What’s Cooking in Gail’s Kitchen? Uplifting Aromas: No-Bake Granola Cookies! I’m learning something new everyday. Honestly, I had no idea granola came with a boost of coffee flavor. That makes sense because when I checked the ingredient list on the package, sure enough….coffee was actually there. I sampled a taste before making the cookies and realized this could be a match made in heaven, especially when paired with chocolate and peanut butter. A little more research revealed not only does iced coffee come in this popular combination, but also milkshakes and ice cream. Perhaps I need to explore these other foods that offer a mind-boggling caffeine jolt. Now we’re talking.

NO-BAKE GRANOLA COOKIES

Ingredients:

1/2 cup peanut butter, creamy

1/2 cup Tupelo honey

1/4 cup brown sugar

2 cups coffee booster granola, slightly crushed in a mini chopper

1/4 cup quick oats

1/3 cup mini chocolate chips

Instructions:

In a microwave-safe bowl, combine creamy peanut butter, Tupelo honey, and brown sugar. Microwave on High setting for 30 seconds. Stir completely and microwave on High 60 seconds longer. Stir again and set aside. In a mixing bowl, combine coffee booster granola and quick oats. Pour warm peanut butter mixture over top. Mix well. Line a baking sheet with waxed paper. Place mini chocolate chips in a shallow dish. Using a cookie scoop, portion dough into rounded cookies. Firmly press mini chocolate chips into the top. Place each cookie, chocolate chip side up, onto the waxed paper. Repeat until all dough is formed into bite-sized cookies. Chill slightly to set. Store in a sealed container.

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Impromptu Sprinkle Wafers! Who likes the crunch of sprinkles on desserts? Is it because sprinkles add texture? Could it be the vibrant colors that scream “WOW”? Or is it all about the candy? Sprinkles seems to transform an ordinary day into a celebration event. They also spread joy, happiness, and excitement. Once you become a fan, you begin to notice all the bazillion colors, shapes, and dazzle connected to sprinkles. Mix ‘n match or pile ‘em high. Sprinkles are incredibly magical.

IMPROMPTU SPRINKLE WAFERS

Ingredients:

12 ounces white chocolate chips

8-ounce package strawberry wafer cookies, about 2 dozen

1/2 cup assorted sprinkles

Instructions:

Line a baking sheet with parchment paper. Set aside. In a microwave-safe bowl, place the white chocolate chips. Heat on HIGH setting for 30 seconds. Stir and repeat until all chips are melted and smooth consistency, about 2 minutes total. In a shallow dish, combine assorted sprinkles of choice. Taking one wafer at a time, dip a third of the strawberry wafer cookie into the white chocolate. Place on the baking sheet. Sprinkle with assorted sprinkles. Repeat until all cookies are dipped in chocolate and layered with sprinkles. Allow the white chocolate to set 30 minutes before serving. Store in an airtight container.

Top with fresh fruit, seedless jam, chocolate bits, or candied ginger. Dust with powdered sugar for a professional finish. QUICK-SET PARTY CHEESECAKES

Ingredients:

24 mini cupcake liners

24 Nilla wafers

2 8-ounce packages Neufchâtel cheese

3/4 cup sugar

2 eggs

1 tablespoon lemon juice

1 teaspoon vanilla

Fresh Fruit, Chocolate Chips, or Candied Ginger

Instructions:

Preheat oven to 350°. Beat Neufchâtel cheese and sugar. Add eggs, beating well. Fold in lemon juice and vanilla extract. Beat until light and fluffy. Place cupcake liners in muffin tin. Put 1 Nilla wafer in each. Fill with 1 heaping tablespoon of cheese mixture. Bake 15 minutes. Cool. Refrigerate 3 hours. Garnish with assorted toppings.

Years ago while traveling with my husband on a business trip, we had dinner at a popular local restaurant that extended a warm welcome to all who crossed its threshold. Before approaching the hostess stand, we were immediately greeted by the bakery-fresh aromas of homemade cookies. How delightful! On the dessert showcase, to our right, sat a plate of one-bite chocolate chip cookies with a table tent that said, “Please Take One”. I assure you, we didn’t hesitate as we munched away following the hostess to a nice, secluded corner booth. Talk about a memorable experience.

ONE-BITE COOKIE MORSELS

Ingredients:

1 1/3 cups flour

1 teaspoon cornstarch

1/4 + 1/8 teaspoon baking soda

1/4 teaspoon sea salt

1/2 cup butter, softened

1/2 cup brown sugar

1/4 cup sugar

1 egg, room temperature

1 1/2 teaspoon vanilla extract

1 cup mini chocolate chips, plus more for topping

Instructions:

Preheat oven to 350°. In a bowl, whisk together flour, cornstarch, baking soda, and sea salt. Line two baking sheets with parchment paper. Set aside. Using a mixer, beat softened butter, brown sugar, and sugar on medium speed until well combined. Mix in egg and vanilla extract. Reduce speed to Low and slowly add dry ingredients. Mix until combined. Fold in mini chocolate chips. Scoop 1/2 tablespoon-sized mounds of cookie dough, form into a ball, press 2-3 mini chocolate chips into top, and place onto prepared baking sheet. Bake 5-6 minutes; remove from oven. Allow to cool for 2 minutes, then transfer cookies to a wire rack.

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Quite Tasty Peanut Butter Cookies! One of the benefits of touching base with friends in the blogosphere is sharing blessings and paying it forward. Today’s recipe gives a “shout out” to Linda, The Dutch Baker*. She featured a fabulous peanut butter cookie recipe that absolutely made my mouth drool. So much so, I ran to my kitchen to insure I had all the necessary ingredients to whip up a batch. That’s one of the advantages of social distancing, in my opinion. Some even refer it as “stress baking” or “anxiety baking”. Quarantine cooking has even become a thing. It releases tension, challenges our skills, and satisfies the craving for a reward. Whatever way you choose to look at it, we’re all in this together.

QUITE TASTY PEANUT BUTTER COOKIES

Ingredients:

1 cup + 2 tablespoons flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon sea salt

1/2 cup butter, room temperature

3/4 cup brown sugar

1/2 cup crunchy peanut butter

1 egg, room temperature

1 teaspoon vanilla extract

White sugar for rolling (optional)

Instructions:

In a bowl, whisk together flour, baking soda, baking powder, and sea salt. Set aside. In a food processor, cream softened butter and brown sugar until pale and fluffy. Add crunchy peanut butter. Pulse to blend. Add egg and vanilla extract. Mix well. Slowly add flour mixture only until slightly combined. Do not over mix. Transfer cookie dough to a bowl. Cover and refrigerate overnight. The following day, remove bowl from refrigerator and allow it to sit at room temperature for 20 minutes. Preheat oven to 350°. Line two baking sheets with parchment paper. By the teaspoonful, form the dough into balls. Roll in white sugar. Arrange on baking sheet. Bake 11 minutes. Remove pan and allow cookies to cool 5 minutes before transferring to a wire rack. Cool peanut butter cookies completely before storing in an airtight container.

Your Grandma’s Molasses Cookies

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Your Grandma’s Molasses Cookies! For years I was on a quest to bake soft, chewy cookies. No matter what I did, it seemed as soon as the cookies cooled, they turned crunchy rather than chewy. Don’t get me wrong, they still disappeared in my house because…well, kids seem to love homemade cookies no matter how they turn out. Then, the other day I was rifling through a stack of recipes scribbled on random slips of paper tucked away in a ziplock bag. I came across the familiar handwriting of my beloved Grandma Frieda. I remembered visiting her in the summertime when she’d bring out the Game of Cootie for us to play. Afterwards, she serve a plate of sugary molasses cookies with a glass of milk. Those are good memories, that’s for sure.

YOUR GRANDMA’S MOLASSES COOKIES

Ingredients:

4 cups flour

4 teaspoons baking soda

2 teaspoons cinnamon, ground 

1 teaspoon cloves, ground 

1 teaspoon ginger, ground 

1 teaspoon sea salt

1 1/2 cups butter, softened 

2 cups sugar plus 1/2 cup

1/2 cup molasses 

2 eggs

Instructions:

Preheat the oven to 375°. Line baking sheet with a silicone baking mat and set aside. In a large bowl, whisk together flour, baking soda, cinnamon, cloves, ginger, and salt. 

In the bowl of a stand mixer, cream together butter and 2 cups sugar until combined. Add in the molasses and eggs and mix well. Slowly add the flour mixture to the ingredients of the stand mixer and mix until all is combined. Fill a small bowl with the remaining 1/2 cup sugar. Form teaspoon-size dough into balls then gently roll them in the granulated sugar. Place onto baking sheet, two inches apart. Repeat until all the cookie dough has been used. Bake only 10 minutes for soft and chewy results. Let cool on baking sheet for 5 minutes then transfer to a wire rack to cool completely.

That’s one reason I was drawn to pizzelles, a traditional Italian waffle cookie. I could make you crazy by telling you we’re going to make them from scratch, but hey, my time is in high demand just like yours. Besides, since I don’t own a pizzelle iron, sometimes it’s better to leave things to an expert. I’m here today to save you time when someone suggests a Holiday Cookie Exchange. Pick up a package of Classic Italian Pizzelles on your way home from work, dip the cookies in melted chocolate, and sprinkle with nuts. You can thank me later when you’re sitting back relaxing with a glass of wine.

7-ounce package Vanilla Flavored Pizzelle Cookies

2 cups semisweet chocolate chips

1 tablespoon vegetable oil

4 ounces pistachios, chopped

Instructions:

Line a baking sheet with waxed paper. In a microwave-safe bowl, combine semisweet chocolate chips and vegetable oil. Heat in microwave on 50% setting for 30 seconds. Stir. Repeat in 30-second intervals until melted. Stir until smooth. Dip half of each pizzelle cookie into melted chocolate. Sprinkle both sides with chopped pistachios. Place on baking sheet. Refrigerate for 30 minutes or until set.

Eating My Way Through the Holidays. Festive Food Gifts: Xmas Crinkle Cookies! Shortcuts are the key to success for that next cookie-exchange the kids forgot to tell you about. “Oh yeah, Mom, sorry.” No worries. Head to the kitchen to clang some pans around, preheat the oven, and dust a little powdered sugar on your nose. They’ll be none the wiser. By the time the house begins to smell like a neighborhood bakery, you’ll have rows of cookies lined up ready to be boxed. And if you’re one of those organized parents, just so you know, these cookies freeze well. Arrange them in a freezer gallon bag, layered between squares of waxed paper. I have literally taken these crinkle cookies out of the freezer and handed them to a little girl to eat. Other than being slightly chilled, they retain a chewiness that makes them simply delicious. You deserve a pat on the back. You’re welcome.

XMAS CRINKLE COOKIES

Ingredients:

1/2 cup powdered sugar, for dusting

15.25-ounce box strawberry cake mix

1/2 cup vegetable oil

2 eggs, room temperature

Instructions:

Preheat oven to 350°. Place powdered sugar in a shallow dish. Set aside. In a mixing bowl, combine strawberry cake mix, vegetable oil, and eggs. Stir until a dough forms. Chill dough for 20 minutes. Shape dough into 1” balls. Roll in powdered sugar and place 2” apart on ungreased baking sheet. Bake 7-9 minutes, or until center is just set. Remove pan from oven; cool for 2 minutes. Transfer cookies to a wire rack. Dust with more powdered sugar.
