Granted they were always part of the dinner menu, but nonetheless they were served. Baked potatoes, mashed potatoes, scalloped potatoes, boiled potatoes, or roasted potatoes. If there were leftover mashed potatoes, the next day they were transformed into crispy pan-fried potato pancakes. Leftover boiled potatoes became old-fashioned riced potatoes. Baked potatoes magically became twice-baked potatoes topped with crunchy bacon and melted cheese. You see, without the microwave as a kitchen staple, women had to be more creative as well as resourceful.

VEGETARIAN EGG BAKE

Ingredients:

1 pound red potatoes

1/2 yellow onion, chopped

3 tablespoons light cream

1/4 teaspoon garlic powder

1 tablespoon smoked paprika

1/2 teaspoon seasoned salt

1/4 teaspoon red pepper flakes

3-4 large eggs

1/2 cup sharp cheddar cheese, shredded

Chives, for garnish

Instructions:

Preheat oven to 400°. Spray a deep dish pie plate with nonstick oil. Set aside. Cut potatoes in half, lengthwise. Then cut in half lengthwise again. Cut onions into chunks. Place potatoes and onions in prepared pie plate. In a small bowl, mix light cream, garlic powder, smoked paprika, seasoned salt, and red pepper flakes. Pour over potatoes. Gently toss to coat everything evenly. Bake for 10 minutes; stir and bake 10-15 minutes longer, or until potatoes are tender. Remove from oven. Using a spoon, create a well in the center. Crack eggs in the middle; sprinkle with shredded cheddar cheese. Return to oven. Continue baking until eggs have set, 7-12 minutes depending on desired firmness of yolk. Remove from oven, sprinkle with chopped chives. Serve warm.

Blackberry Griddle Pancakes

As much as it comes from habit, don’t do it. Also, always combine dry ingredients and wet ingredients separately before folding them together. It means more dishes, but it’s worth it. Baking soda and baking powder actually create that wonderful light texture that fills the pancake with air. So, that being said, are you ready to give it a whirl? Remember: a good cook still eats the mistakes.

BLACKBERRY GRIDDLE PANCAKES

Ingredients:

2 1/4 cup flour

1/3 cup sugar

3/4 teaspoon sea salt

1/2 tablespoon baking powder

2 teaspoons baking soda

1 cup milk

1/4 cup vegetable oil

1 tablespoon vanilla extract

1/4 cup apple cider vinegar

1/4 cup sour cream

2 eggs

Instructions:

Preheat griddle to 375°. For gas stove griddles, set knob at medium-low setting for 10-15 minutes. While griddle is heating, sift flour into a bowl. Add sugar, sea salt, baking powder, and baking soda. Mix well. In another bowl, combine milk, vegetable oil, vanilla extract, cider vinegar, sour cream, and eggs. Mix well. Add the dry ingredients to the wet ingredients. Gently fold together, without over mixing. Allow the batter to rest for 5 minutes. The batter will be thick and bubbly. Lightly oil the heated griddle with butter. Gently pour 1/4 cup pancake batter onto the griddle. Do not overcrowd. Allow the pancakes to cook until bubbles appear around the edges, about 4 minutes. Then flip pancakes and cook 2 minutes longer until done. Remove from griddle and serve warm pancakes with creamy butter, fresh blackberries, and pure maple syrup.

Zucchini Onion Chips

But have you ever thought about an appetizer using a can of those classic crispy fried onions? It’s definitely a game-changer. Hear me out. Forget the holiday green bean casserole for a minute as you dip a fork into the can to nibble on these crunchies before tossing them onto a garden salad. Who can resist a sampling of that unique onion flavor? Not me. Now send everyone out of the house so you can work your magic. When they return, their mouths will begin to drool at the aromas from the kitchen. I’m guessing no one will suspect you disguised heart-healthy zucchini wrapped up in a delicious onion crust.

ZUCCHINI ONION CHIPS

Ingredients:

1 medium zucchini, sliced into rounds

Coarse salt

Vegetable oil, for frying

1 large egg, beaten

1 tablespoon flour

1/2 cup Italian breadcrumbs

1/2 cup crispy fried onion rings, crumbled

Ranch dressing, for dipping

Instructions:

Line a baking sheet with paper towels. Place a single layer of zucchini rounds on top. Sprinkle with coarse salt. Cover with another layer of paper towels. Press down. Allow to sit for 10 minutes to draw out excess moisture. In a wide skillet, add vegetable oil to be 1/4” deep. Warm oil over medium-high heat. In a shallow dish, combine flour, breadcrumbs, and crumbled onion rings. Mix well. Dredge one zucchini round in beaten egg and then breadcrumb mixture, coating completely. Place in the skillet; repeat until skillet is full. Do not allow zucchini rounds to touch each other. Cook 2 minutes per side until crispy and golden brown. Transfer zucchini chips to a paper towel-lined plate. Sprinkle with coarse salt. Repeat with remaining zucchini. Serve immediately with ranch dressing for dipping.

Toasted Cheese Ravioli

Take a walk on the wild side by turning dumpling-style pasta dough into a flavorful, tart, and cheesy appetizer. Panko breadcrumbs provide a crunchier coating that taste more like a fried shell when baked. This is due to the fact that panko breadcrumbs are made from crustless bread, thereby making them have an airier texture. The results are amazing.

TOASTED CHEESE RAVIOLI

Ingredients:

8-ounces fresh cheese ravioli, found in the refrigerated section of the grocery store

1 egg

1 tablespoon milk

1/2 cup plain panko breadcrumbs

2 tablespoons grated parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon kosher salt

Marinara sauce, for dipping

Instructions:

Preheat oven to 425°. Spray a wire rack with nonstick oil. Place rack on a baking sheet. Set aside. In a shallow dish, whisk together egg and milk until fully incorporated. In another shallow dish, combine panko breadcrumbs, grated parmesan cheese, Italian seasoning, garlic powder, and kosher salt. Mix well. Working one at a time, dip ravioli in egg mixture. Allow excess to drip off before generously coating both sides with breadcrumb mixture. Place ravioli on prepared wired rack. Leave spaces between ravioli to allow even browning. Spray tops of ravioli with nonstick oil. Bake 10 minutes until ravioli is golden brown. Turn ravioli over and bake 10 minutes longer. Serve immediately with marinara sauce for dipping.

Mashed Potato Fritters

Whether you have leftover mashed potatoes from another meal or purchase your favorite prepared brand at the grocery store, this recipe offers a flavorful experience that is unforgettable. Is it the gooey combination of cheeses? The crisp potato cake with the fluffy center? Or perhaps it’s the zing of spice that piques the taste buds. For me it’s all about nostalgia. My mother made them for supper when I was a child.

MASHED POTATO FRITTERS

Ingredients:

2 cups mashed potatoes

1 tablespoon yellow onion, diced

1/4 cup cheddar cheese, grated

2 tablespoons parmesan cheese, grated

1 egg, whisked

2 tablespoons flour

2 tablespoons cornmeal

1/8 teaspoon garlic powder

1/8 teaspoon cracked black pepper

3/4 cup vegetable oil

Green onion snips, for garnish

Instructions:

In a mixing bowl, combine mashed potatoes, yellow onion, cheddar cheese, parmesan cheese, beaten egg, flour, cornmeal, garlic powder, and cracked black pepper. Mixture should be stiff. By heaping spoonful, form a small disc with your hands, about 1/2”-inch thick. Set aside. Repeat with remaining mixture. In an iron skillet, warm vegetable oil over medium-high heat. Meanwhile, line a baking sheet with paper towels. Place potato cakes in the skillet without touching sides. Cook 2-3 minutes until deep brown. Flip and cook 2-3 minutes longer. Transfer potato cakes to the paper towel-lined baking sheet to absorb excess oil. Place on a platter and garnish with green onion snips. Serve with dipping sauce.

SRIRACHA MAYO

Ingredients:

1/4 cup mayonnaise

2 tablespoons Greek yogurt

1 tablespoon sriracha hot sauce

1 teaspoon lime juice

1 teaspoon soy sauce

1/8 teaspoon kosher salt

Red pepper flakes and green onion snips m, for garnish

Instructions:

In a bowl, combine mayonnaise, Greek yogurt, sriracha hot sauce, lime juice, soy sauce, and kosher salt. Stir until smooth. Garnish with red pepper flakes and green onion snips.

Instant Egg Brekkie

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Instant Egg Brekkie! Don’t you love it when you discover a healthy breakfast that can be prepared in a few minutes? Whenever I traveled with my husband, I seemed to be challenged with minimal ways to prepare meals. The one common denominator was a microwave and hot plate. Let me start off by saying, eggs can be tricky in a microwave. Two secrets I want to share: always pierce the egg yolk (or it will explode) and cook eggs on a low power setting in short segments. If you can master those two things, a dozen eggs will go far in the mini-fridge.

INSTANT EGG BREKKIE

Ingredients For One Serving:

3-5 fresh baby spinach leaves, for charring

1 nip seasoned salt

6-7 fresh baby spinach leaves

1/2 teaspoon water

1 slice cherrywood deli ham, gently torn

1 teaspoon feta cheese, crumbled

1 large egg

1 pinch Herbes de Provence seasoning

Garnish with charred spinach leaves and radish slices

Baguette slices

Instructions:

Preheat stovetop grill pan on highest setting for one minute. Spray baby spinach leaves with nonstick oil. Sprinkle with seasoned salt. Place the prepared spinach leaves directly on the grill pan. As they begin to char, using a tongs, flip them over. Watch carefully. When leaves appear slightly wilted and charred, transfer to a paper towel-lined plate. Set aside for garnish. Meanwhile, spray a ramekin with nonstick oil. Pack a layer of baby spinach leaves in the bottom of the dish, pressing down to create an even level. Drizzle with water. Gently tear the cherrywood deli ham over the spinach layer. Add the crumbled feta cheese. Crack an egg over the top. Pierce the egg yolk with a sharp knife or toothpick. Sprinkle with Herbes de Provence seasoning. Cover loosely with a paper towel. Microwave for one minute on 30% power. Gently swirl runny egg white. Microwave for one minute longer on 30% power. The yolk will be slightly runny. Transfer ramekin to a plate. Arrange the charred spinach leaves on top. Garnish with radish slices. Serve with baguette slices. Repeat for number of portions needed.

Unbelievable Egg Nog Cake

And isn’t it a relief to know that you won’t be pouring money down the drain? Too much of anything can take away the joy. We all get caught up in holiday indulgences, thinking it’s the only time of year to appreciate our favorite treats. No more. Rather than feeling like a glutton for punishment, followed by waves of guilt, here’s a way to stretch the cheer throughout the winter months. When the nights are dark and the fire warms your feet, snuggle up with a slice of nostalgia. You deserve it.

UNBELIEVABLE EGG NOG CAKE

Ingredients:

16.5-ounce yellow cake mix

3-ounce vanilla instant pudding mix

1 cup eggnog

4 eggs

1/3 cup vegetable oil

1 teaspoon nutmeg

1/4 cup water

1 teaspoon vanilla extract

Ingredients for Glaze:

1/4 cup butter, warmed

1/4 cup eggnog

1/2 teaspoon vanilla extract

1/4 teaspoon rum

1/2 teaspoon nutmeg

2 cups powdered sugar

Garnish with rosemary sprigs and pomegranate arils

Instructions:

Preheat oven to 350°. Spray a bundt pan (or 8 mini bundt pans) with nonstick oil containing flour. Set aside. In a large bowl, combine yellow cake mix, dry vanilla pudding mix, eggnog, eggs, vegetable oil, nutmeg, water, and vanilla extract. Beat with a mixer for 2 minutes until thoroughly combined, scraping down the sides as needed. Pour batter into pan(s). Bake 50 minutes for large, or 25 minutes for small bundt cakes, until a cake tester comes out clean. Remove from oven to cool for 10 minutes before inverting on a wire rack. Allow to cool 10 minutes longer before transferring to a cake plate. While cakes are cooling make the glazed icing. In a bowl, whisk together butter, eggnog, vanilla extract, rum, and nutmeg until smooth. Sprinkle in powdered sugar, stirring with a spoon, until smooth. Drizzle glaze over cake. Garnish with rosemary sprigs and pomegranate arils for a festive finish.

Because today, this Paleo breakfast may leave you feeling like a superhero, “able to leap tall buildings in a single bound”. It not only gives you a nutrient-rich vegetable, it also provides protein in the animal form of bacon and eggs! That fact alone ups your intake of vitamins and minerals without leaving you feeling meh and bloated. Digestion improves as energy levels rise, which leaves me asking one final question: Which superhero are you?

EGG & SWEET POTATO BOATS

Ingredients:

1 large sweet potato, halved, washed and patted dry

1/2 teaspoon olive oil

1/4 teaspoon sea salt

2 large eggs

2 strips bacon, cooked and crumbled

Sriracha, to taste

Fresh oregano, for garnish

Instructions:

Preheat oven to 350°. Once the sweet potatoes have been washed and patted dry, rub skins with olive oil, sprinkle with sea salt, and place cut side down in a shallow pan that has been sprayed with nonstick oil. Bake for about one hour, or until tender. Remove sweet potatoes from oven. With tongs, flip sweet potatoes over so skin side is down. Using a spoon, carefully scoop out the center to form a well for one egg. Crack an egg into each sweet potato boat. Return pan to oven; bake 20 minutes, or until eggs are set. Remove from oven. Crumble bacon over top. Drizzle with sriracha sauce. Garnish with fresh oregano leaves. Serve warm.

Multi-Grain Avocado Toast

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Multigrain Avocado Toast! Have you heard that eating eggs are no longer bad for you? Well, that’s the story I told my doctor and I’m sticking to it. He actually agreed, after looking at my bloodwork. Now, as a disclaimer, I’m going to clarify that I usually eat one egg a day, for breakfast, and I prepare it in the microwave, without butter. I also buy organic eggs with that Florida-sunset orange yolk. Farmers here tell me that deep color means more vitamins because free range hens get to enjoy the “greener pastures of grass and clover by foraging the great outdoors.” All I know is, way back in the day when I was a country girl growing up, we didn’t have GMOs and food modifications that make an ingredient list look like it came out of a chemistry book. Rant over.

MULTIGRAIN AVOCADO TOAST

Ingredients:

2 pieces multigrain bread, toasted

1 avocado, halved and pitted

1 teaspoon lime juice

2 eggs, sunny side up

1/4 teaspoon everything but bagel seasoning

Fresh blueberries and orange segments

Cinnamon dusting, for garnish

Instructions:

Mash the avocado, drizzle with lime juice, and spread onto the toasted bread, or simply use the toast to “dip” into the avocado/egg mixture. Spice it up with everything but bagel seasoning. Toss fresh blueberries and orange segments. Sprinkle with cinnamon. Quick and Tasty!
