White Chicken Flatbread

What’s Cooking in Gail’s Kitchen? Bright Ideas: White Chicken Flatbread! Nowadays I look for any excuse to have pizza, or a close second. All I have to do is go to my freezer to decide what ingredients to use. In there is often naan flatbread, precooked grilled chicken strips, and previously oven-baked bacon. In lieu of marinara sauce, creamy ranch dressing makes a tasty sauce. People know cheese is always my friend, along with fresh veggies, herbs, and spices. Throw it all together and boom; 20 minutes later it’s ready to eat. I think I deserve a star for that.

WHITE CHICKEN FLATBREAD

Ingredients:

1 Naan flatbread

1 tablespoon olive oil

1 tablespoon cornmeal

1/2 cup prepared ranch dressing

4 ounces fresh mozzarella, sliced

1 cup precooked, grilled chicken chunks

1/4 cup precooked bacon, crumbled

2 tablespoons sweet onions, chopped

1/8 teaspoon red pepper flakes

1/2 teaspoon Italian seasoning

4 ounces mozzarella cheese, shredded

Instructions:

Preheat oven to 400°. Brush the bottom side of the naan flatbread with olive oil; dust with cornmeal. Transfer to a pizza stone. Bake 5 minutes. Remove from oven and assemble the ingredients. Spread the ranch dressing onto the top crust. Layer, in order, the fresh mozzarella slices, grilled chicken chunks, bacon crumbles, and sweet onions. Sprinkle with red pepper flakes and Italian seasoning. Top with shredded mozzarella cheese. Bake 10-15 minutes, or until cheese is melted and golden. Serve immediately.

Grill Pan Kabobs

What’s Cooking in Gail’s Kitchen? Bright Ideas: Grill Pan Kabobs! Sooo, what do you have for dinner when you plan on kabobs, but can’t find the skewers among all the kitchenware you’ve unpacked during the recent move? The answer: Improvise, by using a grill pan. After all, once the ingredients are cooked and presented for dinner, everyone grabs a fork to “shish” the food off the skewer onto the plate anyway. I see your eyes glazing over as you nod your head in agreement. Focus. The end result is still phenomenal. Now dig in. Your tummy will thank me.

GRILL PAN KABOBS

Ingredients:

1/2 cup olive oil

2 tablespoons red wine vinegar

2 tablespoons lemon juice

1 clove garlic, minced

1 teaspoon dry mustard

1/2 teaspoon thyme

1/2 teaspoon oregano

1 teaspoon sea salt

1/4 teaspoon black pepper

1/2 pound beef tenderloin, cut into chunks

1/2 pound chicken tenderloin, cut into cubes

1 red onion, cut into wedges

1 green bell pepper, seeded and cut into chunks

1 red bell pepper, seeded and cut into chunks

4 ounces fresh mushrooms, stems removed

4 ounces cherry tomatoes

Instructions:

In a measuring cup, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, dry mustard, thyme, oregano, sea salt, and black pepper. Place the beef tenderloin chunks and chicken tenderloin cubes in a large zip-lock plastic bag. Pour half the marinade mixture into the bag, seal, shake, and refrigerate for one hour. Set aside remaining marinade for basting sauce while grilling. Preheat gas grill to 500°. Remove beef and chicken pieces from bag; discard marinade. Allow beef and chicken to “rest” at room temperature for 15-20 minutes. Transfer beef chunks, chicken cubes, red onion, green pepper, red pepper, mushroom caps, and cherry tomatoes onto a large grill pan that has been sprayed with nonstick oil. Brush kabobs with reserved marinade. To cook medium-rare steak kabobs (charred exterior, pink center), place the grill pan on the hot grill. Chicken tenderloins will cook in the same amount of time, with edges turning white. Close the lid to retain heat temperature. Set timer for 5 minutes. Then using a long-handled tongs, flip, rotate, and move larger pieces of beef and chicken on the grill pan to be in the center of the flame. Vegetables will char faster than the meat. Watch carefully. Cook the kabobs an additional 5 minutes, with the lid closed. Once finished, remove grill pan and turn off the grill. Allow food to “rest” for 5 minutes. Serve immediately.

Yaki Chicken Udon

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: Yaki Chicken Udon! Who likes Japanese noodles, sautéed veggies, and a rich savory sauce? Me, too. If I can sneak a couple mushrooms into a dish, it’s always a good day for me. The hubs isn’t as crazy about fungus as I am, which is why I put in his favorite (carrots) to tastefully distract him. No judgment, please.

YAKI CHICKEN UDON

Ingredients:

1 tablespoon oyster sauce

1 tablespoon soy sauce

1 tablespoon mirin

7.76-ounce package udon Japanese-style noodles

1 clove garlic

1/4 cup onion, chopped

2-3 whole mushrooms, sliced

4-ounce chicken breast, boneless and skinless, cut into bite-sized pieces

2 baby carrots, julienned

1/4 cup red cabbage, shredded

Cilantro, for garnish

Instructions:

In a small bowl, combine oyster sauce, soy sauce, and mirin. Mix well; set aside. To prepare the udon noodles, bring water to a boil over medium-high heat. Add the dried udon noodles. Cook 8-10 minutes, stirring occasionally to prevent sticking. Drain; set aside. Spray a skillet with nonstick oil. Warm pan over medium heat. Sauté garlic clove and chopped onions. Stir thoroughly, about 2-3 minutes, to prevent scorching. The onions will begin to soften as the garlic turns golden. Add chicken chunks and sliced mushrooms. Cook 3-4 minutes, turning chicken on each side, or until the chicken pieces are seared and cooked thoroughly. Once the chicken is ready, add the udon noodles, soy sauce mixture, julienned carrots, and shredded cabbage. Toss everything together until well coated. Garnish with fresh cilantro.

Edamame Chicken Breast

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: Edamame Chicken Breast! If it is time to make a few minor adjustments to your dietary needs, think edamame. These little green cousins of the pea are high in essential vitamins, minerals, and slightly nutty. Their subtle sweet flavor offers a freshness that can add depth to any meal. Anyone looking for a meatless option can double the portion of edamame and skip the chicken. I believe everything is good in moderation.

EDAMAME CHICKEN BREAST

Ingredients:

2 chicken breasts

2 tablespoons olive oil

2 tablespoons garlic wine vinegar

1/2 teaspoon za’atar seasoning

1/4 red onion, sliced

1 cup edamame, steamed

Green onion curls, for garnish

Instructions:

Place chicken breasts in a single layered shallow dish. Combine olive oil, garlic wine vinegar, and za’atar seasoning. Mix well. Pour over chicken breasts. Cover; Marinate in the refrigerator for one hour. Preheat gas grill to 400°. Oil the grates to keep the chicken from sticking. Place the marinated chicken on the preheated grill. Discard marinade. Close the grill lid. Cook 6-8 minutes, then flip the chicken with grill tongs. Close lid and cook 6-8 minutes longer, or until the internal temperature of the chicken breast is 165°. Transfer chicken to a platter; allow to rest before cutting. Meanwhile, place edamame in a microwave-safe dish with 2 tablespoons water. Cover. Microwave on High for 3 minutes. Drain. Sprinkle with flaked sea salt. Divide edamame onto two dinner plates. Place a chicken breast over top. Add sliced red onions and sliced radishes. Garnish with green onion curls. Serve.

Spinach Ricotta Flatbread

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Spinach Ricotta Flatbread! Savory flatbreads have to be on my Top 10 list of foods to make. Growing up as a child of the ‘60s, Sunday nights were the night for pizza. Because my mother cooked well-balanced meals all week, she boldly declared Sundays “Pizza Night”. Back then it still meant she made homemade pizza because we lived in the country and, to my knowledge, there was no such thing as pizza delivery. Years later, while raising my own children, I adopted her “modus operandi” and to this day I still honor it. Sometimes I make the dough from scratch, and other times I take a shortcut by using prepackaged flatbreads found in the bakery department of the grocery store. The toppings change according to the mood of the day and the ingredients in the kitchen. So far, no complaints from the husb.

SPINACH RICOTTA FLATBREAD

Ingredients:

1 flatbread, prepackaged

1 tablespoon olive oil

1 tablespoon cornmeal

1/2 cup marinara sauce

3/4 cup ricotta

1 cup grilled chicken, precooked and cubed

1 cup baby spinach leaves, stems trimmed

1/3 cup mozzarella cheese, shredded

2 tablespoons parmesan cheese, grated

1/4 teaspoon dried oregano

1/8 teaspoon red pepper flakes

Instructions:

Preheat oven to 400°. Line a baking sheet with parchment paper. Brush both sides of flatbread with olive oil. Sprinkle bottom side with cornmeal. Place flatbread, bottom side down, on the prepared baking sheet. Spread marinara sauce evenly over top of flatbread. Place dollops of ricotta cheese over marinara sauce, leaving 1/2” perimeter around the edge. Arrange grilled chicken and baby spinach leaves as the next layer. Sprinkle mozzarella and parmesan cheeses over top. Garnish with dried oregano and red pepper flakes. Bake for 20 minutes until the cheese is melted and slightly gooey. Remove flatbread from oven. Allow to cool for 2 minutes before cutting into slices. Serve warm with extra marinara sauce for dipping.

Sooo, what is the difference, you wonder. The secret is in the name. It’s made with butter! The tomatoes, coconut milk, and seasonings are cooked slow enough to transform the sauce into a gravy-like consistency with a nice kick of flavor. Also, by slow-cooking the chicken, it becomes fork tender and juicy. Ahhh, now I have your attention. Sounds like a grocery list is in order. Bravo. Your family will thank you.
