Save time with premade pizza dough offered for purchase in the deli department of your local grocery store or nearby Italian market. No need to start from scratch when you can cut to the chase and pretend to be a real pizzaiolo using their premade version. Keep in mind, a 10-12 inch disc should be the end result. Leave the edges of the base raised a little to hold all the toppings. Sound easy? You’ll never know until you try. 

DOUBLE CHEESE PEPPERONI PIZZA 

Ingredients: 

1 ball of Deli Pizza Dough, room temperature 

1/2 cup pizza sauce

1 cup mozzarella cheese, shredded 

4 ounces sliced pepperoni 

1/2 yellow onion, sliced

4 ounces fresh mozzarella, sliced 

1/4 teaspoon dried oregano 

1/4 teaspoon dried basil

1/8 teaspoon garlic powder

Instructions:

Preheat a pizza stone in a 425° oven. Carefully remove from oven. Hand stretch the pizza dough to fit the stone for a rustic feel. Prick the dough to prevent air pockets during baking. Par-bake the dough for 5 minutes before adding the ingredients. Place the pizza stone on a heat-proof surface. Spread the sauce evenly on top of the dough. Layer the shredded mozzarella cheese over the pizza sauce. Arrange pepperoni slices and yellow onion slices on top. Add the fresh mozzarella slices over all. Sprinkle with dried oregano, basil, and garlic powder. Bake 10-12 minutes longer. Serve hot.

Pre-dinner drinks are not meant to get you sloshed and buzzed. Instead be pampered, let your hair down, and have some fun. You deserve it.

NUTMEG CRAFTED COCKTAIL

Ingredients:

1.5 ounces double-oaked bourbon

1 ounce grand marnier

1 tablespoon lemon juice

3 tablespoons orange juice

Dash nutmeg

Orchids and nutmeg, for garnish

Instructions:

Using a cocktail shaker, combine double-oaked bourbon, grand marnier, lemon juice, orange juice, and nutmeg. Add the lid and shake the contents like a mixologist for several minutes to blend everything together. Fill a martini glass with crushed ice. Pour the cocktail over the ice. Garnish with fresh orchids and a sprinkling of nutmeg. Serve immediately.

DOUBLE-SHOT ESPRESSO WHIP

Ingredients:

2 double shots espresso toast coffee

Whipped cream

Pinch cinnamon

Ingredients:

Fill two demitasse cups with double shots of freshly brewed espresso. Top with swirls of whipped cream. Sprinkle cinnamon powder over all. Serve immediately.

What’s Cooking in Gail’s Kitchen? Here Come the Holidays: Double Lemon Poppyseed Bread! Everyone has their favorite flavors and foods that remind them of happier times. A good friend of mine recently lost her husband, after challenging years with a slow-progressing disease. When I stopped by to visit her with a gift of food, it created an unexpected see-saw of emotion. At first, she was happy and delighted because it brought back memories of early morning get-togethers for Bible study at a local coffee shop. We’d laugh, chat, share, or reflect on scripture over coffee and pastries before heading off to work. It was a wonderful way to begin the day, often shifting gears from a trying mindset to a positive outlook. The emotional see-saw tipped from high to low that day when she realized how uncertain her future has become in consequence of widowhood magnified by isolation during a pandemic. Let us strive to remember the Golden Rule: “In everything, do to others what you would have them do to you.”

DOUBLE LEMON POPPYSEED BREAD

Ingredients for Bread:

16.25-ounce box white cake mix

3.5-ounce vanilla flavored instant pudding, powdered

4 eggs, room temperature

1 tablespoon lemon juice, freshly squeezed

1/2 cup vegetable oil

1 cup hot water

1 tablespoon lemon citrus peel

2 tablespoons poppyseeds

Ingredients for Icing:

2 cups powdered sugar

1 tablespoon butter, softened

1 teaspoon lemon juice, freshly squeezed

1/2 teaspoon vanilla extract

2-4 tablespoons light cream, slightly warmed

Lemon zest, for garnish

White nonpareil sprinkles, for garnish

Instructions:

Preheat oven to 350°. Line two loaf pans with parchment paper. Set aside. In a large bowl, combine white cake mix, vanilla pudding mix, eggs, lemon juice, vegetable oil, and hot water. Beat on Low speed for 1 minute. Scrape down sides of bowl. Increase speed to Medium setting; beat 2 minutes longer. Fold in lemon citrus peel and poppyseeds. Pour batter into prepared loaf pans. Bake 35-40 minutes or until a cake tester comes out clean. Cool loaves in pans for 10 minutes before transferring to a wire rack. To glaze, combine powdered sugar, softened butter, lemon juice, and vanilla extract. Stir to blend. Slowly add the warmed cream, stirring constantly for a smooth consistency. Drizzle over Lemon Poppyseed Loaves. Garnish with lemon zest and nonpareil sprinkles.

Double-Decker Shrimp Nachos

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Double-Decker Shrimp Nachos! Get set for a taste extravaganza that will implode inside your mouth. Talk about a nacho upgrade. It just may kick the ordinary version to the curb. Look at the ingredient list: sautéed shrimp, gooey cheeses, cayenne peppers, and fresh veggies. Double-Decker means two layers of mouthwatering goodness. Better add a side of plain yogurt or sour cream to control the fire, just in case. Keep ingredients on hand. You’re going to end up making it twice!

DOUBLE-DECKER SHRIMP NACHOS

Ingredients:

11-ounce bag corn tortilla chips

12-ounce bag large cooked shrimp, peeled, deveined, and tails removed

1-2 tablespoons olive oil

1/2 teaspoon red pepper flakes

1 teaspoon crushed oregano

1/2 teaspoon garlic salt

8-ounces Mexican cheese blend, finely shredded

2 Roma tomatoes, chopped

1/2 cup corn, frozen and thawed

4-5 green onions, snipped

1 avocado, sliced

1 cup sour cream or plain yogurt

Instructions:

Preheat oven to 400°. Spray a 9”x13” glass dish with nonstick oil. Set aside. In a large skillet over medium heat, warm olive oil. Arrange shrimp in a single layer. Sprinkle with red pepper flakes, crushed oregano, and garlic salt. Turn shrimp to brown both sides. Remove from heat. Repeat if necessary until all shrimp is sautéed. Line bottom of glass dish with a single layer of corn tortilla chips, slightly overlapping. Place half the shrimp over chips. You may cut the shrimp into bite-size pieces. Sprinkle 1 cup of Mexican cheese blend over shrimp. Next top cheeses with one chopped tomato and corn. Using a kitchen shears, snip 2 green onions into bite-size pieces randomly over top. Repeat process for second layer, beginning with tortilla chips. Bake in preheated oven for 15-20 minutes or until cheese is melted. Remove from oven. Garnish with sliced avocado and a dollop of sour cream. Sprinkle with red pepper flakes for extra flavor. Serve warm.

Double Chocolate Skillet Brownie

Maybe it’s the butter and brown sugar that makes them so delicious. Or it might be the smidgen of peanut butter mixed with real vanilla extract. Lest we not forget the main attraction: dark chocolate and semi-sweet chocolate for that rich delectable aftertaste once your teeth sink in. Mmmm. Pass me the milk, please.

DOUBLE CHOCOLATE SKILLET BROWNIE

Ingredients:

6 tablespoons butter, room temperature

1/3 cup crunchy natural peanut butter

3/4 cup brown sugar

1 large egg

2 teaspoons vanilla

1 cup flour

2 tablespoons cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon sea salt crystals

1 1/2 cup semi-sweet chocolate chips

1/4 cup white chocolate chips (optional), for garnish

2 tablespoons walnuts, chopped (optional)

Instructions:

Preheat oven to 350°. Grease a 10″ iron skillet and set aside. In a stand mixer, combine butter, peanut butter, and brown sugar on low speed. Add egg and vanilla extract. Gradually mix in flour, cocoa, baking soda, and sea salt crystals. Fold in chocolate chips. Transfer batter to iron skillet. Spread evenly. Sprinkle with white chocolate chips and chopped walnuts. Bake until set in center and pulling away from sides, 20-24 minutes. Let cool 10 minutes. Cut into pie-shaped wedges. Serve warm.
