What’s Cooking in Gail’s Kitchen? Sunshine Eats: Quiche Fromage! If you’ve ever been to Paris, you can’t help but be charmed by the street vendors near Notre Dame along the Seine River. One in particular featured homemade quiche specialties for picnicking tourists. There’s nothing more charming than grabbing a spot on the nearest bench for a lunchtime picnic in the midst of people-watching, that’s for sure. You can relive the moment with today’s version of cheese quiche made with a puff pastry crust. Ooh là là!

QUICHE FROMAGE

Ingredients:

One puff pastry sheet

5 eggs

1/3 cup crème fraîche or Greek yogurt

1/2 cup light cream

1 teaspoon Herbes de Provence

1/4 teaspoon seasoned salt

1/8 teaspoon cracked black pepper

6-7 ounces Sartori Montamoré cheese, crumbled

Instructions:

Thaw the puff pastry for 40 minutes. Roll out to fit a 10 1/2″ pie plate. Crimp the edges and pierce the bottom with a fork. Place pie plate in the freezer for 30 minutes. Preheat the oven to 425°. Line the pastry with foil and place pastry weights in the bottom. Bake 15 minutes. Remove from oven. Remove the foil and pastry weights, pierce dough again if needed, and bake 5 minutes longer until bottom is golden. Set aside. In a bowl, whisk together eggs, crème fraîche, light cream, Herbes de Provence, seasoned salt, and black pepper. Fold in cheese crumbles. Spoon mixture into the pastry crust. Bake 30 minutes until the filling is golden and the crust is puffed. To test for doneness, insert cake tester. If pick comes out clean, the quiche is baked through. Serve immediately. Enjoy with a glass of Pinot Noir.

Pulled Pork Barbecue Flatbread

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Pulled Pork BBQ Flatbread! I love prepared flatbreads. In fact, I always pick up a couple from my grocer’s deli to keep on hand. The possibilities are endless for a quick meal without scrambling for the fast-food drive-through. I freeze containers of leftover meats that were slow-cooked earlier, so as to have healthy options at home, such as today’s pork tenderloin. If need be, there are prepackaged resources at your local grocery store as well. Being flexible with time-saving choices is always a “Win”, in my opinion.

PULLED PORK BBQ FLATBREAD

Ingredients:

1 prepared flatbread

2 tablespoons olive oil

1 tablespoon cornmeal

1/2 cup BBQ sauce, any variety

1 pound pork tenderloin, cooked and shredded

2 eggs

1/8 teaspoon seasoned salt

Dash of white pepper

1/2 cup Spring Mix, chopped

1 green onion, snipped

Instructions:

Preheat oven to 400°. Brush flatbread with olive oil on both sides; sprinkle bottom with cornmeal. Bake 5 minutes. Remove from oven. Spoon BBQ sauce evenly over flatbread. Cover all with shredded pork. Create a “well” for each egg. Gently crack an egg into each “well”. Sprinkle eggs with seasoned salt and white pepper. Bake 8-10 minutes until eggs are set. If the crust becomes too brown, cover it with foil, leaving the egg portion uncovered. When eggs are cooked, remove from oven. Add chopped Spring Mix and green onion snips.

Financier Almond Cake

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Financier Almond Cake! Not everyone lives around the corner from the best pastry shops in Paris. So we manage by baking at home. My son, Johnny, and his wife, Katie, treated me to their gluten-free version of a popular French sweet. Know what you get when you combine ground natural almonds, luscious brown butter, and airy egg whites? Clue: It’s a French pastry chef’s dream! By choosing a small cupcake mold or ramekin, this springy honey-sweet dessert becomes a star attraction at the end of a meal. Drizzle it with a lightly sweetened St~Germaine glaze, top it with a fresh raspberry crown, and you’re bound to feel a tiny bit Parisienne. Ooh-la-la!

FINANCIER ALMOND CAKE

Ingredients for Cake:

6 tablespoons unsalted butter

1/2 cup sliced almonds

1/4 cup coconut flour

3/4 cup powdered sugar

2 egg whites

1 tablespoon natural honey

1/2 teaspoon almond extract

Instructions:

Preheat oven to 350°. Butter 2 ramekins or coat a 6-count muffin tin with butter or nonstick oil. Set aside. Melt the butter over medium heat. Do not burn. Simmer until brown bits begin to form. Lower heat and simmer, stirring frequently to scrape the brown bits at the bottom of the pan. Continue cooking until butter turns dark brown, not burnt, for about 6 minutes. Set aside to cool for 10 minutes. Meanwhile pulse the sliced almonds and coconut flour in a food processor until nuts are finely ground. Transfer flour mixture to a medium bowl. Whisk in the powdered sugar. Fold in the egg whites, mixing until smooth. Gently stir in the honey. Finally, fold in the cooled brown butter. Stir until batter is smooth. Spoon into the greased ramekins or muffin pan. Spread batter evenly. Bake 25-30 minutes until the edges are golden brown and a cake tester inserted in the center comes out clean. Cool on a wire rack. If using a muffin pan, invert after 5 minutes to remove mini-cakes from pan.

Ingredients for Glaze:

1 cup powdered sugar

3 tablespoons St~Germaine liqueur

Fresh raspberries for Garnish

1 teaspoon ground almonds for Garnish

Instructions:

Sift powdered sugar into a small bowl. Whisk in St~Germaine liqueur until a smooth consistency is reached. Gently spoon the glaze over the top of the cakes. Garnish with fresh raspberries and a sprinkling of ground almonds.

Eggs Deviled With Salmon

Known once as a classic staple for every summer gathering, the deviled egg has been reinvented in countless ways. Creativity knows no bounds. Whether you choose spicy jalapeño*, creamy tuna salad, or low-cal Greek yogurt, the spin-off creations are definitely show-stoppers. Don’t believe me? Try these Smoked Salmon beauties at your next party or pitch-in picnic.

EGGS DEVILED WITH SALMON

Ingredients:

6 hard boiled eggs, cooked and peeled

1/4 cup cream cheese

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon white vinegar

1 tablespoon red onion, diced

1/8 teaspoon dill weed

1/8 teaspoon sea salt

1/8 teaspoon white pepper

4 ounces Applewood Smoked Salmon

1 teaspoon capers, for garnish

Fresh dill sprigs, for garnish

Paprika, if desired

Instructions:

Halve the eggs lengthwise. Carefully remove yolks and place in a medium bowl. Gently place white portions on a platter. Arrange dill sprigs. These will help to keep the eggs from rocking. Set aside. Cut the salmon slices into 12 thin strips. Roll each strip to make a tight rosebud. Transfer to a plate. Cover with plastic wrap and refrigerate until ready to use. Chop the remaining salmon into small pieces. Mash the egg yolks with a fork until crumbly. Add cream cheese, mayonnaise, Dijon mustard, white vinegar, red onion, dill weed, sea salt, white pepper, and remaining salmon. Stir until combined. Spoon mixture into hollowed out egg white shells. Place a salmon “rosebud” on top. Garnish with one caper in the center of each salmon piece. Sprinkle with paprika, if desired. Refrigerate for one hour before serving. Store leftovers in a covered container.

What’s Cooking in Gail’s Kitchen? The Sunshine Eats: Cobb Salad! Some days the dinner option is as plain as the nose on my face. Leftover rotisserie chicken becomes the star attraction. Using seven of your favorite ingredients, which you probably already have on hand, this time-saving classic is the perfect solution to that mundane question, “What’s for dinner?” Go easy on yourself and build a Cobb Salad on a platter for show-stopping presentation.

COBB SALAD

Ingredients:

Bag of Spring Mix Salad Greens

3 cups chicken, precooked and shredded

3 eggs, hard-boiled and chopped

6 slices bacon, crispy and crumbled

1-2 avocados, peeled, pitted, and diced

8 ounces cherry tomatoes, halved

3/4 cup Bleu cheese crumbles

Salad Dressings of choice

Instructions:

Choose individual salad plates or a serving platter. Arrange salad greens as the base. Working from the left side of the plate to the right, arrange shredded chicken from top to bottom. Next arrange chopped egg, crumbled bacon, diced avocado, and tomato halves, ending with Bleu cheese crumbles. Drizzle with salad dressing of choice and serve.

Wild Rice Sausage Stuffing

What’s Cooking in Gail’s Kitchen? After the Holidays: Wild Rice Sausage Stuffing! For those who really crave the taste of stuffing, here’s an idea for a meal-in-one-dish. Some people may call it a “casserole” since it contains crumbled pork sausage, mixed vegetables, bread stuffing, and wild rice grains. Either way, you’re going to want to bookmark and print this recipe. It’s that good. Of course, you can make the serving portions a little smaller and serve it as a side dish with roasted chicken, turkey, or a Cornish hen like I did. Wild Rice Sausage Stuffing can easily be made a day ahead of time and gently reheated when you need it. Leftovers can be frozen up to three months. I believe I just saw your face light up. Trust me, your family will thank you. They may even offer to load the dishwasher.

WILD RICE SAUSAGE STUFFING

Ingredients:

6-ounce package long grain and wild rice mix

1 pound bulk sausage

1/4 cup butter, cubed

1 cup yellow onion, chopped

1 cup celery, chopped

4-ounce can mushrooms, stems and pieces, drained

6-ounce package chicken stuffing cubes

2 eggs, beaten

3 cups chicken broth

1/4 teaspoon seasoned pepper

1/8 teaspoon poultry seasoning

Instructions:

Preheat oven to 350°. Spray a 9”x13” baking dish with nonstick oil. Set aside. Cook wild rice according to package directions. Set aside. Brown sausage until cooked and crumbled; drain. Set aside. In a large skillet over medium-high heat, warm butter. Sauté onion and celery pieces until tender, 4-5 minutes. Do not burn. In a large bowl, combine wild rice, sausage crumbles, sautéed onions/celery mixture, and mushrooms. Stir well. Fold in chicken stuffing cubes. Add beaten eggs, chicken broth, seasoned pepper and poultry seasoning. Stir thoroughly. Transfer to the prepared baking dish. Bake 45 minutes or until a thermometer reads 160°. Serve warm.

Snickerdoodle Chocolate Chip Cookies

What’s Cooking in Gail’s Kitchen? After the Holidays: Snickerdoodle Chocolate Chip Cookies! When my 11-year old granddaughter came for a visit, one of the things we did together was bake homemade cookies. It was a wonderful way to build social skills for life, not to mention lasting memories. Conversation flowed easily while mixing cookie dough and then afterwards licking the bowl. Her technique for cracking an egg, without getting eggshells in the dough, was to hold it securely in the palm of her hand, above a custard cup…and squeeze. Don’t laugh. It worked. Surprisingly it takes a lot more uneven pressure to break it that way, but her reasoning was, “Nana, it’s easier than trying to get my thumbs in the opening and pulling it apart.” Priceless.

SNICKERDOODLE CHOCOLATE CHIP COOKIES

Ingredients:

16.5-ounce box yellow cake mix

1/2 cup vegetable oil

2 eggs

1 cup semi-sweet chocolate chips

1/3 cup sugar

1 teaspoon ground cinnamon

Instructions:

Preheat oven to 350°. Line two baking sheets with parchment paper. Set aside. In a mixing bowl, combine yellow cake mix, vegetable oil, and eggs. Stir until thoroughly mixed. Fold in chocolate chips. Chill dough 20 minutes. Whisk together sugar and ground cinnamon in a shallow dish. Set aside. Scoop teaspoon-sized balls of cookie dough; roll in cinnamon sugar. Place on the prepared baking sheet. Bake 8-10 minutes. Remove from oven and allow cookies to cool on the baking sheet 2 minutes longer. Then transfer them to a wire rack to cool completely. Repeat with the remaining cookie dough. Store in an airtight container.

Naked Belgian Waffles

What’s Cooking in Gail’s Kitchen? After the Holidays: Naked Belgian Waffles! Doesn’t this sound sinfully decadent? Imagine fluffy discs of indented lattice, with slightly crisp edges, exuding a seductive vanilla essence. The deep indentations of golden batter cake are perfect vessels for whatever your heart desires. Might it be rich, creamy butter or hand-tapped pure maple syrup? What about toasted pecan halves and powdered sugar? Or perhaps even a smearing of hazelnut spread with fresh red raspberries. Whatever your craving, do yourself a favor. Make a double batch of waffles to store in the freezer. Then pop one in the toaster for a great way to start the day. Romance is in the air.

NAKED BELGIAN WAFFLES

Ingredients:

1 3/4 cups flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon sea salt

2 eggs, room temperature

2 cups buttermilk

1/2 cup vegetable oil

1 teaspoon vanilla extract

Instructions:

Combine flour, baking powder, baking soda, and sea salt in a large bowl. Set aside. In another bowl, whisk eggs, buttermilk, vegetable oil, and vanilla extract. Slowly add liquid mixture to dry ingredients. Stir just until moistened. Batter will be slightly lumpy. Do not over-mix. Spray waffle iron with nonstick oil. Pour 3/4 cup of batter into preheated waffle iron. Close lid. Do not open until golden brown. Repeat until batter is gone. Serve warm with softened butter, maple syrup, pecan halves, powdered sugar, or fruit toppings.

What’s Cooking in Gail’s Kitchen? After the Holidays: Egg & Sweet Potato Boats! Breakfast just got more interesting. And so did you. Because today, this Paleo breakfast may leave you feeling like a superhero, “able to leap tall buildings in a single bound”. It not only gives you a nutrient-rich vegetable, it also provides protein in the animal form of bacon and eggs! That fact alone ups your intake of vitamins and minerals without leaving you feeling meh and bloated. Digestion improves as energy levels rise, which leaves me asking one final question: Which superhero are you?

EGG & SWEET POTATO BOATS

Ingredients:

1 large sweet potato, halved, washed and patted dry

1/2 teaspoon olive oil

1/4 teaspoon sea salt

2 large eggs

2 strips bacon, cooked and crumbled

Sriracha, to taste

Fresh oregano, for garnish

Instructions:

Preheat oven to 350°. Once the sweet potatoes have been washed and patted dry, rub skins with olive oil, sprinkle with sea salt, and place cut side down in a shallow pan that has been sprayed with nonstick oil. Bake for about one hour, or until tender. Remove sweet potatoes from oven. With tongs, flip sweet potatoes over so skin side is down. Using a spoon, carefully scoop out the center to form a well for one egg. Crack an egg into each sweet potato boat. Return pan to oven; bake 20 minutes, or until eggs are set. Remove from oven. Crumble bacon over top. Drizzle with sriracha sauce. Garnish with fresh oregano leaves. Serve warm.
