More often than not, they reveal significant tidbits about recipe ingredients or preparation that send my mind spinning. For example: Did you know instead of adding hash brown potatoes to an omelet you can substitute potato chips? When folded into a beaten egg mixture, they thicken the omelet while keeping it light and airy at the same time. It’s pure genius. After all, everyone has a bag of potato chips stashed somewhere.

UTZ’S SPANISH TORTILLA

Ingredients:

1 tablespoon butter

1 teaspoon olive oil

4 eggs, beaten

1/4 teaspoon seasoned salt

1/4 teaspoon black pepper

1/8 teaspoon red pepper flakes

2 cups Utz’s Kettle Potato Chips*, crushed

Grape tomatoes, green olives, and baby spinach for garnish

Instructions:

Warm the butter and olive oil over medium heat in a small frying pan. In a mixing bowl, combine eggs, seasoned salt, black pepper, and red pepper flakes. Mix well. Fold in the crushed potato chips. Pour the mixture into the preheated pan. Cook 2-3 minutes until golden brown. Place a flat plate over the top of the pan; invert the pan onto the plate to flip the tortilla out. Slide the tortilla back into the pan with the golden side up. Cook 2-3 minutes longer until firm. Transfer to a serving plate. Garnish with grapes tomatoes, green olives, and baby spinach leaves.

Oven Spinach Frittata

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Oven Spinach Frittata! Frittata is a fancy word for an Italian omelet baked in the oven without a crust. It also cooks in half the time, making it less labor-intensive. Somehow that doesn’t sound near as exciting as a French quiche. Yet, it is because the filling ends up being light, fluffy, and savory. The feta cheese is a crowning point with its rich tangy flavor. And the next time you need something versatile for leftover lunch the next day, think frittata. Even at room temperature, it tastes amazing.

OVEN SPINACH FRITTATA

Ingredients:

4 eggs

1 tablespoon Greek yogurt

1/2 teaspoon kosher salt

1/8 teaspoon red pepper flakes

1 tablespoon olive oil

1 green onion, chopped

1 strip bacon, cooked and crumbled

1/2 cup cherrywood deli ham, sliced

1/4 cup baby spinach leaves

2 ounces feta cheese, crumbled

Italian dried herbs, for garnish

Instructions:

Preheat oven to 350°. In a bowl, whisk together eggs, Greek yogurt, kosher salt, and red pepper flakes until combined. In an iron skillet over medium heat, warm olive oil. Add the green onions; sauté for 2-3 minutes. Add the cooked bacon, cherrywood ham, and baby spinach. Cook one minute, stirring gently. Pour the egg mixture into the pan. Place cubed feta cheese on top. Transfer the iron skillet to the preheated oven. Bake 25 minutes or until the eggs are puffy and slightly browned. Remove pan from oven. Garnish with a pinch of dried Italian herbs. Serve immediately.

Pumpkin Spice Pie

Eating My Way Through the Holidays! Sweet Celebrations: Pumpkin Spice Pie! It wouldn’t be a feast without family traditions, whether it’s a circle of loved ones, heirloom tableware, aromatic side dishes, or pumpkin spice pie. No matter how stuffed we are from the bountiful spread, there’s always room for dessert. Am I right? Indeed! Besides, who can resist a touch of creamy custard sweetness surrounded by a golden, buttery crust, even if it is prepared by someone else.

PUMPKIN SPICE PIE

Ingredients:

1 prepared 9” pie crust

15-ounce can puréed pumpkin

2 eggs

15-ounce can sweetened condensed milk

1/2 teaspoon cinnamon

1/2 teaspoon ginger

1/2 teaspoon nutmeg

1/2 teaspoon sea salt

Whipped Cream for garnish

Instructions:

Preheat oven to 425°. Place prepared pie dough in an ungreased pie plate. Crimp edges as desired. Set aside. Combine puréed pumpkin, eggs, sweetened condensed milk, cinnamon, ginger, nutmeg, and sea salt. Beat until smooth. Pour into prepared pie crust. Bake 15 minutes. Reduce oven temperature to 350° and continue baking 40-50 minutes until center is firm. If necessary, cover the edges of the pie crust with aluminum foil to avoid over browning. A knife inserted will come out clean. Remove from oven. Cool. Garnish with whipped cream, as desired.

Naked Belgian Waffles

What’s Cooking in Gail’s Kitchen? Here Come the Holidays: Naked Belgian Waffles! Doesn’t this sound sinfully decadent? Imagine fluffy discs of indented lattice, with slightly crisp edges, exuding a seductive vanilla essence. The deep indentations of golden batter cake are perfect vessels for whatever your heart desires. Might it be rich, creamy butter or hand-tapped pure maple syrup? What about toasted pecan halves and powdered sugar? Or perhaps even a smearing of hazelnut spread with fresh red raspberries. Whatever your craving, do yourself a favor. Make a double batch of waffles to store in the freezer. Then pop one in the toaster for a great way to start the day. Romance is in the air.

NAKED BELGIAN WAFFLES

Ingredients:

1 3/4 cups flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon sea salt

2 eggs, room temperature

2 cups buttermilk

1/2 cup vegetable oil

1 teaspoon vanilla extract

Instructions:

Combine flour, baking powder, baking soda, and sea salt in a large bowl. Set aside. In another bowl, whisk eggs, buttermilk, vegetable oil, and vanilla extract. Slowly add liquid mixture to dry ingredients. Stir just until moistened. Batter will be slightly lumpy. Do not over-mix. Spray waffle iron with nonstick oil. Pour 3/4 cup of batter into preheated waffle iron. Close lid. Do not open until golden brown. Repeat until batter is gone. Serve warm with softened butter, maple syrup, pecan halves, powdered sugar, or fruit toppings.

What’s Cooking in Gail’s Kitchen? Here Come the Holidays: Double Lemon Poppyseed Bread! Everyone has their favorite flavors and foods that remind them of happier times. A good friend of mine recently lost her husband, after challenging years with a slow-progressing disease. When I stopped by to visit her with a gift of food, it created an unexpected see-saw of emotion. At first, she was happy and delighted because it brought back memories of early morning get-togethers for Bible study at a local coffee shop. We’d laugh, chat, share, or reflect on scripture over coffee and pastries before heading off to work. It was a wonderful way to begin the day, often shifting gears from a trying mindset to a positive outlook. The emotional see-saw tipped from high to low that day when she realized how uncertain her future has become in consequence of widowhood magnified by isolation during a pandemic. Let us strive to remember the Golden Rule: “In everything, do to others what you would have them do to you.”

DOUBLE LEMON POPPYSEED BREAD

Ingredients for Bread:

16.25-ounce box white cake mix

3.5-ounce vanilla flavored instant pudding, powdered

4 eggs, room temperature

1 tablespoon lemon juice, freshly squeezed

1/2 cup vegetable oil

1 cup hot water

1 tablespoon lemon citrus peel

2 tablespoons poppyseeds

Ingredients for Icing:

2 cups powdered sugar

1 tablespoon butter, softened

1 teaspoon lemon juice, freshly squeezed

1/2 teaspoon vanilla extract

2-4 tablespoons light cream, slightly warmed

Lemon zest, for garnish

White nonpareil sprinkles, for garnish

Instructions:

Preheat oven to 350°. Line two loaf pans with parchment paper. Set aside. In a large bowl, combine white cake mix, vanilla pudding mix, eggs, lemon juice, vegetable oil, and hot water. Beat on Low speed for 1 minute. Scrape down sides of bowl. Increase speed to Medium setting; beat 2 minutes longer. Fold in lemon citrus peel and poppyseeds. Pour batter into prepared loaf pans. Bake 35-40 minutes or until a cake tester comes out clean. Cool loaves in pans for 10 minutes before transferring to a wire rack. To glaze, combine powdered sugar, softened butter, lemon juice, and vanilla extract. Stir to blend. Slowly add the warmed cream, stirring constantly for a smooth consistency. Drizzle over Lemon Poppyseed Loaves. Garnish with lemon zest and nonpareil sprinkles.

Zucchini ‘Nana Bread

What’s Cooking in Gail’s Kitchen? Splurge-Worthy Goodness: Zucchini ‘Nana Bread! This isn’t your usual old-fashioned banana bread. And if you’ve been hesitant to try zucchini bread, well…just because, then I implore you to give it one more chance. You honestly cannot taste the zucchini. What you will notice, though, is that the bread is incredibly moist, not gummy. And the cinnamon streusel topping is a winning combination worth shouting about. Remember to only stir the batter until it is mixed. The more you stir, the more gluten comes into play. While gluten is crucial in bread-baking, it is not your friend in quick breads. The results could be dense and rubbery. After all, the purpose of baking is to share with others. Slather on the butter or cream cheese…and Enjoy!

ZUCCHINI ‘NANA BREAD

Ingredients:

1 medium zucchini, shredded

1 ripe banana, mashed

2 eggs, room temperature

1/2 cup vegetable oil

3/4 cup sugar

1 cup flour

1/8 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon sea salt

1 teaspoon vanilla extract

Ingredients for Cinnamon Topping:

1/4 cup sugar

1 teaspoon cinnamon

Instructions:

Preheat oven to 350°. Line a loaf pan with parchment paper. Set aside. Peel zucchini. If there are seeds, remove them with a spoon; discard. Shred zucchini and set aside. Mash banana and set aside. In a mixing bowl, beat eggs, sugar, and vegetable oil until combined. Add flour, baking powder, baking soda, cinnamon, sea salt, and vanilla extract. Stir only until incorporated. Fold in shredded zucchini and mashed bananas. Stir slightly until blended. Pour into prepared loaf pan. Whisk together sugar and cinnamon in a small bowl. Sprinkle evenly over the top of the batter. Bake 45-55 minutes, or until cake tester comes out clean. Remove from oven and allow bread to cool 10 minutes before removing from pan. Cool Zucchini ‘Nana Bread on a wire rack before slicing.

Guacamole Deviled Eggs

What’s Cooking in Gail’s Kitchen? Splurge-Worthy Goodness: Guacamole Deviled Eggs! Tired of the same old thing? For years deviled eggs were served two ways: with real mayonnaise or without. Oh, sometimes you might’ve sprinkled a little paprika on top or added an olive slice. But not without criticism from the loudmouth brother-in-law who made sure everyone thought he was the know-it-all on every subject. I see you nodding your head. But now things are different. We have the freedom to be as creative in our cooking as we do in our lifestyle. If you are an avocado-lover, and could devour an entire bowl of guacamole in one sitting, then bookmark this recipe for now and for later. It’s worth it.

GUACAMOLE DEVILED EGGS

Ingredients:

6 large eggs, hard-boiled

1 ripe avocado, cut in half, put removed

1 tablespoon lime juice

1/2 teaspoon sea salt

1/8 teaspoon garlic powder

1/4 teaspoon cayenne pepper

1 tablespoon mayonnaise

Cilantro leaves, for garnish

Crushed tortilla chips, for garnish

Instructions:

Peel the eggs; cut in half horizontally; remove yolks. Set aside. Scoop the flesh of the avocado into a bowl. Add lime juice, sea salt, garlic powder, and cayenne pepper. Mash together with a fork. Add crumbled egg yolks and mayonnaise. Mix until smooth. Scoop a spoonful of the avocado filling into the well of each hard-boiled egg white. Top with fresh cilantro. Garnish with crushed tortilla chips. Refrigerate until ready to serve.

Yellow & White Cake Mix Cookies

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Yellow & White Cake Mix Cookies! I never want to live in a world where there are no cookies. I’m one of those people who insist on tasting a freshly baked cookie, still warm from the oven. My kitchen, my rules. I also like the idea of choices. By taking a simple cake mix and ramping up the extra ingredients, I was able to offer my family plain, powdered sugar, and turbinado sugar cookies. Does that mean I needed three taste-tests? I’ll never tell.

YELLOW & WHITE CAKE MIX COOKIES

Ingredients:

15-ounce box yellow cake mix

2 eggs

1/3 cup oil

1 cup white chocolate chips

1/2 cup macadamia nuts, chopped

Powdered sugar, for rolling

Turbinado sugar, for rolling

Instructions:

Preheat the oven to 350°. Combine the yellow cake mix, eggs, and oil together in a large bowl; stir. The batter will be thick. Fold in the white chocolate chips and chopped macadamia nuts. Use a cookie scoop to form the cookies. Place them two inches apart on a nonstick baking sheet. Bake 8-10 minutes until the cookies appear slightly brown on the edges. Allow them to cool slightly before rolling in powdered sugar or turbinado sugar. Cool on a wire rack. Repeat baking steps until all the cookie dough has been used.

Peruvian Cheese Potatoes

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Peruvian Cheese Potatoes! My friend, Gian, encouraged me to try a dish from his native land, Peru. He described it as a traditional appetizer so popular it has become the national dish: Papa a là Huancaína. Because it’s basically boiled potatoes covered in a spicy cheese sauce, he explained it as chile-warm, delicious, creamy, and satisfying. Strangely enough, this appetizer is served cold, similar to the American Potato Salad. It taste nothing like it, though. The jury is still out on whether I will make it at home again. I’m thinking the next step is to order it in an authentic Peruvian restaurant. Perhaps they’ll share a secret or two.

PERUVIAN CHEESE POTATOES

Ingredients:

8 yellow potatoes, whole

4 lettuce leaves

Huancaína Sauce (see recipe below)*

2 hard-boiled eggs, quartered

Mixed olives, pitted

Instructions for Potatoes:

Heat a pot of salted water to boiling. Add the potatoes. Boil the potatoes until tender when pierced with a fork, approximately 20 minutes. Drain the water and allow potatoes to cool. Arrange lettuce leaves on a platter. Halve the potatoes and place on top of the lettuce. Pour Huancaína sauce over the potatoes. Garnish with hard-boiled eggs and pitted olives.

*Ingredients for Huancaína Sauce:

1/2 cup aji amarillo paste

4 tablespoons vegetable oil

1/2 cup onion, chopped

2 cloves garlic, minced

3/4 cup evaporated milk

2 cups white queso fresco cheese

4 saltine crackers

Sea salt and black pepper, to taste

*Instructions for Huancaína Sauce:

Warm oil in a skillet over medium heat. Add the aji amarillo paste, chopped onion, and minced garlic. Sauté approximately 3 minutes, or until the onions have softened. Remove pan from heat and set aside to cool. In a food processor, combine the chile/onion mixture, and evaporated milk. Blend well. Add the queso fresco cheese and saltine crackers; blend until smooth. The sauce should be thick. Season with sea salt and black pepper. Refrigerate until ready to serve.
