Violet Crostini

What’s Cooking in Gail’s Kitchen? All the Buzz: Violet Crostini! Edible flowers are kind of a new thing for me this year. Everywhere I look, nature has exploded with beauty and color. Because I take special care in avoiding chemicals and pesticides in my herb garden and on the grounds, I can reap the benefits of sweet edible flowers high in vitamins. This recipe for Violet Crostini is one step up from an ordinary salad of mixed greens. By toasting a sesame artisan bread and slathering it with Norwegian Jarlsberg Cheese Spread, the salad greens and fresh violet petals create an open face sandwich or crostini. Top it off with a pretty, light purple edible chive blossom for a light onion taste. Doesn’t it look delicious?

Chive Blossom Vinegar

What’s Cooking in Gail’s Kitchen? Elevated Edibles: Chive Blossom Vinegar! Dress up fresh salads and garden vegetables with homemade chive blossom vinegar. Splash it on fish fillets or french fries. You can even add a tablespoon to potato salad and deviled eggs. Do you see where this is going? Infused vinegars, especially from your own garden, promise to elevate the taste buds with just a hint of subtle flavor. The ever-so-mild essence of chives releases a delicate sweet onion flutter that balances on the palate like a gracefully poised ballerina. Have I piqued your interest?

CHIVE BLOSSOM VINEGAR

Ingredients:

12 purple chive blossoms

1 cup rice vinegar

Small jar with lid, sterilized

Instructions:

Wash freshly cut chive blossoms. Plunge them upside down into a bowl of cold water, holding by the stems. Swish around to dislodge dirt or insects. Pour out water and repeat 3 more times. Pat blossoms dry with a paper towel. Snip off each blossom; discard stem. Pack blossoms loosely to fill the jar. Set aside. Warm vinegar in a small saucepan over medium-low heat until hot but not boiling, 3-4 minutes. Pour hot vinegar over blossoms to fill jar. Secure lid. Store in the refrigerator for 2 weeks. Strain out blossoms and discard. Place strained vinegar in another sterized jar. Store in refrigerator.

Radish Chive Egg Salad

What’s Cooking in Gail’s Kitchen? Talking Points: Radish Chive Egg Salad! Meatless meals do not have to be boring, that’s for sure. I find it fun to put together interesting combinations of fresh veggies with egg salad. You can, too. If you like a hint of celery seed, think of feathery green celery leaves instead. Or if you usually add chopped shallots, what about snipped chives this time? Instead of tomatoes, add the crunch of radish slices. Bread doesn’t have to be humdrum either. Ditch the bland white open-faced for rye, pumpernickel, or honey wheat. Do you see where this is heading? Anything goes.

RADISH CHIVE EGG SALAD

Chives, for garnish

Instructions:

Place the peeled eggs in a bowl. Roughly chop into pieces. Add mayonnaise, chopped chives, Dijon mustard, sea salt, white pepper, turmeric, and ground ginger. Mix the ingredients together until combined. Cut the toast into diagonal quarters. Arrange on a platter. Dollop a portion of the egg salad onto each piece of bread. Tuck celery leaves around egg salad. Top with thinly sliced radishes. Using a kitchen shears, snip the chives over all for garnish.
