Pina Colada Pie

What’s Cooking in Gail’s Kitchen? Simple Sensations: Pina Colada Pie! Sometimes it’s necessary to serve your guests a dessert low in sugar. This one is perfect because it boasts tropical flavor with enough fruity sweetness to satisfy that sugar craving which follows at the end of a meal. Please note you may substitute a sugar-free graham cracker crust for the homemade cookie crust.

Orange-Pineapple-Banana Ice Cream

What’s Cooking in Gail’s Kitchen? Orange, Pineapple, Banana Ice Cream!  And, before you ask…..No, you do not need an ice cream maker. What I love the most about this refreshing recipe is that any fresh fruit can be used for a mélange of flavor choices, depending on the season.

ORANGE-PINEAPPLE-BANANA ICE CREAM

Ingredients:

1/3 cup mandarin oranges, frozen

1/3 cup pineapple chunks, frozen

1 banana, frozen

1/4 cup powdered sugar

1/2 cup heavy cream, very icy cold

Directions:

Combine the frozen fruit and sugar in a food processor or blender. Process on “Pulse” until the fruit is roughly chopped. With the processor running, slowly add the heavy cream until fully mixed. Transfer fruit ice cream to a plastic storage container with lid. Place in the freezer for 2-3 hours or until firm. To serve, use a melon ball scoop to form bite-size portions. Garnish with dried fruit and shredded coconut.

Magic Treasure Cookies

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Magic Treasure Cookies! Anyone can justify having dessert whenever cookies are around. But that’s not the only reason we bake them. Sure, cookies satisfy that craving our sweet tooth demands, but they also provide an afternoon pick-me-up because of the dough made from scratch. We know what’s in them. No preservatives or artificial stuff, that’s for sure. Setting that aside, cookies smell ah-mazing fresh from the oven. They have this magical way of bringing families together, which often brings smiles and laughter. Who can argue with that?

Banana-Anna Smoothie

What’s Cooking in Gail’s Kitchen? Fabulous Fixings: Banana-Anna Smoothie! Remember the last time you bought a bunch of bananas and then tried to beat-the-clock before they turned brown and mushy? Here’s a solution to getting caught on that hamster wheel. Slice up a banana. Place the pieces on a cookie sheet in a single layer, without touching. Freeze for 24 hours; then transfer banana slices to a ziplock freezer bag. Store in the freezer until needed. Use the frozen bananas in your next breakfast smoothie. Done and done.

BANANA-ANNA SMOOTHIE

1 cup unsweetened almond milk

1 teaspoon vanilla extract

Pinch of cinnamon or nutmeg, for garnish

Quark Raspberry Swirl

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Quark Raspberry Swirl! Quark, quark, quark. Yep…it’s a real thing. Probably the easiest way to explain what quark is would be to say, “Think about a cross between sour cream and greek yogurt”. It has the smoothness of both when mixed with veggies or fruit. Obviously when using raspberries, a little sugar makes it super-delicious. I like the fresh pleasant zing of lime juice mixed in, too. And what can I say? The coconut flavor just makes the dessert that much better.

QUARK RASPBERRY SWIRL

Ingredients:

2 cups quark

I teaspoon coconut extract

1/4 cup powdered sugar

2 teaspoons lime juice

8 ounces frozen raspberries, thawed

Lime Zest, for garnish

Instructions:

Reserve several whole raspberries for garnish. Set aside. In a medium mixing bowl, combine quark, coconut extract, powdered sugar, and lime juice. Mix well. Fold in thawed raspberries, gently swirling until they leave pink streaks. Scoop into dessert cups. Top each with a whole raspberry. Garnish with lime zest.

Autumn Spice Banana Bread

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Autumn Spice Banana Bread! Whenever people want to give me a gift of a scented candle, I always choose bakery aromas over floral ones. Buttery Caramel Corn, Pumpkin Pecan Waffles, Vanilla Frosted Cupcake, to name a few. I confess, I could have a love affair with cinnamon, maple, ginger, or cardamom. My knees grow weak just thinking about it. Perhaps that is one reason Autumn spices make me crazy while throwing caution to the wind and willpower out the door. I scrape the bowl leaving just enough batter to taste in a teaspoon. It’s how you know the results will be amazing; at least that’s my story and I’m sticking to it.

AUTUMN SPICE BANANA BREAD

Ingredients:

3 bananas, peeled and mashed

1/2 cup mayonnaise

1 egg

1 1/2 cups flour

3/4 cup sugar

1 teaspoon baking soda

3/4 teaspoon cinnamon

3/4 teaspoon ginger

1/2 teaspoon nutmeg

1/2 teaspoon sea salt

1/4 cup coconut, flaked

1/2 cup carrots, peeled and shredded

Instructions:

Preheat oven to 350°. Line a loaf pan with parchment paper. Set aside. In a bowl, combine mashed bananas, mayonnaise, and egg. Mix well. In another bowl, whisk together flour, sugar, baking soda, cinnamon, ginger, nutmeg, and sea salt. Stir in the banana mixture, just until moistened. Fold in flaked coconut and shredded carrots. Pour into prepared loaf pan. Bake 55-60 minutes, or until a cake tester comes out clean. Rest for 10 minutes. Remove banana bread from pan and allow to cool completely on a wire rack.

Ingredients for Frosting:

2 ounces cream cheese, softened

2 tablespoons butter, unsalted, softened

1 1/2 cups powdered sugar

1/8 teaspoon sea salt

2-3 tablespoons light cream

Roasted pumpkin seeds and crushed pecans, for garnish

Instructions for Frosting:

In a medium bowl, combine cream cheese and unsalted butter until smooth. Add powdered sugar and sea salt. Whisk in 2-3 tablespoons light cream. Frosting will be thick, but spreadable. Spread the frosting over the completely cooled banana bread. Sprinkle generously with roasted pumpkin seeds and crushed pecans.

Lime Watermelon Sticks

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: Lime Watermelon Sticks! Watermelon can be a finger food that commands attention at the next social gathering. Won’t that be impressive? Notice how the watermelon rind serves as a natural handle for picking it up. It certainly makes it easier for dipping into a creamy sauce. Now that I’ve caught your attention, add watermelon to your shopping list.

LIME WATERMELON STICKS

Ingredients:

1/2 small watermelon, cut into sticks

1/2 teaspoon chili-lime seasoning

1/4 cup Greek yogurt

1 tablespoon lime juice

2 teaspoons natural raw honey

1/8 teaspoon tajin seasoning

Zest of lime, for garnish

Instructions:

Arrange water melon sticks on a plate. Sprinkle with chili-lime seasoning. To make a dipping sauce, combine Greek yogurt, lime juice, raw honey, and tajin seasoning. Mix well. Spoon into a small dish. Sprinkle with lime zest. Serve watermelon sticks with the yogurt sauce on the side for dipping.

Butter Chicken

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Butter Chicken! At first glance, this dish looks surprisingly similar to curry chicken, doesn’t it? Sooo, what is the difference, you wonder. The secret is in the name. It’s made with butter! The tomatoes, coconut milk, and seasonings are cooked slow enough to transform the sauce into a gravy-like consistency with a nice kick of flavor. Also, by slow-cooking the chicken, it becomes fork tender and juicy. Ahhh, now I have your attention. Sounds like a grocery list is in order. Bravo. Your family will thank you.
