European Baguette Sandwich

What’s Cooking in Gail’s Kitchen? Food Plating: European Baguette Sandwich! WYKYK. My all-time favorite lunchtime sandwich begins with a bakery fresh French baguette. It has become the starting point for what I consider a staple in France and Europe. Perfect for picnics, compact enough for lunch, and elegant enough to eat with your fingers. Of course, it’s all about the ingredients. You may recall, my husband and I order French sea salt butter online after visiting the country years ago. I can’t buy it in America. But that’s okay because it freezes well. Personally, I love Emmental cheese and can buy that locally, along with prosciutto sold without added preservatives. Choose your ingredients wisely. One bite and you’ll practically feel your eyes roll back in heavenly bliss. 

EUROPEAN BAGUETTE SANDWICH

Ingredients: 

1 French baguette, halved and split lengthwise (makes two servings)

4 tablespoons French sea salt butter, room temperature

1 cup mixed greens

2-3 Swiss cheese slices

4 ounces prosciutto, thinly sliced 

2-4 sweet gherkins, sliced lengthwise 

Instructions:

To build your sandwich, place all four halves on the counter, open-faced. Slather each cut side with French sea salt butter. On the baguette that will be the top, divide the micro greens between the two portions. For the bottoms, layer the Swiss cheese onto the buttered side, followed by the paper-thin prosciutto. Finally, arrange the sweet gherkins over the prosciutto. Carefully place the tops of the sandwich onto the bottoms. Wrap each baguette sandwich in waxed paper. 

Copycat 1905 Salad

What’s Cooking in Gail’s Kitchen? Food Plating: Copycat 1905 Salad! If you’ve ever traveled to St. Augustine, Florida, located in the heart of historic downtown is a place that’s been in business for a while now. It’s called the Columbia Restaurant offering Spanish/Cuban cuisine. You can always expect a long line of people that trails around the corner toward the Spanish-style fountain. Once inside, most customers insist on their signature 1905 tossed salad and then work their way through the menu. Now you can enjoy this specialty at home without the cost of a plane ticket. 

COPYCAT 1905 SALAD

Ingredients:

Dressing:

1/2 cup olive oil

2 tablespoons lemon juice

2 tablespoons vinegar

2 tablespoons Worcestershire sauce

3 garlic cloves, minced

1 teaspoon dried oregano 

Sea salt and black pepper, to taste

Salad:

I head iceberg lettuce, shredded or gently torn

1/2 pound deli ham slices, julienned 

1/3 pound Swiss cheese, julienned

10 ounces cherry tomatoes, halved

5 ounces green olives, sliced

1/2 red onion, thinly sliced

5 ounces garlic croutons

2 ounces parmesano reggiano cheese, grated

Instructions:

In an extra large salad bowl, whisk together olive oil, lemon juice, vinegar, Worcestershire sauce, garlic cloves, dried oregano, sea salt, and black pepper. Set aside. In a mixing bowl, combine ice berg lettuce, ham slices, Swiss cheese, cherry tomatoes, green olives, red onion, garlic croutons, and parmesano reggiano cheese. Gently toss. Add prepped salad contents to the dressing. Toss to thoroughly coat the salad with the dressing. Serve in individual salad bowls. 

Zippy Stuffed Peppers

What’s Cooking in Gail’s Kitchen? The Daily Special: Zippy Stuffed Peppers! I can hardly wait for my garden peppers to grow large enough for this tasty Italian-style meal. It is traditional, yet impressive, when serving to our dinner guests. And the presentation is phenomenal. When serving, place each stuffed pepper in a shallow bowl with a side of buttery bicolor sweet corn, cobs removed. Add crusty bread and everyone will sing your praises thinking you slaved all day to make such a five-star entrée. Live it up!

ZIPPY STUFFED PEPPERS

Ingredients:

6 large green bell peppers

1 pound Italian sausage, ground

2 tablespoons olive oil

2 tablespoons onion, chopped 

1 garlic clove, minced

1 teaspoon sea salt

I teaspoon fennel

1/8 teaspoon oregano 

1/8 teaspoon basil

1/8 teaspoon marjoram

1/8 teaspoon crushed red pepper flakes (optional)

1 cup cooked brown rice

1/4 cup corn

1 1/2 cups diced tomatoes in sauce 

3/4 cup mozzarella cheese, shredded

Instructions:

Preheat the oven to 350°. Cut off the top of each pepper and remove the insides. Rinse and drain. Brown the Italian sausage, garlic, and onion in olive oil. Drain and stir in the spices. Add cooked rice, corn, and half the tomatoes. Mix gently and heat through. Stand peppers upright in ungreased baking dish. Put a scant spoonful of sauce in the bottom of each pepper. Sprinkle in a little cheese. Then stuff each pepper with the meat mixture. Pour remaining sauce over stuffed peppers. Cover with foil and bake for 45 minutes. Remove foil, sprinkle with cheese, and bake 15 minutes longer. 

Uptown Burrata Masterpiece Salad

What’s Cooking in Gail’s Kitchen? The Daily Special: Uptown Burrata Masterpiece Salad! I stumbled onto this decadent cheese with the soft creamy center at first bite when my husband and I visited Little Italy in Boston. Hearing the excitement in the voice of our waiter piqued my interest. Oh my, this has to be the best cheese ever! The easiest way to describe it is to say that it’s a type of fresh mozzarella cheese with a hollow center filled with thick cream that boasts of a rich buttery taste. Make sense? It’s meant to be eaten at room temperature, so don’t waste your money melting it on a pizza.

UPTOWN BURRATA MASTERPIECE SALAD

Ingredients:

1 bunch fresh arugula leaves

3-4 Campari tomatoes, quartered

6-ounces artichoke hearts, marinated

6-ounces Burrata mozzarella cheese

Balsamic Reduction 

Cracked black pepper to taste

Instructions:

Arrange arugula leaves in a shallow bowl. Place tomatoes and artichokes around decoratively. Place a portion of the Burrata mozzarella at center stage. Drizzle balsamic reduction sauce over all. Garnish with cracked peppercorns to taste. Yes, please!

Rustic Romaine Parmigiana-Reggiano

What’s Cooking in Gail’s Kitchen? The Daily Special: Rustic Romaine Parmigiana-Reggiano! Fire up the grill, you’re about to experience an explosion of flavor! The first time I heard of grilled romaine, I couldn’t wrap my mind around anyone actually agreeing to eat warm lettuce. Once I tried it, I knew I was in heaven. The secret is high heat to char the edges. That gives it a smoky crisp taste that lingers on the tip of your tongue. 

RUSTIC ROMAINE PARMIGIANA-REGGIANO

Ingredients:

1 head of romaine lettuce 

3 tablespoons olive oil

1/4 teaspoon oregano

1/4 teaspoon basil

1/4 teaspoon marjoram

1/8 teaspoon garlic powder

1/8 teaspoon sea salt

Crushed red pepper flakes to taste

1/4 cup parmigiana-reggiano cheese, grated

Instructions:

Wash romaine and drip dry. Remove the browned root end, leaving a partial stem to hold the leaves together. Slice romaine lengthwise and place on a plate. Lightly coat with non-stick oil. Sprinkle sea salt and red pepper flakes. Preheat grill to high. In a small bowl, whisk together olive oil, oregano, basil, marjoram, and garlic powder. Set aside. Grill the romaine until lightly brown on all sides, turning with tongs every minute or so. Remove to a platter. Drizzle olive oil over each half. Sprinkle with cheese. Serve immediately. 

Quirky Quesadilla

What’s Cooking in Gail’s Kitchen? The Daily Special: Quirky Quesadilla! Have you ever noticed when you announce quesadillas are on the menu for the next meal, everyone begins to feel as though they’ve been invited to a party? It’s probably due to the fact that it opens the door to endless possibilities. Do you prefer seafood, chicken, vegetables, cheese, or all of the above? No problem. Once you offer a buffet of ingredients, everyone can build-their-own. Win! Win!

QUIRKY QUESADILLA 

Ingredients:

12-ounces shrimp; peeled, deveined, tail off

1 teaspoon Old Bay seasoning

1/4 teaspoon crushed red pepper flakes

1/4 teaspoon dill

1 tablespoon olive oil

2 chicken breasts; boneless, skinless, cubed

1/8 teaspoon seasoned salt

1/8 teaspoon garlic powder

1 tablespoon olive oil

2 tablespoons red onion, chopped

4-6 flour tortillas

4 tablespoons butter

1 cup Queso Fresco cheese

1 cup extra sharp cheddar cheese

1 green onion

Instructions:

Sauté shrimp in 1 tablespoon olive oil, Old Bay seasoning, red pepper flakes, and dill on medium heat. Cook until pink and opaque, turning often, usually 4-5 minutes. Transfer to a dish and set aside.  Using the same skillet, add another tablespoon of olive oil.  Cook the chicken and onion together with seasonings. Turn heat to low. Add the shrimp.  Mix gently. Sprinkle in the Queso Fresco cheese and cover.  It will melt into the quesadilla filling to bond everything together.  Watch carefully so the cheese does not burn. In another skillet over low heat, butter one side of a flour tortilla. Place buttered side down. Sprinkle in cheddar cheese.  Add two spoonfuls of filling. Spread to within 1/2-inch of the edge. Top with another buttered tortilla. Put lid on skillet to melt cheeses. Cook until lightly brown, about two minutes. Turn the tortilla over and cook the other side until the tortilla is lightly brown and the cheese is gooey. Place on a platter to cool slightly before cutting.  Repeat with remaining tortillas until no ingredients remain. Serve with salsa, yogurt, and guacamole.

*Hint: if you’re serving a crowd, it’s easy to prepare several at the same time. Place the filled quesadillas on a cookie sheet and bake them in a 375° oven for 10 minutes. 

Noodle Rigatoni

What’s Cooking in Gail’s Kitchen? The Daily Special: Noodle Rigatoni!  When time is of the essence, and you need a fulfilling meal, this dish can be made in minutes. While the wine is slightly chilling, and you wish to keep the kitchen cool, everything works together between stovetop and microwave. Your tastebuds will be satisfied without salad or bread as well since this meal-in-a-bowl hits the spot. 

NOODLE RIGATONI

Ingredients:

1 pound Italian sausage, ground

1/8 teaspoon garlic powder

1/8 teaspoon cracked black pepper

1/4 teaspoon sea salt

1/4 teaspoon fennel

1/4 teaspoon oregano 

1/4 teaspoon basil 

1/8 teaspoon red pepper flakes

1/8 teaspoon marjoram

8-ounce jar marinated artichoke hearts, cut-up

2 cups of Italian Roma tomatoes in sauce, cut-up

1/4 cup feta cheese, crumbled

16 ounces rigatoni noodles

Instructions:

In a large skillet, brown Italian sausage until crumbled and cooked through. Drain and add garlic powder, pepper, salt, fennel, oregano, basil, red pepper flakes, and marjoram. Keep warm over low heat, stirring occasionally. Warm separately the cut up tomatoes and the marinated artichoke hearts. Keep warm. Meanwhile, bring a 4-quart pan of salted water to a boil. Cook pasta until tender; about 10 minutes. Stir often. It should be firm. Drain pasta. Place portions of rigatoni in individual serving bowls. Spoon tomatoes in sauce over noodles. Arrange artichoke hearts around edges. Lastly add crumbled Italian sausage over top. Garnish with feta cheese. 

Meatball Marinara Moat

What’s Cooking in Gail’s Kitchen? The Daily Special: Meatball Marinara Moat! Lately we’ve been having some maintenance and home improvements done on the house. Whenever I have workmen around, I tend to offer them a bite to eat without hindering the project at hand. I needed something hearty and filling without anchoring them down afterwards. This savory sandwich sealed the deal when served with a portion of potato salad on the side. 

MEATBALL MARINARA MOAT

Ingredients:

1 4-pack hoagie rolls, top cut

16 Italian meatballs, pre-cooked

8 slices provolone cheese

24-ounce jar of all-natural tomato and basil sauce

1/4 cup Parmesan cheese, shredded

Instructions:

Place meatballs in a covered casserole dish. Add tomato and basil sauce. Heat through on 30% power for 10 minutes in the microwave. Slice an opening in the top of the hoagie roll, hollowing out a portion to create a “moat” for the fillings. Place two slices of cheese in each hoagie, allowing them to overlap. Spoon 4 meatballs with sauce into each sandwich, lining them in a row. Sprinkle Parmesan cheese on top. Carefully wrap each hoagie in foil and place in a warm oven until ready to serve. 

Frittata Frenzy

What’s Cooking in Gail’s Kitchen? The Daily Special: Frittata Frenzy! So you like quiche, but sometimes you could really do without the pie crust. Me too. And what about those small containers in the fridge with a smidgen of leftovers that are just too yummy to toss out? Here’s your answer. Mix your favorite ingredients such as cheese, meat, and vegetables. Combine them with egg, dairy, and spices. The end result is practically a masterpiece. It promises to surprise everyone, including you!

FRITTATA FRENZY

Ingredients:

4 eggs

1/4 cup milk

1/4 cup Greek yogurt 

1/8 teaspoon seasoned salt

1/8 teaspoon Mrs. Dash garlic herb seasoning

2 tablespoons green pepper, chopped

1 tablespoon onion, chopped

1 tablespoon pimento, diced

4 ounces Mango Fire Cheddar cheese, shredded

4 ounces chorizo, cooked

1/3 cup herb croutons

Instructions:

Preheat oven to 325°. Beat eggs, milk, yogurt, and seasonings. Gently stir in green peppers, onions, pimentos, and cheese. Pour into two 6-inch individual greased baking dishes. Divide crumbled chorizo over the top of the omelet. Gently fold in croutons. This is done right before baking to avoid the meat and bread from sinking to the bottom. Bake uncovered 40 minutes or until omelet is set and top is golden brown. Garnish with fresh parsley.
