What’s Cooking in Gail’s Kitchen? Graze or Gobble: Fig Jam Pear Puffs! Sweet and spicy pepper jellies or jams make such interesting bedfellows when paired with cheese and fruit. You’ve probably noticed them on a charcuterie tray since cheese has a way of “cooling” the heat that can make hot peppers often intolerant. By adding the honey-like sweetness of ripe figs, the combo becomes a tug-o-war fusion between instant gratification, excitement, and joy to an endorphin rush of pleasant feelings. 

FIG JAM PEAR PUFFS

Ingredients:

8-ounce tube of crescent rolls

4-ounces cream cheese

2 pears, peeled and finely chopped 

1 pinch cinnamon 

1 smidgen ground nutmeg

2 tablespoons blistered jalapeño fig jam

Instructions:

Preheat oven to 375°. Spray a mini muffin tin with nonstick oil. Set aside. Unroll the crescent dough onto a work surface. Press seams together to form a rectangle. Using a pizza cutter, cut dough into 6 rows by 4 rows to make 24 squares. Press one dough square into each muffin cup. Cut cream cheese into 24 cubes. Place one cube of cream cheese into the bottom of each dough-lined cup. Cover with a heaping teaspoon of finely chopped pears. Sprinkle cinnamon and nutmeg over all. Top off with a small dollop of jalapeño fig jam. Bake 10-12 minutes or until the edges turn golden brown. Cool 5 minutes and then transfer each pear puff to a wire rack. Serve warm. 

Unfinished Pecan Pie

What’s Cooking in Gail’s Kitchen? Food With Soul: Unfinished Pecan Pie! Before you ask…No, this pie is not made with raw dough and there’s no ingredient missing from the recipe. The “unfinished” word in the title simply means you may choose to eat it as is OR top it with sweetened whipped cream, buttery streusel, or caramel sauce. The choice is yours. ‘Course if I wanted to be snarky, I could say it is unfinished because there’s still a piece or two left in the pie plate. Any takers?

UNFINISHED PECAN PIE

Ingredients:

1 prepared pie crust, refrigerated

2/3 cup sugar

1/3 cup butter, melted

1 cup light corn syrup

1/2 teaspoon sea salt

3 eggs, room temperature

2 cups pecan halves and pieces

Instructions:

Preheat oven to 350°. Spray a 9-inch pie plate with nonstick oil. Unfold pie crust and ease into plate, pressing firmly against the bottom and sides. Fold and roll pastry edges under, even with the rim of the plate. Flute edges or press with fork tines. Set aside. In a medium bowl, combine sugar, melted butter, corn syrup, sea salt, and eggs. Beat with an electric hand mixer until well blended. Stir in pecans. Pour mixture into pastry-lined pie plate. Bake 40-50 minutes or until center is set. Allow to cool for two hours. Slice and Serve.

Quark Raspberry Swirl

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Quark Raspberry Swirl! Quark, quark, quark. Yep…it’s a real thing. Probably the easiest way to explain what quark is would be to say, “Think about a cross between sour cream and greek yogurt”. It has the smoothness of both when mixed with veggies or fruit. Obviously when using raspberries, a little sugar makes it super-delicious. I like the fresh pleasant zing of lime juice mixed in, too. And what can I say? The coconut flavor just makes the dessert that much better.

QUARK RASPBERRY SWIRL

Ingredients:

2 cups quark

I teaspoon coconut extract

1/4 cup powdered sugar

2 teaspoons lime juice

8 ounces frozen raspberries, thawed

Lime Zest, for garnish

Instructions:

Reserve several whole raspberries for garnish. Set aside. In a medium mixing bowl, combine quark, coconut extract, powdered sugar, and lime juice. Mix well. Fold in thawed raspberries, gently swirling until they leave pink streaks. Scoop into dessert cups. Top each with a whole raspberry. Garnish with lime zest.

Irish Apple Cake

What’s Cooking in Gail’s Kitchen? Bright Ideas: Irish Apple Cake! I can practically hear your first question: How is this cake different from a traditional one? Well, as you mix the ingredients, you may notice the batter is pretty thick and dense. It’s not pourable like a cake mix, that’s for sure. I guess you could compare it somewhat to a sponge cake…..with apples. Plus topping. Streusel is what makes it extra-special, if you know what I mean. When it’s all said and done, you can definitely justify eating it as an early breakfast, a midday brunch, an afternoon pick-me-up, or a late night dessert. If you were at my house, you’d see my husband keeps a spoon propped inside the cake dome. Because, sometimes…you know, you just can’t resist one bite.

IRISH APPLE CAKE

Ingredients for Streusel Topping:

3/4 cup flour

1/4 cup rolled oats

1/2 cup sugar

1/8 teaspoon sea salt

6 tablespoons butter, cold

Instructions for Streusel Topping:

In a medium bowl, combine flour, rolled oats, sugar, and sea salt. Mix well. Add the cold butter, using a fork. Blend the butter into the flour mixture until it resembles coarse breadcrumbs. Set bowl aside in the refrigerator.

Ingredients for Irish Apple Cake

1/2 cup butter, room temperature

1/2 cup sugar

2 teaspoons vanilla extract

2 eggs

1 1/4 cup flour

1 teaspoon baking powder

1 teaspoon cinnamon

1/8 teaspoon sea salt

3 tablespoons milk

3 Granny Smith apples, peeled, cored, and sliced thin

Instructions for Irish Apple Cake:

Preheat oven to 350°. Butter and line a 9” round baking dish. Set aside. In a large bowl, cream together butter and sugar until light and fluffy. Add vanilla extract. Beat eggs, one at a time, and add to creamed mixture. In a separate bowl, whisk together flour, baking powder, cinnamon, and sea salt. Fold the dry ingredients into the wet ingredients. Gradually add milk while mixing as the batter forms. Transfer batter to the prepared baking dish. Arrange a single layer of sliced apples over batter. Cover the apples with the streusel topping. Bake 60-65 minutes, or until a cake tester comes out clean. Cool 10 minutes before slicing. Serve warm or at room temperature.

Perhaps it conjures up childhood memories. Perhaps the earthy spices and syrupy sweetness crank up your comfort level. No matter the hypnotic effect, apple dumpling dreams can reflect the way we look at our lives. Do we deny sweets or do we nourish our bodies? “An apple a day keeps the doctor away”. It’s all about perspective, moderation, and control. Thank goodness we have freedom of choice. When it comes to apple dumplings, especially now, dreams really do come true.

APPLE DUMPLING DREAMS

Ingredients:

4 Granny Smith apples, peeled and cored

1 package refrigerated pie crusts

4 star anise pieces

Ingredients for Syrup:

3/4 cup sugar

1 cup water

1/8 teaspoon cinnamon

1/8 teaspoon nutmeg

2 tablespoons butter

Ingredients for Apple Filling:

1/4 cup brown sugar

1/2 teaspoon cinnamon

1/8 teaspoon nutmeg

1 tablespoon butter, room temperature

Instructions:

Preheat oven to 375°. Lightly grease a 9” square baking dish; set aside. To make the syrup, combine sugar, water, cinnamon, and nutmeg in a saucepan. Bring to boil over medium-high heat, stirring constantly. Reduce heat and simmer for 10 minutes, stirring occasionally. Remove from heat and stir in 2 tablespoons butter. Set aside. In a mixing bowl, combine ingredients for apple filling. Mix brown sugar, cinnamon, nutmeg, and butter until consistency is crumbled. Cut each pie crust in half. Form each half into a ball and place on a lightly floured surface. Roll into 8-inch circles. To assemble, place an apple in the center of a dough circle. Fill the empty core with crumb filling. Fold the dough over the apple, pinching at the top to seal. Transfer apple dumplings to the baking dish. Drizzle with syrup. Place a star anise on each apple. Bake for 40-45 minutes until crust is golden brown. Tent with foil, if necessary, to prevent over browning. Serve warm.

Dulce de Leche Turtle Bars

What’s Cooking in Gail’s Kitchen? Cheerful Choices: Dulce de Leche Turtle Bars! So today we learn that Dulce de Leche is another name for slow-cooked caramelized milk. And before you scroll down, I assure you it’s one of the easiest toppings you’ll ever make, and certainly worth your time. It’s Heaven in a jar….lusciously sweet and creamy. However, if you make it too far in advance, the most difficult challenge will come when you get the urge to dip a spoon into the jar to drizzle the decadent sauce over a scoop of ice cream. I know what you’re thinking…..but, Gail, it’s only one spoonful. Amirite? Don’t do it. Otherwise you’ll need another can of sweetened condensed milk for these turtle bars.

DULCE DE LECHE TURTLE BARS

Ingredients for the Crust:

2 cups flour

1/3 cup brown sugar

3/4 cup butter, softened

1/4 teaspoon sea salt

Ingredients for the Toppings:

1 1/4 cups Dulce de Leche*

1/4 cup heavy whipping cream

2 large egg yolks

2 teaspoons vanilla extract

3/4 cup semisweet chocolate morsels

3/4 cup pecans, chopped

*NOTE:

Dulce de Leche must be made in advance. Preheat oven to 425°. Pour a 14-ounce can of sweetened condensed milk into a 9” pie pan. (This will equal 1 1/4 cups.) Cover with foil. Carefully place the pie pan into a larger shallow pan. Fill the larger pan with 1/2” hot water to surround the pie pan. Bake 2 hours or until sauce is thick and caramel in color. Remove larger pan from oven. Carefully remove the pie pan; set aside for 15 minutes to cool. Pour Dulce de Leche into a jar until ready to use. Store in the refrigerator, if made days in advance.

Instructions for the Crust:

Preheat oven to 350°. Line a 9” square baking dish with parchment paper, leaving extra over the edges for easier removal of the dessert. Spray the parchment paper with nonstick oil. Set aside. Using a mixing bowl, combine flour, brown sugar, butter, and sea salt. Stir well until mixture resembles coarse crumbs. Press mixture into the bottom of prepared pan. Bake 20 minutes. Remove pan from oven; allow to cool for 5 minutes.

Instructions for the Toppings:

In a mixing bowl, combine Dulce de Leche, heavy whipping cream, egg yolks, and vanilla extract. Stir well; pour mixture over crust. Sprinkle chocolate morsels and chopped pecans over filling. Bake 20 minutes, or until set. Remove pan from oven. Cool completely before cutting onto bars.

OMG Pumpkin Spice Squares

What’s Cooking in Gail’s Kitchen? Stir. Spread. Flip. Repeat: OMG Pumpkin Spice Squares! It hardly seems fair to have to wait all year before enjoying a pumpkin spice dessert. But here we are…..ready to break the rules. I feel a rainy day qualifies as a justification for making exceptions. Decadent cinnamon, buttery pumpkin, crumbly topping. So I ask you, are you the exception or are you the rule?

OMG PUMPKIN SPICE SQUARES

Ingredients for Cake:

15-ounce box yellow cake mix, divided

1/2 cup butter, softened

2 15-ounce cans real pumpkin

4 beaten eggs

2/3 cup light cream

1/2 cup sugar

1/2 teaspoon vanilla extract

1/2 teaspoon sea salt

2 teaspoons pumpkin spice

Ingredients for Topping:

1/2 cup sugar

1 teaspoon cinnamon

1/4 cup butter, softened

1 cup reserve cake mix

1/4 cup pumpkin seeds

Instructions:

Preheat oven to 350°. Grease the bottom of a 9”x13” pan with butter. Set aside. In a mixing bowl, reserve one cup of cake mix for the topping. Set aside. In another bowl, combine remaining cake mix and softened butter. Mix until blended. Press the dough in the bottom of the prepared pan. Smooth into an even layer. In a food processor or stand mixer, combine real pumpkin, beaten eggs, light cream, sugar, vanilla extract, sea salt, and pumpkin spice. Beat until smooth and creamy. Pour mixture over the dough. To make the topping, add sugar, cinnamon, and softened butter to the reserve cake mix. Stir until crumbly. Sprinkle over the pumpkin layer. Top with pumpkin seeds. Bake for 45-50 minutes, or until a knife comes out clean when tested near the center. Allow cake to cool completely before cutting into squares.

Peanut Butter Fudge

Eating My Way Through the Holidays! Sweet Celebrations: Peanut Butter Fudge! Once a year, my mother would send me a batch of her homemade peanut butter fudge. And, truthfully, I seldom shared it. Not because I was selfish, because it was THAT good! Now that she is no longer able to give me that glorious care package, I have assumed her role for others. The baton has been passed so the family tradition continues. Every peanut butter-lover should try some for yourself. One bite of this melt-in-your-mouth creamy fudge may lead you start a tradition to “Pay it Forward”.

PEANUT BUTTER FUDGE

Ingredients:

3 cups sugar

3/4 cup butter

2/3 cup evaporated milk

1 cup natural peanut butter, creamy

1 teaspoon vanilla

7-ounce jar marshmallow creme

Instructions:

Combine butter, sugar, and milk in a 2-quart pan. Bring to full rolling boil, stirring constantly. Continue boiling over medium heat for four minutes. Stir constantly to prevent scorching. Be sure to scrape sides as well. Remove from heat. Work quickly stirring in peanut butter until completely melted. Add marshmallow creme and vanilla. Mix well. Pour into greased 9″x13″ pan. Cool at room temperature; cut into squares.

Java Chip Cookies

If you don’t believe me, check out the neighborhood coffee shops and you’ll find a local place where people hang out. It’s not just the free Wi-Fi either. Coffee is one of the most popular beverages around, especially now with intense flavorings topped with a mound of whipped cream. Transform the blend of coffee and sugar into a cookie, charged with caffeine, and you’ll be as popular as the Pied Piper. People will follow you anywhere!

JAVA CHIP COOKIES

Ingredients:

1 cup butter, room temperature

1 1/2 cups sugar

1/2 cup brown sugar, firmly packed

3 tablespoons espresso instant coffee

1 tablespoon vanilla extract

2 eggs

3 1/2 cups flour

1/2 teaspoon baking soda

1/2 teaspoon sea salt

1 cup toffee bits

1/4 cup chocolate covered espresso beans, roughly chopped

1/4 cup mini chocolate chips

Instructions:

Preheat oven to 350°. Line two baking sheets with parchment paper. Set aside. In a food processor beat butter, sugar, brown sugar, espresso instant coffee, and vanilla extract until fluffy. Add eggs, one at a time, until blended. Combine flour, baking soda, and sea salt in a separate bowl. Gradually add flour mixture to butter mixture until it forms a dough. Fold in toffee bits, chopped espresso beans, and mini chocolate chips. Chill dough slightly. Using a melon ball scoop, drop cookie dough onto a baking sheet. Bake 10-12 minutes. Do not burn. Remove from oven. Let cool for 2 minutes. Dredge java chip cookies in sugar, if desired, before transferring them to a wire rack. Repeat with remaining dough. Yield: 3 dozen, large cookies.
