What’s Cooking in Gail’s Kitchen? Food With Soul: Unfinished Pecan Pie! Before you ask…No, this pie is not made with raw dough and there’s no ingredient missing from the recipe. The “unfinished” word in the title simply means you may choose to eat it as is OR top it with sweetened whipped cream, buttery streusel, or caramel sauce. The choice is yours. ‘Course if I wanted to be snarky, I could say it is unfinished because there’s still a piece or two left in the pie plate. Any takers?

UNFINISHED PECAN PIE

Ingredients:

1 prepared pie crust, refrigerated

2/3 cup sugar

1/3 cup butter, melted

1 cup light corn syrup

1/2 teaspoon sea salt

3 eggs, room temperature

2 cups pecan halves and pieces

Instructions:

Preheat oven to 350°. Spray a 9-inch pie plate with nonstick oil. Unfold pie crust and ease into plate, pressing firmly against the bottom and sides. Fold and roll pastry edges under, even with the rim of the plate. Flute edges or press with fork tines. Set aside. In a medium bowl, combine sugar, melted butter, corn syrup, sea salt, and eggs. Beat with an electric hand mixer until well blended. Stir in pecans. Pour mixture into pastry-lined pie plate. Bake 40-50 minutes or until center is set. Allow to cool for two hours. Slice and Serve.

Jelly Roll Cake

The best part about this classic cake recipe is the filling can be whatever flavor you wish it to be. I used all-natural Red-Cherry Swiss Preserves for a fruit flavor resulting in a gourmet experience. It created an international glimpse of Switzerland without setting foot on an airplane.

JELLY ROLL CAKE

Ingredients:

3 eggs, room temperature

1 cup sugar

1/3 cup water

1 teaspoon almond extract

3/4 cup flour

1 teaspoon baking powder

1/4 teaspoon salt

1/3 cup almonds, sliced

2/3 cup jelly or jam, any flavor

Powdered sugar

Instructions:

Preheat oven to 375°. Grease and line a 10″x15″ jelly roll pan. Beat eggs until thick and lemon-colored, about 5 minutes. Gradually add sugar, water, and almond extract. Mix thoroughly. Add flour, baking powder, and salt until well blended and no lumps remain. Pour into pan and sprinkle with almonds. Bake 12-15 minutes. Loosen cake from pan and invert onto a tea towel generously sprinkled with powdered sugar. While cake is hot, roll up. Refrigerate one hour. Unroll cake and top with jelly or jam, spreading to edges. Roll up cake again, sprinkle with powdered sugar, cover in plastic wrap and refrigerate two more hours before serving.

French Silk Pie

French Silk Pie has become my Signature Dessert; it’s that legendary!

FRENCH SILK PIE

Ingredients for Crust:

1/4 cup butter, melted

25 vanilla wafers, crushed

1/2 cup pecans, chopped

Instructions for Crust:

Preheat oven to 300°. Combine butter, wafers, and pecans until crumbly. Reserve 1 tablespoon for garnish. Press remaining crumb mixture into an 8-9″ pie plate. Bake 15 minutes. Let cool.

Ingredients for Filling:

3/4 cup butter, melted

1 cup plus 2 tablespoons sugar

6 tablespoons cocoa powder

2 tablespoons oil

3 eggs

1 teaspoon vanilla

Instructions for Filling:

For best results, use a food processor to get the luscious results. Cream together butter and sugar. Add cocoa powder and oil. Blend well. THIS NEXT STEP IS CRITICAL. Add one egg and beat for 4 minutes. Add the second egg and beat for 4 minutes. Add the third egg and beat for 4 minutes. Finally add the teaspoon of vanilla extract. Beat 30 seconds. Pour the filling into the crust. Garnish with reserve crumb mixture. Chill before serving.

These miniature cheesecakes are super-easy and can be whipped up in a few minutes first thing in the morning. They refrigerate while you’re at work or the gym, so no worries there. Top with fresh fruit, seedless jam, chocolate bits, or candied ginger. Dust with powdered sugar for a professional finish. QUICK-SET PARTY CHEESECAKES

Ingredients:

24 mini cupcake liners

24 Nilla wafers

2 8-ounce packages Neufchâtel cheese

3/4 cup sugar

2 eggs

1 tablespoon lemon juice

1 teaspoon vanilla

Fresh Fruit, Chocolate Chips, or Candied Ginger

Instructions:

Preheat oven to 350°. Beat Neufchâtel cheese and sugar. Add eggs, beating well. Fold in lemon juice and vanilla extract. Beat until light and fluffy. Place cupcake liners in muffin tin. Put 1 Nilla wafer in each. Fill with 1 heaping tablespoon of cheese mixture. Bake 15 minutes. Cool. Refrigerate 3 hours. Garnish with assorted toppings.

Gluten-Free Chocolate Cake

If you find yourself avoiding baked goods due to its wheat content, worry no more. This cake is completely flourless. The results are rich, chocolaty, and extremely satisfying for any sweet tooth craving. Dust it with powdered sugar and garnish each slice with fresh strawberries for a gourmet finish. Hurray for Chocolate!


GLUTEN-FREE CHOCOLATE CAKE


Ingredients:

1 1/2 cups semi-sweet chocolate chips

15-ounce can organic garbanzo beans, rinsed and drained

4 eggs

3/4 cup sugar

1/2 teaspoon baking powder 

1 tablespoon almond extract

1 tablespoon powdered sugar, for dusting

1/4 cup almond slices (optional)

Whipped cream

Fresh strawberries, garnish


Instructions:

Preheat oven to 350°. Grease a 9″ round cake pan. Melt the chocolate chips in a microwave-safe bowl for 2 minutes on high. Stir after 1 minute. Repeat until chocolate is melted and smooth. In a food processor, combine garbanzo beans and eggs. Blend until smooth, about 4 minutes. Add sugar and baking powder. Pulse to mix. Pour in melted chocolate and almond extract. Blend until smooth, scraping sides as needed. Transfer batter to the cake pan. Bake 40 minutes or until a cake tester comes out clean. Cool on a wire rack for 10 minutes. Invert onto a serving plate. Dust with powdered sugar. Sprinkle with almond slices. Garnish with whipped cream and strawberries.

One-Bite Cookie Morsels

Years ago while traveling with my husband on a business trip, we had dinner at a popular local restaurant that extended a warm welcome to all who crossed its threshold. Before approaching the hostess stand, we were immediately greeted by the bakery-fresh aromas of homemade cookies. How delightful! On the dessert showcase, to our right, sat a plate of one-bite chocolate chip cookies with a table tent that said, “Please Take One”. I assure you, we didn’t hesitate as we munched away following the hostess to a nice, secluded corner booth. Talk about a memorable experience.

ONE-BITE COOKIE MORSELS

Ingredients:

1 1/3 cups flour

1 teaspoon cornstarch

1/4 + 1/8 teaspoon baking soda

1/4 teaspoon sea salt

1/2 cup butter, softened

1/2 cup brown sugar

1/4 cup sugar

1 egg, room temperature

1 1/2 teaspoon vanilla extract

1 cup mini chocolate chips, plus more for topping

Instructions:

Preheat oven to 350°. In a bowl, whisk together flour, cornstarch, baking soda, and sea salt. Line two baking sheets with parchment paper. Set aside. Using a mixer, beat softened butter, brown sugar, and sugar on medium speed until well combined. Mix in egg and vanilla extract. Reduce speed to Low and slowly add dry ingredients. Mix until combined. Fold in mini chocolate chips. Scoop 1/2 tablespoon-sized mounds of cookie dough, form into a ball, press 2-3 mini chocolate chips into top, and place onto prepared baking sheet. Bake 5-6 minutes; remove from oven. Allow to cool for 2 minutes, then transfer cookies to a wire rack.

Quark Raspberry Swirl

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Quark Raspberry Swirl! Quark, quark, quark. Yep…it’s a real thing. Probably the easiest way to explain what quark is would be to say, “Think about a cross between sour cream and greek yogurt”. It has the smoothness of both when mixed with veggies or fruit. Obviously when using raspberries, a little sugar makes it super-delicious. I like the fresh pleasant zing of lime juice mixed in, too. And what can I say? The coconut flavor just makes the dessert that much better.

QUARK RASPBERRY SWIRL

Ingredients:

2 cups quark

I teaspoon coconut extract

1/4 cup powdered sugar

2 teaspoons lime juice

8 ounces frozen raspberries, thawed

Lime Zest, for garnish

Instructions:

Reserve several whole raspberries for garnish. Set aside. In a medium mixing bowl, combine quark, coconut extract, powdered sugar, and lime juice. Mix well. Fold in thawed raspberries, gently swirling until they leave pink streaks. Scoop into dessert cups. Top each with a whole raspberry. Garnish with lime zest.

Raspberry Pistachio Brie

What’s Cooking in Gail’s Kitchen? Bright Ideas: Raspberry Pistachio Brie! If you need a reason to make an appetizer, read on. It works beautifully as Brie for brunch, a romantic “date night” for two, or a festive dessert while sipping on espresso. Think about it. The cheese itself is so creamy, with a slight robust flavor. The skin can be chewy. Either you like it or you don’t. The raspberry jam has a remarkable sweetness that pairs well with the nuttiness of pistachios. Everyone wins.

RASPBERRY PISTACHIO BRIE

Ingredients:

8-ounce wheel of Brie cheese

1 tablespoon sea salt butter, softened

1/4 cup raspberry jam

1/4 cup pistachios, roughly chopped

Instructions:

Preheat oven to 350°. Unwrap the Brie wheel. Lightly score the top so the skin can absorb the ingredients. Transfer the wheel to an ovenproof dish. Spread the sea salt butter over the top of the cheese. Layer with dollops of raspberry jam. Sprinkle with chopped pistachios. Bake for 12-15 minutes, or until the cheese is melted and gooey. Remove baked Brie from the oven. Serve warm with slices of lightly buttered baguette toast.

Irish Apple Cake

What’s Cooking in Gail’s Kitchen? Bright Ideas: Irish Apple Cake! I can practically hear your first question: How is this cake different from a traditional one? Well, as you mix the ingredients, you may notice the batter is pretty thick and dense. It’s not pourable like a cake mix, that’s for sure. I guess you could compare it somewhat to a sponge cake…..with apples. Plus topping. Streusel is what makes it extra-special, if you know what I mean. When it’s all said and done, you can definitely justify eating it as an early breakfast, a midday brunch, an afternoon pick-me-up, or a late night dessert. If you were at my house, you’d see my husband keeps a spoon propped inside the cake dome. Because, sometimes…you know, you just can’t resist one bite.

IRISH APPLE CAKE

Ingredients for Streusel Topping:

3/4 cup flour

1/4 cup rolled oats

1/2 cup sugar

1/8 teaspoon sea salt

6 tablespoons butter, cold

Instructions for Streusel Topping:

In a medium bowl, combine flour, rolled oats, sugar, and sea salt. Mix well. Add the cold butter, using a fork. Blend the butter into the flour mixture until it resembles coarse breadcrumbs. Set bowl aside in the refrigerator.

Ingredients for Irish Apple Cake

1/2 cup butter, room temperature

1/2 cup sugar

2 teaspoons vanilla extract

2 eggs

1 1/4 cup flour

1 teaspoon baking powder

1 teaspoon cinnamon

1/8 teaspoon sea salt

3 tablespoons milk

3 Granny Smith apples, peeled, cored, and sliced thin

Instructions for Irish Apple Cake:

Preheat oven to 350°. Butter and line a 9” round baking dish. Set aside. In a large bowl, cream together butter and sugar until light and fluffy. Add vanilla extract. Beat eggs, one at a time, and add to creamed mixture. In a separate bowl, whisk together flour, baking powder, cinnamon, and sea salt. Fold the dry ingredients into the wet ingredients. Gradually add milk while mixing as the batter forms. Transfer batter to the prepared baking dish. Arrange a single layer of sliced apples over batter. Cover the apples with the streusel topping. Bake 60-65 minutes, or until a cake tester comes out clean. Cool 10 minutes before slicing. Serve warm or at room temperature.
