What’s Cooking in Gail’s Kitchen? Home Cooking: Zebra Pretzel Snacks! This treat makes everyone smile! You only need three ingredients, it takes merely minutes to make, and it’s very kid-friendly!  With that being said, “What’s black and white and has a salty, sweet taste?”  

ZEBRA PRETZEL SNACKS

Ingredients:

1-pound of mini square or round pretzels 

14-ounce bag of Hershey’s Hugs

1-pound bag of M&M candies

Instructions:

Preheat oven to 250°. Line a cookie sheet with parchment paper or Silpat. Place pretzels in single layer forming even rows.  Top each pretzel with one unwrapped Hershey’s Hugs. Place tray in oven. Bake for 4 minutes. Watch! Remove when candy begins to melt. Moving quickly, gently press a candy piece onto each Hug. Allow to cool completely in refrigerator to firm up chocolate. Remove and store in airtight container. 

Vanilla Frosting-Dipped Fruit & Cookies

What’s Cooking in Gail’s Kitchen? Home Cooking: Vanilla Frosting-Dipped Fruit and Cookies!  Sometimes providing a last minute dessert is easier than you think. The trick is making others believe you spent hours creating such a masterpiece. Choose your favorite fruit, cookies, and frosting. (Now some may really need to cut corners and buy the ready-made frosting as well. I’ll pretend that doesn’t happen so I can share my easy buttercream frosting recipe with you today.)

VANILLA FROSTING-DIPPED FRUIT & COOKIES

Ingredients:

1 pound strawberries, whole with stems

1 package Strawberry Macaroons

2 ounces white nonpareils

12 bamboo skewers

Frosting Ingredients:

1/2 cup butter

3 cups powdered sugar

1 teaspoon vanilla extract

1 teaspoon almond extract

1-2 tablespoons milk, warmed

Instructions:

Cream butter and sugar on low speed with hand mixer. Gradually add extracts. Blend until smooth. Add enough milk to keep it creamy, but not runny. Spoon a portion into a small microwave-safe dish and warm frosting 10 seconds in the microwave. While the frosting is warm, dip a piece of fruit or a cookie into the bowl. Using a swirling motion, rotate each piece to cover. Immediate dip into the nonpareils to coat. Place on a baking sheet lined with wax paper. Repeat until all desired pieces are covered. Refrigerate for half an hour or until firm. 

Old-Fashioned Blueberry Peach Galette

What’s Cooking in Gail’s Kitchen? Home Cooking: Old-Fashioned Blueberry Peach Galette! For a rustic dessert that is sure to please, this classic French pastry is a perfect blend of natural fruit sweetness complimented by a flaky butter crust. No need for a pie plate, it is oven baked on a sheet pan. *Note: Be sure to prep the pan as directed. Otherwise, you may need to replace it. 

OLD-FASHIONED BLUEBERRY PEACH GALETTE 

Ingredients:

1/3 cup plus 1 tablespoon butter

1 cup flour

1/2 teaspoon sea salt

2-3 tablespoons ice water

3 cups peaches, sliced

1/2 cup blueberries 

2 tablespoons sugar

1/4 teaspoon cinnamon 

1 tablespoon apricot preserves, melted

1 tablespoon brown sugar

2 tablespoons almonds, sliced

Instructions:

Preheat oven to 425°. Cover a baking sheet with foil. Then line it with parchment paper. Make a 9-inch pie crust: cut butter into flour and salt until particles are the size of small peas. Sprinkle in water 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry cleans the side of the bowl. Gather pastry into a ball; shape it into a flattened round on a lightly floured surface. Roll into a 9-inch crust and place on parchment paper. Combine sugar, blueberries, and sugar. Beginning in the center, arrange fruit into a fan, spiraling around the pie. Be sure to leave a border. Fold edges of dough toward the center, pressing gently to seal. The dough only partially covers the fruit. Brush the melted preserves over the fruit and along the edges of the dough. Bake 10 minutes. Reduce the oven temperature to 350° but do not remove the galette. Bake an additional 40 minutes or until lightly browned. Remove the galette from the baking sheet by lifting it with the parchment paper. It needs to cool on a wire rack to keep the bottom from getting soggy. Sprinkle with 1 tablespoon brown sugar. Serve warm. 

* Serving suggestion: Top with a dollop of whipped cream or a scoop of vanilla bean ice cream. 

No-Bake Hazelnut Bars

What’s Cooking in Gail’s Kitchen? Home Cooking: No-Bake Hazelnut Bars! Here you go. A delicious nutty chocolate treat that can be a dessert or a snack. And there is no need to heat up the oven. This combination of dietary coconut fiber and heart-healthy hazelnuts are sure to become your personal favorite. One bar may provide the nutritious energy boost you need to keep going strong. But the question is…..can you stop at just one?

NO-BAKE HAZELNUT BARS

Ingredients:

1/2 cup butter

1/3 milk

1 cup brown sugar, packed

1 cup coconut, flaked

1 cup graham cracker crumbs

1 teaspoon vanilla

1 13-ounce jar of Nutella Chocolate-Hazelnut Spread

Instructions:

Boil butter, milk, brown sugar, coconut, and cracker crumbs in a medium saucepan for 7 minutes, stirring constantly. Mix in vanilla extract.  Line a 9″x13″ pan with club crackers. Pour the filling over crackers. Top another layer of crackers. Warm Nutella in microwave for 20 seconds. Spread over all. Garnish with nut meats. Cool in refrigerator until firm. Cut into squares.

Snickerdoodle Blondies

What’s Cooking in Gail’s Kitchen? Simple Sensations: Snickerdoodle Blondies!  Mention the word “cinnamon” and automatically people have visions of pastry shops and bakeries emitting delectable aromas that seduce the mind and tempt the body with Happy Day dance moves. And who doesn’t like to say “Snickerdoodle”? Bake-and-Go with this all-time favorite recipe.  

SNICKERDOODLE BLONDIES 

Batter Ingredients:

2 2/3 cup flour

2 teaspoons baking powder 

1 teaspoon sea salt

2 cups brown sugar, packed

1 cup butter, melted

2 eggs 

1 teaspoon vanilla extract

Topping Ingredients:

2 tablespoons sugar

2 teaspoons cinnamon

Preheat oven to 350°. Grease a 9″x13″ pan. Mix butter, brown sugar, eggs, and vanilla. Add the baking powder, salt, and flour.  Pour into pan. 

In a small bowl mix together the cinnamon and sugar. Sprinkle over top of dough.  Bake for 25-30 minutes. Remove from oven. Try to wait until the Snickerdoodle Blondies cool down before sinking your teeth into that first bite. Enjoy!

Rainbow Cookies

What’s Cooking in Gail’s Kitchen? Simple Sensations: Rainbow Cookies! Wouldn’t it be nice to tap your ruby slippers together and have a super-easy delicious dessert? You can. Even Dorothy and her friends would find these yummy morsels “no-place-like-home” irresistible.  What a great kid-friendly recipe when school’s out for summer!

RAINBOW COOKIES 

Ingredients:

1 box yellow cake mix

2 eggs

1/2 cup vegetable oil

12-ounce bag of mini M&M candies

15.6-ounce can Buttercream icing

Instructions:

Preheat oven to 350°. In a large bowl, mix together the cake mix, eggs, and oil until moistened. Reserve 1/2 cup M&M candies for decorating. Then gently fold in remaining mini morsels. Form little balls with the dough and place 2-inches apart on ungreased cookie sheet. Bake 5-8 minutes until edges are lightly golden. Remove from cookie sheet and cool slightly on wire racks. Spread frosting over warm cookies and immediately sprinkle each cookie with remaining mini M&M candies. 

Pina Colada Pie

What’s Cooking in Gail’s Kitchen? Simple Sensations: Pina Colada Pie! Sometimes it’s necessary to serve your guests a dessert low in sugar. This one is perfect because it boasts tropical flavor with enough fruity sweetness to satisfy that sugar craving which follows at the end of a meal. Please note you may substitute a sugar-free graham cracker crust for the homemade cookie crust. 

PINA COLADA PIE

Ingredients for Homemade Cookie Crust:

2 cups Macadamia Nut Shortbread Cookies, crushed

1/4 cup butter, melted

Instructions:

Preheat oven to 350°. Mix crushed shortbread cookies and melted butter. Press crumb mixture into a pie plate sprayed with nonstick oil. Bake 10 minutes. Cool before filling. 

Ingredients for Filling:

2 8-ounce blocks of Neufchâtel cheese

1 small box Sugar Free/Fat Free Lemon Jello

1 small box Sugar Free/Fat Free Vanilla Instant Pudding 

4-ounce of Lite Cool Whip

1 8-ounce can crushed Pineapple in Natural Juices, do not drain

1 teaspoon Coconut flavor

Instructions:

Soften Neufchâtel cheese and add other ingredients. Stir until well blended. Pour into pie crust and chill for several hours or overnight. 

*Garnish: Toast 1/2 cup flake coconut in 350° oven for 4 minutes. Watch! Set aside to cool. Fresh strawberries also make an appealing garnish. 

Ice Cream Sandwiches

What’s Cooking in Gail’s Kitchen? Simple Sensations: Ice Cream Sandwiches!  Oh sure, it would be way easier to open a box of treats from your freezer, but once you take the time to bake this cookie crust and fill it with gourmet ice cream, you’ll fill your freezer with this old-fashioned classic instead!

ICE CREAM SANDWICHES 

Ingredients:

4 cups flour

4 teaspoons baking soda

2 teaspoons cinnamon, ground 

1 teaspoon cloves, ground 

1 teaspoon ginger, ground 

1 teaspoon sea salt

1 1/2 cups butter, softened 

2 cups sugar plus 1/2 cup

1/2 cup molasses 

2 eggs

Vanilla Bean Gourmet Ice Cream 

Instructions for Cookie Crust:

Preheat the oven to 375°. Line baking sheet with a silicone baking mat and set aside.

In a large bowl, whisk together flour, baking soda, cinnamon, cloves, ginger, and salt. 

In the bowl of a stand mixer, cream together butter and 2 cups sugar until combined. Add in the molasses and eggs and mix well. Slowly add the flour mixture to the ingredients of the stand mixer and mix until all is combined. Fill a small bowl with the remaining 1/2 cup sugar. Form teaspoon-size dough into balls then gently roll them in the granulated sugar. Place onto baking sheet, two inches apart. Repeat until all the cookie dough has been used. Bake only 10 minutes for soft and chewy results. Let cool on baking sheet for 5 minutes then transfer to a wire rack to cool completely.

Instructions for Ice Cream Sandwiches:

Spread the softened ice cream evenly over one cookie into a layer one inch thick. Top with a second cookie. Press down gently. Place in a ziplock sandwich bag and freeze until hard, about 5 hours. Repeat with remaining cookies. 

Upside-Down Pineapple Bundt Cake

What’s Cooking in Gail’s Kitchen? Upside-Down Pineapple Bundt Cake!  This light and easy alternative for dessert will satisfy your sweet tooth without packing on the pounds. The secret is the tropical taste of pineapple. 

UPSIDE-DOWN PINEAPPLE BUNDT CAKE

Ingredients:

1 box Angel Food Cake Mix

1 20-ounce can of Crushed Pineapple with Juice

1/2 cup brown sugar

Instructions:

Set oven rack to lowest setting. Preheat oven to 350°. Spray Bundt pan with non-stick cooking oil. Sprinkle brown sugar on the bottom of the pan.  Mix the Angel Food Cake Mix with the Crushed Pineapple, including juice, by hand for one minute or until well blended.  Pour into Bundt pan and place in oven on a foil-lined cookie sheet.  Bake for 35-45 minutes until  toothpick comes out clean and the cake is set. Allow to cool for 15-20 minutes before inverting onto a serving plate.

Option:  Garnish with a sprig of tarragon and top with maraschino cherries, stems removed. 

Serving Suggestion

Mixed Berry Sauce:

1 pound of fresh blueberries 

1 pound of fresh mulberries 

1 tablespoon water

1 tablespoon lemon juice

1/2 cup granulated sugar

In a medium sauce pan add berries, water, lemon juice, and sugar. Cook on medium heat, while stirring until the berries reduce down. Change the heat to low setting and press the berries against the side of the pan to make them burst. Continue cooking for 30 minutes until mixture thickens. Remove from heat and cool for 10 minutes. Add 2 drops of lemon extract while stirring with a spoon. Pour into jar and store in refrigerator. 

Hint:  This is delicious on toast or pancakes or ice cream.
