try as I might, it’s a challenge to stop at just one. Perhaps I won’t.

JAM POCKETS

Ingredients:

1 refrigerated pie crust, softened as directed on package

4 ounces Neufchâtel cheese, softened

1/8 teaspoon almond extract

1/3 cup powdered sugar

1/4 cup four-fruit jam

1 egg, beaten

1/4 cup sugar

Instructions:

Preheat oven to 400°. Line a baking sheet with parchment paper. Set aside. On a lightly floured surface, roll out refrigerated pie crust to 1/4-inch. Cut into twelve 3-inch rounds. Set aside. In a bowl, combine Neufchâtel cheese, almond extract, and powdered sugar. Stir until smooth. Drop a teaspoon of cheese mixture into the center of each round. Top with a dollop of fruit jam. Brush the inside edges with beaten egg; fold in half. Crimp edges with a fork to seal. Brush top and bottom with more egg wash; dust both sides with sugar. Pierce the top of each pocket. Transfer to prepared baking sheet. Repeat steps for remaining jam pockets. Bake 12-15 minutes, or until golden brown. Remove from baking sheet. Cool slightly. Serve the reserve creamed cheese mixture as a dipping sauce.

Instant Egg Brekkie

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Instant Egg Brekkie! Don’t you love it when you discover a healthy breakfast that can be prepared in a few minutes? Whenever I traveled with my husband, I seemed to be challenged with minimal ways to prepare meals. The one common denominator was a microwave and hot plate. Let me start off by saying, eggs can be tricky in a microwave. Two secrets I want to share: always pierce the egg yolk (or it will explode) and cook eggs on a low power setting in short segments. If you can master those two things, a dozen eggs will go far in the mini-fridge.

INSTANT EGG BREKKIE

Ingredients For One Serving:

3-5 fresh baby spinach leaves, for charring

1 nip seasoned salt

6-7 fresh baby spinach leaves

1/2 teaspoon water

1 slice cherrywood deli ham, gently torn

1 teaspoon feta cheese, crumbled

1 large egg

1 pinch Herbes de Provence seasoning

Garnish with charred spinach leaves and radish slices

Baguette slices

Instructions:

Preheat stovetop grill pan on highest setting for one minute. Spray baby spinach leaves with nonstick oil. Sprinkle with seasoned salt. Place the prepared spinach leaves directly on the grill pan. As they begin to char, using a tongs, flip them over. Watch carefully. When leaves appear slightly wilted and charred, transfer to a paper towel-lined plate. Set aside for garnish. Meanwhile, spray a ramekin with nonstick oil. Pack a layer of baby spinach leaves in the bottom of the dish, pressing down to create an even level. Drizzle with water. Gently tear the cherrywood deli ham over the spinach layer. Add the crumbled feta cheese. Crack an egg over the top. Pierce the egg yolk with a sharp knife or toothpick. Sprinkle with Herbes de Provence seasoning. Cover loosely with a paper towel. Microwave for one minute on 30% power. Gently swirl runny egg white. Microwave for one minute longer on 30% power. The yolk will be slightly runny. Transfer ramekin to a plate. Arrange the charred spinach leaves on top. Garnish with radish slices. Serve with baguette slices. Repeat for number of portions needed.

Diablo Verde Enchiladas

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Diablo Verde Enchiladas! If you understand a little Spanish, you’re already familiar with the term “diablo”. Typically it refers to devil. In reference to food, it translates to spicy or sometimes fiery ingredients that crank things up a level. In this case I used jalapeño peppers, but you are certainly welcome to increase the heat by substituting serrano peppers instead. Since I want to keep my husband around a little longer, I played it safe. You choose.

DIABLO VERDE ENCHILADAS

Ingredients:

2 cups precooked turkey, shredded

1/2 teaspoon chili-lime seasoning

1/2 teaspoon dried oregano

1/8 teaspoon garlic powder

12 ounces queso blanco dip

10 flour tortillas

3 tablespoons butter

3 tablespoons flour

2 cups chicken broth

1 cup Greek yogurt

2 tablespoons pickled jalapeños, diced

1/4 cup taco sauce

1 cup mozzarella cheese, shredded

Salsa verde, to taste

Fresh cilantro, for garnish

Green onion snips, for garnish

Instructions:

Preheat the oven to 350°. Spray a 9”x13” pan with nonstick oil. Set aside. In a mixing bowl, combine shredded turkey, chili-lime seasoning, dried oregano, garlic powder, and queso blanco dip. Mix well. Divide the mixture between the 10 flour tortillas, spreading the meat across the center of each tortilla. Roll them up, placing each seam-side-down in the prepared baking dish. In a saucepan over medium heat, warm butter. Do not scorch. Whisk in flour; cook one minute to thicken, stirring constantly. Add chicken broth; whisk until smooth. Add Greek yogurt and diced jalapeños. Do not allow mixture to boil. Reduce heat if necessary. Remove sauce from heat. Carefully pour over enchiladas. Spoon taco sauce over all. Top with shredded mozzarella cheese. Bake 20-25 minutes. Remove from oven when cheese is slightly browned and bubbly. Garnish with salsa verde, fresh cilantro, and green onion snips to taste. Serve immediately.

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Avocado Onion Dip! Nowadays I look for any reason to eat avocados. Once I’ve have my fill of guacamole, I turn to other creative ways to produce a nutritional boost to the menu. Although stuffed avocados can be baked or grilled, sometimes it’s a real treat to prepare them this way. Some might call it a light lunch, simply because it satisfies the appetite as a filling meal.

AVOCADO ONION DIP

Ingredients:

8 ounce Neufchâtel cheese, softened

1/2 cup Greek yogurt

2 tablespoons capers, chopped

1/8 teaspoon cayenne pepper

1 cup crispy-fried onions, slightly crushed

2-3 ripe avocados, halved and pits removed

1 tablespoon lime juice

1/8 teaspoon sea salt

1/8 teaspoon garlic powder

Green onion snips, for garnish

Whole celery seed, for garnish

Instructions:

Using an electric mixer, beat together softened cream cheese, Greek yogurt, chopped capers, and cayenne pepper until blended. Fold in crushed crispy-fried onions until combined. Transfer to a covered bowl. Refrigerate for one hour. Prepare avocado halves. Brush with lime juice; sprinkle with sea salt and garlic powder. When ready to serve, scoop onion dip into each avocado half. Garnish with green onion snips, chopped capers, and a sprinkling of whole celery seed. Serve immediately.

Kolachy Wedding Cookies

Eating My Way Through the Holidays! Sweet Celebrations: Kolachy Wedding Cookies! The beauty of this wedding delicacy, popular in Central Europe, transforms every bite into a puff of pastry. Taste the splendor. Choose one or more of your favorite fruit toppings, sprinkle with a few chocolate morsels, and let the celebration begin! I made mine into Cherry Chocolate Chip Kolachys!

KOLACHY WEDDING COOKIES

Ingredients:

1 cup butter

1 8-ounce package Neufchâtel cheese

1 tablespoon milk

1 tablespoon sugar

1 egg yolk, beaten

1 1/2 cups flour

1/2 teaspoon baking powder

1 can pie filling, any flavor

1/2 cups semi-sweet mini chocolate morsels

Powdered sugar for dusting

Instructions:

Cream together butter, Neufchâtel cheese, milk, and sugar. Add beaten egg yolk. Sift together flour and baking powder. Add to the creamed mixture and blend well. Refrigerate until the dough is thoroughly chilled (4 hours or overnight). Preheat oven to 400°. Roll out dough to 1/4″ thick on well-floured board. Cut with a 2″ round cookie cutter, or small glass. Place cut-outs on an ungreased cookie sheet. Make a depression with the back of a spoon in the center of each round. Fill the center with a dollop of fruit filling. Sprinkle chocolate morsels on top. Bake 10-15 minutes or until lightly browned. Cool on a wire rack. Dust with powdered sugar before serving.

Quazy Carrot Cake

Eating My Way Through the Holidays! Sweet Celebrations: Quazy Carrot Cake! “What’s up, Doc?” is something we’ve all heard Bugs Bunny say more than once. You may find yourself asking the same question when you take a bite of this tasty version of Carrot Cake. It’s loaded with fresh carrots, pineapple tidbits, and chopped pecans. The crowning moment comes when you smack your lips together over the wonderful cream cheese icing. I have seen expressions of jubilation over this award-winning dessert. Treat yourself to something special this weekend.

QUAZY CARROT CAKE

Ingredients:

2 cups flour

2 cups sugar

1 teaspoon baking soda

2 teaspoons baking powder

2 teaspoons cinnamon

1 1/4 cups vegetable oil

4 eggs

3 cups carrots, grated

1 cup crushed pineapple, drained

1 cup pecans, chopped

Ingredients for Icing:

1/2 cup butter, softened

8 ounces Neufchâtel cheese, softened

3 1/2 cups powdered sugar

1 teaspoon vanilla

Instructions:

Preheat oven to 350°. Spray a 9″x13″ pan with nonstick oil. Combine flour, sugar, baking soda, baking powder, and cinnamon. Mix well. Add oil, eggs, carrots, pineapple, and nuts. Beat for 2 minutes on medium speed. Transfer to baking dish. Bake for 45 minutes or until done. Meanwhile, cream together the butter and Neufchâtel cheese. Add powdered sugar and vanilla. Beat until smooth and creamy. When cake is cool, top with cream cheese icing. Garnish with a pecan half.

Afterwards all you have to do is sit back and bask in the accolades.

PUMPKIN ROLL

Ingredients for Pumpkin Roll:

3 eggs

2/3 cup pumpkin purée

1 cup sugar

1 teaspoon baking soda

1/2 teaspoon cinnamon

3/4 cup flour

1/3 cup chopped pecans

Ingredients for Velvet Filling:

8 ounces Neufchâtel cheese

3/4 teaspoon vanilla

2 tablespoons butter, softened

1 cup powdered sugar

Instructions:

Preheat oven to 375°. Grease and line a 10″x15″ jelly roll pan with waxed paper. For pumpkin roll combine eggs, pumpkin purée, sugar, baking soda, cinnamon, and flour. Mix until well blended. Pour into jelly roll pan and spread evenly to edges. Sprinkle with chopped pecans. Bake 12-15 minutes. Watch carefully. Remove from oven. Sprinkle powdered sugar on a tea towel, turn cake onto towel, and remove the waxed paper. Starting at one end, roll the cake up, and refrigerate for one hour. Meanwhile, combine Neufchâtel cheese, vanilla, butter, and powdered sugar. Mix together until smooth and velvety. After one hour, unroll cake and spread the filling all the way to the edges. Reroll cake and refrigerate two hours longer. Dust with powdered sugar. Slice and serve.

Chocolate Chip Candied Cheese Ball

CHOCOLATE CHIP CANDIED CHEESE BALL

Ingredients:

1 8-ounce block of cream cheese, softened

1/2 cup butter, softened

2 tablespoons brown sugar

1 teaspoon vanilla

1 1/2 cup powdered sugar

1 cup mini chocolate chips

1 cup sugared pecans, crushed

Graham cracker sticks

Instructions:

In a medium bowl, beat cream cheese and butter until light and fluffy. Add the brown sugar and vanilla. Beat until creamy. Slowly add powdered sugar. Mix until smooth and completely incorporated. Fold in mini chocolate chips. Chill two hours. On a sheet of waxed paper, sprinkle crushed sugared pecans. Form chilled mixture into a ball. Roll in pecan coating. Chill overnight. Serve with honey graham cracker sticks or cinnamon graham cracker sticks.

Nutella Strawberry Dip

Eating My Way Through the Holidays! Sweet Celebrations: Nutella Strawberry Dip! Here’s a match made in Heaven for chocolate-lovers and strawberries. Try it at home and then think about something new for the next social gathering where you’re asked to bring something yummy to share. It’s so Strawberrylicious, my first word of advice is…double the recipe. You’ll have the ingredients on hand, so go for it. It’s easy to make, kid-friendly, healthy, and sweet. Next stop: Holiday Party, Book Club, Girls Night Out, Birthday Celebration, Family Gathering, Block Party. The list goes on and on and on.

NUTELLA STRAWBERRY DIP

Ingredients:

3/4 cup Nutella Hazelnut Spread

1/3 cup powdered sugar

8 ounces Neufchâtel cheese, softened

1 cup Cool Whip, regular or light

1 cup mini chocolate chips, for garnish

Fresh Strawberries, sliced in half

Instructions:

Combine Nutella, powdered sugar, and Neufchâtel cheese in a bowl. Using a hand mixer, mix on Low until smooth. Fold in Cool Whip topping. Blend well. Pour into covered bowl. Kept refrigerated until ready to serve. Arrange sliced strawberries on a platter. Pour dip into a serving bowl. Garnish with mini chocolate chips.
