What’s Cooking in Gail’s Kitchen? The Clean Plate Club: Donkey Sauce! If you tune in to the Food Network, you may recall a big guy who looks like a rock star with spiky bleached hair and a goatee. His name is Guy Fieri. When I visited his restaurant in Las Vegas, everything was super-sized and seemed to be slathered in his signature “donkey sauce”. Although he admits it is only aioli, you know it has to be his own secret ingredient list that makes it so famous. The basics include mayonnaise, mustard, garlic, and Worcestershire sauce. Today you can thank me for a version of the best…at least until you get back to one of his renowned restaurants.

DONKEY SAUCE

Ingredients:

1 cup mayonnaise

1 teaspoon yellow mustard

1/4 cup roasted garlic, minced

1/2 teaspoon Worcestershire sauce

1/4 teaspoon kosher salt

1/8 teaspoon cracked black pepper

Instructions:

Using a food processor, combine mayonnaise, mustard, garlic, Worcestershire sauce, kosher salt, and black pepper. Purée until smooth. Scrape down sides to incorporate. Pour aioli into a covered container. Chill for one hour. Slather on burgers, sliders, sandwiches, salads, and French fries. Anything goes!

What’s Cooking in Gail’s Kitchen? The Color of Food: Vanilla Pineapple Jam! I learn so much by following other foodies. My friend, Lathiya, featured this aromatic recipe on her blog recently. I never thought of adding vanilla to pineapple. The results are amazing! Shout out to her for more photos at http://www.lathiskitchen.org/2018/02/23 and a tasty fruit combination to smear on your morning toast or Greek yogurt. It’s Yumolicious!

VANILLA PINEAPPLE JAM

Ingredients:

2 cups pineapple chunks, drain juice if using canned

3/4 cup sugar

3 discs sugared ginger, finely chopped

1 tablespoon pure vanilla extract

Pinch sea salt

1 tablespoon lemon juice

Instructions:

Using a 9-inch saucepan, combine pineapple chunks and sugar over medium-high heat to boil. Reduce to low and continue cooking. Gently mash the chunks with a fork as pineapple softens. Add sugared ginger, vanilla extract, and sea salt. Cook until mixture becomes jam, about 20 minutes. Add lemon juice; stir and cook 10 minutes longer. Jam will begin to thicken. Remove from heat and let sit for 10 minutes before transferring to a jar. Store covered in the refrigerator.

What’s Cooking in Gail’s Kitchen? The Daily Special: Jalapeños Pickled! As you may recall, I live in the country. However, I’m really not much of a gardener. Thank goodness my husband is. He cultivates the ground, plants the seedlings, and kicks the weeds to the curb. Then I gather the produce and transform its bounty into wonderful surprises. This pickled recipe makes me feel like a pro. It’s quick, it’s easy, and most of all it’s super delicious! The spiciness has you asking for more.

JALAPEÑOS PICKLED

Ingredients:

15 jalapeño peppers, sliced

2 garlic cloves

1 cup white vinegar

1 cup water

4 tablespoons sugar

2 tablespoons kosher salt

Instructions:

In a medium sauce pan, combine the garlic, vinegar, water, sugar, and salt. Heat to boiling. Stir until the sugar and salt are dissolved. As it continues boiling, add the sliced jalapeños. Keep them submerged under the pickling liquids. Remove the pan from the heat. Let it sit for 10-15 minutes. Using a slotted spoon, transfer the jalapeños and garlic to a clean jar. Ladle the pickling juices over top until the jar is filled. Let cool at room temperature before securing a lid and storing in the refrigerator.

Eating My Way Through the Holidays! Yuletide Favs: Olive Tapenade! Here’s a nice prelude to an evening meal. Forego the usual focaccia bread and herbed olive oil for a southern France hors d’oeuvre instead. By using an exotic mixture of olives and spices, it creates a versatile condiment for crackers, bread, cheese, and vegetables. Later on, serve it over pasta or fish as another option. Whatever you choose, seek adventure. You won’t be disappointed in the mellow salty garlic flavor lingering long into the night.

OLIVE TAPENADE

Ingredients:

1/2 cup green olives with pimentos

1/2 cup black olives, pitted

1/2 cup kalamata olives, pitted

2 tablespoons capers

4 tablespoons olive oil

1 garlic clove, minced

1/8 teaspoon sea salt

1/8 teaspoon cracked black pepper

Instructions:

Combine all ingredients. Pulse in a food processor for several minutes. Scrape sides and repeat. Cover and chill in the refrigerator for one hour. Serve with crusty artisan bread or pita chips. Tastes great spread over cream cheese for party flavor.

What’s Cooking in Gail’s Kitchen? The Chow Down: Savory Bourbon Barbecue Sauce! Take a deep breath and try not to drool as you look at this tender slab of pork ribs. Focus instead on the incredible homemade bourbon barbecue sauce. It is so good you may want to slurp it with a spoon. Go ahead, permission granted. Swirl the tangy goodness around in your mouth so you can appreciate the savory sweet thick sauce with a surprising kick of red pepper. Underlying all this magnificence are hints of oak, toffee, dark fruit, and anise from bourbon whiskey. Well done. 
SAVORY BOURBON BARBECUE SAUCE 
Ingredients:

1 cup ketchup 

1/2 cup Buffalo Trace Kentucky Straight Bourbon Whiskey*

3 tablespoons brown sugar

3 tablespoons dark molasses

3 tablespoons apple cider vinegar 

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 tablespoon Dijon mustard 

1 1/2 teaspoons liquid smoke

1 teaspoon onion powder 

1 teaspoon garlic powder 

1/2 teaspoon red pepper flakes 

1/2 teaspoon black pepper 
Instructions:

In a mixing bowl, combine ketchup, bourbon, brown sugar, dark molasses, apple cider vinegar, Worcestershire sauce, soy sauce, Dijon mustard, liquid smoke, onion powder, garlic powder, red pepper flakes, and black pepper. Stir until thoroughly blended. Transfer bourbon barbecue sauce to a 2-quart saucepan. Bring to a boil over medium heat, stirring occasionally, for two minutes. Reduce heat. Simmer until sauce is reduced to about half and thickened, approximately 10-15 minutes. Stir often. Do not scorch. Remove from heat. Carefully pour sauce into a jar. Refrigerate until ready to use.

What’s Cooking in Gail’s Kitchen? Something to Savor: Unbelievable Bacon Jam! Your morning just got better. Everyone loves bacon, right? And coffee is often casually referred to as a “cup of morning joe”. Know what you get when you mix the two together, along with a few other items from the food pantry? You guessed it: Bacon Jam that can be slathered on buttered toast or added later to a Charcuterie Board. Tested on guests at Gail’s Kitchen, this recipe is spot on. Give it a try and see for yourself. You can thank me later. 
UNBELIEVABLE BACON JAM
Ingredients:

9 slices Applewood Smoked Bacon, sliced thick

4 tablespoons bacon grease

1 large red onion, diced

1/2 teaspoon garlic powder

1/2 cup apple cider vinegar 

1/2 cup brown sugar

1/4 cup pure maple syrup 

3/4 cup brewed coffee 

1/4 cup pickled jalapeños, diced

1 teaspoon smoked sea salt

1 tablespoon Dijon mustard
Instructions:

Cook the bacon until brown and slightly crispy. It should be chewy. Cut into 1/2-inch pieces. In a medium skillet over medium heat, add 2 tablespoons bacon grease. Add diced red onion. Turn to coat. Sprinkle with garlic powder. Sauté until onions are cooked, stirring frequently. Set aside. In a medium sauce pan, combine apple cider vinegar, brown sugar, maple syrup, remaining bacon grease, brewed coffee, pickled jalapeños, smoked sea salt, Dijon mustard, and bacon pieces. Add cooked onions. Stir well. Bring the bacon jam to a boil. Reduce heat to medium-low and let simmer for 45 minutes until the liquid is absorbed and the jam is thick. The bacon jam should appear chunky. Refrigerate in an airtight container.

What’s Cooking in Gail’s Kitchen? Something to Savor: Jellylike Jezebel Sauce! I first heard about this sassy southern sauce with a spicy kick from fellow blogger, Camellia.* She piqued my interest since I sometimes crave the heat of horseradish to liven up ordinary foods. Talk about eye-popping sizzle! Yes, Ma’am! Then recently my husband and I travelled to South Carolina where I had a first-hand opportunity to taste it at a waterfront restaurant there. One bite of Coconut Shrimp dipped in Jezebel Sauce aroused my taste buds and the rest was history. Bless your heart, Camellia!
JELLYLIKE JEZEBEL SAUCE
Ingredients:

18-ounce apple jelly

13-ounce jar apricot preserves 

8-ounce can crushed pineapple, drained

8-ounce jar creamy horseradish, double strength 

2 tablespoons dry mustard

2 teaspoons black cracked pepper
Instructions:

Warm apple jelly in microwave for 30 seconds. Combine apple juice, apricot preserves, crushed pineapple, Creamy horseradish, dry mustard, and cracked black pepper. Stir to blend well. Pour into jars. Chill one hour to enhance flavors. Store in the refrigerator.

What’s Cooking in Gail’s Kitchen? Food for Sharing: Uvetta Apple Chutney Grilled Cheese! When I was a kid, the word “chutney” meant something yucky with raisins and spices. That was before my taste buds matured and I acquired an exotic palate. Nowadays I appreciate the characteristics of fancy foods filled with specialized ingredients. By adding a spoonful of apple chutney to a grilled cheese sandwich, it transforms an ordinary meal into an extraordinary one. You should try it. 
UVETTA APPLE CHUTNEY GRILLED CHEESE
Ingredients:

1 1/2 teaspoons olive oil

1/4 cup sweet onion, finely chopped

1 candied ginger disc, chopped

2 teaspoons pineapple juice

2 tablespoons apple cider vinegar 

1 tablespoon cognac (optional)

2 tablespoons raisins

1/8 teaspoon garlic powder 

1/4 teaspoon turmeric 

1/4 teaspoon cinnamon 

1/4 teaspoon cumin powder

1/8 teaspoon cayenne pepper

2 tablespoons brown sugar 

1 tablespoon natural honey

2 Granny Smith apples, peeled, cored, and chopped
Instructions:

In a large saucepan over medium heat, add olive oil, sweet onions, and candied ginger. Cook 5 minutes, stirring occasionally. Reduce heat. Add pineapple juice, apple cider vinegar, cognac, and raisins. Cook on low another 2 minutes. Stir in garlic powder, turmeric, cinnamon, cumin powder, cayenne pepper, brown sugar, and honey. Mix well. Add chopped apples. Coat with sauce. Simmer 10-15 minutes until apples are soft and sauce is like syrup. Remove from heat. Serve as a condiment on your favorite grilled cheese sandwich.

What’s Cooking in Gail’s Kitchen? Food for Sharing: Tasty Tomato Jam! Crank up your taste buds a bit with this savory sweet jam that is bursting with flavor. Spread it on toast or grilled cheese. Think of it as a condiment for meatloaf, fish, hamburgers, or grilled shrimp. Serve it on a charcuterie board with cured meats and gourmet cheeses. One of my favorite combos is Pear Camembert Flatbread.* It’s all the rage! Decide for yourself what the fuss is about. I did. And now tomato jam is a “must have” at my house. 
TASTY TOMATO JAM
Ingredients:

1 small red onion, finely diced

28-ounce can Roma tomatoes, cut-up with sauce 

1 tablespoon olive oil

1/4 teaspoon garlic powder

1 tablespoon candied ginger, minced

1/2 cup garlic red wine vinegar 

1/4 cup natural honey

1/4 cup brown sugar

1/2 teaspoon ground ginger

Pinch of ground cloves

1/4 teaspoon cinnamon 

1 teaspoon Mexican tarragon, minced

1/4 teaspoon red pepper flakes (optional)

1 teaspoon sea salt
Instructions:

In a microwave-safe bowl, microwave red onion on High setting for two minutes. Using a reduction pan over medium heat, combine diced onions and Roma tomatoes. Add olive oil, garlic powder, candied ginger, garlic red wine vinegar, natural honey, brown sugar, ginger, cloves, cinnamon, Mexican tarragon, red pepper flakes, and sea salt. Simmer, stirring occasionally, until tomatoes have broken down and liquid is evaporated. This will take 60-75 minutes. Ladle the tomato jam into sterilized jars while hot. Store in the refrigerator.
