I usually keep cooked, frozen shrimp on hand, which can be thawed in a few minutes. But I have also used tiny canned shrimp, which work very well. Obviously, the canned shrimp should be drained first. A few steps later and you’re good to go.

CREAM CHEESE SHRIMP DIP

Ingredients:

8 ounces cream cheese, room temperature

8 ounces cooked shrimp, tails removed and cut into chunks

10 ounces cocktail sauce, prepared

1/4 teaspoon dill weed

1 green onion, thinly sliced

Instructions:

Spread a thin layer of softened cream cheese onto a serving dish. Add a layer of cocktail sauce, expanding to the edges. Arrange bite-sized shrimp pieces over all. Sprinkle with dill weed. Garnish with green onion strips. Chill one hour. Serve with crackers.

Braunschweiger Swiss Bagel

Then again, I’m a Francophile. Sometimes I choose to blend braunschweiger with creamy, soft Neufchâtel cheese so I can smear it over a crusty baguette. The slightly smoky flavor goes well with a glass of red wine, especially at the end of the day. The secret to enjoying braunschweiger is to find a brand that appeals to your palate. For me, I prefer a brand that comes from Germany. It seems to be made from high-quality ingredients and never disappoints.

BRAUNSCHWEIGER SWISS BAGEL

Ingredients:

1 egg bagel, sliced horizontally

2 ounces braunschweiger

1 slice Swiss cheese

1 red onion ring, thinly sliced

Fresh dill, for garnish

Instructions:

Lightly toast egg bagel. Place half of the Swiss cheese on bottom portion of bagel. Spread braunschweiger over top. Add remaining half of Swiss cheese. Top with thinly sliced red onion ring. Warm slightly for 10 seconds in microwave. Garnish with fresh dill. Serve immediately.

Ingredients for Hummus:

15-ounce can chickpeas, drained

1/2 cup tahini paste

1/4 cup olive oil

2 tablespoons lemon juice

1/4 teaspoon garlic powder

1/4 teaspoon cumin powder

1/2 teaspoon sea salt

1 teaspoon lemon olive oil

1 tablespoon capers

Using a food processor, pulse chickpeas until smooth. Add tahini paste, olive oil, lemon juice, garlic powder, cumin powder, and sea salt. Process until mixed. Transfer hummus to a shallow bowl. Drizzle with lemon olive oil. Garnish with capers.

Ingredients for Dill Dip:

4 ounces Neufchâtel cheese, softened

1 tablespoon prepared horseradish

1 tablespoon dill weed

1 teaspoon capers

1 tablespoon chives, chopped

Combine Neufchâtel cheese and prepared horseradish. Stir until smooth. Fold in dill weed, capers, and chives. Refrigerate one hour before serving.

I get crazy happy when I discover it, as someone who loves home-cooking. Not only are there a dozen variations on egg salad, but each seems to add a unique twist. This recipe is pretty basic so you can get creative from here. Think avocado, dill, bacon, or red pepper flakes. Looks like I need to buy more eggs. Happy Boiling!

X-CELLENT EGG SALAD SLIDERS

Ingredients:

8 eggs, hard boiled and peeled

1/4 cup mayonnaise

1/4 cup dill pickle relish

1 tablespoon red onion, diced

1 tablespoon yellow mustard

1/4 teaspoon sea salt

8 slider buns

4 romaine lettuce leaves

2 tomatoes, sliced

1 tablespoon Everything But Bagel seasoning

Instructions:

In a medium bowl, whisk together mayonnaise, dill pickle relish, red onion, yellow mustard, and sea salt. Chop the eggs and add to the bowl. Stir gently until well blended. Cover and chill in the refrigerator one hour. Assemble sliders using the buns, egg salad, romaine lettuce leaves, and tomato slices. Sprinkle with Everything But Bagel seasoning. Serve.

What’s Cooking in Gail’s Kitchen? Equal Measures: Knäckebröd Cucumber Salmon Crispbread! Some days time is in short supply and all we can hope for is a “working lunch”. At least you can treat yourself to something a little bit gourmet that says “I’m really worth it.” Knäckebröd whole grain crispbread is mighty enough to hold a layer of herbed cream cheese, a mini slice of seedless cucumber, wild Alaskan smoked salmon, fresh dill weed and chopped chives. How’s that for refueling your work day? Be forewarned: your coworkers may gather round the desk in curiosity while you’re nibbling away on finger food. Just hold up a single digit and keep nibbling. After all, it’s impolite to talk with your mouth full.

KNÄCKEBÖRD CUCUMBER SALMON CRISPBREAD

Ingredients:

4-6 slices Knäckebröd sourdough crispbread

8 ounces Neufchâtel cheese, softened

1 tablespoon Italian herb seasoning mix

2 mini seedless cucumbers, sliced

4 ounces Wild Alaskan applewood smoked salmon

Sprig of dill weed

Fresh chives

Instructions:

Combine Neufchâtel cheese and Italian seasoning mix. Stir until blended. Store in a covered container. To assemble, lightly spread crispbread with a layer of herbed cream cheese. Next add one or two slices of seedless cucumber. Top with smoked salmon. Garnish with dill weed and fresh chives.

Broiled Bay Scallops

What’s Cooking in Gail’s Kitchen? Equal Measures: Broiled Bay Scallops! Tender and sweet, bay scallops are a miniature version of the large-size sea scallops. When sautéed in garlic butter and dill, with a light squeeze of lemon juice, the end result is a splendid appetizer. Be festive and serve them on a half shell.

BROILED BAY SCALLOPS

Ingredients:

1 tablespoon olive oil

1 tablespoon butter

1 clove garlic, minced

1 pound bay scallops

1/8 teaspoon red pepper flakes

1/8 teaspoon dill weed

1/4 teaspoon sea salt

1 teaspoon lemon juice

1 cup mayonnaise

1 cup parmesan cheese, grated

1/8 teaspoon garlic powder

Instructions:

Preheat oven to 350°. Warm olive oil and butter in a skillet over medium heat. Add garlic clove; sauté until fragrant, 2-3 minutes. Increase heat to medium-high, add scallops. Sprinkle with red pepper flakes, dill weed, and sea salt. Sauté until lightly browned. Squeeze lemon juice over all. Remove from heat. Combine mayonnaise, grated parmesan cheese, and garlic powder. Gently fold in bay scallops. Transfer mixture to a greased casserole dish or clam shells. Bake 20 minutes. Broil 3-4 minutes on High until tops are golden. Watch carefully. Remove from oven. Serve with bagel chips.

Unleavened Bread is a quick and easy flatbread made with flour, salt, olive oil, and water. No yeast needed. Choose between a crispy texture, like I have here for that luscious golden color, or shorten the baking time for softer, more chewy results. Eat it plain, slather it with French butter, or turn it into a personal-size pizza flatbread. You can thank me later.

UNLEAVENED BREAD

Ingredients:

1 1/3 cup flour

1/4 teaspoon sea salt

1/4 cup olive oil

1/4 cup water

Dill weed for garnish (optional)

Instructions:

Preheat oven to 400°. Brush a baking sheet with olive oil. Set aside. Combine flour and salt in a food processor. Pulse to mix. Gradually drizzle in the oil on Low speed. Dough will resemble crumbs. Continuing on Low speed, gradually add water until dough forms a ball. Turn dough onto a lightly floured surface. Knead until dough is elastic and smooth, but not sticky. Divide into 6 equal balls. Pat each ball into a circle, using a rolling pin or your hands. Transfer flattened dough onto prepared baking sheet. Do not crowd. Bake in two steps, if necessary. Use a fork to lightly prick the dough. Brush each flatbread round with olive oil and sprinkle with dill weed. Bake 15 minutes until golden brown. Cool on wire rack.

Oval Pizza Rolls

When it hits me and the commercials seem to become more frequent, my willpower eventually wanes and I succumb to the nibbling temptation. I’m here to say, this is a perfect bedtime snack. Just the right sized portion to satisfy those late night cravings under the bluish glow of a 42-inch screen. You no longer have to sit and devour an entire pizza while being absorbed in your favorite program or professional sports. Permission granted.

OVAL PIZZA ROLLS

Ingredients:

1 prepared pizza crust

1/2-3/4 cup pizza sauce

3 ounces provolone cheese, sliced

4 ounces smoked ham, thinly sliced

2 ounces pepperoni slices

1 cup mozzarella cheese, shredded

1 tablespoon parmesan cheese, shredded

3 tablespoons olive oil

2 tablespoons cornmeal

1-2 tablespoons butter, room temperature

1 teaspoon dill weed

Garlic salt, to taste

Instructions:

Preheat oven to 400°. Spray a 9”x9” pan with nonstick oil. Set aside. Remove pizza dough from can to a lightly floured work space. Unroll dough. Spread with pizza sauce. Layer with provolone cheese, ham slices, and pepperoni slices. Sprinkle with mozzarella cheese and parmesan cheese. Beginning at the long end, roll up dough. Brush with olive oil. Sprinkle with cornmeal. Wrap in parchment paper, seam side down. Freeze for 20 minutes to chill. Remove dough roll from freezer. Slice into 1 1/2-inch ovals. Transfer to prepared pan, slice side up. Bake in oven for 25 minutes or until lightly browned. Brush with butter; sprinkle with dill weed and garlic salt.

You only need a half a pound for these appetizers, but trust me, you’ll finish it later on. Not only is the flavor unsurpassed, but the mere texture of thick bacon combined with the garlic pickles is highly addictive. Go ahead, slather them in creamy buttermilk ranch dressing for an unbeatable combination. You’re Welcome!

DILL PICKLE BACON SPEARS

Ingredients:

12 dill pickle spears, zesty garlic

6 slices thick bacon, cut in half lengthwise

1/3 cup buttermilk ranch dressing

Chives for garnish

Instructions:

Preheat oven to 350°. Arrange the 12 bacon strips on a wire rack that is placed on a foiled-lined baking sheet. Bake 25 minutes. Remove from oven and cool until easy to handle. Wrap each dill pickle spear with one strip of bacon, seam side down. Secure with 1-2 toothpicks. Return dill pickles to wire rack and bake 25-30 minutes longer until bacon is crisp. Remove from oven and arrange on a platter. Pour buttermilk ranch dressing into a dip bowl. Garnish with fresh chives. Serve warm.
