Eating My Way Through the Holidays! Special Edition: Himalayan Salt Plate Lox and Bagels! My newest kitchen “toy” is the Himalayan Salt Plate. Not only does it create a stunning presentation, it brings a subtle and unexpected flavor to foods served on it. First, chill it in the refrigerator overnight. It then becomes a serving platter on the table or buffet line. Everything lays directly on the salt plate to absorb the nutrients. I chose Wild Alaskan Sockeye Salmon, for starters, with all the trimmings for an exquisite banquet. The lox is traditionally smoked and sliced thin. It smells divine when I break the seal. Arrange hard-boiled egg slices for essence and red onion for a blend of slightly sweet gusto. Sprinkle on imported nonpareil capers for seasoning that lingers. Slather toasted bagels with the creamy Neufchâtel cheese mixture before adding ingredients. Top with fresh dill which pulls everything together, in my opinion. Now dig in. 
HIMALAYAN SALT PLATE LOX AND BAGELS
Ingredients:

4 ounces applewood smoked salmon

2 hard boiled eggs, sliced 

1/4 red onion, sliced

2 tablespoons imported capers, nonpareil

2 sesame bagels, split and toasted

4 ounces Neufchâtel cheese

1 tablespoon Greek yogurt

Fresh dill sprigs
Instructions:

Mix the Neufchâtel cheese and Greek yogurt until smooth, light, and creamy. Slather onto a toasted bagel. Top with smoked salmon pieces, hard boiled eggs, red onion slice, and imported capers. Garnish with fresh dill sprig.

Eating My Way Through the Holidays! Special Edition: Gluten-Free Corn Muffins! For those who really cannot tolerate wheat, here’s a nice alternative to the bread basket. Not vulnerable to the dietary restriction? No worries. The taste may convince you to try more gluten free options. It’s that good. Slather the corn muffins with sea salt and French butter for an extravagant indulgence. 
GLUTEN-FREE CORN MUFFINS 
Ingredients:

2 cups yellow cornmeal, coarsely ground

1 teaspoon kosher salt

1 teaspoon baking soda 

2 teaspoons baking powder 

1 egg at room temperature, beaten 

4 tablespoons unsalted butter, melted and cooled

1 1/2 cups Greek yogurt, room temperature 

4 tablespoons natural honey
Instructions:

Preheat oven to 400°. Grease muffin tins or a 12″ iron skillet*. Set aside. In a large bowl, combine cornmeal, kosher salt, baking soda, and baking powder. Whisk to mix well. In another bowl, combine beaten egg, melted butter, Greek yogurt, and natural honey. Whisk to incorporate. Create a well in the dry ingredients. Pour wet ingredients into dry ingredients. Stir just until combined. Spoon mixture into muffin tins, filling only 2/3 full. Bake 20 minutes or until golden brown on top and around the edges. (*Bake 20-30 minutes if using an iron skillet.) Insert a toothpick in the center. It should come out clean. Remove from muffin tins and serve warm.

Imagine Mrs. Claus, with her crew of kitchen elves up to their elbows in flour as the aroma of bakery items fill the air. Repeat after me: “Never substitute the butter with another oil.” It will completely change the outcome. Think about it for a minute. If you remove the “butter” from butterscotch, what will that leave? Trust me, you don’t want to find out. Go for the gold instead and reap the reward. Catch the spirit and watch your little helpers share the excitement, too. 
BUTTERSCOTCH ICEBOX COOKIES 
Ingredients:

3/4 cup butter

2 cups brown sugar 

2 eggs

1 teaspoon vanilla 

2 teaspoons baking powder

1 teaspoon sea salt

3 1/2 cups flour

1 cup walnuts, chopped
Instructions:

Melt the butter. Stir in brown sugar. Add eggs and vanilla. Mix well. In a medium bowl combine baking powder, sea salt, and flour. Pour the flour mixture into the sugar mixture, stirring to form a solid dough. Fold in walnuts. Shape dough into two long rolls. Wrap each log in wax paper. Refrigerate 8 hours or overnight. To bake, preheat oven to 375°. Slice dough thinly. Bake 10-12 minutes until lightly browned.

Whether you prepare a holiday brunch for invited guests or gather ’round the table in your pajamas, this recipe is a winner. Simply because, everyone loves pizza! You now have an excuse to eat it for breakfast, even if you’re “Home Alone”. It has baked eggs, it has shredded potatoes, it has crumbled sausage, and gooey cheese all together over a golden deep dish crust. So there you have it. Bring out the holiday movies, set up the TV tray, and eat pizza for breakfast. Permission granted. 
FESTIVE BREAKFAST PIZZA
Ingredients:

1 pound pork sausage, ground

1/2 teaspoon seasoned salt

1/8 teaspoon white pepper 

1/4 teaspoon Mrs. Dash Herb and Garlic Seasoning*

1 green pepper, chopped 

2 ounces pimentos, diced

1 cup hash brown potatoes, shredded 

1 cup cheddar cheese, shredded 

1 tube prepared pizza crust

5 eggs, beaten 

1/4 cup milk

1/4 cup Parmesan cheese, grated
Instructions:

Preheat oven to 350°. In a large skillet over medium heat, brown sausage until cooked and crumbly. Drain well. Sprinkle with seasoned salt, white pepper, and Mrs. Dash Herb and Garlic Seasoning. Microwave chopped green pepper on HIGH for two minutes. Combine diced pimentos, green peppers, and sausage. Mix well. For a deep dish pizza, roll out pizza crust and press into an iron skillet bringing dough up the sides of the pan. Layer with sausage mixture, hash browns, and cheddar cheese. Whisk eggs and milk together. Pour over the pizza. Top with Parmesan cheese. Bake 30-35 minutes or until eggs are set and crust is golden.

What’s Cooking in Gail’s Kitchen? Food for Sharing: Xanthous Deviled Eggs! Farm-to-Table deviled eggs are growing in popularity at family owned restaurants. Don’t believe me? Check out the appetizer menu for starters. Deviled eggs are not just for picnics and pitch-ins any more. You may find them filled with everything from meat or seafood to cheese, nuts, and hot peppers. Which brings me to today’s version: Jalapeño & Cilantro. The kick of spice mellows nicely with the creamy yolk filling. You determine the heat factor. If you decide to omit the caper liquid, you may want to substitute with salt to taste. 
XANTHOUS DEVILED EGGS
Ingredients:

6 hard boiled eggs, cooled and peeled 

1 tablespoon pickled jalapeño peppers, minced

3 tablespoons mayonnaise 

2 teaspoons cilantro, chopped

1 teaspoon Dijon mustard

1 teaspoon pickled jalapeño juice or white vinegar 

1/2 teaspoon caper liquid (optional)

Pinch of Cajun seasoning 

Pinch of sugar

1 fresh jalapeño pepper, slices for garnish 
Instructions:

Halve the eggs lengthwise. Carefully remove yolks and place in a small bowl. Gently place white portions in a deviled egg platter. Mash egg yolks with a fork. Add pickled jalapeño peppers, mayonnaise, cilantro, Dijon mustard, pickled jalapeño juice, caper liquid, Cajun seasoning, and sugar. Stir until combined. Spoon mixture into hollowed out egg white shells. Garnish with a fresh jalapeño slice. Refrigerate for one hour before serving. Store leftovers in a covered container.

In English it translates to a decadent light custard, bordering on mousse, whipped into a parfait of romance-in-a-glass. Add fruit, toasted coconut, and a smidgen of nutmeg for a dessert that will have everyone exclaiming, “That’s Amoré!”
ZABAGLIONE PARFAIT 
Ingredients:

1 cup heavy cream, whipped 3-5 minutes

3 egg yolks, beaten

3 tablespoons sugar

1 teaspoon lemon citrus peel, granulated 

1 pinch nutmeg 

2 drops almond extract 

1/4 cup sweet vermouth, or almond liqueur 

1/4 cup raspberry preserves 

Fresh raspberries 

French Vanilla Wafer Rolls

Toasted coconut 
Instructions:

In a chilled bowl, beat heavy cream until it forms stiff peaks. Refrigerate until ready to use. In the bottom of a double boiler, bring water to a simmer and reduce heat to low. In the top of the double boiler, place eggs and sugar. Add granulated lemon citrus peel, nutmeg, and almond extract. Pour in sweet vermouth or amaretto liqueur. Whisk the custard mixture to create a light, fluffy consistency. Do not allow the water to boil. Continue whisking for 10 minutes, until the custard triples in volume. It will turn pale and frothy. The custard will be slightly thickened when ready. Set aside for 15 minutes. Gently fold the whipped cream into the cooled custard, reserving a portion for a garnish. The texture will appear like mousse. Place a dollop of raspberry preserves into the bottom of each parfait glass. Next, divide the custard equally between the parfait glasses. Top with fresh raspberries. Sprinkle on toasted coconut. Finish with a dab of whipped cream. Refrigerate until ready to serve. Dish up with a French vanilla wafer roll for nibbling.

What’s Cooking in Gail’s Kitchen? Timeless Classics: Yorkshire Pudding! Remember Sunday afternoons at grandma’s house for a traditional pot roast dinner and lively conversation? The rich beef gravy practically dribbled down your chin overflowing from the saturated yeast rolls or Yorkshire pudding. Recently, I was swept back in time when I ordered this savory dish at a charming little pub in the Canadian Rockies. It was at that moment I knew I had to bring a bit of nostalgia back home. As you can see, my version included shredded beef drippings, rich brown gravy, and assorted mixed vegetables for a pocket full of perfection. 
YORKSHIRE PUDDING 
Ingredients:

4 eggs

1 cup plus 2 teaspoons flour

3/4 cup milk

1 tablespoon plus 2 teaspoons water

1/2 teaspoon kosher salt

1/4 cup bacon drippings 
Instructions:

Combine eggs, flour, milk, water, and salt. Refrigerate batter overnight in an airtight container. The next day, remove batter to allow it to rest at room temperature while the oven is being preheated. Adjust oven rack to center position. Preheat oven to 450°. Place one teaspoon of bacon drippings into each well of the bouchon pan. Place pan in the oven while it is preheating, about 10 minutes. Remove from oven. Fill each well 3/4 full. Do not overfill. Return pan to oven. Bake 25 minutes until Yorkshire puddings quadruple in volume. Serve immediately with meat, vegetables, and gravy.

What’s Cooking in Gail’s Kitchen? Timeless Classics: Rosemary Parmesan Popovers! For a light and airy alternative to reaching for the bread basket, try an herb and cheese popover instead. Rosemary provides a nice earthy pine taste which compliments the saltiness of Parmesan cheese. It’s a match made in heaven, like bread and butter. No pun intended. 
ROSEMARY PARMESAN POPOVERS 
Ingredients:

6 large eggs

2 cups light cream

1/4 cup unsalted butter, melted

1 teaspoon sea salt

3 tablespoons sugar

1 tablespoon fresh rosemary, chopped plus more for garnish

1/4 cup Parmesan cheese, grated

2 cups flour
Instructions:

Preheat oven to 400°. Move the oven rack one setting below the middle row. Grease a 12-count bouchon pan. In a food processor, combine eggs, light cream, butter, sea salt, sugar, rosemary, cheese, and flour. Blend until no large lumps remain and batter is light yellow and frothy, approximately one minute. Fill each bouchon cup 2/3 full. Do not overfill. Sprinkle tops with rosemary leaves. (Refrigerate leftover batter until ready to make the next batch. At that time, use a whisk to vigorously stir the batter.) Place bouchon pan in the oven; bake for 30 minutes or until golden brown. Do not open the oven door during baking or the popovers will deflate. When golden brown, remove from the oven. After 2 minutes in the pan, remove and transfer popovers to a wire rack. Do not allow them to cool in the pan or they may turn soggy. Serve warm as is or with a dollop of French butter.

What’s Cooking in Gail’s Kitchen? Timeless Classics: Kickstart Breakfast Burrito! Eggs have a way of warding off those mid-morning hunger pangs, in my opinion. Being high in protein makes them a favorite and keeps me from caving in to foods with empty calories later on. Because I’m a bread-lover, the tortilla satisfies like manna from heaven. Cheese, turkey sausage, and veggies kickstart my breakfast so I can stay focused and on point. Choose a breakfast wrap the next time you want a little variety in your day. 
KICKSTART BREAKFAST BURRITO 
Ingredients:

2 flour tortillas, burrito size

2 tablespoons salsa

2 tablespoons onion, chopped

1 small green pepper, chopped

1 tomato, chopped

1 lemon chili pepper, chopped (optional)

1/2 teaspoon kosher salt

4 eggs, beaten

2 tablespoons milk

2-4 turkey sausage links, precooked and sliced

4 tablespoons Colby-Monterey Jack cheese, finely shredded
Instructions:

Top tortillas with salsa. Set aside. Combine onion, green pepper, tomato, and lemon chili pepper in a microwave-safe dish. Sprinkle with kosher salt. Microwave on High for 1 minute, 45 seconds. Remove and set aside. Heat turkey sausage chunks for 30 seconds on High in the microwave oven. Set aside. In a nonstick medium skillet over medium heat, add beaten eggs. Cook, stirring occasionally for one minute. Add turkey sausage, shredded cheese, and vegetable mixture. Cook one minute longer or until eggs are set. Do not burn. Divide scrambled egg mixture between the tortilla shells. Fold into a burrito. Makes two breakfast burritos.
