For those who are up to the challenge, let me give you a little background before you dive in. The word “Xnipec” translates in Mayan to “dog’s nose”, which implies you may sweat droplets like a dog’s wet nose the more bites you take. If so, wipe your forehead and walk away. You’re done. I’ve been known to ask for the “muy caliente” salsa in a Mexican restaurant. At which time, the server brings me my own special bowl usually reserved for the kitchen staff. The hubs typically laughs and tells them I can practically drink it with a straw. What can I say? I’m hopelessly addicted to habaneros. 

XNIPEC HABANERO SALSA

Ingredients:

3 habanero peppers 

2 Roma tomatoes, chopped

1/2 red onion, finely diced

3 tablespoons cilantro, chopped 

2 tablespoons lime juice 

2 tablespoons orange juice

Pinch of sea salt

Instructions:

Using disposable gloves, halve habaneros. Remove stem, pith, and seeds. Dice peppers; place in a bowl. Add chopped tomatoes, finely diced red onion, chopped cilantro, lime juice, and orange juice. Add a pinch of sea salt. Toss well. Refrigerate one hour before serving. 

Sheet Pan Cilantro Nachos

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Sheet Pan Cilantro Nachos! We like crispy nachos at my house. To my family, there’s nothing worse that a soggy tortilla chip, even if it is covered in melted cheese. I experimented by spraying the top and bottom of the chips with nonstick oil and then sprinkling them with sea salt. The method below works very well. It really made a difference. In my defense, I typically buy an off-brand of tortilla chips, which can have more of the natural corn flavor and a sturdiness to support extra toppings. As always, check the ingredient list to make sure you’re getting what you want. I prefer no preservatives. 

SHEET PAN CILANTRO NACHOS

Ingredients:

Layer of Corn Tortilla Chips

Nonstick oil

Sea Salt, to taste 

8 ounces Mexican Cheese Blend, shredded

2 Roma tomatoes, chopped

2 green onions, chopped 

1 teaspoon red pepper flakes

Fresh cilantro, for topping

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Sprinkle with sea salt. Arrange a single layer of corn tortilla chips on the sheet pan. Repeat with a coating of nonstick oil and sea salt. Evenly distribute the Mexican Cheese Blend over the tortilla chips. Add chopped tomatoes and green onions. Sprinkle with red pepper flakes. Bake 15 minutes or until the cheese is melted and gooey. Remove nachos from the oven and garnish with fresh cilantro leaves. Serve immediately. 

Navel Orange Avocado Plate

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Navel Orange Avocado Plate! Keeping things simple seems to be working for me these days. By focusing on a few ingredients, the star attractions quickly become tart and juicy oranges complemented by creamy avocados with a slight crunch of seasoning. Who could ask for more? In order to intensify the ripeness of an avocado, I typically transfer a couple to a brown bag, seal it, and store the bag at room temperature in my pantry for two days. The skin will feel slightly soft to the touch, yet not mushy. From there, I refrigerate the avocados in the crisper drawer no longer than a day. Perhaps you have a system that works as well. Feel free to share. 

NAVEL ORANGE AVOCADO PLATE

Ingredients:

4 navel oranges

2 avocados 

1 tablespoon lime juice

1/2 teaspoon Everything But Bagel seasoning

Fresh cilantro, for garnish 

Instructions:

Rinse the oranges and avocados. Using a sharp knife, slice the navel oranges into thin even slices, leaving peels on. Arrange them on a platter. Cut the avocados crosswise into quarters; remove the pits. Gently peel the skin off. Slice the avocado into wedges. Drizzle with lime juice. Arrange the avocado wedges around the orange slices. Sprinkle avocados with Everything But Bagel seasoning. Garnish platter with fresh cilantro. Serve. 

Unwrapped Burritos

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Unwrapped Burritos! Casual meals come in handy on those days that are filled with unlimited tasks, scheduled appointments, and day-to-day responsibilities. Or you just don’t feel like making a full-course meal. Presenting……burrito fixings! It has all the good stuff: seasoned meat, tasty jalapeños, shredded cheeses, fresh onions, tomatillos, and corn kernels. Always remember to add crunchy tortilla chips and chunky salsa. Think of it as sinfully wicked. Kinda like sneaking more pizza toppings, scooping out lasagna fillings, or gobbling up the creme “Stuf” in an Oreo® cookie. Guilty, as charged.

UNWRAPPED BURRITOS

Ingredients:

1 pound lean ground beef, browned and crumbled

1 teaspoon sea salt

1/8 teaspoon garlic powder

1/2 teaspoon ground cumin

Jalapeño slices, for garnish

2 cups frozen corn kernels, thawed

1 red onion, sliced

4 tomatillos, sliced and halved

1/2 cup cilantro, roughly chopped

1/4 cup cheddar cheese, shredded

1/4 cup Monterey Jack cheese, shredded

Salsa, for dressing

Corn Tortilla Chips, for serving

Instructions:

Combine cooked ground beef, sea salt, garlic powder, and ground cumin. Keep warm, top with jalapeño slices; set aside. For the salad, in a medium bowl combine corn kernels, red onion slices, tomatillos, cilantro, cheddar cheese, and Monterey Jack cheese. Toss gently. To serve, arrange burrito fixings on the table, along with chips and salsa. Enjoy.

Orange-Tomato Pico de Gallo

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Orange-Tomato Pico de Gallo! Chunky sauces and relishes make a wonderful addition to any meal, in my opinion. First of all, they can be substituted for a vegetable side dish. They also serve as a nice condiment for stuffing into tacos or for sharing a plate of scrambled eggs. The vibrant colors will even catch the eye of a fussy-eater, if you know what I mean. Pico de Gallo compliments seafood, pork, chicken, and beef as well as any vegetarian star attraction. Better make a batch for dinner tonight. It’s a healthy option you can thank me for later.

ORANGE-TOMATO PICO DE GALLO

Ingredients:

4 navel oranges, peeled and chopped

2 tomatoes, diced

1 cup red onion, roughly chopped

1 jalapeño pepper, finely chopped

1/4 teaspoon kosher salt

1/2 teaspoon garlic powder

1/4 teaspoon ground ginger

2 teaspoons orange peel, grated

Fresh cilantro, chopped

Instructions:

In a bowl, combine chopped navel oranges, diced tomatoes, roughly chopped red onions, and finely chopped jalapeños. Toss gently. Sprinkle with kosher salt, garlic powder, ground ginger, grated orange peel, and chopped cilantro. Stir gently to combine thoroughly. Cover the bowl and refrigerate for one hour. Serve with tortilla chips.

Umami Miso Eggplant

What’s Cooking in Gail’s Kitchen? Time To Eat: Umami Miso Eggplant! For those who wonder, miso paste is used a lot in Japanese cooking. It tends to fall in the category of a concentrated salty soy sauce with hints of tanginess. Some even consider that umami punch quite savory. When in doubt, go easy and start with a small quantity until you receive a more balanced taste. The last thing you want is to have it overpower the other ingredients.

UMAMI MISO EGGPLANT

Ingredients:

1 medium eggplant

1 teaspoon olive oil

1 tablespoon white miso paste

1 tablespoon mirin

1 tablespoons hot honey

1 teaspoon sesame oil

1 green onion, chopped

1/4 teaspoon toasted sesame seeds

Cilantro, for garnish

Instructions:

Preheat oven to 425°. Cut eggplant in half, lengthwise. Score in a crisscross pattern without piercing the skin. Brush with olive oil and place flesh side down on a baking sheet lined with parchment paper. Bake 20-25 minutes, or until tender. Meanwhile whisk together white miso paste, mirin, hot honey, and sesame oil. When eggplants are tender, carefully flip over and liberally baste with the sauce. Broil in the oven 2-5 minutes until slightly charred. Transfers to a platter. Add green onion snips, sesame seeds, and chopped cilantro. Serve with rice.

What’s Cooking in Gail’s Kitchen? Time To Eat: Eggplant Tacos! Nowadays, everyone’s ears perk up when they hear the word “tacos”. Yet many of us are still looking for low-carb alternatives to the regular corn or flour shells. It’s time to think eggplant. When sliced, eggplant is thick enough to hold toppings and sturdy enough to support a bed of melted cheese. Do you see what I’m laying down for you to pick up? Tacos just got healthier while creating another way to enjoy all those family favorites and textures.

EGGPLANT TACOS

Ingredients:

1 eggplant, washed and sliced 1/2- inch thick

2 tablespoons olive oil

1/2 teaspoon sea salt

1/8 teaspoon black pepper

1 cup Mexican cheese blend, shredded

1 ear of corn, kernels removed

1/4 cup green pepper, finely chopped

1/2 cup cherry tomatoes, chopped

1/2 cup pinto beans, drained and rinsed

Fresh cilantro, for garnish

Instructions:

Preheat a stovetop grill pan over medium-high heat. Brush both sides of the eggplant slices with olive oil. Season with sea salt and black pepper. Cook on the grill pan for 3 minutes per side. Top each eggplant round with a handful of Mexican cheese blend. Allow the cheese to melt. Cover, if necessary. Meanwhile in a small bowl, combine corn kernels, green pepper, chopped cherry tomatoes, and pinto beans. Toss well. Transfer eggplant tacos to a serving platter; top with a spoonful of tomato, green pepper, corn, bean salsa. Garnish with fresh cilantro. Serve.

Marinades are like a secret step to making meat taste flavorful and tender. By planning a little bit in advance, you can pour this dressing over chicken breasts to marinate one hour before grilling or baking. The dressing actually saturates the meat in a way that benefits the flavoring with a sweet onion taste. When everyone gathers around the table and raves about the extraordinary taste of ordinary chicken, just shrug your shoulders and say, “Its my grandma’s family secret.”

VIDALIA ONION DRESSING

Ingredients:

1 cup sugar

1 teaspoon sea salt

1/4 teaspoon dry mustard

1/4 teaspoon celery seed

1 medium Vidalia onion, grated

2 tablespoons vegetable oil

1/2 cup vinegar

Jalapeño sliced, pickled

Instructions:

In a saucepan over medium heat, combine sugar, sea salt, dry mustard, and celery seed. Stir. Add grated Vidalia onion, vegetable oil, and vinegar. Heat until sugar is melted, stirring constantly. Add jalapeño slices. Cool and refrigerate for one hour. Serve as a dressing over toasted salad.

Queso Blanco Shrimp Street Tacos

What’s Cooking in Gail’s Kitchen? Cheerful Choices: Queso Blanco Shrimp Street Tacos! Not everyone has the luxury of accessibility to freshly-made corn tortillas. Because corn tortillas contain less fat than flour tortillas, they are more prone to breakage. One way to prevent this from happening is to dip them in warmed vegetable oil. The extra moisture enhances the taste. Another way is to take two corn tortillas to create a double-layered shell. That way if the inside tears or cracks when folded in half, the outer shell will keep all the ingredients from falling into your lap. Make sense?

QUESO BLANCO SHRIMP STREET TACOS

Ingredients:

8 corn street tacos

1-2 tablespoons vegetable oil

1/2 pound medium shrimp, precooked, peeled, deveined, and tail removed

2 tablespoons bacon olive oil

1/2 teaspoon raspberry chipotle seasoning

1 ripe avocado, peeled, stone removed, and sliced into wedges

1 cup broccoli slaw

2 large leaves romaine lettuce, gently torn

1/2 cup prepared queso blanco with jalapeños

Fresh lime, for garnish

Cilantro, for garnish

Instructions:

Preheat oven to 300°. Set aside a baking sheet. Warm vegetable oil over medium-high heat in an iron skillet. One at a time, dip a corn tortilla into the oil for about 15 seconds; flip and repeat. Drain and transfer to a paper towel-lined plate. Repeat with remaining tortilla shells. Stack them two to a pile on the baking sheet. Sprinkle with sea salt (optional). Keep warm in the oven. Using the remaining vegetable oil, add bacon olive oil to the skillet. Gently place the shrimp in the warmed oil. Sprinkle with raspberry chipotle seasoning. After one minute, flip. Shrimp should be slightly charred. Cook one minute longer. Remove from heat. In a bowl, combine the broccoli slaw with the gently torn romaine leaves. Toss. Remove tortillas from the oven. On the four stacks of warmed tortilla shells, place avocado wedges. Divide the broccoli slaw blend between the tacos. Top with sautéed shrimp. Warm the jalapeño queso blanco for 20 seconds in the microwave on high setting. Stir. Repeat, if necessary. Drizzle over street tacos. Squeeze fresh lime juice over all. Garnish with fresh cilantro.
