What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Quark Raspberry Swirl! Quark, quark, quark. Yep…it’s a real thing. Probably the easiest way to explain what quark is would be to say, “Think about a cross between sour cream and greek yogurt”. It has the smoothness of both when mixed with veggies or fruit. Obviously when using raspberries, a little sugar makes it super-delicious. I like the fresh pleasant zing of lime juice mixed in, too. And what can I say? The coconut flavor just makes the dessert that much better.
QUARK RASPBERRY SWIRL
Ingredients:
2 cups quark
I teaspoon coconut extract
1/4 cup powdered sugar
2 teaspoons lime juice
8 ounces frozen raspberries, thawed
Lime Zest, for garnish
Instructions:
Reserve several whole raspberries for garnish. Set aside. In a medium mixing bowl, combine quark, coconut extract, powdered sugar, and lime juice. Mix well. Fold in thawed raspberries, gently swirling until they leave pink streaks. Scoop into dessert cups. Top each with a whole raspberry. Garnish with lime zest.

The best intentions go out the window when you realize you have more celery in the refrigerator than you can possibly eat, even on a health-kick. Plus, I’m no longer feeding a family of four. The reality is, as I’ve aged, my appetite has waned and I no longer require three solid meals a day. Can anyone else relate? Thank goodness I like homemade soup, especially if it has potatoes in it. This slightly modified version adds celery to the pot. And since I make potato salad with celery, I didn’t think this was too much of a stretch. Perhaps you will agree.
XCELLENT CELERY SOUP
Ingredients:
2 1/2 cups water
2 teaspoons chicken bouillon
2 tablespoons salted butter
1 large russet potato, peeled and roughly chopped
3-4 celery ribs, chopped
1/2 yellow onion, chopped
1/2 teaspoon celery seed
2 tablespoons light cream
Garlic Croutons, for garnish
Celery Leaves, for garnish
Instructions:
In a 4-quart pan over medium-high heat, combine water, chicken bouillon, and butter. Add potato chunks, chopped celery, and yellow onion. Bring to a boil. Stir; reduce heat to low and cook until potatoes are fork-tender, approximately 20 minutes. Sprinkle in celery seed and light cream. Transfer mixture to a food processor and pulse to purée, leaving enough to make the soup chunky. Ladle into soup bowls. Garnish with garlic croutons and celery leaves.

When adding cheese, choose wisely because it doesn’t always have to be cream cheese. Goat cheese, Camembert, and Brie are nice alternatives, especially since they’re spreadable and you may already have them on hand. If you’re not very excited about tomatoes, switch them out for thinly sliced radishes or chilled cucumbers. Onions and capers add the zing that wows any family member or overnight guest. Put it all together and watch harmony reign.
SMOKED SALMON BAGEL
Ingredients:
1 bakery plain bagel, split and toasted
2 ounces smoked wild salmon, flaked
1 ounce cream cheese, softened
1 small tomato, sliced
1 slice red onion, roughly chopped
1 teaspoon capers
1 hard-boiled egg, sliced
Everything But Bagel seasoning
Dill weed, for garnish
Instructions:
To assemble ingredients, place toasted bagel split side up on a plate. In a small bowl, combine smoked salmon and cream cheese. Spread over the bagel. Top with a slice or two of tomato. Arrange red onion strips over tomato. Sprinkle capers over all. Either add a layer of hard-boiled eggs or eat them separately as you go. Spice it up with Everything But Bagel seasoning and dill weed. You’ll easily recognize this variety by its honeyed yellow skin that appears to have a faint red blush of color. At first bite, they almost resemble a miniature plum, which may carry divine flavor flashbacks of cherished childhood memories. Now add a golden stack of hot cakes with a crisp outer edge and fluffy cake-like center. This is what mornings are meant to be.
RANIER CHERRY-TOPPED HOT CAKES
Ingredients:
1 pint Ranier cherries, rinsed, patted dry, pitted, and halved
2 1/4 cup flour
1/3 cup sugar
3/4 teaspoon sea salt
1/2 tablespoon baking powder
2 teaspoons baking soda
1 cup milk
1/4 cup vegetable oil
1 tablespoon vanilla extract
1/4 cup apple cider vinegar
1/4 cup sour cream
2 eggs
Instructions:
Preheat griddle to 375°. For gas stove griddles, set knob at medium-low setting for 10-15 minutes. While griddle is heating, sift flour into a bowl. Add sugar, sea salt, baking powder, and baking soda. Mix well. In another bowl, combine milk, vegetable oil, vanilla extract, cider vinegar, sour cream, and eggs. Mix well. Add the dry ingredients to the wet ingredients. Gently fold together, without over mixing. Allow the batter to rest for 5 minutes. The batter will be thick and bubbly. Nowadays the courteous thing to do is omit the crust in case someone needs a low-carb gluten-free option. You can always serve the frittata with a crusty artisan piece of buttered toast for those who like bread with their meal. Using light cream will result in more of a creamy egg custard, but can certainly be omitted. Because I had already packed my iron skillet, I had to make due with a baking dish. Baking the frittata in an iron skillet gives the edges a “fried” appearance, which always gets the mouth drooling.
NEW DAY RED PEPPER FRITTATA
Ingredients:
8 large eggs
1/4 cup light cream
1/2 teaspoon seasoned salt
1/4 teaspoon black pepper
1/3 cup fresh basil, minced
1/2 cup mozzarella cheese, shredded
6 green onions, chopped
1 cup sweet red peppers, chopped
2 green onions, for garnish
Instructions:
Preheat oven to 350°. Spray a baking dish with nonstick oil. Set aside. In a mixing bowl, whisk together eggs, light cream, seasoned salt, and black pepper. Fold in fresh basil, mozzarella cheese, chopped green onions, and sweet red peppers. Mix well. Pour mixture into prepared dish. Too with 2 green onions. Bake, uncovered, for 25 minutes or until eggs are completely set. Remove from oven. Let stand 5 minutes. Serve warm.

I usually keep cooked, frozen shrimp on hand, which can be thawed in a few minutes. But I have also used tiny canned shrimp, which work very well. Obviously, the canned shrimp should be drained first. A few steps later and you’re good to go.

Ingredients:
8 ounces cream cheese, room temperature
8 ounces cooked shrimp, tails removed and cut into chunks
10 ounces cocktail sauce, prepared
1/4 teaspoon dill weed
1 green onion, thinly sliced
